Flood-wary St Albans residents want new culverts.

Edgeware Rd residents have asked the city council for the re-placement of culverts at St Albans Creek on Hills Rd, Edgeware Rd and Champion St, in a bid to lessen flooding.

Six Shirley Boys’ High School students took the trip of a lifetime in a plane used to transport people to Antarctica, as part of a VIP Antarctica Day experience prize.

The year 12 geography stu-dents won the trip after taking part in a NZ IceFest competi-tion, where they had to research an Antarctic topic and present it through social media.

Students Josh Wildy, Adam Koch, Jake Chalklen, Harrison Allen, Patrick Rodger and Jor-dan Kahika were chosen, as well as one of their teachers.

On the day, two camera crews, 26 students, one teacher and three Royal New Zealand Air Force crew were packed into the cargo hold of the RNZAF C130 Hercules plane.

There were no windows to look out of, so take-off was a surprise.

But after a minute of climb-ing, the cargo doors were opened and the students were able to look down on Christch-urch below, and visit the cockpit to see out the pilot’s office window.

All the students who experi-

enced the flight were left in awe.

Through the experience the students were also able to get up close to the US Air Force Globe Master, one of the largest planes in the world.

They also had a special tour of

NZ IceFest in Cathedral Square, a guided tour of the Interna-tional Antarctic Centre tourist attraction and a behind the scenes look at Antarctica New Zealand, the Government agency in charge of all New Zealand’s involvement with Antarctica.

board the Stronger Christchurch Infrastructure Rebuild Team (SCIRT) repairs would resume, after being put on hold while the Dudley Stream review was in progress.

The board was reminded that SCIRT repairs were ‘like for like’ so it was unlikely that any chang-es to the current culverts would be instigated.

At the meeting, the board de-cided to consider regular mainte-nance for the culverts, considering the ‘whole of life cost’ of repair.

Mr Pengelly has argued that when it floods, the size of the culverts meant the issue would only continue .

“St Albans Creek is attributed to Dudley Creek. The culvert on the corner of Edgeware Rd and Champion St – that’s too small to cope with flooding. When it

floods it fills with silt. So why not just replace them both?” he said.

Mr Pengelly said the creek was hidden from public view, so people did not realise the impor-tance of it.

“Because it goes through a lot of private properties, the only places you see St Albans creek is if you have a beer out the back in Merivale, or a walk through English park,” he said.

Shirley-Papanui community

board member, Jo Byrne, said there were a lot of people affect-ed in the areal, but realised it was a city-wide issue.

“I think the flooding issues in Christchurch are so wide-spread and unfortunately we need to prioritise with an overall plan for Christchurch, not just one area,” she said.

Mr Pengelly said the area should be included in the Land Drainage Recovery Programme.

A story from the custodian of the St Paul’s cemetery, Julian Dent (also one of the cemetery tour guides). The Westenra Grave: On one side is Derrick Westenra, the great uncle of Hayley Westenra. Derrick received the Distinguished Flying Cross award and Bar, flying for the Bomber Command for most of World War 2.

On the other side of the tomb-stone is a memorial of two sisters who died tragically on August 30, 1903.

The girls were killed while view-ing the Waimangu (Black Water) Geyser, 20km from Rotorua. Many people toured to see this phenom-enal sight.

The eruptions went up to 460 metres in height. The story goes that their mother was tired, so waited in the shelter while the girls went over to see the geyser. The girls, along with the tour guide and one other tourist where killed when the geyser suddenly explod-ed with a huge blast.

A GRAVEYARD in Papanui has been restored with new life.

It has taken two years of restora-tion, and eight years of informa-tion gathering, but the St Paul’s Anglican Church cemetery in Pa-panui has finally been completed.

The restored Mountfort-design church was badly damaged in the earthquakes, forcing its clo-sure.

With the assistance of the Pa-panui RSA, the church community has taken major steps to re-erect

many of the fallen tombstones.The Papanui Heritage Group

has also undertaken an eight-year project to clean and transcribe the faces of the stones to restore their legibility, and to provide historical information for residents.

Papanui Heritage Group co-ordinator, Janet Tillman, said the church had at least two people coming in each week and asking for information about families and ancestors buried in the area.

“What has happened is people have lost their families in Christ-church and now they’re hunting for them,” she said.

However, finding this informa-

tion has now been made much easier.

Elizabeth Aldous of St Paul’s Church, and Papanui Heritage Group members Christine Grant, Janet Tillman and Fay Wildbore, have completed an online database of all the information recorded on the tombstones in the church graveyard.

The project information is now available through a site search of Papanui on http://ketechrist-church.peoplesnetworknz.info/ or can be purchased through the group.

“People would have to come to visit Christchurch and spend

hours trawling through the infor-mation. The beauty now is how easy it is,” said Mrs Tillman.

The collection was already in full swing before the earthquakes, with Reverend Amanda Neil managing to capture photographs of more than 75 tombstones only months before the earthquakes knocked them down.

Mrs Tillman said the graveyard had a rich history.

“It was one of the first grave-yards in the area, so there weren’t only Anglicans buried there. Other nominations are there too, includ-ing Roman Catholics, which is quite unusual,” she said.

Mrs Tillman said there were also many famous names connected to the graveyard.

“It’s just fascinating. Rewy Alley was a famous New Zealander who worked in China. He now has the Rewy Alley School in Riccarton named after him. His parents are buried there. And of course, Charles Upham, his parents are buried there too,” she said.

The tombstones hold records of history from 1853 up to present day.

“There are many families who have ancestors buried at St Paul’s cemetery who have not been able to access records about them, and this is a wonderful resource for family tree researchers too,” Mrs Tillman said.

Papanui Heritage Group mem-ber, Murray Williams, said the cemetery was an area for quiet contemplation and remembrance but also for information about family backgrounds.

“If you know or suspect that you may have some family connection with someone buried or commem-orated at St Paul’s, you may have been inhibited by the problem of locating the tombstone in a cem-etery that had been degraded by the earthquakes and compounded by the difficulty in reading the names and details on many of the older headstones,” he said.

Members of the public want-ing to take part in guided walk through the graveyard can do so this week as part of Heritage Week 2014, which runs from October 17 to 27.

GAME ON: Chris ‘Ted’ Casserly has been putting in the hard yards to come out on top in the Fight for Christchurch 2014.

Chris ‘Ted’ Casserly, owner of the former Ted’s Bar & Grill in Halswell which was destroyed by fire a year ago, will be boxing in the upcom-ing Fight for Christchurch 2014 against Winnie Bagoes owner Geoff Cavell to raise money for Cure Kids. Reporter Grace Cabell spoke with him about what has motivated him to fight and how he made the career switch from Pentecostal minister to publican . . .

So Chris, I have seen a nick-name around, ‘Father Ted’ – what’s the story behind this?

Well, before I was a publi-can, I was a minister for 15 years, a Pentecostal minister. All my mates used to call me Father Chris, till one day I was having a beer with my mate down in Rakaia and someone called me Father Ted, and it has stuck ever since.

How did you get into the restaurant game? Is Ted’s the only bar you’ve owned?

Yeah, it is. I’ve been involved in the indus-try for about 15 years. I used to be the man-ager at The Fitz, Toast Bar at Sol Square, and then my last sort of gig before I bought Ted’s Bar and Grill was as the general manager at Aikmans.

How long had you owned Ted’s Bar and Grill before the fire?

Just about 12 months.So, you unfortunately lost the bar in a

fire, right?Yeah. It was determined as spontaneous

combustion, a freak accident.I was pretty gutted when I lost it. I bought

out the receivers. We were losing money for the first six months. I refurbished it and put about $600,000 into doing that. We were doing very, very well and had turned the

whole place around. Then the fire happened, just as we were coming into summer. The landlord was selling the land so I did look at buying it, but I just can’t.

Do you live in Hals-well?

Yeah, I do at the moment.Have you always lived in Christchurch?

Did you grow up here?I was brought up on the mean streets of

Aranui. Yeah, I loved it. I went to Aranui High School. I started off at St James Pri-mary School, then Chisnallwood Intermedi-ate then Aranui High School.  

I see you have some pretty personal mo-tivations for opting into the fight?

Yep. I did it for my youngest daughter Courtney, who is 14 now. At the age of two, she was diagnosed with Wolff Parkinson White Syndrome, which is basically a cardio jack of the heart. A normal child’s heartbeat turns at 110 beats per minute and hers was at 280. So she was at very high risk of going into cardiac arrest.

At the age of five, she had her first heart surgery at Starship in Auckland. They weren’t able to fix the issue because if they did, she would have had a pacemaker.

We think her life would have been considerably reduced having that at such a young age.

So a new procedure was devel-oped and at seven years of age she had her second heart surgery and they fixed it.

How does she feel about you stepping into the ring?

She doesn’t want me to fight! But she’s excited about raising the funds for Cure Kids. It’s very dear to her own heart as well.

So have you done much box-ing before?

When I was 13 I used to box out at a working men’s club but that was a long, long time ago!

I’m guessing you’ve been training pretty hard, what have you had to do to prepare?

Well, I’m doing six training ses-sions a week, as well as now I’ve started to do extra swimming and things like that for fitness. I do three personal training sessions and three two-and-a-half hour boxing circuits of sparring each week.

How long have you been train-ing?

About two months now.So, Chris, are you nervous?Nope! Nah, look, I’m feeling

more and more confident each day. My fitness has improved so much, it’s incredible. I was more than 120kg when I started this journey and I’m down to 108kg now. It’s great – I can actually see my toes now!

So do you have a game plan, or is that a secret?

Survive! I just want to get out of the ring without Geoff having done too much damage to my pretty face.

Once you step foot in that ring there is nowhere to hide. Neither one of us are going to take a step backwards.

What do you think about your opponent, what are your chances?

I don’t plan on losing. Yeah, I’ll beat him. Geoff ’s a good mate so it makes this whole challenge just that much different.

So it’s a bit of a war then, is it?Geoff and I are calling it the

battle of the century. Last week Geoff turned 51 and in November I turn 49. So there is a 100 years between us.

So what’s your favourite meal? I shouldn’t say pizza, should

I? No, my favourite meal would have to be lasagna. I’d like to say I make the best lasagna in the world, but ‘mumma’ at Venuti does. You really can’t beat her lasagna, it’s the best I’ve ever had.

Do you have any other chil-dren?

I’ve got three kids: my son Alex, who is 21, and I think he’s going to be the next New Zealand barista champion. He placed fifth at the nationals this year. Then there is Kimberley, who is 19, and she is doing a degree in medical imaging at CPIT, and then there

is Courtney, who is 14 and goes to Hillview Christian School.

How do the kids feel about you fighting?

Well, Courtney doesn’t want me to, Kimberley is a bit unsure but my son Alex, well, he just wants to see me get my head knocked off!

Do you have anyone in your life that has really inspired you?

Inspiration wise, probably for me it would be Nelson Mandela. I think his ability to succeed out of adversity, and no matter what pushed him down he stood up and succeeded. As the saying goes, what does not kill you makes you stronger, and the only time you ever fail is when you refuse to get up.

Bit like you will be in the fight

then?Yeah! You won’t keep me down.So Chris, what’s the first thing

you would do if you win?First thing I’m going do when I

win (is) I am going to have a beer; I have not had a drink in four

weeks. No drinks for me until after the fight. Hopefully I’m going to have that beer with Geoff if he still loves me.

Dance party in a cubeFollowing the success of previ-ous events, youth organisations in Belfast and Papanui are planning an alcohol and smoke-free dance party in an inflatable cube.

The event will be separated into two age groups to provide a fun and safe environment.

It will be held this Friday at the Papanui Domain.

The intermediate superhero-themed party for 11-13 years runs from 7-9pm.

The high school party for 14-18

year olds will be held in the cube from 9.30 to11.30pm.

Tickets are $5 and are available at Papanui Youth Development centre, Northcity Papanui, Te Ora Hou Christchurch, Belfast Com-munity Network or at the door.

They can also be bought online at http://www.eventbrite.co.nz.

Funding for this event has been provided through the Winter Chill project, sponsored by Fletchers building company, the Canterbury Earthquake Recovery Authority

and the Ministry of Youth Devel-opment.

Belfast Community Network community development coor-dinator Donna Walsh said youth had run an event last month with funding provided through the Winter Chill.

“It was a great success. We hope we have a good turnout at this event as well,” she said.

The Canterbury scholastic surf team had a successful campaign at the national championships in Taranaki, finishing third overall.

In the individual competitions, Conor McLennan, of Christchurch Boys’ High School, won the under-14 boys division.

Conor was new to the national surfing scene and a surprise winner after a solid display of surfing throughout the event.

Harrison Whiteside, of Hagley Community College, is already recognised as one of New Zealand’s top young surfers and was runner- up in the under-18 boys division and unlucky not to win.

He was leading for most of the final but was just pipped in the final minutes by Mt Maunganui’s

Jordan Griffin. Fritha Davis, of Cashmere

High School, placed third in the under-14 girls.

The team had several semi-finalists too, with Max Marshall, Rory Edmonds, Jack Wilson and Moss Thomson all making it through in their divisions.

Marshall scored one of the highest heat totals of the entire event in his quarter final, with 16.37 points of a possible 20.

Isaac had been thinking about writing a musical for some time, when last year the night after NCEA exams finished, his

The year 12 Marian College student recently received the Best Original Compo-sition award at the CPIT JazzQuest for her piece Defective Detective.

The award was followed with further ku-dos at the Southern Jam Youth Jazz Festival held in Blenheim, where Frances received the Royal New Zealand Air Force Band Adjudicator’s Choice trophy for her perfor-mance on piano for the school jazz band.

Frances has been committed for many years to her musical craft, and will sit her grade eight piano exams later this year.

Frances’ long-term goal is to make music her career, either in New Zealand or overseas.

Hearing Technology is fully independent and locally owned since its inception 23 years ago, with clinics in Timaru,

Christchurch, Auckland and Whangarei. The benefit of this is that they fit clients with hearing devices best for them, not best for the company.

What differentiates Hearing Technology from other audiology clinics is the customer-focused service offered. Clients feel safe and supported through diagnosis to make an informed choice. “Our average clientele is 65 years plus. Hearing Technology utilises the latest wax removal technology. Microsuction is less invasive, removing wax by gentle suction as opposed to the traditional method of syringing out with water, which can be very risky.

While Hearing Technology offer free hearing checks. They promote full diagnostic checks which are more in-depth, recommended by doctors and ear, nose and throat specialists. This investigates the entire hearing system all the way to the brain, to

determine where hearing loss has occurred and what the best treatment options are.

Good funding is available in New Zealand for hearing aids. People with a history of occupational noise exposure can apply to ACC for funding. MOH subsidies of over $1000 are available for everyone else (if fitting both ears).

Tinnitus is a traumatic condition for some people. An extremely specialised area most effectively treated by Auckland University in the north, and now Hearing Technology in the South since one of their audiologists extended their training at the University of Auckland clinic last year. Although there is no cure for tinnitus, there are extremely effective methods of managing the condition.

DirectionsTake skinless, boneless chicken breasts and score chicken and put in a dish. Combine grated ginger, rosemary, honey, vinegar, soy sauce and garlic. Pour over chicken. Chill 4 hours. Preheat oven to 180 deg C. Heat the oil in a casserole dish or frying pan over a medium heat. Remove the chicken from the marinade and fry until golden. Set aside. Add the sliced onion, sliced capsi-cum and chilli to the dish and cook for 5 minutes, then add the leftover marinade and cook for 1 minute. Add the tomatoes, chickpeas (drained and rinsed) and stock (use vegetable or chicken stock). Bring to the boil. Put the chicken on top, cover and cook in the oven for 20 minutes.

While working as head nurse of Sisters of Providence Hospital in northern Ontario, Rene Caisse

Green beans and romesco sauce

This sauce is absolutely divine and is fabulous with freshly picked green beans, straight from the garden.

Ingredients2 Large ripe tomatoes, cut in half1 Red chilli, seeds removed1 Garlic clove, peeled200ml Olive oil1 Red capsicum, roasted, skin and seeds removed3 slices Ciabatta bread¼ cup Roasted hazelnuts, peeled

and crushed2 Tbsp Red wine vinegar350g Green beans, trimmed

Directions Heat oven to 180 deg C. To make romesco sauce, place tomatoes, chilli and garlic on a baking paper-lined oven tray and drizzle with 50ml olive oil. Roast for 10–15 minutes until vegetables are soft and just starting to colour. Remove from oven and place in a food processor with roasted capsicum. Blend until smooth. Lightly toast ciabatta, add half

to the vegetables and pulse to combine. Place sauce in a small stainless steel bowl, then mix in hazelnuts, remaining olive oil and red wine vinegar. Season to taste with a little salt and pepper, and set aside. Bring a medium-sized pot of water to the boil over a high heat. Add beans and blanch for 40–50 seconds. Remove beans from pot, drain and place in a serving bowl. Roughly tear remaining toasted ciabatta and scatter over beans be-fore topping with romesco sauce. Serve immediately.

FOODAngel Hair Pasta with Seared Scallops, Lemon and Chilli

The combination of seafood, lemon and chilli is always a win-ner and this simple pasta dish is complemented by the inclusion of peppery rocket.

Ingredients300g Angel hair pasta, vermielli or saghettini2 Tbsp Olive oil18 Scallops1 Red chilli, finely diced with seeds removed2 Lemons1 cup Rocket, leaves⅓ to taste Salt & freshly ground

DirectionsCook pasta in plenty of boil-ing, salted water for five to eight minutes or according to packet instructions until just tender to the bite. Drain well. At the same time, heat a frying pan, add oil, then sear scallops for 1 minute on each side until golden brown. Add chilli (diced with seeds removed), zest of one lemon and juice of two, and rocket leaves to the pan and toss briefly to warm through. Add hot drained pasta to the scallops, season with salt and pep-per, toss well and serve in pasta bowls.

Coconut jelly with pas-sionfruit

While jelly is usually associated with children’s birthday parties, there is also a whole range of sophisticated jelly desserts that are great for grown-ups.

Ingredients400ml Coconut cream300ml Cream½ cup Sugar1 tsp Vanilla essence/extract1½ tsp Gelatine8 Passionfruits

DirectionsPlace coconut cream, cream and sugar in a small saucepan over a medium heat. Stir until sugar dis-solves, then remove pan from the heat and stir in vanilla extract. Place 1/4 cup cold water in a small heat-proof bowl. Sprin-kle over the gelatine and stir to

combine. Leave for 2 minutes. Heat a small amount of water in a saucepan until simmering, then remove from heat and sit the bowl of gelatine in the pan (without getting any of the water in the bowl) until the gelatine is completely liquid. Mix the liquid gelatine into the coconut mixture. Pour the coconut mixture into four small ramekins. Re-frigerate overnight or until set. Scoop out passionfruit pulp and gently mix in a bowl until loose. Turn the coconut jelly out onto dessert plates and drizzle with

passionfruit pulp.

Tip: To help turn jellies out, sit ramekins on a warm, wet tea towel for 1 or 2 minutes, then run a knife around the edges of ramekins to loosen.

Volunteers make a difference every day – from driving a van to simply knocking on doors to see how people are doing.

Volunteering is a great way to boost your own wellbeing at the same time as helping your community. Volunteering includes all of the ‘Five Ways to Wellbeing’: it helps us to connect, be active, take notice, give and keep learning.

Red Cross’ Cross Town Shuttle is a volunteer-run service providing transport for people in Christchurch without transport of their own and unable to use public transport. Volunteer drivers and assistants take people to medical appointments and leisure activities, helping to combat social isolation and allow people to continue to lead full lives, regardless of the impact imposed by road works and post-earthquake infrastructure repairs.

With plans to expand the service, Red

Cross needs more volunteer drivers and more volunteers to help with community outreach and door-knocking. Red Cross volunteers are a diverse bunch of people who come from a wide range of backgrounds.

Before Anthony Seumanutafa was a volunteer on the Cross Town Shuttle, he used the service to help him get across the city. “I find it to be a good way to help and socialise with people, and a way to say thank you to all those for their help – three for the price of one.”

This desire to help is what unites volunteers, says Christine Williams, outreach volunteer.

“We are able to give time, empathy, a listening ear and often some contact numbers for further assistance to enable the person we visit to continue to move forward.”

The mail bags are full again. This week the tips range from a “feel-like-Cleopatra” face cleaner to a way of keeping your pot plants well watered!

Marie from Rotorua has this tip about face cleaner. “The best face cleaner you can get is ground almonds – from the bulk foods section at Pak ‘N Save. Make a thick paste with milk, and just be-fore using add a quarter teaspoon of salt. Rub fairly gently onto your skin at first as it is abrasive. Wash off with warm water. Makes you face feel like Cleopatra and her bath of milk!” Whoa!

Marie also has this unusual way of titivating silver beet. “Silver beet is our favourite vegetable. Wash well, chop very roughly and steam. Do not boil or overcook. Add a sprinkle of sugar and a sprinkle of nutmeg. Delicious.”

Nikita from Taupo has these tips for introducing fruit and vegeta-bles into the family diet. “Growing up I lived with my grandparents. I always had cereal with tinned fruit for breakfast, two pieces of fruit in my lunch plus a sandwich which normally had lettuce or something like that on it, and a piece of fruit when I got home from school. For dinner nana used to mix po-tato and kumara or pumpkin in a mash, and at least two other veges. So it’s not hard to get lots of fruit

and veges into your diet. I always went along to the supermarket and helped choose the fruit I wanted that week which made me more inclined to eat it. Now it’s just a habit to eat lots of fruit and veges every day.”

Now for another tip on cleaning dentures! J.M.L. from Whangarei writes, “To clean dentures use a teaspoon each of citric acid and baking soda. I found if I mixed these together in a container they hardened, so I keep them in separate containers. Put dentures in cup, add citric acid and baking soda, then cover with hot water. It will fizz when water is added. Rinse with clean water. Occasion-ally you will need to give dentures a clean with a toothbrush and just baking soda.”

Jill from Dannevirke has a sug-gestion for the reader who had cat invasion problems. “I have successfully used Jeyes fluid to deter cats. Sprinkle undiluted on the area targeted by the cats, but be sure to clean the area up first.

You may have to repeat a time or two, but cats hate it. It also works for dogs! Jeyes fluid can be hard to find, but I bought some recently.” [Jeyes Fluid is a multi-purpose cleaner and disinfectant that is used for a wide range of garden and outdoor cleaning jobs.]

J from Paraparaumu has this tip for getting out the last of the cream from containers. “Instead of cutting the top off a hand or body cream container put it in the microwave for about ten seconds, then pour the contents into a new container. Works well for makeup

and other products too.”KASW from Waikanae says,

“Baby wipes are wonderful for removing fly-spots from walls and ceilings.”

John from Whangarei says he got a number of great recycling tips from his latest gardening magazine. “To keep pot plants watered, punch a column of small holes down the side of a thin plastic bottle. Bury it in the pot with the top poking above the soil, and the holes facing the plant. Fill the bottle up and it will act like a reservoir and drip feed the plant.”

‘We think vegetables from yourown garden are delicious anyway,and one does not need to have theexcuse of a ‘‘fasting diet’’ to enjoythem.’

IT’S been a while since wetalked about the joys ofcooking vegetables, so wethought it time to have a

little bit of a catch-up. We werereminded about it whenlistening to the author of a newbook advocating a fruit andvegetable diet for two days aweek as a means to betterhealth. We think vegetablesfrom your own garden aredelicious anyway, and one doesnot need to have the excuse of a‘‘fasting diet’’ to enjoy them.

Lilley has a favourite recipefor using up tough broccolistems in a soup. ‘‘You will need:1 onion (diced), 1 large broccolistalk (diced), any left overbroccoli florets, 1 large potato, 1vegetable stock cube dissolvedin 2 cups water, 1 tsp butter, 1/4cup milk or cream, 1/4 cupcheese (optional), salt andpepper. Saute onion in butteruntil clear. Add broccoli andpotato. Cover with vegetablestock and simmer for 30minutes until very tender.Blend and season. Reheat witha little milk or cream. Sprinklewith cheese if you like.’’

Another reader has afavourite lemon butter toppingfor broccoli. ‘‘Simply add 12tbsp of lemon juice to 115g ofmelted butter. Mix in a littlesalt and pepper to taste. Stirtogether and pour over cookedbroccoli. Serve immediately.’’

What about these tips forgreen beans with a difference.‘‘Slice the beans and cook inwater. Add a packet of onionsoup mix and slicedmushrooms. Delicious!’’

Another great way to cookalmost any vegetable is astempura, which is a classicJapanese dish of deep friedbattered vegetables (likezucchini, onions, eggplants,carrots, green peppers, sweetpotatoes, string beans, broccoli,mushrooms). Vegetables with avery high water content aregenerally not suitable,however, as they tend to releasewater into the batter whilecooking. The veges need to becut thin enough to cook in thesame time it takes the batter tobecome crispy.

To make the batter you need1 cup plain flour, 1 egg, and 1cup ice cold water. Beat the eggin a bowl and stir in the icedwater. Add the flour and mixlightly with a wooden spoonhandle or chopstick to avoidover mixing (having lumps inthe batter is a hallmark oftempura). Dip in the vegetablesand deep fry in clean oil at180C, turning occasionally

until the batter is crisp andlight golden. Eat immediatelyafter cooking, while the batteris still crispy. With agarnishing of rock salt, lemonor lime juice, or with dips,tempura is a wonderful starter.It can also be used as a sidedish, especially with fish.

Lorraine has a tip forsilverbeet. ‘‘This is a usefulway to use as little or as muchsilverbeet as you like. I use fourleaves of silverbeet choppedfinely in a batter mixture of 3/4cup flour and 1 & 1/2 tsp bakingpowder. Whisk 1 or 2 eggs, addflour and baking powder, andmilk to thin, then the greens.Fry in a little hot oil. It’s lovelywith tomato sauce, whichshould appeal to children.’’

Kris has a tip for orangepeel. ‘‘I don’t like to throw

things away. I even ‘recycle’citrus peel! I dry the peel on aplate when using the oven.After it is dry I grate or crush itand store the ‘spice’ in anairtight jar and use it in bakingto add flavour.’’

DB says, ‘‘When vegetablesbecome wilted (carrots,broccoli, lettuce, beets, celery,etc) trim the stem end slightlyand soak the limp vegetable inwarm water for an hour ormore. You will find thevegetables will become firmand fresh ready for use.’’

Grow the classic salad cucumberBY TOD PALENSKI

When I think about what makes a classic sum-mer salad or sandwich, the telegraph cucumber is first to spring to mind.

Subtly sweet, crisp, and refreshing. If that isn’t enough to tempt you, they’re also high in Vita-min C and super hydrating.

If you want to pick yours straight from the garden this summer, rather than fight your way through the skin-tight plastic wrap that so often accompanies the store-bought variety, now’s the time to get planting.

First, grab your telegraph cucumber seed-lings. Look for a warm, sunny and dry spot in your garden.

Dig in some compost or leftover potting mix to the soil, making sure it’s friable or breaks up in your hand. Then, plant your seedlings.

The telegraph likes something to cling on to so, for best results, either place them near a trel-lis or similar frame, or use a simple stake.

To encourage fruiting, I like to grow mine next to a bee-friendly plant like lavender. This encourages pollination and, subsequently, fruit-ing.

If pollination continues to be a problem (by that I mean the flowers fall off but no fruit de-velops), touch the pollen on each plant with a paintbrush, which will spread the pollen from one flower to the next.

I’ve also been told, though haven’t yet tried, you can do the same with an electric toothbrush minus the toothbrush head. Magic.

Around 10 to 12 weeks after planting, you should have a plentiful bounty of cylindrical fruit to add a refreshing touch to your summer fare. HEALTHY: Telegraph cucumbers are super hydrating.REFRESHING: Cucumber likes a warm, dry spot in the garden.

SUBARU IN New Zealand has done well marketing what could be deemed a niche product.

They would have done a lot better if the market hadn’t been swamped with pre-owned imports but like all manufacturers and distributors which market in this country they have had to adapt to the pressure of imports.

Subaru has recently realigned its line-up to make the product more attractive against pre-owned.

Put simply, Subaru has added value into a lot of their models; the price remains much the same but a lot of extra kit and technol-ogy has been included.

The latest model made avail-able for testing is the Legacy X, which is priced at $54,990 and sits towards the top of the Legacy line-up. Incidentally, the Legacy range starts at $44,990.

The Legacy is the large, com-fortable sedan for which we have become attached to as Kiwis. It has a compliant ride, the suspen-sion will tackle bumps and ruts without in-cabin intrusion.

Subaru’s four-wheel-drive sys-tem is engineered to appropri-ate grip when most needed. The system also acts as a contributor to the Legacy’s handling prow-ess, it is very directional with

solid steering feel and strong feel of what the suspension is doing under load.

Alongside the Legacy’s above average handling manners it gets an energetic flow of power from

its 2.5-litre, horizontally opposed engine. Power is channelled through a continuously variable automatic, it works very much like a traditional automatic but with-out the disadvantages.

Especially so with fuel economy. Subaru rate the Legacy X with an eight-litre per 100km (35mpg) combined cycle claim, that cor-relates well with the 9.2l/100km (31mpg) figure during my time with the test car.

Subaru like to market their four-wheel-drive system aggres-sively. The sporty BRZ aside, all Subarus sold here have four-wheel-drive, and that is many a reason why the Impreza, Legacy and Outback have been popular in the South Island, they appeal when the ski-field access road is reached.
