The right glass will reveal the best in a wine

Ideally the combination of glass and wine should produce a perfect harmony. Som-meliers have discovered that each type of wine benefits from being drunk from a particular shape of glass. So, in conjunction with sommeliers and wine growers, Schott Zwiesel has developed a series of glass ranges, designed to draw out the characters of a wide variety of grapes – while giving you a choice of styles. So these are truly glasses which add value to wine.

Red wineRed wine benefits greatly if it is allowed space to develop. Therefore, larger bowls help the wine to interact with the air and fully develop the bouquet.

White wineAs white wines are served cold, a smaller bowl reduces the amount poured, to help ensure the wine tastes cool from the glass.

Sparkling wines and champagneFor taste, champagne and sparkling wines are best served in slim flutes which help to keep it cool and sparkling. Wider glasses will warm the wine and exhaust its sparkle prematurely. Glasses with an effervescent point, help to focus the sparkle into an at-tractive spiral, and prolong the fizz. Cham-pagne glasses are usually wider than those for sparkling wines, to assist champagnes more complex aromas and Flavour.

Aperitif / DigestivThe aperitif is like an overture; while the digestive acts as a complimentary finale to a good meal. Their tastes can be as varied as their roles. From a subtle sherry to an intense grappa or aromatic aquavit, each liqueur has its own.

Water glassWater helps to revitalise and refresh the palate. Stemmed water glasses provide an elegant but practical glass, which compli-ments the wine glasses.

Room temperatureIt is accepted most wines benefit from being allowed to breathe for at least an hour before serving. This time was also once used to allow certain wines to reach room temperature. Of course with modern standards of heating today‘s room temper-ature is often far warmer than the original wine producers and sommeliers intended. If a wine is not served at the right tempera-ture it will harm or inhibit its bouquet and flavours. The best way to ensure wine is served at the correct temperature is to use a wine thermometer. White wine should be consumed at 9-12°C (48°-54° F) , red wine at 16- 18°C (61°-64° F) and sparkling wine, in-cluding champagne, at 8-10°C (46°-50° F).

UncorkingIt was Dom Pérignon, a monk experienced in producing and storing wine, who discov-ered the cork as one of the best ways of pre-serving the health of good wine. Uncorking demands some care. First, cut off approxi-mately 1cm of the upper part of the seal which conceals the cork, to ensure the seal will not interfere or come into contact with the wine. (This could adulterate the wine’s bouquet and taste). Then clean the bottle-neck with a cloth. Then pull the cork. Pour a small sample of the wine and sniff then taste to check it is not corked. If the wine is good, pour and enjoy!

DecantingDecanting has two objectives. Firstly, to sep-arate the wine from any sediment which

may have settled out while the wine was stored in its bottle. Secondly, to help the wine aerate to its full bouquet and flavour can develop. It is always important to trans-fer the wine carefully, and a well-designed decanter filter can help with this process.

PouringSlope the glass rim in towards the wine, so the wine will flow into the bowl across the glass. Depending on the bowl size, fill the glass to between a quarter and a third full. Sparkling wine and champagne glasses should be filled halfway. Another expert tip is to serve the wine just slightly cooler than its ideal temperature, as it will warm up in the Glass.

DrinkingWe all inherit an instinctive way of drink-ing. However, the art of tasting wine is slightly different! To fully enjoy wine, you need to learn a new way of drinking. First, appreciate the colour and viscosity of the wine by swirling it in the glass bowl. The act of swirling also helps to aerate the wine and release its full complex of aromas. Then hold the glass to your nose to savour those aromas. Young wines tend to possess flow-ery or fruity flavours; mature wines have more complex, profound bouquets. Than take a sip and let the wine linger on your tongue. The complexity of a wine’s taste and its finish (the taste leaves after you have swallowed) are all part of its charm.

CRU Classic. Reduced to the Essentials: Drinking Perfection

Reduction is a word closely associated with gourmet appreciation. For example, reducing a sauce to concentrate its colour, aroma and flavour is a key element in gourmet cuisine. “Reduction” derives from “reduce”, which literally means to “bring back” or “restore” something to its original form. The new gourmet glass collection CRU Classic, demonstrates how appreciation of a wine can be enhanced through the reduction of the glass. In the case of CRU Classic, the number of glass designs has been reduced to 11 applied shapes. While the style and flow of the glasses have been returned to classic patterns. Each bowl style has been selected to enhance a different combi-nation of senses. So each type of wine can be perfectly presented, according to its aromatic complexity and alcoholic strength.The reduction in design has also enhanced ease of use with this range. Gone are the days of a myriad of confusing stems! The CRU Classic stems can be described as being compact but with no loss of elegance. Bordeaux A complex Bordeaux is created from a mix of different grape varieties. In this clas-sic Bordeaux bowl, these varieties find the space they need to unfold. The height of the bowl creates a “chimney effect” that wafts the aromas to the nose. Intensive swirling of the wine within this tapered bowl can produce a similar effect to decanting, oxi-dising the wine and softening the tannin structure of a young Cabernet Sauvignon to enhance its fruit.

Burgundy One of the first rhyming mnemonics a Ger-man restaurateur learns is: “Burgund ist rund!” (Burgundy is round). This attribute is particularly appropriate to the soft, well-rounded red wines that feel most at home in our Burgundy bowl. Great Burgundies and similar wines rich in well-balanced fruit and tannins – benefit from this glass, as it

creates the space to allow the harsh alco-hol to dissipate and the full fruity aromas to develop. White as well as Red Burgundy varieties, will blossom in this glass, devel-oping their character and complexity.

Red wine The smaller brother of the Bordeaux glass helps to concentrate the aroma and fla-vours of more subtle red wines. It is a glass that provides a careful balance between al-lowing the wine to breathe, while helping to concentrate individual aromas, to draw out and balance the full potential of these wines.

Rosé Does Rosé need a glass of its own? Yes, be-cause a good Rosé is perceived as a unique wine category. Rosé wines can be as re-freshing as a young white wine, but are more impressive on the palate and tend

to have a fuller finish. This glass helps to reveal the wine’s fruit flavour, before fol-lowing through with its spice and acidity. A Rosé does not display the tannins found in red wine, because of its youth and the fact it is not produced with red grapes. Conse-quently we can gain more freedom with the shape of the bowl.

Chardonnay The more opulent the white wine, the more scope it needs in a glass. A classic white wine bowl is simply too narrow. Barrique influence is a lesser consideration here. What matters is that the alcohol and fla-vours are released.

Riesling Crisp white wines best present their re-freshing acidity and delicate fruit aromas in smaller bowls. The diameter is widest in the lower third of the bowl. Filled to the wid-

est point, the wine can “breathe” enough oxygen to release its full bouquet. Then the tall, tapered bowl, helps to accentuate and define the aromatic nuances, so their full character can be relished at the rim.

Champagne Champagne is first and foremost a fine wine. The fact it sparkles is an added bonus. Champagne is a complex wine, with a rich bouquet gained from its mix of varieties, the minerality of the soil in which it was nurtured and the profound influence of its long, elaborate, second fermentation. The result is a generous bouquet of aromas and a sparklingly complex flavour. Such wines require ample space in which to reveal their heritage. Spanish Cava from Penedès and Germany’s Winzersekt, produced in tra-ditional bottle fermentation, also benefit from a large Champagne glass, because both possess character and complexity.

Sparkling wine When most of us think of sparkling wine glasses, we visualise glasses that are long, slim and elegant. A belief worth cherishing but not at the expense of a connoisseur’s sensorial needs. Even the most youthful and subtle sparkling wine benefits from room to breathe. What use is the most deli-cate glass design, if the soul of a sparkling wine, its flavour, remains obscured? The CRU Classic sparkling wine glass is styled with the promise of classic elegance while enabling sensorial function.

Fruit BrandyThis glass is ideal for both pomace brandies (such as Grappa) and other fine distilled spirits. When enjoying a brandy, it is im-portant to be able to explore the essence of its origin, to be able to smell the Ries-ling in the pomace, or taste the cherry in a fruit brandy. In this glass, the alcohol helps to intensify aroma, flavour and warmth. In the Grappa bowl of the CRU Classic range, servings of either 2cl or 4cl can develop in perfect harmony.

Cognac Years of ageing in a wooden cask, or bar-rique, add an extra dimension to a co-gnac’s flavour. Aromas redolent of tobacco, caramel and coffee add a fascination and wealth to its bouquet. No wonder then, these noble spirits command a unique bowl shape. A fuller bowl to let the cognac warm, breathe and soften, so it can reveal the full spectrum of its aroma.

WaterWater is the unspoken hero of a gourmet’s table. Refreshing, cleansing and re-energis-ing. Premium glasses like the sommelier range Fine, are produced from the very best natural materials. The surface texture of the glass and the architecture of its design, shape how a wine’s aromas develop and therefore how well it can be appreciated. Bordeaux „Médoc“Bordeaux is a wine region with special di-mensions, traditions, elegance and finesse. Its wines are memorable and formulated to command the senses. Médoc is designed to awake the potential slumbering within these great wines. A tall, serene bowl that curves delicately inwards, just holding back the full flavour, to promise the exquisite connoisseur an exquisite sensation. This is the king of the Fine glasses.

Red wine „Beaujolais“Beaujolais is associated with youth, fruiti-ness, simplicity and sheer enjoyment. This glass draws the wine to realise its full sen-sorial potential and to meet our expecta-tions. A more open chimney, lets the aroma

flow freely to the nose, while the bowl’s broad base enhances the evaporation of the aromatic elements.

Burgundy „Beaune“Great Burgundies develop best in large bowls, which taper quickly toward the rim to enable an intimate interaction between the sommelier and the wine. The volumi-nous bowl provides ample room for the aromatic elements in a wine to unfold, develop and rise. While the rising narrow-ing bowl, draws the aromas together, to be relished by the sommelier. \finally the prox-imity between rim and such a large body of wine adds to the sensuality and envelop-ing softness of a Burgundy. “Beaune”— the beautiful. The name says it all. The hips are

ripe and full, the curve sensual and smooth, to produce a glass that will unleash the full wealth of a sacred wine. The queen of the Fine family and a worthy complement to the aristocratic Médoc.

Rosé „Tavel“The accent of this type of wine is character-istically either on an unobtrusive or highly pronounced acid. Hence the versatility of Tavel, the most striking glass in the Fine range. Broad-hipped and full-lipped, it is a special multi-tasker. Aromatic elements have the space to develop even with a small pour, fruitiness is revealed, while acidity and crispness follow through.

White wine „Gavi“For wines that are mature, full-bodied, su-perior but slightly introverted and elusive. Gavi provides a generous bowl with more surface, breadth and height than the Ries-ling. Gavi helps to tease out a dialogue with such venerable wines from Puligny-Montra-chet, Condrieu and Châteauneuf-du-Pape.

Riesling „Rheingau“A glass designed for young, fresh, highly aromatic wines with an emphasis on fruit. Such wines rush to release their flavour and by reducing the bowl’s height, the full sensation of the aroma can be appreciated before it fades. While the design’s shape creates a lasting, sensorial impression of fresh, crisp acidity.

Champagne „Epernay“A glass with stature and a prolonged taper before a final flourish. The ultimate archi-tecture to demonstrate what is meant by the word “chimney” in glass terminology. Like strings of pearls, the tiny bubbles flow upward, carrying aromas that are gathered and ushered by the chimney. The efferves-

cence point at the epicentre of the bowls base, brings order to the precipitation of the sparkle, enhancing it as a spectacle for the eyes, ears and ultimately the tongue.

Sparkling wine „Asti“A more concentrated but still elegant flute, to enable the appreciation of lighter, spar-kling wines. This shorter, narrower flute, en-sures the subtle aromas are concentrated and savoured before they can dissipate. The smaller bowl helps the wine to be enjoyed while it is still cool. The effervescent points introduce structure and style to the liveli-est wines. A glass and wine to awaken the senses.

The Top Ten range was the product of a meeting between seven top sommeliers for a wine tasting event on the island of Sylt. Full-bodied red wines Fullbodied red wines need to be worked intensively in the glass to unfold their rich and complex aromas and flavours. The wid-est diameter of the bowl is set low to max-imise the opportunity for the wine to in-teract with air, while reducing the amount of wine that is needed to be poured into the glass (in more traditional glasses the wine needs to half fill the glass, while with this design just 10cl will be sufficient). The tapering rim helps to guide the released aromas to the nose, and the wine onto the centre of the tongue. We have designed crystal glasses especially for wine tasting. The shape and size of the tasting glass Ideal and the Sensus glasses are universally suited to all types of wine, red or white. Their small volume and slender bowl guide the aromas of even a small quantity of wine straight to the nose and create the ideal conditions for optimum appraisal. Sommeliers and professional jury members favour blind tasting when judging wines.
