T
he long drive of curved roads under a
canopy of oaks rewards you as you
finally enter the old property known as
Halter Ranch. The 1880s Victorian house
and old silo and barn seem perfectly suited to
the spot. By contrast, the tasting room, built
in 2005, is modern, with a curved bar, warm
wood tones and hip track lighting embedded
into the wood beams. Halter Ranch is a 960-
acre ranch, with 250 acres planted to grapes,
both Bordeaux and Rhône-style varieties.
The focus is on estate wines, showcasing the
property’s strengths. From Rosé to Sauvignon
Blanc, Syrah to Cabernet Sauvignon, HalterRanch combines history with award-
winning, unique wines suited to the exact
place they are made. The focus is on Rhône
varietals, specifically Syrah, though Cabernet
Sauvignon is also one of the main reds. The
property was originally part of a 3,000 acre
ranch dedicated to cattle, hay and barley
production.
Today, the focus is wine. Mitch Wyss has
been a farmer for 25 years, farming 200 acres
of kiwifruit and sugar plums. He never had
experience with grapes before. “I was just
Irish enough to think that a vine is a vine,” he
said, referring to the kiwi vines he used to
grow. But he got a crash course in viticulture
when Swiss businessman Hansjörg Wyss (no
relation) bought the property in 2000. Wyss
asked Mitch, and his wife Leslie, to develop
the vineyard and winery with the dream of
creating a world-class estate vineyard.
They began by soil mapping the entire
area to determine the varieties they would
plant. In the end, 19 different varieties were
planted, including six different clones of
Syrah and even a little Grenache Blanc,
Cinsault and Tannat. One of the reasons for19 varieties means that there are abundant
blending options. The goal was always to
“make a world-class estate vineyard” Leslie
said. “After all, what we’re doing here is
Halter Ranch. We’re not interested in making
a lot of wine from everywhere. We believe
this place has significant growing condi-
tions,” she added. And that sense of place in
important to consumers, especially in today’s
economic conditions. Anyone can purchase
wine from a non-descript area, but P
Robles’ star is on the rise and the cache of
area, plus award- winning wines speaks
itself. In fact, Halter Ranch’s 2005 Caber
Sauvignon just won a gold medal and
coveted Best of Class Award at the 20
Central Coast Wine Challenge and the 20
Estate Syrah was named Best Red Wine
of the entire competition. Part of that
meticulous farming. “We’re producing two
three tons of fruit per acre and two clus
per shoot, in some cases one cluster
shoot,” Leslie says.
Bill Sheffer came on board as winema
in part due to the precise conditions

board of the Central Coast Vineyard Team

ability means that we meet the
needs of present without
compromising future genera-
tions,” Mitch stated.
Wine clubs are pretty stan-
dard, but Halter Ranch has
tweaked the idea and come up
with some wining combinations.

you’ll receive a 25 percent
discount, of course the require-
ment is to purchase multiple
cases in order to get the discount.
As a bonus, Owners Club
members get wines about a
month before the public releasedate. Halter Ranch also allows
members to choose their own
shipment options. Additionally,
they offer a toll free “concierge
line,” so that if you visit Paso
Robles, they’ll be pleased to offer
suggestions about places to stay,
eat, taste other wines and places
of interest to visit.
For all this you might think
the tasting fees would be pricy.But the fee is a simple $5 and is
waived with any wine purchase.
A selection of cheeses, cured
meats, dipping oils and crackers
allows you to have a spontaneous
picnic outside under the olive
trees, or near the outdoor fire-
place on the flagstone. Fresh
bread is brought in on Fridays.
Halter Ranch Honey is also avail-
able. “The bee keeper puts hisboxes here and bottles especially
for us so we get the honey from
the hives on the ranch,” Leslie
says. Historic Halter Ranch is

For many of us, hearing stories about the
success of someone local brings joy to our
hearts. Such accounts take on a slightly
different meaning when the subject is actually a
homegrown business, but they are nonetheless
refreshing because companies often withstand the
same ebb and flow of success as their human coun-
terparts.
“Born and raised” on Paso Robles’ west side in
the 1980s, Adelaida Cellars has finally received its
due recognition with wines produced from excep-
tional estate vineyards in the Santa Lucia Moun-
tains. That land supports two sustainable agricul-
tural enterprises with a combined staff of two
dozen.
A good neighborhood
The Adelaida District is profoundly affected by
an afternoon marine layer that helps develop essen-
tial acidity and mature tannins in the grapes.Furthermore, shallow chalky mountain soils control
vine vigor, resulting in low grape yields and intense
wine flavors.
Longtime residents of Southern California, the
Van Steenwyk family purchased Hilltop Ranch
along Adelaida Road in the late 1970s as an invest-
ment. The steep, contouring slopes – home to
several hundred acres of walnut trees – are situated
14 miles from the coast with elevations up to 2,000
feet. The family soon acquired nearby Viking
Ranch, adding more orchards to the exist
walnut-growing business.
Meanwhile, John Munch launched Adela
Cellars in 1981, making wine in leased space w
fruit from local vineyards. He would continue
such until he met the Van Steenwyks in the
1980s. “Our county farm advisor was alre
suggesting that we plant wine grapes, so the tim
was right,” said Elizabeth Van Steenwyk. A 19agreement established Munch as the winemak
managing partner while the Van Steenw
constructed a facility on Hilltop Ranch and be
developing vineyards.
Viking Ranch was planted with 10 acre
Cabernet Sauvignon and Syrah in 1991. “Consid
ably warmer than our Hilltop Ranch, Viking Es

The next breakthrough occurred in 1994 wthe family purchased part of the nearby Hoffm
Mountain Ranch, including most of the vineya

considerable care was needed to bring it back to commercial standards
after years in fallow.
The vision of Dr. Hoffman should not be taken for granted. The
west side of Paso Robles was a rugged place in the early 1960s and
hardly an established wine region. The buzz surrounding this under-
taking intensified when he contracted legendary wine consultant
André Tchelistcheff.
In 1999, the Van Steenwyks bought out John Munch to become the
sole proprietors of Adelaida Cellars.
The Vineyards Have Spoken
Setting their sights on complete vineyard control in order to make
the best wine possible, the Van Steenwyks continued to develop other
properties after Viking and HMR.
Bobcat Crossing, along the slaloming road to the winery, was
planted in 2002 with Muscat Blanc for an ice wine, and three
Portuguese grape varieties for a Port. Situated on the ridgeline above
HMR, Anna’s Vineyard was planted with 18 acres of Syrah in 2002-03.
It resulted from a cooperative experiment with Cal Poly, and is
composed of numerous clone and rootstock combinations that
contribute great complexity to the wines. Anna’s was extended in
2005-06 with nine more acres of Rhône varieties.
In 2004, Michael’s Vineyard was planted on a dome-like knob
between HMR and Viking with 18 acres of dry-farmed heritage clone
Zinfandel.
Finally, Viking Ridge Vineyard was completed in 2007 on a 1,900-
foot ridgetop across a ravine from Viking Estate Vineyard. This nine-
acre site is a mixture of Cabernet Sauvignon, Cabernet Franc, Malbec
and Petite Verdot.
Go Where the Wine Critics Go
The winemaking style of Adelaida Cellars took a dramatic leap
forward when Winemaker Terry Culton was hired in 2003 after a
tenure at “Pinot University,” the Calera Wine Company. His concen-
trated New World, but not over-the-top wines have received superla-
tive reviews from the media including Bon Appetit, Connoisseurs’
Guide, Decanter, Santé, Wine Advocate, Wine Enthusiast and Wine &
Spirits.
Feed the soil, and the soil will feed the vines.
The lean mountain soils in Adelaida’s vineyards would slowly wash
away if sustainable practices were not used as a safeguard against
heavy winter rain. Sustainability, and the inherent use of cover crops,
manifests healthy soils via a comprehensive approach to vineyard
management that encompasses soil conservation, vine hydration, non-
till farming (all vineyards except Michael’s), and pest and weed
control. It has everything to do with being good stewards of the land
– a commitment the Van Steenwyks learned from their grandparents
and will pass to the next generation

the Central Coast, appropriately named SLO
Down Pub. Housed in a 70+ year old lumber
yard barn, it provides a unique venue where
locals gather to enjoy live music and relax at
the end of their busy days. You’ll find a wide
selection of wines and beers made locally,
most from the Central Coast of California.
There are new selections monthly for wine
tasting, and the wine is also sold by the bottle.
The SLO Down Pub offers a quaint setting
in SLO style. That’s what folks are saying
about the eclectic, eco-art filled space,
designed to allow you to unwind with
friends, business associates and family. At
SLO Down Pub, you will find a comfortable,intimate place where the art of conversation is
alive and practiced seven days a week. Visi-
tors enjoy local, live music, wine by the glass
or bottle, and a variety of locally brewed
beers, all in a casual environment that lends
itself to intimate conversation.
Efforts were taken to incorporate into the
construction and daily operation local mate-
rials and services. When you enter you are
struck by the lighting effects and structure.
The bar is constructed from a fallen pine tree
from Cambria. The lighting fixtures are from
local eco artisan Steve Bewley and are made
of recycled paper, steel, copper, guitar stringsand wood. The dark flooring is from a farmed
stainable pine forest. Art from local artists of
San Luis Obispo County hang both for décor
and for sale. All in a laid-back, low-key yet
fun-loving atmosphere that pervades the pub.
Local musicians clamor to secure a date to
perform at SLO Down Pub. Most evenings
host a variety of entertainment, including
contemporary, jazz, ballads and blues.

Coast Bluegrass Society “jams,” which
opened to the public, drawing a regu

Tolosa Winery has commissioned six local artists to participate in
their inaugural fund-raising event, Barrels R Art. “Our mission is to
provide a platform for local artists to apply their talent and showcase
their creative synergies to another great art form: the creation of wine,”said Bob Schiebelhut principal at Tolosa. Each artist was given a 60
gallon barrel to transform into their unique work of art. Each barrel
will be a one of a kind original.
The barrels will be on display in the Tolosa Tasting Room from July
26th to September 5th. There will be a gala dinner auction held at the
winery on September 6th with legendary auctioneer Gil Stork as
Master of Ceremonies. Guests will have a chance to mingle with the
artists and bid on the individual art barrels. The elegant evening will
be catered by the incomparable Megan Loring and paired with Tolosas
fine wines.
TEACh Foundation (The Endowment for the Advancement of
Children) was chosen as the beneficiary for the evenings proceeds.The timing for this funding for the local schools couldn’t be more
fortuitous with the recent state-wide budget cuts. The TEACh Foun-
dation goal is to build a permanent endowment that will directly be
distributed to the San Luis Coastal Unified School District – the funds
support all schools grades K-12 in San Luis Coastal Unified. “The
money raised will go directly to the classroom, allowing students to
participate in programs that they may not normally be able to receiv

T
he undulating hills and passes that
make up Highway 46 West from Paso
Robles to Cambria are an exotic
mystery. As soon as you think you’ve seen
everything, something else pops up.
Whether it’s a new winery or spotting deer
in a field or an owl flying overhead, the
combination of man and nature has created
one of the true gems of the Central Coast.
It is in this unique place, some 12 miles
from the Cambria coast and 9 miles from
Templeton and Paso Robles that John
Somogyi built Rocky Creek Cellars. With
small production and little fanfare,Somogyi has found a niche that is as
unique as the winery he built. Flying in
the face of convention, Rocky Creek wines
are not just hand-crafted and fussed over
by their owner and winemaker, they are
low alcohol, longtime barrel fermented
without benefit of stainless steel. Their
character is as unique as their story and
their flavors stand out even in a sea of
wines from the Paso region, all of which
deserve some consideration.
“I want the wines to speak for them-
selves,” says Somogyi, a native of Hungary
before settling here on the Central Coast.
“I want the Cab to be a real Cab and the Zin
to be a real Zin,” he says. Rocky Creek is
one of the few places where wine tasters are
treated to wines from the 2000 and 2001
vintages and they are not taken out of a
wine library. “I think wine needs to age a
long time. It’s like most things in life – it
takes time to get really good,” says
Somogyi.
Yet, with the hand-crafted wines, aged
in neutral oak over long years, Rocky
Creek’s price points are fair and consistent,even low one might say. It wouldn’t be
right, though, to simply call the wines a
tremendous value, though they are. They
are top notch, delicious and nuanced wines
for whatever price and they will continue
to age well or drink well now.
Focusing on only red wines, Somogyi
works with Mike DeBellis, his longtime
winemaking partner to craft Rocky Creek
wines. “Mike and I have been making wine
together since the ’90s and he’s going
retire soon,” says Somogyi. “I’m going to

Somogyi uses only local fruit, growi

Café Vio was on the verge of closing. Having been opened at abuilding known in Paso Robles as the Granary, near the railroad crossing,the café was sinking into a morass of pre-packaged foods and a bit of
coffee. Yet the local constituents, in love with their gathering place,simply refused to let it die and help came in the form of Alan and NinaCourtney, Café Vio’s own Calvary who arrived in October of last year.
“I love my little place,” says Nina Courtney, who is truly at home here.
“I just saw the potential to make some changes and we did that and now,things are looking up.” Gathering advice from a group of regularcustomers she and Alan refer to as “The Board of Directors,” the pair gotrid of the pre-packaged foods and hired a professional chef to at once
simplify the menu and charge it with new quality and life. The menunow includes fresh breads and pastries baked right on the premises,meats that the Chef prepares himself in the kitchen whether roasting
succulent turkey or preparing lean pastrami for the delicious sandwiches,and a focus on fresh produce. “And the coffee is still the very best intown,” says Nina. “It has to be because my husband loves, and I meanloves, good coffee.”
Open daily for breakfast with a fresh menu featuring egg specialtiesand fresh pastries, the Courtneys have seen to it that Café Vio stays openuntil past dinner time. “One thing the Board told us was that the previousowners closed too much,” says Nina. “So, we’re open now from early
morning until sometime after the last few customers leave which isusually around 7 or 8 o’clock.” The lunch menu serves as well for adinner menu and customers seem to prefer it that way.
The ambience of the place has changed as well. Simple white wallshave now been replaced by warm colors with plenty of artwork includingone whole section dedicated to Western art. “We have a new artist eachmonth and it’s been such a treat,” says Nina. “We have the artists come in
every second Friday of the month and feature their work and it’s been
really popular.” The restaurant itself is broken up into separate “livingrooms” each connoted by a different color scheme and various kinds of comfortable furniture. From couches to cushy chairs to kitchen tables for
larger groups, Café Vio feels very much like homemade and it’s thatatmosphere that keeps regulars coming back.
The food is exceptionally good with the meats as tender and juicy as
they can be. Fresh produce adorns the sandwich plates and homemadedressings, freshly baked breads and freshly brewed teas and coffees are inconstant demand. In short, Café Vio has once again put the life back in
Vio.

There are no right or wrong answers when it comes to deciding
what you sense when you taste wine. Always remember that your
own impressions mean more than what others get from it.
After examining the appearance of the wine – observing clarity
and color – smelling and tasting follow. The wine’s aroma provides a
hint of the wine’s character, however, there are almost always unex-
pected impressions that come after that first sip is taken.
With no more than one-third of a clear, clean wineglass filled
with wine, grab the stem of the glass with the base still flat on the
table and swirl it in small circles. The purpose of this is to aerate the
wine, letting oxygen mix with it and bring forward its natural
aromas and flavors. Then take one to three short sniffs with yournose inside the glass. Pull away from the glass and think about your
immediate impressions of what you just smelled.
Ask yourself first whether the wine smelled “clean.” By this I
mean that it has no obvious faults. If you drink wine on a regular
basis, a bad wine with aromas that are “off” will stick out immedi-
ately. If nothing seems out of the ordinary, the next question to
consider is whether the wine aroma is typical of its grape varietal. In
other words, if you smell a Pinot Noir, does it have the familiar
aromas of cherry and herbs that are normally associated with Pinot
Noir? If you are not familiar with the typical “nose” characteristics of
the grape, simply concentrate on what comes to mind upon the first
few sniffs.Sip the wine. Some people taste by swishing the wine around in
their mouth, like mouthwash, to get a full impact on the palate.
Others suck in some air with wine, like slurping, in order to mix
more oxygen with wine. Whatever method you choose, the impor
tant thing is to concentrate on your first impressions of flavor and
texture.Think in broad terms first, then narrow down your impression
Ask yourself, “is the wine light, medium or full body?” Is it filled
with bold fruit flavors or is the fruitiness more subtle? Is it complewith a multitude of flavors, or is it simple, easy to drink? Is it swee
or dry? Crisp or mellow? Does it have a good balance of impressioor is one component dominant? Does it leave you wanting more?
Take another sip and narrow down your impressions a little
further. Are the fruit flavors light, like cherry, or more concentratewith dark fruits like black cherry? Are there additional impression
of texture from tannin, which gives red wine its drying, mouth-
puckering effect? Does the wine have flavors imparted by oakbarrels, sometimes referred to as a vanilla-like flavor?
After your final sip, think about the wine’s “finish.” This refers the lingering flavors, or lack of, that remain after the wine leaves t
mouth. The best wines in the world often posses a “long” finish; a
rich, elegant residue that leaves you wanting more.

When Mitch Bakich, hospitality manager for Donati Family Vine-yard was considering who might be the best person to ask for a
recipe to pair with the 2005 Donati Family Vineyard Claret, he knew

Claret its inherent fruit intensity, gracefully integrated with top
cooperage, producing a racy wine with blackberry fruit freshnessagainst a backdrop of oak, with supple tannins and a long lingering
finish.” Mitch totally agrees with Chef Carlos that the Claret is anexcellent companion to the spicy and robust flavors of the melted
Gorgonzola and walnut topping for the steak.

DIRECTIONS
Sweet & Spicy WalnutsIn large bowl, whisk together egg white and water until foamy; add
walnuts and mix until all nuts are coated; drain excess liquid.
In small bowl, combine sugar, salt, cumin, cayenne pepper and garlic
powder.
Stir dry ingredients into walnuts until evenly coated.
Spread walnuts on non-stick baking sheet.
Bake in 325°F oven for 20 to 25 minutes, stirring twice, until nuts are
lightly browned.
Allow to cool on baking sheet. (Nuts will become dry and crispy as
they cool.) Store in air-tight container.
Gorgonzola Crusted Filet MignonMelt butter in a skillet over medium heat. Add the onion, garlic and
thyme. Cook, stirring constantly, until onion is tender. Stir in the beef
stock, scraping any onion bits from the bottom of the pan, then stir in
the Claret. Bring to a boil and cook until the mixture has reduced to
about 1/2 cup. Set aside. This may also be made ahead of time and
reheated.
Preheat the oven to 350 degrees F (175 degrees C).
Heat oil in a cast-iron or other oven-safe
skillet over high heat. Sear steaks quickly
on both sides until brown, then place the
whole pan into the oven.
Roast steaks in the oven for about 15
minutes for medium rare – with an internal
temperature of 145 degrees F (63 degrees
C). You may adjust this time to allow the
steaks to finish just below your desired
degree of doneness if medium is not what
you prefer. Remove from the oven, and
place on a baking sheet. Stir together the
panko crumbs and Gorgonzola. Top each
steak with Gorgonzola mixture and Sweet
& Spicy Walnuts.
Preheat the oven’s broiler. Place steaksunder the preheated broiler until the
cheese topping is browned and bubbly, 3
to 4 minutes. Remove from the oven, and
let stand for at least 15 minutes before
serving. Serve with warm Claret reduction.

If an afternoon of driving the picturesque back roads of California
in search of a truly great little winery is your idea of a day perfectly
spent, then head toward Highway 41, east of Paso Robles and look for
Chateau Margene. You can then count yourself among the lucky fewwho have found this oasis of excellence and had the opportunity to
enjoy their fabulous Cabernet and Cabernet blends. As they always
completely sell out their 3000-case production every year, joining one
of their three wine clubs is usually the only way to ensure that you’ll
be able to get more of their wines without the necessity of another
road trip. And you will want more.
Michael and Margene Mooney celebrated their first vintage in
1997. Their goal was to do one thing and do it well … produce world-
class Cabernet. They succeeded by employing a philosophy that few
business schools would promote. Low yield, labor intensive wine
making. With a mere five and a half acres of vineyard, the Mooneys
intentionally keep their tonnage at about two per acre, compared tosome larger winery operations that coax up to eight tons per acre out
of their vineyards. This gives each vine the opportunity to take full
advantage of the superior soil and growing conditions that the Paso
Robles Appellation offers. The emphasis is quality over quantity.
At Chateau Margene each grape cluster is hand picked and hand
sorted. The fruit is de-stemmed, whole berry, and gently dropped into
open-topped fermentation bins, then aged in French oak barrels for
over 24 months. The vineyard practices sustainable farming and only
a bare minimum of chemicals are used in the grape growing and wine-
making processes. These are thoroughly pampered grapes and the
result is phenomenally dark, fruit-forward wines. Says Michael
Mooney, “We didn’t enter into this with a mindset of growing a big,
commercial winemaking operation, but rather to create a small
boutique winery that focused on quality. It was our dream to produce
the best Cabernet and Cabernet blends from the Paso Robles Appella-
tion. Making these wines is truly our passion.”
The tasting room experience at Chateau Margene is in keeping with
their philosophy of quality over quantity. The small tasting bar is
located right in the middle of the barrel room, but don’t stay there.
Wander out to their deck for one of the best tasting experiences to be
had on the Central Coast. With the gentle sound of jazz music wafting
in the air and a stunning view of the tree-studded hills of Creston in
front of you, there is no better spot than one of the comfy couches at

The Central Coast Wine Classic is about
to take place for its twenty fourth iterationJuly 10 through July 13, Thursday through
Sunday. Wine will not be the only thing on
center stage however. There will be plenty of
opportunities to experience fine cuisine,
cooking demos, rarities, cycling tours, wine
and lifestyle auctions, and symposiums
which include olive oil and Champagne.
The Classic will convene on California’s
beautiful Central Coast at Shell Beach and
Avila Beach which boast sweeping views of
the Pacific Ocean, and have fine sandbeaches. Many notable wineries dot the vine-
yard covered countryside. Not to be
forgotten are the numerous excellent restau-
rants in the area. The Classic will have many
fine offerings of local and international wine
and food.
Wines to be tasted in symposiums and at
two large walk around tastings will herald
from the area, but also from France, Italy and
Australia. There will be Pinot Noirs from San
Luis Obispo County, Italian-style reds and
whites from California and Italy, Rhône-style
wines from California and France, Australian
reds and whites, and that most exciting wine
from Champagne, France.
The educational aspects of the Classic are
superb with many symposiums on wine
available, but not to forget the Olive Oil
Symposium on Sunday. Symposiums subjects
include San Luis Obispo County Pinot Noirs,
Australian red Bordeaux style wines of theMargaret River, and Italian Wines hosted by
Sergio Esposito, author and owner of Italian
Wine Merchants in New York.
Auctions are not limited just to the Early
Bird Silent Auction. The live Rare and Fine
Wine & Lifestyle Auction will take place at
the Avila Beach Resort in Avila Beach.

The menu includes fresh salsa, grilled French bread dipped in
sweet melted butter, tossed green salad and slow-cooked pinquito
beans, small pink beans that are indigenous to the valley.Today, Santa Maria Style Barbecue is enjoyed across the region at
restaurants, events and celebrations, providing a perfect complement
to the wines, strawberries and other locally grown flavors of the
Santa Maria Valley.
One of the more famous landmarks for Santa Maria Style
Barbecue is the Far Western Tavern in the coastal hamlet of
Guadalupe, which was founded by Clarence and Rosalie Minetti in
1958. Today, as it celebrates its 50th anniversary in 2008, the restau-
rant is still going strong. Clarence and Rosalie remain regulars at the
restaurant, but the day-to-day operations are now managed by their
three children.
“I think that our restaurant reflects the sense of heritage, family
and community that is the foundation of Santa Maria Style
Barbecue,” says Susan Minetti-Righetti, who also operates Susie Q’s
Brand, specializing in artisan foods and barbecue seasonings based
on local recipes. “At the same time, we are making sure that we keep
pace with contemporary tastes in food and wine.”
SANTA MARIA STYLE TRI-TIP
• 1 tablespoon salt• 1/2 teaspoon black pepper• 1/2 teaspoon garlic salt• 1 prime top sirloin steak (3" thick), or tri-tip• Red oak logs, or charcoal and oak chips
Directions:First, oakwood logs are placed in a pit with movable grate and burneduntil red-hot. Backyard chefs also can use charcoal mixed withoakwood chips and bark available at local markets. Once lit, the fireshould be hot but not blazing.Season the meat with salt, pepper and garlic salt to your desire or trysome of our local traditions with Susie Q’s Santa Maria Style Seasoningor F. McLintock’s BBQ Chef Seasoning.Do not trim off the fat before putting the meat on the grill. By placingthe fat side over the fire first, the juice will come up through the meatand make it tender.Sear the lean part of the meat over the fire for 5 to 10 minutes to sealin the juices, then flip over to the fat side for 30 to 45 minutes,
depending on the size of the cut and the desired degree of doneness.When juice appears at the top of the meat, it is time to flip for another30-45 minutes.The fat can easily be trimmed after cooking. It is important to slice tritip against the grain the long way, not across the triangle. It won't bea uniform cut but it will be more tender.

Carina Cellars is proud to welcome the work of local photogra-
pher/artist Kam Jacoby in the tasting room through July 31 for a
showing of his unique historical/modern photographs. This group of
images is part of an ongoing project of photographic preservation.
Kam Jacoby finds original locations and re-photographing people
places that were captured on film in this valley during the past
years or so. He then scans in the original image and combines
with the new image of the same location in present day.“I grew up in Lompoc and my personal history is inextrica
linked to this place. When I started looking through the photogra
housed in the Lompoc Historical Society … I was mesmerized,
only by the wonderful images, but by the realization that my o
experience of growing up in Lompoc is just one of a myriad of sto
that make up the history of this town. Thousands of others have liv
loved, triumphed, and struggled on these same streets that hold
memories. Looking through old photographs of Lompoc, particul
those in which people are an essential elements, has reawakened
interest in this place I call my hometown.

Now in its fifth year, the ever-popular Reds, Whites & Blues Cali-
fornia Wine Festival is scheduled for July 18-19 at Chase Palm Park in
Santa Barbara. For the price of a ticket, festival goers get unlimited wine
tasting rights to nearly 400 premium California wines from more than
100 wineries from every wine region in the state. Accompanying the
wide array of wines will be craft breweries, hot and cold appetiz
