Bakersfield isnt that far from Paso
Robles, at least as the crow flies, but
the two regions are vastly different in
terms of most everything, including wine.
Quite frankly, there arent any wines in
Bakersfield. But Paso, now thats a different
story. Bob Shore grew up in Bakersfield and is
the kind of guy who can do anything well.
Originally in the oil and gas business as a
petroleum engineer, he moved into farm
management using his background in earth
sciences, then into wine.
His tasting room in downtown Paso
Robles could not be more perfectly sited for
its needs. The prime location is bright andairy, with large windows looking into the
park. Currently producing about 3,500 cases,
Bobs wines are well priced and promoted by
word of mouth. The goal is to reach about
6,000 cases and with distribution currently in
30 states, hes well on his way to achieving
that goal, too.
Arroyo Robles opened their tasting room
in March of 2006. But their foray into wine
began much earlier. Bob was born and raised
in Bakersfield and got into the gas and oil
business, for thirty successful years, he said.
During that time he toyed with homemade
beer and wine, but didnt take it too seriously.
But then the opportunity arose for he and his
brother to go into business together, and they
bought a lab in Visalia, California that focused
on soil, pedial and water analysis, predomi-
nately for the agriculture industry in Cali-
fornias fertile Central Valley. We quickly
gravitated toward supporting the wine
industry, recommending rootstock, nutrient
programs and high altitude photography for
soil mapping, Bob said. They parlayed the
business into being consultants across the
state for both large and small wineries.
They originally bought a vineyard acrossthe street from Tobin James as an experi-
mental vineyard to employ different growing
techniques such as trellising, canopy manage-
ment and stressing the vines. But again timing
played a roll. The chance to sell the property
at a nice profit arose and they used the funds
from that sale to buy their current vineyard
off San Marcos Road. Then in 1997, they
were asked if they wanted some Merlot fruit
from Bien Nacido Vineyard. We made 55
cases of fabulous Merlot, Bob said. Fr

other items in their well stocked tasting roo

Vermont. Even now they offer a pan
breakfast before all the major wine festival
town.

There are times when being a
winemaker is priceless. Bobs
wife Tanis and their kids Jason
and Brianna are hard at work
under Bobs direction.
A broad portfolio of wine is
made by Bob including the stan-
dard offerings like Chardonnay,
Zinfandel and Syrah, but they
have also branched off into Viog-
nier, Tempranillo, two Ross and
several Ports. Not one to rest on
his laurels, Bob also produces
two sparkling wines, one of
which is a sweet almond
sparkler.
And the people keep coming.
One day when Bob was manningthe tasting room, he mentioned
the diversity of people who
showed up to taste Arroyo Robles
wines. Recently in the tasting
room on the same day I had
people from England, Atas-
cadero, Florida, Chicago, New
Jersey and the Bay Area.
Perhaps its reminiscent of the
movie Field of Dreams: If you
make it, they will drink it. And
Paso Robles is bulging with newwineries. The more people that
come here to make really good
wine only benefits Paso Robles,
Bob believes. His own approach
to wine is low key and modest.
If you can make bread and wash
dishes, you can make wine, he
advises. Certainly its not that
simple, but fortunately, Bob
Shore and his family keep the
rest of us happy by consistently
producing great wines with alocal influence.

It all started in January when Anglim Winerys
2005 Viognier earned a gold medal at the San
Francisco Chronicle Wine Competition.
Then midway through the year, their 2005
Zinfandel and Grenache wines each won a gold
medal at the San Francisco International Wine
Competition one of the largest and most influen-
tial international wine competitions in the country.
Further acclaim came when Robert Parkers
Wine Advocate magazine gave their 2006 Viognier
an outstanding 90-point rating.
It is great to have our wines win such recogni-
tion, but its also a wonderful experience to see
people enjoying them in our tasting room and get
their feedback, said Steffanie Anglim.
The critically acclaimed 2006 Viognier was made
from grapes grown in the Bien Nacido Vineyard in
Santa Maria. They are widely considered to be a
top producer. Their fruit is beautiful, Steve Anglim
said. The Viognier grapes had a remarkable core of
acidity balanced with ripe fruit flavors.
Fermented cold, the Viognier was evenly distrib-
uted in three types of containers: neutral French oak
barrels, stainless steel barrels and stainless steeltanks. The result is characteristics of apricots and
honeysuckle tones balanced by a hint of tangerine
blossom and a mineral finish. It is still available
but probably not for long at $24 a bottle.
The fruit for the award-winning 2005 Anglim
Zinfandel came from St. Peter of Alcantara Vine-
yard, a small estate on the west side near Templeton.
A rich and lively wine, the Zin was made the way
Zinfandel used to be made, according to Steve, and
has a bright fruit core, with a richness and
complexity that comes from the dry-farm procwhich concentrates the flavor. Although the 20
Zinfandel is sold out, Anglim has just released
2006 vintage.
The highly touted Grenache is still available, a
for $24 a bottle. This fruity and spicy ble
contains 20 percent Syrah. It was one of my H
Grails. Grenache grapes can be both frustrating a
rewarding. They want to overproduce, wh
dilutes the intensity, so I had to find growers w
dont allow that to happen. Then I added so
Syrah for depth and structure, and a little m
color, Steve explained.
When you visit Anglim Winerys tasting room
downtown Paso Robles, located a few blocks off
park at 740 Pine Street, not only do you get
sample award-winning wines, but you also ge
taste of history. Located in the old Paso Robles r
road depot, the tasting room contains the origi
flooring and windows of the old train station a
attracts a number of train buffs, in addition to w
lovers. It all makes for a lively atmosphere, Steffa
says. We want people to feel comfortable in
tasting room, whether they are new to wine tast
or old pros.

Castoro Cellars is celebrating its 25th wine
making anniversary with customer apprecia-
tion events, concerts and the release of their
proprietary anniversary blend. Dubbed Venti Cinque
Anni, Italian for 25 years, the blend includes
Castoros Syrah, Cabernet Sauvignon and their
famous Zinfandel as well as some others.
The Castoro name, which means beaver in
Italian, comes from a boyhood nickname that Niels
had. It has come to be the symbol for the winery that
calls its product, dam fine wine.
With a focus on sustainable practices and farming
vineyards with a minimum of synthetic products,
Castoro has become one of the old school wineries that has consis-
tently focused on hand-crafted quality wines. Winemaker Tom Myers,
along with owners Niels and Bimmer Udsen, already have 100 acres
of Castoro vineyards certified organic by the California Certified
Organic Farmers Association and Castoro is dedicated to continuingtheir work.
Niels Udsen and the crew at Castoro have also been working hard
to get the new Whale Rock vineyard up and running. A west side vine-
yard in Paso Robles with cool afternoon and evening ocean breezes,
the vineyard will be dedicated to Chardonnay and Pinot Noir.
Castoro Cellars began the festivities on July 26th, celebrating
the summer with its annual Al Fresco Dinner featuring San Luis
Obispo caterer, Upper Crust. The dinner focused on Italian
dishes paired with Castoro wines and Mike Maguire, a local
musician, was the entertainment for the evening.

This term refers to a secondary fermentation process that takes
place after the initial alcoholic fermentation is complete. Its contri-
bution to a wine includes flavor enhancement, acid reduction and
stability for aging.
Acids are some of the components that are present in wine after
primary fermentation, along with alcohol, tannin and other
compounds that together create a balanced and tasteful wine. One of
the acids, malic acid, can sometimes be desirous in certain wines,
like Riesling, and in others, like Chardonnay, it may create a crisp
sharpness.
Whether or not this is beneficial to the enjoyment of the wine is
up to the winemaker. But in cases where the level of acidity creates
some unpleasant characteristic to the wine, then a reduced level of
malic acid is needed. To achieve this, malolactic fermentation will be
started that converts the harsher malic (and some citric) acid to
softer lactic acid. You can associate malic acid with the kind found in
apples and lactic acid with that found in milk.
Upon completion of the malolactic fermentation, the wines
flavors become a little more pronounced and texture a little roun
on the palate. The process has an added bonus of helping to mak
the wine less susceptible to problems triggered by bacteria while
aging in the bottle.
Most red wines have undergone malolactic fermentation along
with many Chardonnays. The result is a smoother, more interesti
wine with greater long-term potential.

An action-packed weekend is planned for the 17th annual Basil
Festival on Saturday and Sunday, August 16 and 17 at Lone Madrone
Tasting Room and Organic Herb Farm. Lone Madrone is located at
2485 Highway 46 West in Paso Robles (the old Sycamore Farms
property). Proceeds from this years event will benefit KCBX FM
public radio, with a portion going to the Paso Robles Boys & Girls
Club.
This years festival takes advantage of the lovely Paso Robles
summer evenings by running from noon until 8 p.m. on Satur
night. Patrons will discover the refreshing taste of basil beer and b
ice cream, great wine and local cuisine while grooving to the tu
of local musicians Three-Quarter Time and Ras Danny and
Reggae All-Stars.
There will be a pesto contest on Saturday judged by lo
celebrity judges. Prizes will be awarded in three categories: tra
tional pesto, original/creative recipe and crowd favorite. All pe
contest entrants will receive a complimentary 250 ml bottle of O
Nuevo organic olive oil. Pesto entries must be checked in by 1
on Saturday, with a minimum of 2 cups per entry and must
accompanied by an entry form. Festival goers may purchase pe
sampling tickets for $3, which allows a vote for crowd favor

Caf Vio was on the verge of closing. Having been opened at abuilding known in Paso Robles as the Granary, near the railroad crossing,
the caf was sinking into a morass of pre-packaged foods and a bit ofcoffee. Yet the local constituents, in love with their gathering place,simply refused to let it die and help came in the form of Alan and Nina
Courtney, Caf Vios own Calvary who arrived in October of last year.I love my little place, says Nina Courtney, who is truly at home here.
I just saw the potential to make some changes and we did that and now,things are looking up. Gathering advice from a group of regular
customers she and Alan refer to as The Board of Directors, the pair gotrid of the pre-packaged foods and hired a professional chef to at oncesimplify the menu and charge it with new quality and life. The menunow includes fresh breads and pastries baked right on the premises,
meats that the Chef prepares himself in the kitchen whether roastingsucculent turkey or preparing lean pastrami for the delicious sandwiches,and a focus on fresh produce. And the coffee is still the very best in
town, says Nina. It has to be because my husband loves, and I meanloves, good coffee.
Open daily for breakfast with a fresh menu featuring egg specialtiesand fresh pastries, the Courtneys have seen to it that Caf Vio stays open
until past dinner time. One thing the Board told us was that the previousowners closed too much, says Nina. So, were open now from earlymorning until sometime after the last few customers leave which isusually around 7 or 8 oclock. The lunch menu serves as well for a
dinner menu and customers seem to prefer it that way.The ambience of the place has changed as well. Simple white walls
have now been replaced by warm colors with plenty of artwork including
one whole section dedicated to Western art. We have a new artist eachmonth and its been such a treat, says Nina. We have the artists come inevery second Friday of the month and feature their work and its been
really popular. The restaurant itself is broken up into separate livingrooms each connoted by a different color scheme and various kinds ofcomfortable furniture. From couches to cushy chairs to kitchen tables forlarger groups, Caf Vio feels very much like homemade and its thatatmosphere that keeps regulars coming back.
The food is exceptionally good with the meats as tender and juicy asthey can be. Fresh produce adorns the sandwich plates and homemadedressings, freshly baked breads and freshly brewed teas and coffees are in
constant demand. In short, Caf Vio has once again put the life back inVio.

Discover the Wine Country of Paso Robles,
the premier growing region of Californias
Central Coast, and Eos Estate Winery,
which has become a leading producer of award-
winning wines and a destination spot for trav-
elers. The spectacular 104,000-square-foot
Romanesque facility is surrounded by 700 acres
of beautiful estate vineyards. Towering Cyprus

The production of Eos wines is unique in
many ways. Prior to planting, each vineyard row
is deep trenched to the appropriate depth to
allow water and roots to effectively penetrate the
compacted earth. Selection of clones is deter-
mined based upon terroir and targeted flavor
profile. Throughout the growing season, special
attention is paid to leaf removal and crop thin-
ning. Drip irrigation is employed for completecontrol of a watering regime for the vines.
A 24,000-square-foot, temperature- and
humidity-controlled barrel storage facility was
built in 1999 to accommodate the winerys
growing number of French and American oak
barrels, necessary for the production of world-
class wines.
The estate-bottled Eos portfolio includes
Chardonnay, Sauvignon Blanc, Cabernet Sauvi-
gnon, Zinfandel, Petite Sirah, Merlot, and two
stunning dessert wines: a Late Harvest Moscato
called Tears of Dew, and a vintage dated Estate
Zinfandel Port.
The Reserve Eos line includes the Cupa
Grandis Grand Barrel Reserve program.
Featuring grapes sourced from the top Eos
Estate Chardonnay and Petite Sirah vineyard
blocks, the wines are handcrafted using the
worlds finest cooperage. The Cupa Grandis
Chardonnay is fermented and aged in 100-
percent new Louis-Latour French oak, consid-ered the finest in the world, and the Petite Sirah
uses a selection of barrels from specific forests in
France and America, chosen by the Eos wine-

and Spirits 21st Annual Buying Guide as the
best Petite Sirah in the United States (Winter
2007 issue).

Eberle 2007 Mill Road Viognier
Perfectly Paired with AbaloneClassic and elegant are two words that describe both the wine and the
dish in this pairing. Abalone is a gourmet shellfish popular for centuries
for its delicate flavor. However, California Red Abalone, once available inbountiful quantities along the West Coast, is now scarce, forcing restric-
tions on commercial diving. But the Abalone Farm of Cayucos operates a
controlled environment of growing abalone, starting from a microscopic-size fertilized egg to 4-1/2 inch adult abalone, primarily for supplying fine
restaurants around the world, but also for selling to the general public.
The recipe created by Chef Chris Kobayashi of Paso Robles Artisanrestaurant is a classic application of this rare world-class delicacy paired
with a classic Rhne-style Viognier wine from Eberle Winery of PasoRobles. (The recipe even includes Paso Robles-grown olive oil as an ingre-
dient.) The fresh, clean taste of the Cayucos Red Abalone with Heirloom
Tomato Salad, Bacon and Mint joins seamlessly with the crisp,fruity style of the Eberle Mill Road Viognier. The wine, from
grapes grown in rocky loam soils and exposed to the warm
days and cool nights of Paso Robles, is described by wine-maker Ben Mayo: A classic floral bouquet of litchi, honey-

CALIFORNIA RED ABALONE WITH HEIRLOO
CHERRY TOMATO SALAD, BACON & MINT
4 each Cayucos red abalone steaks, about 1-1/4 ounce ea
1 pint heirloom cherry tomatoes, halved
4 each bacon, sliced and fat rendered
1/2 cup cleaned purslane leaves
10 each large mint leaves, chiffonade
1/4 cup sherry vinaigrette
1/2 Tbsp. butter
Salt and pepper to taste
Cornmeal for dusting
Olive Oil for sauting
Pasolivo Lemon Extra Vrigin Olive Oil
Buckwheat Sprouts for garnish
In a medium bowl, combine the cherry tomatoes, bacon,
purslane, mint and vinaigrette. Season with salt and pepper

Heat a medium saut pan over medium high heat. Place a
scant 2 tablespoons of olive oil in the pan and swirl. Lightly
dust the steaks in the cornmeal and saut about 20 secondeach side adding the butter in about 10 seconds into the
process (overcooking will lead to toughness). Remove from
heat and drain on paper towels.
Divide the tomato mixture on four plates. Place the abalon
on top of each mound. Garnish with the buckwheat sprouts
and drizzle a little bit of the lemon olive oil on and around
serve immediately.

Olive Festival, a Paso Robles Main
Street Association event, Saturday,
August 23, 11 a.m. to 4 p.m., Paso
Robles Downtown City Park.
Local wineries and breweries will be
tastings as well as olive oil tasting
vendors. Olive-inspired food will be
prepared and served in Olive Festival
Culinary Row. Cooking demonstrations and a cook-off will be held in
the Outdoors Kitchen Stadium in the park. Home chefs can enter
the Olive Dish Contest. They can also submit recipes for our future

Sylvester Vineyards and
Winery Presents its NewWine Park and Events Cente
Sylvester Vineyards and Winery recently opened its new ev
center to the community of San Luis Obispo County. Sylvester V
yards has been a local winery in the Paso Robles area since 1995.
name Sylvester was not only chosen after the owner Sylve
Feichtinger but also for its Austrian meaning of celebration. Since
opening of the tasting room Sylvester Vineyards and Winery
received several prestigious awards for their two reserve wine lab

Sylvesters new Wine Park and Events Center was created in Ma
