Fruits, vegetables, whole grains, nuts and seeds -- we hear a lot about the "best" food groups for health. But what about the worst ones? What foods should you be eliminating or at least cutting back on?

Research published recently in the Journal of the American Medical Association looked at dietary intake and 318,000 deaths from diabetes, stroke and heart disease. In addition to not eating enough omega-3 rich seafood, nuts and seeds, two problematic factors stood out.

These deaths were associated with eating too much salt and too many processed meats. The two go hand-in-hand in sausages, hot dogs, corned beef, beef jerky, canned meat, meat sauces, lunch meats and bacon. Eating too much salty food was associated with nearly 10% of those deaths. Processed meats are a key source of salt, but so are snacks, prepared foods and even packaged vegetables, especially those canned in salt.

A separate study of 400,000 deaths related to heart and blood vessel diseases presented at an American Heart Association scientific meeting came to similar conclusions -- finding 9% of these deaths were due to too much salt. The very unhealthy trans fats were also on the dangerous foods list. Fortunately, these are being phased out of packaged foods.

But again, what you're not eating makes a difference, too. These researchers also found that not getting enough whole grains, vegetables, and nuts and seeds was detrimental, with each missing food group being linked to between 10% and 11% of the deaths.

When planning your best diet, remember that eating healthy is a balancing act -- you want to increase good foods and cut back on the bad ones to make sure that the scales tip in your favor.

Since 1959, HCRC has hosted summer camps in North Carolina for kids seeking a refuge from the seasonal heat and a sanctuary for spiritual, mental, and physical growth. Now, as a year-around facility, the

Camp welcomes groups of all faiths to respond to a higher calling in the beautiful wooded mountains in Banner Elk. HCRC’s mission is to provide a safe and hospitable environment for guests (adults as well as youth) to experience a transformation of mind, body, and spirit as they engage in a community of faith, recognizing grace through our transcendent God, and seeking greater understanding of themselves, others, and the environment.

About 5 years ago, a plan was developed that was intended to allow HCRC to become independent of Holston Presbytery. While progress versus the plan has been made, it’s taking a little longer than anticipated for HCRC to become financially independent. While they’ve managed to cover operating costs including all staff aside from the Director, they do not have the ability to fund capital improvements (including repairs to Gunther Lodge and other existing buildings) or offer as many scholarships as they would like to provide for campers. In addition, they are having to “borrow” money from Holston Presbytery (which they must pay back) to cover the cost of the Director’s salary. Summer Camp enroll-ment numbers are looking good and the staff are working hard to evaluate options to increase use of the facilities by retreat groups which could significantly increase revenue.

One advantage of becoming independent from Holston Presbytery is HCRC is now able to conduct their own fundraising activities, including reaching out directly to churches within Holston Presbytery. A few weeks ago, Pastor Collin gave a Minute for Mission on HCRC and shared that anyone who wished to support the camp could send contributions directly to them. It’s not too late! If Camp holds a special place in your heart, and/or you want to help ensure that our camp does not end up like so many other church camps that have had to close their doors, please pick up an envelop in the Narthex and drop your contribution in the mail. Alternatively, you can donate on-line by going to holstoncenter.org where you can designate the percentage of your contribution you prefer to go towards Summer Camp financial assistance or infrastructure maintenance.

Supplies: Tissue Paper Black Construction Paper Scissors Contact Paper Ribbon

Directions: First take your tissue paper and cut it into squares. Then using the black construction paper draw the shape of your jellyfish and then cut out the middle so that you then have a black jellyfish frame like the image above. If your child is older, they can do this step, but younger children may need help learning how to use scissors.

Cut a piece of contact paper that is larger than your jellyfish, remove the protective sheet and tape the contact paper on top of a table with the sticky side facing up. Place the black jellyfish outline down on the

sticky side of the contact paper and then you can start placing the tissue paper squares. Don’t worry about the paper going over the black lines, you’ll be cutting around that when you’re done.

Take another sheet of contact paper and place it down on top of your jellyfish to seal it, then trim around it. I left about an inch around the edges to make sure that it would stay sealed. Finally cut some decorative ribbon and tape it to the back of your jellyfish.
