MORE THAN 75 YEARS COMBINED EXPERIENCE

ALL ABOUT CARROTSFrom: Bruce Robertson, Community EducatorCornell Cooperative Extension of Rensselaer CountyCarrots belong to the Umbelliferae family, named for theumbrella-like flower clusters that plants in this familyproduce. As such, carrots are related to parsnips, fennel, parsley, anise, caraway, cumin & dill. Carrots can be assmall as two inches or as long as three feet, ranging indiameter from one-half of an inch to over two inches. Thereis a study from the Netherlands about carrot intake andrisk of cardiovascular disease (CVD.) Intake of fruits andvegetables in the study was focused on four colorcategories: green, orange/yellow, red/purple, and white.Out of these four categories, orange/yellow (and inparticular, foods with deeper shades of orange and yellow)emerged as most protective against CVD. Currently, U.S.adults average about 12 pounds of carrot intake eachyear. This amount translates into approximately 1 cup ofcarrots a week.
