Repairs to the Carlton Mill footbridge will be completed soon.

The popular link between Little Hagley Park and Carlton Mill Rd was damaged in the February 2011 earthquake.

Work on the bridge is expected to be complete by the end of September at a cost of $1 million, which will be shared by both the city council and the Government.

The bridge was at the centre of contro-versy last year due to the design put forward by the Stronger Christchurch Infrastruture Rebuild Team.

Community members were outraged at the plans for the bridge, which they said was unattractive and stopped users from being able to see the river.

Merivale resident Ken McAnergney, who first brought the issue to light within the community and approached the community board, said he was happy with the changes made through the consultation process.

“I was appalled with the first illustration,” he said.

“SCIRT came and talked to me and we

have had a series of very successful meet-ings,” he said.

“These things that could be foistered upon us by the likes of SCIRT will be there long after us. They need to take things into ac-count like people wanting to enjoy looking into the water.”

Mr McAnergney said the way the com-munity board had stepped in on the issue was an improvement from simply “rubber-stamping” the design.

Fendalton-Waimairi Community Board deputy chairman David Cartwright said the new design and change in process was positive.

“It’s a gold medal example of consulta-tion at it’s best. We were able to work with everybody,” he said.

He said the new design “ticks all the boxes” for what the community needed.

It enabled bridge users to see the water below and also had room for families to stop and watch the river, Mr Cartwright said.

The design also had measures put in place to help prevent slipping in frosty conditions.

This is a great story of one very gutsy, tough, utterly loveable German Shepherd pup called “ Jerry Lee”. At just 17 months of age we have seen Jerry Lee over 30 times since his first visit for pup vaccinations. Luckily for us he’s a big softy and has never put up a fight to all our palpating and needle pricking. Occasionally to get us back he rips out the IV catheter in his leg and looks quite pleased with himself.

Jerry Lee first presented with weight loss and inappetance over a year ago as a pup. He just was never fussed on eating – no food really tickled his fancy and he was offered the best premium foods on the market and lots of variety. He wasn’t growing as he should have for his age and he often seemed really lethargic and lacking in energy. He had diarrhea and vomiting intermittently, salivating often, but what really concerned his owners was that as a pup he just didn’t have the energy he should of had. He has been blood tested many times, xrays have been taken of his gut and Catherine has performed ultrasounds. There isn’t many tests Jerry lee hasn’t had. No abnormalities were really detected but we all knew he wasn’t right. Many times we treated Jerry Lee with lower fat intestinal moist food, occasional antibiotics, drugs to help with nausea and vomiting, pain medications and we kept his worming up to date. He’d come right initially but before long we’d see him back just flat and listless and basically anorexic. He was a real worry to his owners and to us.

In his wee short life he’s had three anaesthetics and come through them brilliantly. Jerry Lee never complains and honestly is the perfect patient to treat. He’s been under the knife to be neutered, he then had an emergency dash to the afterhours clinic as he suddenly developed a twisted stomach and spleen. Then most

recently I performed exploratory surgery to inspect his stomach, small and large intestines all his abdominal organs, biopsying in particular many sections of stomach, bowel, pancreas and liver. This is where finally we

got a diagnosis of Inflammatory Bowell Disease – aptly called Eosinophilic, Lymphoplasmacytic, diffuse IBD!!!

He’s a true battler and at least we have a diagnosis now. Treatment is complicated, lengthy, costly and it really places an emotional strain on everyone in the family as its very hard seeing your loved pet (and a baby at that), go through at times pain and discomfort. To be hit with IBD as a young pup is very unlucky but Jerry Lee is so totally loved and adored by his family who would do anything for him. New playground equipment for Merivale Reserve only needs $10,000 more to become a reality.

The Merivale Reserve Play-ground Incorporation has raised $31,665 towards the $85,000 to-tal needed to install playground equipment.

All money raised by the group will be matched by the city coun-cil, meaning they only need to raise $42,500.

The group is fronted by Meri-vale mother Charlotte Gray (inset), who hopes to have the playground built at the Merivale Reserve on Rugby St.

She decided to raise the money herself after she was told in Sep-tember last year there was no city council funding to install a play-ground.

Foodstuffs Community Trust, Fendalton New World and the Canterbury Community Trust have each donated $5000.

On the group’s Givealittle page, $11,665 has been raised.

An anonymous $10,000 dona-tion was also received.

Fendalton-Waimairi Commu-nity Board deputy chairman David Cartwright praised Ms Gray for her passion and drive to do a com-

munity project like this.“She saw the need for an age ap-

propriate playground in the area,” he said.

“Good on her for doing this for the community, and with it will come a safer play space for younger children to enjoy.”

Mr Cartwright said the com-munity did not have many places where younger children could play.

He said it would be a great addi-tion to the Merivale area.

▌▌ IN BRIEFOne-way streetsEdgeware Rd between Sherborne and Manchester Sts will be one-way eastbound for about three months. Packe St between Canon and Purchas Sts is one-way north-bound (from city) for about a month. Southbound traffic will be detoured via Canon to Barbadoes and Purchas Sts.

Bridge repairsThe Carlton Mill bridge repairs are under way at the intersection of Harper Ave, Park Tce and Carlton Mill Rd. Two-way traffic remains but reduced lanes on Carlton Mill Rd and Park Tce may cause delays. Extra care is being urged around pedestrians and cyclists. Repairs will take around three months.

Bowler fundingAn application has been made by Taylor Grant for funding from the Fendalton-Waimairi Community Board’s Youth Development Fund towards the cost of participating in the Hong Kong International Bowls Classic from November 7-15. The 20-year-old is a New Zealand representative lawn bowler. This is a prestigious inter-national event which will provide a great opportunity for her to learn as a bowler and develop her game.

Neighbourhood Week The Fendalton-Waimairi Com-munity Board will be looking at all applicants that have applied for Neighbourhood Week funding at its meeting tonight. It will also set up a process for any late applica-tions that may come in.

She recently found a newspa-per in her office from a year ago and the front page headline was ‘local community centre not far away’.

“We all know that things take time and it’s essential to get input and feedback from our community. And a big part of that feedback is loud and clear – get on with it.”

Shirley-Papanui Community Board deputy chairman Aaron Keown said residents were happy with having the transi-tional facility.

He said there had been “over consultation”.

“We are just going around and around in circles,” he said.

City councillor Pauline Cot-ter said it was important to inform the community of each step of the project.

“We have heard that our community wants separate spaces to meet in, maybe a cafe, good car and bike parking and to be as close to the Edgeware shops as possible,” she said.

SARA told Nor’West News it could not comment until after it had discussed it.

Hi Abby, you have just won a nationwide youth style com-petition, how does that feel?

It is so exciting I am just so excited by it all.

What does it mean to you to win this?

It is just so mind-blowing that I could do something like this and I am so excited because it is just the start of my whole career.

Has it not quite sunk in that you have won yet?

No, it really hasn’t be-cause it is so confidential that I have won that I can’t tell anyone so I am trying to keep it to myself. I have known for 10 days now and I have not been able to tell anyone apart from my family.

How hard has that been?

So hard. Everyone comes up to me and asks me like 100 times a day.

How long have you wanted to be involved with fashion?

I have always been really into fashion and styling, but probably over the last two years I have really got into it with my retail job and running my own dress business. Just helping my sisters with their style and also myself getting my own personal style over the past few years made me get into it more.

How hard is it being so involved with fashion but have to wear a school uniform?

(Laughing) It is really exciting the days that I don’t have to wear my school uniform. It is annoying but is a lot less pres-sure.

So you don’t modify it at all?Oh no, my school uniform

is very strict, you know skirt under the knee that whole drill.

What was the most enjoy-able part of it?

Getting to travel all over the country, going to all workshops and having my own model to style was cool.

Also having the whole mall to chose things from for my models to wear. I was living the dream pretty much.

one involved and from the stylists at Westfield, they taught me heaps – it was an amazing experience I am so glad I get to carry it on.

What was the worst part of it?That there were four of us girls

and only one of us could win. All the girls that competed were so deserving to win. I was close to one of the girls, and it was kind of sad that I get everything and she doesn’t get anything. Well they get the experience but it is just hard being friends and competitors knowing that we all wanted it for each other.

So you made some pretty good friends along the way then?

Yeah of course. Do your parents know that

you have won yet?I am allowed to tell immediate

family so yes they know.How do they feel about you

winning?They are so excited, they are

probably more excited than me at the moment because I have to keep it a secret. It is one of their dreams for me as well. They have always wanted me to do some-thing with fashion.

What do your parents do? Are they involved in fashion them-selves?

Oh no, they are not. My dad doesn’t work and my mum works for the health board at the mo-ment. I am the only one in my family who is really into fashion.

So what do you want to do, will you continue on with fash-ion and styling?

I really want to learn how to style everything. I will learn so much from the next year trip-ping around and getting men-tored in the industry. After that I want to take the skills that I have learnt and maybe do styling for TV shows and movies as well as working on my personal style and trying to work my name up in the industry.

Well you have to aim big right?Of course, you have to aim big

to get somewhere.

So you said you have sisters. Do you also have a brother or is it all girls in your family?

I have a brother and four sisters.Are they all as fashionable as

you are?Well they helped me get into

fashion because I was always helping them out, styling them. That really has helped me develop those skills because I have had four of them [sisters] to style. I am the youngest of the family so I styled my older sisters.

Tell me a little bit about your sisters and brother, what do they do?

One of my sisters has just finished high school, one has moved back to New Zealand from Europe, one works for CERA and another works for Ngai Tahu.

So did you all grow up in Christchurch?

Yeah, I have always lived in Christchurch, I live in Papanui.

If you could live anywhere in the world where would it be?

New York!Why New York?Because that is the happening

Adrenalin Forest in Spencerville was hit by the brunt of Thursday’s storm, forcing the owner to close it for up to a week.

The wild weather saw a tree connecting many of the courses uprooted and felled by an “unex-pected tornado”.

The tree connects six of the seven available courses, which has forced owner Jean Caillabet to close Adrenalin Forest until further damage assessments are done.

Fortunately, the tornado struck after the aerial adventure course closed on Thursday, and no one was injured.

Adrenalin Forest’s Facebook page said that the tornado was a “bugger” but they had had worse damage in past storms.

Until then, all bookings have been postponed.

A burger and chips-styled cupcake has wowed a judge in a Cotswold School baking competition.

Children carefully carried their cupcakes to school to enter them into the contest.

Ninety-five children entered for tasting and judged by top chef Andy Cordier.

He had a list of criteria and dutifully tasted a slither from each cupcake as well as marking the presentation, originality, difficulty, balance and taste.

Five-year-old Lucy Mullen’s cupcake was judged best cupcake in the junior school while Sophie Matthews, 8, was judged best cup-cake in the senior school.

Lucy Mullen created two cup-cakes being a rainbow designed with a pot of gold and a turtle design cupcake.

She liked the idea of a rainbow cupcake as it reminded her of the rainbow cake her mum made for her fifth birthday.

A special prize was awarded to nine-year-old Ben Camm whose ‘burger and chips’ cupcake showed extreme creativity and originality.

When asked about his cupcake he said: “I choose this cupcake because I thought no-one else had done it before.

“I cut a cupcake in half for the burger bun and added real sesame seeds and used icing for the cheese.

“The chips are left over cupcake bits from when I cut the cupcake in half.”

Entries for this competition were $1 and the prize money will be donated to Ronald McDonald House.

representatives have been at Cotswold School over the last few weeks teaching the junior school students cricket skills.

Ben McCord and Matt Holstein have been promoting the team sport of cricket and teaching the skills of hitting, catching and throwing to many

schools around Christchurch.Kylee McKibbin, 6, enjoyed

learning the pirate catch which is where you catch the ball with one eye open and the other closed.

Ella Jackson, 6, liked playing snowball tag which involves run-ning around tagging people with the ball.

George Wilson, 5, showed lots of determination when it came his turn to hit the ball and wants to start playing cricket in a team this year.

Overall the pupils really enjoyed learning the skills of cricket and had lots of fun with the Christchurch Metro Cricket representatives.

The winning Burnside Treasury competition team travelled to Wellington where they made a 10-minute slide presentation which was followed by questions from Treasury economists. Teams had to come up with justified economic strategies to address a current issue chosen by Treasury.

Clize Craven and Miku Kiyama won the City & Guilds National Secondary Schools Culinary Competition in Auckland in August. They will now travel to Tahiti to represent New Zealand in the International Culinary Championships in October.

The Senior Chorale travelled to Wellington in August to compete in the New Zealand Chorale Federation Big Sing Competition. The top 24 choirs in the country attended and after three days of intense competition the Senior Chorale were crowned the top high school choir in New Zealand, winning the coveted Platinum Award.

New Zealand School of Music Jazz Festival took place in early August. Burnside’s Big Band, pictured at left, travelled to Wellington to defend their title of the Best Big Band in New Zealand.Not only did they successfully achieve that aim but they also won five individual awards. The senior jazz combo also won their category.

An iconic St Albans business has taken the first step towards its rede-velopment.

Timber and moulding specialists Hardie & Thomson has been in the Edgeware Village for around 106 years.

Hit hard by the February 2011 earthquake, the family-owned busi-ness continued to provide the com-munity with the same service they are known for.

Last week they removed the old hopper system with a crane and diggers.

The removal of the hopper system is a small step towards complete site development which includes a drive

Casey Thomson said they have spe-cific ideas in mind when it comes to the rebuild.

“The site is being developed with sustainability and health and well-being as our core values,” he said.

“The health-based building edu-cation facility will be a major draw card for those wanting to support the true meaning of sustainability.

“We see our exclusive construc-tion materials as key to making rap-id progress in house size chunks.”

Further demolition works will take place in the near future with the new purpose-built facility breaking ground in early 2016.

Countdown Northwood’s Yvonne Millar has made it into the final three for the Checkout Operator of the Year competition.

Ms Millar underwent several rounds of testing and interviews to beat out the rest of the 490 applicants for the chance to take out the title, which will be

awarded at the end of the month.The checkout test involved

finalists scanning 60 items rang-ing from fresh produce, alcohol, meat/deli and chilled foods.

Hidden challenges were placed in the trolley to catch the finalists off-guard including cracked eggs and damaged or open packaging

that competitors had to look for, while engaging with the customer.

The winner will be announced at an awards dinner on Sep-tember 21 and will receive the coveted antique register trophy, a $1000 gift card, and the kudos that comes with being the na-tion’s best checkout operator.

Artist Grant Philip will show Harewood School pupils they don’t need hands to paint.

Mr Philip, 44, has been con-fined to a wheelchair for more than 26 years.

In the summer of 1989, he had a diving accident that left him a tetraplegic.

He paints by holding the brush in his mouth and will demonstrate his technique to the pupils on September 21 at 1.30pm.

Seventy-five pupils will be invited to try mouth painting.

The result is usually hilarious and highly photogenic as young faces concentrate on the difficult task and not surprisingly spread some paint on themselves, the floor and the child next to them.

Mr Philip joined the Mouth and Foot Painting Artists that was founded in 1956 by a group of European artists.

MFPA is a self-help organisation which gives people with disabilities the opportunity to fulfil their creative ambitions while still maintaining financial independence by selectively selling their artworks.

The MFPA was established in New Zealand in 1961 and currently has 22 members around the country.

To become a student member an artist must qualify by paint-ing using a brush held in either their mouth or foot, having lost the use of their hands through an illness or accident.

Student members receive

scholarships for art supplies and tuition.

Once an artist becomes a full member or associate they are guaranteed a salary for life, even if they are unable to continue painting.

Saturday night saw some easy chairs set on fire at the Sign of the Bellbird on the Port Hills. The fire spread into the roof of this structure and Governors Bay fire crew spent ages trying to dismantle the roof which was an ancient and intricate design to put the fire out.

More mindless vandalism casually destroying something that has been with us for 100 years. Those responsible sure make it easy to dislike them.

The Harewood Hockey Club has renewed its lease and will continue calling Nunweek Park its home.

Nunweek has been the spiritual home of Harewood hockey since 1974, with the pur-pose built clubrooms constructed four years later in 1980.

The new lease is for 33 years.Harewood secretary Julie Crake said she

was told the lease was approved.“We get to keep our wee postage stamp

footprint in the lease,” she said.City council staff looked into the club’s fi-

nancial situation, finding that during its last lease it spent at least $34,500 on upgrading, building refurbishment and maintenance.

Staff believed that the club was financially sound.

It has 794 current members including players, financial and life time members.

Membership numbers have remained stable and staff support the new lease being granted.

Fendalton-Waimairi Community Board deputy chairman David Cartwright could see no reason why they would not extend it.

He said Christchurch had a good track re-cord for producing top hockey players, and for that to continue the grassroots had to be looked after.

“You just have to look at our track and field guys and what the loss of facilities have done to them, we can see the need to nur-ture these clubs.”

Rangi Ruru Girls’ School first XI hockey team won the Federation Cup in a nail-biting final in Tauranga.

Taking on St Margaret’s College, the winning goal came from cap-tain Charlotte Arthur in the final stages of extra time.

The sides were locked at 0-0 after 60 minutes.

The current Porritt Cup cham-pions, Rangi Ruru topped their pool and had to defeat the School Premier League champions, Villa Maria to make it to the final.

The accolades continued after the game for Arthur who was also named the team’s MVP and was also the tournament’s leading point scorer.

Rangi Ruru’s director of sport Jo Fogarty said the team showed real

grit and determination in defence to take the win.

“The game was very in-tense. Heading into extra time having faced a substantial number of penalty corners, the girls knew they had to switch their focus to attack in order to get the ball in the net,” Ms Fogarty said.

Rangi Ruru has been the top Christchurch schoolgirls’ hockey team in the Federation Cup for four out of the last five years.

Coaches John Radovonich and Rachel McCann were confident that this year they had the squad to make the finals again after miss-ing out last year.

“I knew we had the team to win it but that it would take a whole team effort. They produced that today and we’re thrilled,” Miss McCann said.

Rangi brings home Federation Cup

Cobham Intermediate pupil William Taylor picked up a come-from-behind cross-country gold at the Association of Intermediate and Middle Schools Games in Tauranga.

The year 8 runner overtook Hutt International Boys’ Finn Seeds in a sprint-finish down the home straight, after Seeds led most of the way.

Taylor said he didn’t know how he won the 3km race at the AIMS Games which has drawn more than 8000 athletes from around the country.

“I didn’t really have much energy, so I thought he [Seeds] would’ve taken it,” Taylor said.

He confessed he didn’t really have a strategy but tried to not let the front-runner get too ahead.

“Every time I got to a hill, I just tried to sprint hard up it to try and catch up,” he said.

The tactic paid off as he crossed the line in 10min 24sec.  

Seeds finished the race with a time of 10min 28sec.

Taylor said cross-country is his main sport as he enjoys running. 

He trains three times a week with a high school in Christ-church, saying it’s “definitely chal-lenging” training and competing against older people.

The cross-country is one of 19 sporting codes at this year’s AIMS Games.  

Taylor’s week is not finished just yet, as he now joins his friends to partake in the AIMS Games hockey competition.

Heaton Normal Intermediate runner Rosa Blake picked up silver in the year 7 girls’ race, only beaten by a record-setting run by Tauranga Rudolph Steiner runner Maia Flint.

Flint led from beginning to end in the opening race, finishing the tough 3km Waipuna Park course in 11min 25sec.

Blake was 18sec behind, with Isabella Richardson from St Cuthbert’s College third.

Christchurch Boys’ High School held its first ever day boy’s versus boarders game of rugby league.

The student-driven game was a way for them to have a game of league and blow off some steam.

Headmaster Nic Hill said it was a great way to have a bit of friendly rivalry between the two.

“It was great to see these guys making big, big tackles with a huge smile on their face while doing it,” he said.

The day boy’s managed to over-come the boarders 32-16.

Josh has earned himself the chance to follow in the footsteps of Boys’ High old boys, and All Blacks, such as Colin Slade, Aaron Mauger, Andrew Mehrtens and Daniel Carter.

Josh has an opportunity to break into the

international rugby scene, as his name was included in a 53-man development camp, that trained in Palmerston North over the weekend.

The camp was picked by national selectors over the course of the season, to determine both the New Zealand schools and the Barbarians schools sides.

If selected for either team, Josh and his side will play the other New Zea-land team this Saturday.

After that, both teams will travel to Brisbane to

play two Australian schools teams, and a Samoan schools team at the end of the month.

Josh is one of six Canta-brians to be picked for the development camp.

Raymond Nu’u and Har-rison Allan of St Andrew’s College and William Tucker of St Bede’s College attended the camp. Tom Christie and Brodie McAli-ster of Shirley Boys’ High School were also selected.

The teams’ selectors will announce the squads later today.

ROASTED CAULIFLOWER CHEESE — Serves 6I made this dairy-free cheese sauce with diluted coconut milk.

1 medium head cauliflower 2 tbsp olive oil freshly ground black pepper Cheese Sauce: ½ cup Angel Food Cheesey Sauce Mix; 2½ cups rice, soy or coconut milk Topping: 2 tbsp capers, rinsed and drained; 1 tbsp oregano leaves

Preheat the oven to 220 deg C. Trim the cauli of its major leaves. Cut the base so the cauli sits flat. Place in a large microwave-proof bowl with 2 tablespoons of water. Cover and microwave on high for 2 minutes. Remove and place in a small baking dish. Drizzle with the olive oil. Sprinkle

with black pepper. Bake for about 50 minutes or until tender.

Meanwhile, prepare the sauce. Place the dry cheese sauce mixture in a micro-wave-proof bowl. Gradually, whisk in the dairy-free milk, until smooth. Cook in the mi-crowave for about 3 minutes, until thickened. Stir every minute. To serve, drizzle a little of the sauce in lines over the cauli letting it form a pool in the baking dish. Garnish with capers and oregano leaves.

SEAFOOD PIE WITH KUMARA CRISP TOPPING — Serves 2

Sauce: 1 tbsp olive oil 1 medium onion, diced ½ cup each: diced fennel bulb, diced carrot 1-2 shakes Moroccan spice blend 2 tbsp plain flour 1 cup fish stock

Seafood: 100g skinned and boned white fish fillets 6 each of squid rings, large shelled raw prawns 50g smoked salmon, sliced Topping: 50g Proper Kumara Crisps

Heat the oil on medium and saute the onion until softened. Add the fennel

and carrot and cook until slightly softened.

Add the Moroccan seasoning and stir in the flour. Slowly pour in the stock, stirring, until thickened. Add the seafood and heat gently until cooked. Pour into two ramekins. Place the crisps on top, standing them on their edges.

GLUTEN-FREE APPLE CAKE

1 cup brown sugar 2 large eggs 3/4 cup canola oil 1 tsp vanilla extract ½ cup each: gluten-free flour, Uncle Joe’s Walnut Flour; ½ tsp salt 1 teaspoon each: baking soda, baking powder,

ground cinnamon 1 cup grated apple ½ cup craisins

Preheat oven to 180 deg C. Lightly oil a 20cm round cake pan and line the base with baking paper. Cream the sugar and eggs in a large mixing bowl. Beat in oil and vanilla extract, until smooth.

Combine dry

ingredients and sift into wet ingredients. Stir in grated apple and craisins. Pour into prepared pan. Bake for about 40 minutes or until a skewer inserted in the centre comes out clean. Cool on a wire rack.

Serve topped with cream cheese icing or for a dairy-free cake, dust with icing sugar.

RECIPESTOFFEE & POTATOCRISPS VANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.

4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4 meringue nests, optionalToffee: 1/2 cup sugar1/2 cup water

Refreeze the scoops oficecream. When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.

To make the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.

Stir to dissolve sugar.Continue microwaving for 3-4minutes until liquid is lightgolden. Remove — the toffeewill continue to colour onstanding.

Remove icecream fromfreezer. Place in meringuenests, if using. Drizzle withtoffee. Serve immediately.

Serves 4.

CHOCOLATE POTATOTRUFFLESThe mashed potato must befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.

1 cup dark chocolate chips1/2 cup cold cooked mashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting

Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir into mashed potatovery well.Add vanilla essence and stir wellagain. The mixture should besmooth. Chill for 30 minutes.

Cut ginger into thirds orquarters. Take a tablespoon ofpotato mixture and roll around apiece of ginger.

Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.

Can be stored in fridge for upto one week.

Makes 16.

POTATO & SQUIDSALADThis is based on a PetaMathias recipe that she will bedemonstrating at theChristchurch Food Show, April4-6.

400g waxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbsp white-wine vinegarFlaky sea saltFreshly ground black pepperto taste

Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.

Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6 minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.

Heat a little of the olive oil in afrying pan. Add diced chilli.

Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.

Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.

Serves 8 as a starter.

GLUTEN-FREEPOTATO PASTRY450g cooked warm mashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten

Place warm mashed potato andbutter in a large bowl and mixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand to mix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30 minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

Makes 800g.
