We are committed to bringing our passion for Texas history alive through the sights and sounds of our gunfight reen- actments. Taking our audience back in time to experience life as it was over 100 years ago. Gun safety for all, always comes first when delivering dramatic and sometimes humorous gunfight re- enactments. All guns are inspect- ed before and after each gunfight to make sure they are safe and in good working condition. Every first and third Saturday of the month we have our gunfights on main street within Dallas Heritage Village. The 19 th centu- ry buildings, including a full size bank and saloon is a perfect place for a robbery or gunfight to take place. After the shows our guest are welcome to take photos with the members of the team or join us in the saloon for an ice cold root beer. One of our favorite events of the year is candlelight at Dallas Heri- tage Village. The cowboy’s set- up camp and light up the night with a warm inviting camp- fire. Guest are always welcome to join us by the fire and listen to cowboy tales of the old west. Some of the members also enjoy volunteering their free time at Dallas Heritage Village. You may find them cooking in the cabin, behind the bar of the saloon, touring homes, or playing games from the past. Our posse of outlaws, lawmen and ladies are dedicated to deliv-ering a colorful live presentation of the old west. Dutch oven cooking demonstration during the Candlelight event at Dallas Heritage Village. The menu included green chile bison, pinto beans, blue berry pie and sweet potato biscuits.

1 Large Sweet Potato3 Cups self rising Flour 3/4 Cup of Buttermilk1/4 Cup Shortening 1/4 Tsp Cinnamon2 Tbs Sugar

Boil and mash a large sweet potato. Shift flour, sugar and cinnamon in a large bowl. Add mashed sweet potato and shortening, and mush together. Add buttermilk a little bit at a time, just enough to soften dough. Knead for about a minute, then roll dough one inch thick onto a floured board. Cut out biscuits with a small round tin can or biscuit cutter. Place in a well greased pan and bake in a dutch oven over a hot fire until browned. For you city folks you can bake in your oven at 450 degree. Serve hot with homemade Corn Cob Jelly or fetch you some local bee honey. Enjoy!
