Whenever I go on shopping trips overseas, I will bring along an empty bag with me so that I have enough storage for my purchases on the way back.

What’s more, being the safe traveller that I am, I will always make sure that I pre-book extra baggage allowance on my flight back home, just so I won’t be caught in a situation where I need to dump items in order to fit the required weight.

Baggage options on flights nowadays are no longer as rigid as they were in the past. One now has the flexibility of selecting different baggage needs for different legs of the journey.

For example, on low-cost carrier AirAsia, passengers can pre-book their baggage allowance online, from a choice of 15kg up to 40kg. I would usually pick the comfortable option of 15kg when travelling out of Singapore, and at least 30kg when returning home, so I need not worry about exceeding any weight limit with my travel buys. Do not belittle the pre-booking benefits - they will help you save lots of money because paying for extra baggage at the counter may cost you more than twice the amount!

Another thing that I like about AirAsia is the space allowance for sports equipment on board. If you are a regular sports traveller who carries your odd-sized sports gear with you whenever you travel, then you will like the sports equipment add-on that AirAsia offers.

Simply inform AirAsia of the required weight and type of equipment during your booking online, and pay a one-time sports equipment fee for the check-in service. Smaller items like a tennis racquet or a hockey stick are accepted as part of your check-in baggage, so they won’t be charged. AirAsia offers up

to 40kg for odd-sized sports equipment check-in – plenty for the frequent golfers and wake boarders, if you ask me!

What’s more, I found out that the add-on flexibility extends to post-online booking as well. This means that even if you change your mind and decide to opt for extra baggage after you have completed your flight booking online, AirAsia will not charge you additional service fee. Simply go onto the website, access Manage My Booking, and pay only for the standard baggage fee according to the weight you want.

With such a range of add-ons available, there shouldn’t be any reason why you are only packing the bare minimum for your travels! And, if you change your mind, fret not because you can adjust your add-ons up to four hours prior to check-in, via the AirAsia website.

Androgyny meets soft geometric forms – that sums up designer Max Tan. Expanding on simple ideas, he works his magic and conjures silhouettes that conceal the wearer’s form, creating a new shape altogether.

His Spring/Summer 2013 collection, entitled Utopia, is no exception to his signature style. His new collection features geometric shapes, wood-inspired finishes and kimono-like collars with pocket details.

“As always, max.tan is a collection of thoughts, emotions and experiences that my design team and I go through every six months. It is a personal journey of our take on fashion and almost every season, our thoughts on what fashion means to us,” says Max.

He adds, “For Utopia, it started off with us questioning how much is ever enough, given that fashion reinvents itself every six months. The search for perfection, Utopia, lead us to the works and philosophy of architect Lebbeus Woods and his idea world of what Utopia means to him. We took references from the light suspended structures on his sketches, to the chaotic clash of textures and lines.”

He unveiled Utopia during Copenhagen Fashion Week last year and received positive responses.

“The presentation during Copenhagen Fashion Week was a great learning experience for me. Without the help of sponsors and partners, I would not have been able to pull it off! Being in a new land for the first time and having been listed on the official schedule was a great milestone for me. It was also a wonderful opportunity to be on much foreign press!” Max enthuses.

Max is currently working on his Autumn/Winter

line, a replay of his 2010-2011 collection, Against. Playing on the wrong rules of tailoring, it has an underlying story of bipolar disorder worked into it. Look out for small tailored details such as unexpected dart placements.

Max is also looking to be stocked in the USA “some time soon”.

It Is always a pleasure to see Chef Dan Segall, Group Executive Chef of The Big Idea Group, with his affable personality and artistic concepts. This time, he has chosen to create a Japanese starter, Momotaro Sashimi, using Japanese Momotaro tomatoes.

These Japanese Momotaro [peach boy] tomatoes that Chef Dan has chosen cost about $8 for two because they are so good, but there are cheaper options available in Japanese supermarkets.

In fact, these Momotaro tomatoes taste almost like the sweet types of fruit you eat after a meal. They certainly do not taste like the usual tomatoes we are more familiar with.

Japan’s natural environment is rich in regional and seasonal changes. Taking advantage of these changes, producers have developed a wide variety of vegetables. Japanese vegetables are succulent, with unique tastes.

Producers have continued their efforts to produce high quality vegetables through selective breeding and the application of specialised farming methods. Eating vegetables raw has thus become a common practice in

Japan, and vegetables such as lettuce, tomatoes, cabbage and shallots are firm favourites to be eaten raw in salads at home. In recent times, their distinctive taste and attractiveness has also led to an increasing number of French and Italian chefs who use Japan-grown vegetables.

Likewise, Momotaro tomatoes, and this dish, are exceptional.

PIPer-heIdsIeck held a Master Class, hosted by Ned Goodwin MW, Piper-Heidsieck & Charles Heidsieck Brand Ambassador for Asia Pacific, in conjunction with The Specialist Importers Trade Tasting (SITT) 2013 Asia.

Goodwin explains that this Master Class was in part to help people to know about the new Piper-Heidsieck as opposed to that 20 or more years ago, as there has since been a revitalization in its winemaking methods and approach.

At the Master Class, there were five champagnes showcased and tasted – the Piper-Heidsieck Brut (NV), the Piper-Heidsieck Cuvee Sublime (NV), the Piper-Heidsieck Rose Sauvage (NV), the Piper-Heidsieck Rare Millesime 2002, and the Piper-Heidsieck Rare Millesime 1998 (Magnum).

The Piper Heidsieck Cuvee Sublime is truly great-tasting champagne. It is structured, full-bodied and bursting with fruit. On the nose, the fruit is ripe, juicy and melts into pastry-like flavours, such as caramel, vanilla and dark rum, roasted pineapples, vanilla pear and flambéed banana.

On the palate, it is lively with the tastes of citrus fruits and roasted pineapple. It has a duality which balances between smoothness and juiciness – cinnamon and vanilla-roasted pear. On the whole, it is structured, full-bodied and ‘melts in the mouth’.

The Piper-Heidsieck Rose Sauvage is a refreshing blended Rosé, added to the Piper-Heidsieck Brut classic blend. It is great-structured, full-bodied and fruity, elaborated with a majority of Pinot Noirs (an audacious 20 to 30 per cent red wine added to the Brut NV blend), wines from over 100 crus, and Pinot Meuniers from Grande et Petite Montagne de Reims. It has a rich and expressive red fruit nose, including characteristics of blackcurrant, blackberry, cherry and Gariguette strawberry.

For the palate, the Rose Sauvage is brisk, original and juicy, and simultaneously offers black

cherry, blackberry, pink grapefruit and blood orange notes. Its structure and fruitiness is enriched with warm, spicy notes of Espelette pepper, tea and liquorice.

The Piper-Heidsieck Rare Millesime 1998 (Magnum) was definitely the highlight. On the nose, it has an initial touch of sandalwood and cedar that gives way to a more hearty bouquet of gingerbread, orange

blossom and dried apricots. The lasting aromas are of those of meringue, cocoa and liquorice, finishing with a subtle combination of underwood, camphor and bergamot orange.

The structure of this wine is delightfully gentle and varied, constantly alternating between firmness and warmth, with creamy notes and the delicious aromas of cocoa, greengage plums and mango. The overall impression is a timeless wine that expresses richness and complexity.

Goodwin says Piper-Heidsieck’s wines are now more poised, as a more sensitive approach to winemaking is applied. He says that what sets Piper-Heidsieck apart is that it has more attention to detail than its competitors, and its abundant fruit and freshness.

Goodwin is one of only five Masters of Wine in Asia. His work has led him to take on various roles, including of sommelier, educator, show judge, consultant and corporate buyer.

On his current role, he says it is the first time that Piper-Heidsieck has had an ambassador like himself, travelling through Asia. There is now a greater focus for the company on Asia Pacific, including Hong Kong, Australia and Japan.

Japanese cuisine is known for changing by the season and homegrown sushi chain Sushi Tei is no exception. Launching its latest promotional “Epicurean Winter Delight” menu, these items will be available until Mar 19.

Instead of going to your usual conveyor belt sushi place, why not take the family out for proper, affordable Japanese fare? The seasonal menu features abalone, monkfish liver and fresh oysters on their dishes. Prized by the Japanese, the Awabi Sashimi ($18) – fresh abalone that is lightly steamed and garnished with a squirt of lemon – makes for a refreshing appetiser.

We also loved the ankimo – monkfish liver. Think of the French foie gras but in fish form. It has the soft, luscious texture of foie gras but with none of the gamey scent. The Ankimo Ponzu ($6.50) is served with grated radish, green onions and tangy citrus-based ponzu sauce.

Oyster lovers can also enjoy their Kaki Kimchi Nabe ($14), an oyster-filled mini-hotpot with vinegary kimchi, enoki mushrooms and a myriad other vegetables. A great dish for these cold, rainy days.

Also, try the Bamboo Oyster Roll ($8), a playful twist on bamboo sushi. A hollowed-out cucumber is stuffed full of pan-fried oysters and egg, topped with diced tomatoes and with a sesame sauce drizzled over.

End the meal with a sweet treat, with the Naruto Sweet Potato Ice Cream ($3.40), a sticky-sweet snack imported from Hokkaido. You can pick from the selection of frozen Nama chocolates and pancakes as well.

i’m usually pretty gung-ho and will attempt new bakes on the day guests arrive but, for this bread, it wasn’t the case. The look was a little intimidating. I wasn’t sure if my first attempt would nail it so, yes, I did a test bake prior to the lunch date. Heh! And boy, was I glad or what!

Here is a recipe for a successful version.

IngREdIEnts For the filling:•1greenapple,skinned and cubed•85gofsugar•1-2teaspoonsofground cinnamon •1/4teaspoonsofnutmeg•26gofunsaltedbutter For the dough:•60gofunsaltedbutter,melted•1/3cupoflukewarmmilk•1/4cupoflukewarmwater•2largeeggs•385gofplainflour•45gofsugar•1/2teaspoonofsalt•21/4teaspoonsofinstantyeast

MEthod1. Whisk together the butter, milk, water, eggs, and vanilla extract.2. In the bowl mixer, mix together the flour, sugar, salt, and yeast, then add the wet ingredients.

Using the dough hook attachment, mix and knead until the dough is smooth. The dough will be quite soft. If it seems too dry, add a little water. If it seems too sticky add just a little flour, up to a1/4cup.3. Place the dough in a lightly- greased bowl, cover, and allow it to rest until doubled in size, about 1 hour.4. Grease a 9” × 5” loaf pan.5. Gently deflate the dough and turn it out onto a lightly- greased surface. Roll the dough intoa12”×20”rectangle.6. Stir the vanilla into the melted butter. Spread the butter mixture over the entire top on the dough. Use a pastry brush to get the butter evenly spread over the surface of the dough. Sprinkle the brown sugar over the top, using your hand to spread it evenly over the butter. Sprinkle the cinnamon evenly over the dough. Add the apples, on top of the cinnamon and sugar, and sprinkle on the nuts, if using.7. Cut the dough cross-wise into six31/2”×12”strips.Stackthe strips on top of one another. Cut the stack into six pieces, about2”×31/2”each.This part is a little messy but it doesn’t have to be perfect.

8. Turn the pieces on edge, and place them in the loaf pan one in front of the other, from one end of the pan to the other, squeezing them in tight. I sprinkled any nut or apple that had fallen off over the top of the dough after I put it into the pan.9. Cover the pan and allow the loaf to rise for 30 to 60 minutes, until it’s almost doubled in size. While the loaf is rising, preheat the oven to 350°F.10. Bake the loaf for 45 to 55 minutes in the centre of the oven, tenting it with foil after 30 minutes. Remove the loaf from the oven, and transfer it to a rack to cool for 15 to 20minutesbeforeturning it out of the pan to cool completely.11. While still slightly warm, spoon the glaze over the top of the bread.

Note: Do not coat the apples with sugar.

The first time I baked it, I almost wiped out the entire loaf. It’s crazy-good! If not for the little self-control left in me, I would have finished the whole loaf!

it had been almost six months since I patronised this stall. The main reason why I took so long to visit this stall was not the food but because I did not have the patience to wait, in the past. I still remember that the hor fun served here was outstanding and its gravy was tasty and flavourful.

This time round, I resisted the temptation to order their hor fun and was determined to be patient and order another dish - Fish Head Soup with Rice. I queued for 35 minutes during lunch hour!

At long last, I got my food. The Fish Head Soup with Rice at $4.50 was value for money. Customers can choose to have the fish soup with preserved vegetables or bitter gourd.

They were very generous with the amount of fish head. There were so many pieces that I took a good half an hour savouring them, despite considering myself to be a fast eater. The soup was filled with many different ingredients – preserved vegetables, fish meat, spring onions and several other ingredients that I could not recognise. There were also small bits of pork lard added to enhance the flavour of the soup and to provide an additional crispy and crunchy texture.

The soup was 'souperlicious' - robust and packed with flavours! It was slightly salty, mainly due to the preserved vegetables, with a faint hint of sweetness. The fish

head was fresh. More importantly, it was not fried.

You may have noticed how many fish soup stalls fry their fish heads to mask the fishy taste which, at times, means that the fish is not fresh.

I easily finished the whole bowl of soup.

The salted bean sauce mixed with chilli padi is a must for fish soup lovers. I can’t help but say how I wish all fish soup stalls provided this instead of chilli padi with light soy sauce. The taste is totally different and does not complement as well as the one with the salted bean sauce!

Four Seas Fried Mee & Rice, Fried Hor Fun did not disappoint. It was a fulfilling meal. The only negative aspect was the long waiting time. I am keen to try their Bitter Gourd Sliced Fish Soup when I have the opportunity and, of course, patience. It is such good value for money considering the quantity and quality of fish given.

P.S. Even if the queue at this stall is short, you are likely to be waiting for a long time. This is because the regulars normally do not queue.

You probably recognise Fly Entertainment artiste, actress and now producer, Tan Kheng Hua from her comedic role in

long-running sitcom Phua Chu Kang as Margaret, the career-woman wife to Pierre Png’s character.

Kheng Hua has since appeared in more than 50 local theatre productions including leads in landmark plays such as Beauty World, the Dim Sum Dollies shows and was even the consultant producer for the recent Pangdemonium show, The Full Monty.

She was also involved in Dick Lee’s Peranakan comedy production, Sayang Sayang, alongside artistes John Lee and Michelle Chong.

Apart from acting, she has also made a foray into creating television dramas. Her productions such as 9 Lives and Do Not Disturb were critically acclaimed and heralded.

Her part in a photographic exihibition entitled 21 Remarkable Women for Aware has also gained quite a few eyeballs.

The Sing Theatre version stars Tan Kheng Hua, Neo Swee Lin, Serene Chen, Morgane Stroobant, Sophie Wee, Julia Abueva, Daisy Irani as well as Kimberly Creaseman. They play the wife, mother-in-law, sister-in-law, chambermaid, elder daughter, younger daughter, housekeeper and sister respectively. Hilarity and meaningful arias and songs ensue with each skeleton that falls out from the closet.

Who murdered the patriarch? Will there be a happy ending? Or will they learn to appreciate and treasure one another the hard way?

All these questions culminate in a climax with a twist, that will reveal all.

With Oz the Great and Powerful, Raimi, of the Spider-Man trilogy, tackles the biggest directorial project of his career, saying, “This is a very big picture, gigantic in scale. The world of Oz as Frank Baum created it has so many different countries and lands. It’s an entire, fabricated world.”

“As large as the Spider-Man films were, that was a fantastic character in a city we knew, Manhattan. It wasn’t a created world. That’s what Baum has done in his books. He’s created this entire world of Oz,” he says.

The imaginative story follows Oscar to the vibrant Land of Oz. Raimi says, “It’s very interesting to me that we learn about this mysterious character of Oz, who is

really an enigma in Baum’s book. Who is this guy? How did he get there? How did he end up with this fantastic apparatus and become a ruler if he’s a fake?”

“This film explains how all the characters became who they are and explains their origins so you understand them a little more,” actress Mila Kunis, who plays Theodora, observes.

Golden Globe nominee Kunis (for Black Swan) plays the tormented young witch Theodora, and the other two witches are played by Academy Award-winner Rachel Weisz (for The Constant Gardener) as Theodora’s older sister, Evanora, the witch who rules over Emerald City, as well as three-time Oscar-nominated actress Michelle Williams (for Brokeback Mountain, Blue Valentine and My Week with Marilyn) as Glinda, the good witch.

The film also stars Emmy and Golden Globe nominee Zach Braff (for Scrubs and Garden State), who plays Franco’s circus assistant and also lends his vocal talents to one of the CGI creatures in the story — Finley, the winged monkey, who accompanies the magician on his journey

through Oz, serving as his sounding board and conscience.

To match this magical movie, the talent and

experience of four-time OzOscar-nominated composer Danny Elfman was enlisted. Special makeup artists Howard Berger, an Oscar-winner, and Greg Nicotero both created the looks of several of the unique denizens of Oz, including creatures such as the

Munchkins, the Tinkers and the Winkies, as well as the ghastly look of the Wicked Witch of the West.

All the sets for Oz the Great and Powerful were built indoors, including the fauna-rich Whimsie Woods. The sets were spread out over seven sound stages at the Michigan Motion Pictures Studios’ sound stage facility in Michigan.

Oz the Great and Powerful was filmed in 3D using 3D cameras. This was a new experience for Raimi. Filming in 3D changed the way Raimi worked with the camera — 3D cameras are not as mobile, and the director likes to move the camera around quite a lot.

Raimi would like moviegoers to come to the theatre expecting a big adventure and a story that they can connect with.

“I hope they laugh and fall in love with the Wizard,” says Raimi.

“I hope they’re terrorised by the Wicked Witch and the winged baboons. I think there are some surprises waiting for them down the Yellow Brick Road,” he says.

He describes his job as having to take care of everything, including knowing where to get the nearest doctor in an emergency, so that all travellers need to do is to have fun and enjoy themselves.

“My job entails a number of things that includes helping to get particular things our travellers may need, to giving them public transport information or maps of where they are going. Most importantly, I lead the city tours and programmes, and make sure they have a great time on their holiday,” he says.
