ANZAC DAY PARADEThe Anzac Parade on April 25 will see several roads closed for 1hr 15min. Papanui Rd from Frank St to Harewood Rd, Main North Rd from Langdons Rd to Harewood Rd and St James Ave from Dalriada St to Harewood Rd will be closed for the parade. The closures will start at 9am and end about 10.15am.

FUNDING APPLICATIONThe Anglican Parish of Burnside-Harewood has applied for $20,000 from the Fendalton-Waimairi Community Board discretionary response fund to construct a car park in its grounds in Harewood. The new car park is required as changes to the road in the area means most on-street parking for the church will be lost. The church became aware they would lose its on-street parking in April last year. The project is estimated to cost $70,000. The church is used by around 40 parishioners on Sundays and also the Antioch Orthodox Church which lost its premises in the February 2011 earthquake. The Papanui Returned and Services Association has also applied for $4655 from the same fund for its annual Anzac Day celebrations.

Authorities are investigating the dumping of materials containing asbestos on a St Albans section.

The material containing the asbestos is not harmful to the public but is of concern how it got there and who dumped it.

Residents complained about the asbestos contamination in the materials to Environment Canterbury’s pollution hotline.

They say the materials were dumped on an empty site on Mersey St on more than one occasion.

A waste and environmental management team, is investigat-ing the site.

ECan’s project manager of earthquake waste James Tricker said: “The top priority for this site currently is ensuring that the small amount of asbestos

on site is removed safely and correctly.”

The removal of the material is being done in conjunction with the site’s owner and the asbestos is not fibrous and is not being handled.

“While the dumping of such material is in contravention of the Resource Management Act, the risk to human health of asbestos sheeting on site is minimal,” Mr Tricker said.

He could not comment further until the investigation has fin-ished.

“It is important to work out how it got there and who by . . . we can’t have people dumping waste

in suburban sections,” he said.Breaches of the RMA can

NOW OPEN: Merivale mother Charlotte Gray cuts the ribbon opening the new playground on Rugby St. Around 100 people gathered for the opening and helped pitch in to plant flowers, trees and shrubs around the play equipment. The playground went from being a dream to becoming a reality after Ms Gray fundraised about $42,000, with the city council matching dollar-for-dollar. She wanted a park closer to the area for children. There was a barbecue, bouncy castle and face painting at the opening. The new equipment includes a basket swing, merry-go-round and a climbing ladder.

Smoke alarms should be like car seat belts.

Nobody thinks twice about clicking tight every time they get into a car. Likewise working smoke alarms should be an abso-lute expectation in every home.

Too many of us use the warn-ing cheep of the alarm to tell us it’s time to change batteries. There are good reasons not to do this. If it happens while you’re away it’s possible the battery will be completely dead by the time you return. You’ll be living with the mistaken belief that the alarm will warn you of fire.

If you’re home when it hap-pens I can almost guarantee it

will occur at about 3am. Which means the only way you’ll get back to sleep will be to pull the alarm down and remove the bat-tery. You’re now unprotected. And will remain so for as long as it takes you to buy a new battery and reinstate the alarm.

Using this weekend every year to ensure your smoke alarm bat-teries are changed, or if you have alarms with 10-year batteries, that they are cleaned with the brush accessory on your vacuum cleaner, creates a habit of a life-time. More likely a longer life-time too.

PLANNED WORKSFletcher in conjunction with Stronger Christchurch Infrastructure Rebuild Team are repairing sections of the earthquake-damaged infrastructure in the wider St Albans and Mairehau area. Work on Warrington St between Barbadoes St and Francis Ave has began to relay a section of the earthquake-damaged wastewater main. It is expected the work will take about five weeks to complete. All work is subject to favourable weather and on-site conditions. A temporary one-way system for eastbound traffic only will be in place on Warrington St, between Barbadoes St and Francis Ave for the duration of the work.

TWO-VEHICLE CRASHThree people were taken to Christchurch Hospital on Wednesday after a two vehicle crash in St Albans. The crash happened at the intersection of Purchas and Sherborne Sts around 6.30pm. St John sent an ambulance to the scene and took two children with minor injuries and a woman in her 50s with serious injuries to hospital. All those injured and taken to hospital were in the same car. Meanwhile, two people were taken to Christchurch Hospital with moderate injuries after a motorcycle and bicycle crashed in Strowan on Thursday. Two ambulances were sent to the scene on Heaton St around 4.30pm. A man and a woman were taken to hospital.

The merger of two polytechnics now has a name, the Ara Institute of Canterbury.

The new name was announced last week after it was decided in November last year that Aoraki Polytechnic and the Christchurch Polytechnic Institute of Technology would merge.

Ara, meaning arise or path-way in Maori, is the next stage in the over 200 year combined history of CPIT and Aoraki Polytechnic.

Underneath the new insti-tute’s name is the Maori phrase ‘ara rau, taumata rau’, which means ‘many pathways, many opportuni-ties’.

The Ara logo represents an upward journey of learning, while also showing Maori tukutuku panelling, which was traditionally used to decorate meeting houses.

A plan has been put in place to extend the range of

programmes and services and become a destination for national and international students.

Both institutes have been in the Canterbury and Waitaki region for more than 100 years each.

working with industry partners and our communities to adapt to the needs of the region and of modern learners.

“Our new name signals we have stepped into an exciting new future together.”

Hi Mike, tell me a little bit about yourself and your family.

Well I’m 53-years-old. I’m married to Robyn, we’re about to have our 29th anniversary, she’s a medical scientist. I always say she’s the bright one. I have a Bachelor of Commerce and Accounting.

I graduated from Canterbury University and the Christchurch Teachers College. I went on to teach at Waimea College, as well as St Bede’s College and Linwood High which is now Linwood College.

I travelled overseas and backpacked around the Americas with my wife, then got a Bachelor of Theology in Auckland, and that was my training to become a minister. I actually grew up as a Roman Catholic and went to Xavier College, but later on became

a Baptist before becoming Anglican.

Wow that’s quite a background. And do you have any children?

Yes, we have three kids, Matthew our eldest is 25, Simon is 19, and Emily is 11. Matthew is a product manager at an electronics firm, Simon is doing his second year studying chemistry at Canterbury University, and Emily is at Banks Avenue School. I also love cycling, going to the gym and having fun with the family.

We also have one grandchild, Matthew and his partner Paris have a boy called Jack, who is three and he is just beautiful. He loves going to pre-school and kindy, loves all the boys stuff, all the trucks and trees, he’s just got heaps of energy.

Tell me about the Wider Earthquake Communities

Action Network, how did it come about?

It was started by three people in the community, myself as one of lead facilitators. Basi-cally we were there to speak on behalf of people strug-gling with their house being in the red zone, or other land issues including settlements with insurers. It actu-ally ended up becoming a quite strong activist group, and any negotiations we tried to have were basi-cally shut down. So in the end they forced the group to protest more to get people’s issues heard.

How successful were those protests?

We had varying success, in the

early days we showed some in-surance companies up for what they were doing and what they really were. Some of the things they were offering was just

wrong. The Govern-ment seemed to be happy to sit

back and Can-terbury be devastated. That really concerned many of us who were

looking to help those in the com-

munities.So

do you think it’s

a lot better today?

No.

Even as we look around today. (Earthquake Minister) Gerry Brownlee talks about the Margaret Mahy Family Playground more than anything else when he is talking about Christchurch’s success. It’s his No 1 defence for questions on the recovery. When you talk to homeowners you realise there are still thousands and thousands who are still locked in insurance battles and fighting for a fair deal. It was the reason WeCan was formed, to give a voice to those who couldn’t.

And what was your particular role in the whole setup?

I was the media spokesman throughout that time, through two and a half years. During that time I was working full time as a counsellor and a reverend as well. So at the start of 2014 I kind of realised it was time to leave WeCan. From there I

decided to focus more on the insurance companies

and helping others get through their

battles, and only wanted fairness for both sides.

a policy would honour, only what a policy offered. We just looked for a fair honouring. We weren’t trying to get people rich when they were only entitled to so much, and we’ve found that the insurance companies have respected that. There are no guiding rules to ensure insur-ance companies treat people fairly, which is ridiculous to be honest.

Hasn’t the recovery gone on long enough already?

Absolutely it has. The nature of this recovery for insurance companies is about spinning a line to get through the year, spreading the recovery over 20 years. To have private homeowners waiting for that long is plain disgraceful, it’s not about people it’s about ensuring the Government’s books are kept healthy. I just find it really interesting that we can paint all kinds of artwork throughout the city but can’t have all of our people in houses.

Do you have any spare time at all?

Yes of course! I’m a school counsellor at Middleton Grange School. I really enjoy working

one-on-one with adolescents and seeing them grow. Getting an understanding of what they’re going through is really impor-tant. I think I have the skills to help them, and I really enjoy seeing them feel empowered. I mean a lot of them are still finding themselves in life and gaining an awareness about the world around them, so finding their way in life can be quite

difficult. I’ve been through a lot in my own life so I can kind of pass that wisdom on in a way.

I can imagine in a job like that, you’d meet a lot of interesting people, anyone stand out in particular?

There are a few that kind of stand out. I remember I was helping some boys, one I seem to remember was at the age of nine, and he was caught up in

his parents’ divorce. He was really quite an angry young man, and was really struggling with life in general, with his behaviour spinning out of control. In one session I asked him to paint a picture, and he painted what he said he always wanted to have, which was a Holden car and a girlfriend on his arm.

That’s very cute.

Yes, it was. After he left school he sent me a picture on Facebook of him and his girlfriend and his Ford car which he had saved up to get, and he said he was going to get a Holden. I thought that was amazing. I’ve been involved with counselling since 1995, when I helped start up the Delta Community Support Trust.

I’m sure on the other side of that spectrum though, there would be times where someone is asking for help and you wouldn’t know how to help them?

It can be quite disheartening if you find a student that you can’t work out the thing that they are telling you is wrong. And that can stem from a whole number of things. It’s very hard even for a youth mental health worker, because they can also really struggle to help someone like that. It can be very sad to see teens on medication for mental illnesses as well. The stress of the quakes has been immense for some kids. Especially those who are coming from homes that are still unsettled. We’ll see that for many years to come I think.

Redwood resident Christopher Boulton was named apprentice of the year at the Audi Twin Cup.

He took out the award after sitting through in-tense theory and practical examinations.

Mr Boulton was one of three Christchurch men to win at the cup and now the whole team will now head to Albufeira, Portugal to represent New Zealand at the Audi Twin Cup World Champion-ships in September.

The final assessments, held at Audi New Zealand headquarters in Auckland, brought together the top technical and service experts from around New Zealand.

The finalists competed in a series of rigorous, timed tests, processes and workmanship to best demonstrate their expertise in theory and practice.

Former Audi Twin Cup first place winner and Archibalds employee, Craig Grange, once again

placed first in the service category this year while Jeremy Rowe, also of Archibalds, placed first in the technical category.

“After sales competitions such as the Audi Twin Cup are so important for championing top service both in the workshop and at the service counter,” Mr Grange said.

Team Audi New Zea-land will compete with their equivalents from ap-proximately 40 countries in the international final.

TOP CLASS: Jeremy Rowe, Christopher Boulton and Craig Grange have all won their respected categories at this years Audi Twin Cup.

Top honours for techniciansSt Andrew’s College has opened its new Gym 2 and Askin Pipe Band Centre facilities.

Former Rector and gold medal winning Black Stick Olympian, Barry Maister officiated at the opening celebrations, which took place recently.

The new Askin Pipe Band Centre, located close to the new gymnasium was also officially opened at the ceremony.

The purpose-built facilities are home to St Andrew’s highly successful pipe bands, which recently won three of the six national titles on offer at the 2016 na-tional championships in Feilding. The St Andrew’s pipe band also won the juvenile world championships title in 2013.

A large crowd of parents and old colle-gians, including some of St Andrew’s for-mer sporting greats, were in attendance.

The college has a long and proud his-tory of top regional and national success

and also honoured its 88 New Zealand sports representatives during the event. Sporting stars such as Henry Nicholls, Amiria Marsh, Alex Wyllie and Robbie Manson feature on a special centenary sports wall, which is displayed in the new gymnasium.

Rector Christine Leighton said the occasion marked “another significant milestone” in the life of St Andrew’s College.

“We are delighted to open these state-of-the-art facilities, which will cater to the needs of our students for decades to come,” she said.

The new gymnasium has been built to support a growing roll, which has reached 1450 students, she said. It will also enhance the college’s extensive sports curriculum, along with high performance programmes for its most promising young athletes, she said.

Redwood Playcentre celebrated the opening of its new fort and Playcentre Awareness Week with five days of ‘good, clean fun’.

Families gathered at Redwood Playcentre for a week of sensory messy play sessions, but the real highlight was the opening of their new fort space.

The old fort was tired and needing frequent repairs so local company Aridium Designs were called in to assist with a new design and build.

The new fort features sustain-able pine ply spray painted with

bright koru graphics and sits atop a grassy hill.

Redwood Playcentre co-president Erana Rattray said: “The tamariki love the new fort, it’s such a change from what we had and it’s a real statement piece for our centre.”

The whole thing was made and installed within a week just in time for the beginning of Playcentre Awareness Week which marked 75 years since the first playcentre opened.

The project was supported by funding from Z’s ‘Good in the Hood’ programme with Z

Energy representative Anton Hutton cutting the ribbon at the official opening.

The excited crowd which gathered for the unveiling and celebratory barbecue were not disappointed and the kids were all eager to get up into their new fort.

An award-winning landscape designer and television personality Xanthe White (right) will hold a workshop with the KidsFirst Sunbeam Kindergarten in St Albans.

The kindergarten won one of two workshops offered through the Daltons Sunflowers in Kindergartens project.

More than 12,800 budding preschoolers in kindergartens around New Zealand participated in the project to

grow the tallest and widest sunflower and learn about gardening along the way.

Each kindergarten also went into a draw to win one of two workshops with Ms White.

They will also do some hands-on activities such as making newspaper pots to take home and plant, and some indoor vegetable root gardens so the children can see how a plant’s root system grows.

hundreds of people attended to spend the day supporting the school, enjoy the sunshine and listen to the live music on hand.

Time and again, in spite of knowing that putting all your eggs in one basket is a bad idea, investors lose money by chasing high returns or taking a gamble on a supposed ‘sure bet’.

In the current environment of low returns, it is very tempting to look for opportunities to increase returns. This particularly applies to retirees who are struggling to make ends meet, having seen their interest income fall to about one third of what it was prior to the Global Financial Crisis.

Investment ‘baskets’ operate at two levels. At the highest level is the split between different investment types (asset classes), such as cash, fixed interest investments, property and shares. At the next level, there are specific investments such as individual bonds, properties or shares which fill each of the baskets.

Investors who select a number of specific investments in just one asset class, such as fixed

interest, are in effect putting all their eggs in one basket.

The classic example of this is investors who spread their money across several finance companies in the belief that this would reduce investment risk. There is a key difference between investment and speculation.

A speculator is prepared to take high risks for the possibility of extraordinary returns while an investor seeks a balance between risk and return for growth of capital in the long term. These are exactly what diversification provides.

It is difficult to predict which asset classes will provide the

best returns in the short term. Chasing short-term returns by

trying to pick winners almost invariably leads to a poor outcome.

A safer approach is to spread funds into different baskets knowing that some will perform better than others in the short term but there will be balance

ahead and plan for futuresuccess. Strategic planning isan essential component ofsuccessful business and I havetwo plans— one formyself andone for the business— both areintertwined.Formany of us, our

businesses are a reflection ofourselves, so it makes sensethat whenwe plan for ourbusiness(es), they reflect ourown goals and ambitions.So, what are you going to

achieve for the remainder ofthis year?What are yourtargets? Are you going to letlife happen or take astructured approach?It’s important that you set

goals for yourself and yourbusiness that energise,motivate, aremeasurable andattainable. However, you

shouldmake sure that you alsoset some stretch targets.My personal plan includes

revampingmy fitness and hasmany stretches . . . and stretchtargets! I have resolved toexercise at least three times aweek. I did start this columnwith the ‘‘time flies’’ statement,but it seems that in that fitnesstime, I can create an ability toslow time significantly or stopit entirely.So I am going to dust off the

previously unused stepmachine at home. And I will seta goal of ‘‘stepping’’ aparticular distance each day.Given that the garage isn’twarm, there is incentive to getmotivated.The stretch target is to

make this activity daily. OK,not much of a stretch, but rightnow I am about as fit as a BigMac is nutritious.

The key to stretch targets isthat they do just that; theystretch you to new levels ofperformance and, likemuscleswhen you exercise, you andyour business develop newstrengths as you achieve them.I know it won’t be easy—

particularly starting fromscratch— but I want to beexercising every day if I can. Sowhat do you dowhen thingsget toughwhen pursuing agoal? Instead of giving up, youget energised. And although itis a stretch, I believe it isattainable.Oncemy fitness returns, it

will be a goal achieved, and Iwill have developedmoreconfidence andwill feel bettertoo.It’s the same for goal setting

Hawkes Bay has a new hidden gem. It’s sits among vineyards, is bordered by the Tukituki River and has views that you just can’t get enough of.

It’s Craggy Range’s premier winery accommodation, the Craggy Range Lodge, located at Giants Winery in Hawkes Bay.

This place is just stunning. The understated luxury will

have you at ease the moment you step through the door.

The decor is subtle and warm, but what I really liked the most about it was there were no “pops” of colour.

It is simply gorgeous. The interior was designed by

Andrew Melville. His brief from the owners of Craggy Range, the Peabody family, was to embrace a classic country look and feel while ensuring a feeling

of luxury ensued throughout the lodge.

He has achieved this with subtle colours, beautiful fabrics and furniture that invites you to sit.

However, as the owner’s daughter and director Mary- Jeanne Hutchinson said the hero of the lodge is the views.

Where ever you are in this

lodge the views are breathtaking. Te Mata Peak towers out front, the Tukituki Rivers runs behind and in between is an in-ground pool that sits high above the val-ley looking over immaculately landscaped garden in lush-green surroundings.

Local architect Simon Clark-son made change to the layout making it more spacious with

cathedral ceilings and expansive hallways.

The lodge has four luxurious king bedrooms, each with en-suite, spacious open-plan living and chef’s kitchen. When I say chef’s kitchen I don’t just mean it’s fit for a chef, I mean a chef will come and cook for you.

If you decide you’d like to rustle up a little something for

yourself, the fridge is stocked with local produce including cheese, mushrooms and eggs, and you can help yourself from the huge vegetable garden.

During their stay guests will have access to an impressive wine selection including large format and rare library wines. A Craggy Range sommelier will take guests through a person-alised wine tasting as part of the experience. I wanted to move in for good.

There’s a spacious courtyard with open fire and inviting soft furnishings to relax on and enjoy a glass of wine after a day exploring Hawkes Bay.

standard treatment usedafter the removal of atumour from a breast, evenwith those who are deemed

UK-funded clinical trialexamined more than 2000women, aged 50 or older,who had early breast cancerwith a low risk of returning.The study, presented at

the European Breast CancerConference in Amsterdam,split the women into threegroups following breast-conserving surgery: one hadfull dose radiotherapy to thewhole breast, the currentstandard treatment; thesecond had the full dose ofradiotherapy to the tumourarea, with a lower dose torest of the breast; and thethird group received the fulldose to the area where the

Last year I discovered DIY bacon. Making your own bacon is surprisingly easy, and the good thing is you know exactly what is in each delicious mouthful.

Simply sensational servingsROASTED BACON WRAPPED LITTLE GEMS If the bacon rashers are very narrow, you may need 6 whole streaky rashers. The bacon and herb covering is also great wrapped around courgettes.

INGREDIENTS 1 little gem squash 3 rashers streaky bacon 6 large sprigs each: rosemary, thyme, parsley freshly ground salt and pepper to taste 2 tbsp olive oil 4-5 tbsp maple syrup

METHOD Preheat the oven to 190 deg C. Cut the squash into 6 wedges. Cut each rasher of bacon in half lengthwise.

Take 1 sprig of each herb and wrap it with a bacon strip around the gem. Place in a roasting pan. Repeat. Season then drizzle with olive oil. Roast for 10 minutes, turn each wedge over and continue roasting until the gem is cooked, about 20 minutes.

Serve drizzled with maple syrup. – Serves 4-6

POT-ROASTED APRICOT & MANGO PORK – Serves 6The pork roast should be neatly tied and the skin scored. I used Barker’s Apricot & Mango sauce in which to cook the roast.

INGREDIENTS 2 tbsp olive oil 1.1kg piece boneless pork roast shoulder freshly ground salt and pepper to taste

¾ cup apricot & mango sauce

METHOD Preheat the oven to 160 deg C. Heat the oil in a heavy-based saucepan suitable for the hob and oven.

Place the pork in the pan skin-side down. Cook until the skin is lightly coloured, turning often. Place the meat flesh-side down. Season. Pour the sauce over. Cover with a lid. Place in the oven and cook for 1½-2 hours, until tender.

fashion accessory fit for royalty?Native to South America,

potatoes were first cultivated bythe Incas about 200BC. The jewelin the crownwas the Peruvianpurple potato— royally purpleinside and out.When harvested,theywere kept exclusively forthe Inca kings.And in 18th-century France,

Marie Antoinette made aWorldofWearable Art-type fashionstatement by parading aroundthe countryside wearing potatoblossoms on her expensivedresses.Whenmost of us think of

packet ‘‘chips’’ we tend to thinkof fatty, salty occasional treats.But I was recently pleasantly

surprised to discover amoreishrange of proper chips— 100 percent natural, gluten-free, GMO-free and hand-cooked in high-oleic sunflower oil. Ned andMina Smith, the expatriateAmerican couple who run thefamily-style Proper Crispsoperation in Nelson, brandedtheir delights ‘‘crisps’’ todistinguish them frommass-produced ‘‘chips’’. And they are

different. I just love themcrushed and sprinkled overicecream. The rapport between

the salty tang of the chips andthe sweetness of the icecream isa taste treat.The potato is certainly

common and a staple worldwide.They are cheap, hardy and easyto grow, and are high in starch,protein and vitamins. They arealso versatile.We all love thetraditional potato favourites butthis week I’m serving upsomething funky— potatoeswith icecream, in chocolatetruffles, with squid and in agluten-free pastry.

RECIPESTOFFEE&POTATOCRISPSVANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.

4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4meringue nests, optionalToffee: 1/2 cup sugar1/2 cupwater

Refreeze the scoops oficecream.When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.

Tomake the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.

Stir to dissolve sugar.Continuemicrowaving for 3-4minutes until liquid is lightgolden. Remove— the toffeewill continue to colour onstanding.

Remove icecream fromfreezer. Place inmeringuenests, if using. Drizzle withtoffee. Serve immediately.

Serves 4.

CHOCOLATE POTATOTRUFFLESThemashed potatomust befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.

1 cup dark chocolate chips1/2 cup cold cookedmashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting

Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir intomashed potatovery well.Add vanilla essence and stir wellagain. Themixture should besmooth. Chill for 30minutes.

Cut ginger into thirds orquarters. Take a tablespoon ofpotatomixture and roll around apiece of ginger.

Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.

Can be stored in fridge for upto one week.

Makes 16.

POTATO&SQUIDSALADThis is based on a PetaMathias recipe that shewill bedemonstrating at theChristchurch Food Show, April4-6.

400gwaxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbspwhite-wine vinegarFlaky sea saltFreshly ground black pepperto taste

Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.

Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.

Heat a little of the olive oil in afrying pan. Add diced chilli.

Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.

Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.

Serves 8 as a starter.

GLUTEN-FREEPOTATOPASTRY450g cookedwarmmashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten

Place warmmashed potato andbutter in a large bowl andmixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand tomix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

Makes 800g.

TOMAKEyour ownbacon you need a one-kilogram piece of good-quality, bonelessmeaty

belly pork, preferably free-range. Ask your butcher to cut itfor you.Combine some flavours such

as a half cup each of juniperberries and black peppercorns, agood sprig of rosemary and fourto six crumbled bay leaves. (Youcan also add fennel seeds orcinnamon if youwish.)Grind the juniper berries and

peppercorns until coarselymixed, then add the herbs, 500grams of plain rock or koshersalt and half a cup of brownsugar. Rub themixture firmlyinto the pork, ensuring everycrack and cranny is well coated.This mixture will draw themoisture out of themeat so itwill ‘‘cure’’ and keep for longer.Place themeat in a plastic

container and cover with a lid.Refrigerate for 24 hours. Turnthemeat over, cover again andrefrigerate for three to five days,turning each day.Wash undercold water then pat dry.Place on a rack on a tray in

the refrigerator for one day todry out. Brushwith whitevinegar to preventmould fromgrowing.Wrap inmuslin or aclean, fine tea towel andrefrigerate. The bacon shouldkeep for about three to fourweeks. Rinse themuslin invinegar once a week.Now, enjoy some of my

favourite bacon and porkrecipes.

METHOD

Preheat the oven to 160C. Pat thepork dry with paper towels andseason.

Complementary medicine is becoming increasingly sought after in New Zealand as people become aware of the many

different methods of treating pain and ill health that are available here.

Christchurch-based Chinese health practitioner Lan Xiao has developed a method of treatment, which she says has as an immediate affect on a wide variety of pains and health conditions. It is known as ‘acupuncture without needles’.

Lan describes it as being similar to reflexology in that the problem area on the body is determined through pressure, but is much more accurate.

Trained as a medical practitioner in China, Lan came to New Zealand in 1992 and began practising acupuncture in 1995. From that discipline she created her acupuncture without needles, and uses it to treat people of all ages with many different types of pain in all parts of the body. This can include arthritic pain, MS, and pain from injury.

“For example, the treatment has been very successful for people who have painful joints caused by arthritis,” Lan says.

Acupuncture without needles is also effective in restoring energy levels,

she says.“As people age their energy is reduced,

and this can lead to other health problems. The acupuncture without needles treatment is like the body’s battery being charged up again, so their energy levels are restored, which in turn helps overcome their health problems.”

Lan also uses it to treat depression and anxiety, and says it can help with addiction problems as well.

“After the treatment the person has no cravings – because it treats the cause of the addiction.”

She says the results are immediate, though people may need several treatments, depending on the extent of their health problem, and while it is slightly painful for few moments, everyone can tolerate it.
