Most islands are uninhabited, offering secluded anchorages under soaring cliffs fringed with jungle, as well as fascinating dinghy expeditions to hidden beaches, caves and creeks not shown on charts or maps. Three rivers run into the head of the bay so the water is silty, though otherwise clean, forming a milky green backdrop to the striking scenery.

Since a large part of the area north of Koh Yao is shallow (less than 10 metres), it is possible to anchor virtually anywhere in north Phang Nga Bay. This chapter, then, focuses only on the more suitable overnight anchorages – those which provide shelter from the squalls and storms which can hit unexpectedly, particularly in the southwest monsoon season.

Some of the area covered by this section is National Park and rangers patrol around the islands. The entry fee is 200 Baht per boat and 200 Baht per day per person on board, which is collected on the spot.

NORTH PHANG NGA BAYThe sheer-sided sea mountains that rise vertically out of Phang Nga Bay form some of Thailand’s most spectacular scenery. Images of Phang Nga have travelled the world and shaped perceptions of southern Thailand, and the boating experiences to be had here.

As a result the cruising yachtsman may encounter many tour boats and sea canoes during the middle of the day, but tranquillity returns by late afternoon. While the bay itself is not so large, the number of islands, inlets and mangrove channels ensure that no matter how long a yachtsman spends here, new experiences will always be nearby.

We list only 21 of the many anchorages in this area. Much of the joy of sailing in Phang Nga, after all, lies in discovering the uncounted creeks, caves and coves for yourself.

Koh Chong Lat

Koh Khlui

KOH CHONG LAT & KOH KHLUI CHANNELAccess to the channel

The deep entrance to the north of Koh Chong Lat is easily navigable, as is the middle entrance just north of Koh Khlui. The middle entrance should be approached on an easterly heading, turning southeast between the islands.

Inside the main channel between Koh Chong Lat and the mainland, immediately north of the middle passage, is a dangerous area of shallow water with drying rocks. This should be left well to port if heading north.

If entering the main channel from the south, it’s better to stay close to Koh Khlui which will afford a minimum depth of 3 metres.

When entering from the north it is better to pass through the narrow channel between Koh Ngam and Koh Chong Lat which is deep rather than passing north of Koh Ngam where there is a very large drying bank.

NORTHERN CHANNEL25 miles from Yacht Haven

A

This is a quiet location with beautiful views of the sheer cliffs of Koh Chong Lat to the west. The anchorage is on a direct line between the two islets shown on the chart, in 8-10 metres, near a lovely mangrove-covered flat, which is awash at high tide.

This spot is good for all wind conditions, though mid tide currents of up to 3 knots mean that care should be taken if swimming from the boat.

Local lore has it that there are no longer any crocodiles in the area, although there are families of sea otters which can be spotted at dusk.

This has been used as an overnight anchorage for the Phang Nga Bay Regatta which is held every year during Chinese New Year and attracts over 50 yachts.

To the east on the mainland at Leam Sak village is an excellent seafood restaurant which can be accessed directly by dinghy at high tide or via a concrete jetty on the other side of the headland at the head of a mangrove creek.

MIDDLE PASSAGE24 miles from Yacht Haven

B

Anchorage can be found in the passage in 4-5 metres, making for a good overnight stop in either season. To the north and south large and scenic bays with shallow waters are easily reached by dinghy. The bay to the south is an ideal anchorage for bilge keelers or vessels drawing less than 1 metre.

KOH KLUI EAST23 miles from Yacht Haven

C

Koh Khlui East is very sheltered, with good holding in the southwest monsoon season. The best anchorage is just south of the small inlet in about five metres. This is also the best place from which to explore the bay and rocky outcrops to the north by dinghy.

GM of Evason Phuket & Bon Island talks about living & working in Phuket

People Profi le

Where are you originally from? Koblenz in Germany.

When did you move to Phuket? My fi rst time here was in 1999, then I moved to Bangkok in 2001. I left Thailand in 2004 (to Mexico and then Philippines) and returned again in 2008 as General Manager for Evason Phuket & Bon Island.

What brought you to Phuket? And what made you decided to live here? In 1999 I worked as F&B Manager at the Dusit Laguna. Prior to that I worked in Riyadh, Saudi Arabia, and the prospect of moving and living in Phuket was too good to refuse.

Did you always want to work in the hotel indudstry? No. My childhood dream was to become a commercial airline pilot. When I was not selected, I switched my interest towards the hotel industry.

How do you go about running a big fi ve-star resort hotel? 260 rooms is not really very big (I used to manage a 755-room hotel), but the basic principles remain the same. Surround yourself with the right team, recruit the right hosts, training training training and 100 percent dedication.

What do you like most about being a GM? The job encompasses all aspects of a hotel. It's the daily unexpected challenges that keep me motivated. Then there's the travelling, getting to know so many cultures, people, ethnic diff erences, food, drinks and so on.

Tell us about your style of leadership. Hands-on, limit the amount of administration work to a minimum and ensure you spend as much time as possible with guests and hosts.

Who has infl uenced you most so far in your career?. It was my mentor and fi rst GM some 20 years ago. He still embodies the perfect GM for me.

Whereabouts do you live in Phuket? What made you choose that location? Land & Houses Park in Chalong. It's equidistant to my resort and to the school where my children go. And we appreciate the village-like atmosphere.

Did you buy your house? No, we're renting. We recently bought a property in the Piedmont region of Italy because that's where we like to go to on short breaks or holidays.

How often you go back to visit your country? We visit Germany (and England – my wife's home) once a year. Otherwise it's Italy for us.

How do you feel about Phuket? It's one of the best places to live and work. Superb infrastructure for living with the added bonus of magnifi cent beaches and seafronts for the weekends.

What areas of Phuket are your favourites? I like the islands off the Evason. Koh Lone, Coral Island, Bon Island, Koh Aew… Whenever we get the chance, we take a boat and cruise around the islands.

Is there anything you dislike about living in Phuket? There's not much to dislike about living in Phuket… Perhaps the increasing traffi c is something that will need to be controlled in the future.

Is there anything else that worries you about Phuket's future? Yes. That it becomes even more crowded and loses the few quiet beaches that are left.

Do you think Phuket is over developed? It has certainly changed from when I arrived the fi rst time in 1999. However, it's still a great place to live and the east coast especially has retained a lot of charm.

Tell us about your family. My wife Natalie is from England and my children are 13 (Nina) and 15 (Piers). Both attend British International School and are working towards their IB. Nina likes to dance, while Piers is a keen footballer. As a family we like to play tennis on weekends.

Working hard as you do, do you have any thoughts about retirement? As soon as possible! But looking at some of my role models in the hotel industry, I think retirement is still a long way away for me… I do dream about making wine in Piedmont… Who knows… Maybe one day I can make my dream true.

Do you have any hobbies? Tennis and scuba diving… And if I really have time on my hands I like to cook as well.

How do you divide time between work and your family or for yourself? I try to keep the weekends as quality-time for my family.

Are you involved in any local charities, clubs or associations? I'm a member of the local SKAL and Chaines des Rôtisseurs clubs as well as supporting many local and international charities, including the Soi Dog Foundation, as part of my work.

How has Thailand's political crisis and the global recession aff ected your business, and what can you do about it? It certainly had a big impact on my hotel as a business. Fewer guest arrivals, shorter lengths of stay and lower spending per guest have all been noticeable. The only thing you can do is examine the operation, streamline and make the organisation leaner and more prepared to deal with crises. Apart from that, keep doing the best you can and continue providing the best possible service to guests.

What is your prediction for the tourism market for this high season? What do you worry about most for the future? This year’s high season looks a lot better than last year’s. I'm confi dent that we'll see signifi cant improvements in our performance at Evason. What worries me most is another airport closure in Bangkok or another round of demonstrations like we saw last April.

How would you rate the quality of your life? Pretty good! I'm certainly not complaining.

What’s your most satisfying achievement to date? Building a family and being able to ensure good quality education for my children.

Frank Grassmann

@ Hilton Phuket Arcadia Resort and Spa, Karon BeachGet ready for the sixth annual Phuket International Blues Rock Festival - South East Asia’s biggest - once again taking place on the huge grounds of the Hilton Arcadia in Karon Beach.

This year the Festival will be the biggest ever with 13 acts performing. There are 11 bands listed, but the Phuket All-Star Blues Band is comprised of three local bands so total is actually 13. It's a global fi esta with musicians imported from USA, UK, Australia, Malaysia, Norway and Sweden and it will be a great party with tremendous music, plenty of food and drink and other activities.

The 2011 headliner is the American who was honoured with the 2010 Male Artist of the Year Award at the Blues Foundation’s annual award ceremony (the Oscars of the blues industry) in Memphis in May 2010: Mr. Curtis Salgado. In 1979 when John Belushi was in Oregon fi lming ‘Animal House’, he caught Curtis' act and was very impressed. Curtis took the actor under his wing and schooled him on blues and R & B history, which Belushi soaked up like a sponge; he used Curtis' show as the basis for the Blues Brothers act he and Dan Aykroyd put together. The fi rst Blues Brothers album was dedicated to Curtis Salgado and so was the movie character played by Cab Calloway.

Curtis has been lead vocalist for a number of top artists, including Robert Cray and Santana, and his current album ‘Clean Getaway’ is a soul/blues masterpiece and maybe his big breakthrough as a solo artist worldwide. Curtis will close the 2011 Festival Saturday night

February 26. Backing him on the Thailand tour is the eminent Rich Harper and his band from Los Angeles, who will separately play Friday 25th as ‘Disraeli Gears’ – a CREAM Revival musical experience.

Another famous newcomer is legendary rocker Mason Ruff ner (USA) whose 1987 hit ‘Gypsy Blood’ was featured in the 1988 movie ‘Steel Magnolias’ with Julia Roberts. Mason has toured with the likes of Bob Dylan, Ringo Starr and Santana, and Santana recorded Mason’s song ‘Angel Love‘ last year. Mason and his band will play Friday 25th.

From the UK comes The New Machine Plays Pink Floyd, a tribute band to the great Roger Waters, David Gilmour & co. Other newcomers are Torgny Sandgren Blues Band from Sweden, John Meyer’s Blues Express from Australia and acoustic duo Jim Paxton (of the Paxton Brothers) and Stuart Hill.

Returning are The Prodigal Sons from Norway, the amazing seven-member band AkashA from Malaysia and Robert ‘One-Man Johnson (USA).

Local musicians Rob Davies, Tony Wilson, George Cordeiro, Colin Hill and Patrick Chua have put together Phuket All-Star Blues Band including latino blues meister Andy Gonzales (USA) for the occasion, performing Friday 25th.

Sukko means "Beyond Happiness". My fi rst feeling when I stepped through the impressive gates of the Sukko spa was, "I’m in paradise". The Sukko staff are dressed beautifully in traditional Thai style and the spa design, infl uenced by the ancient Siamese capital, creates a haven of calm yet regal serenity. I felt I had left all my troubles behind.

Chilled out by the soothing background music, my mind was fi lled with a peaceful wellbeing as I enjoyed the warm traditional welcome (again from Sukko culture) of the ‘Flower Floating Ritual’ – similar to ‘Loy Kratong’, where the idea is to fl oat away past stresses and wish for luck and joy from that moment on.

A variety of 40 spa treatments – prepared by Sukko's certifi ed Thai Herbalist and based on ancient Thai medical theory – is off ered at Sukko, in packages lasting from 2 hours to 4 hours. Each package has a specifi c purpose and can be selected to suit your lifestyle or the way you feel on the day. These herbal recipes and procedures have been handed down through generations and are totally free of petrochemicals, synthetic perfumes or colouring. Some of the herbs and spices are grown in Sukko’s own herb garden and picked just for your treatment, ensuring they are as fresh as can be.

I was pampered with the ‘All-Soother’ package, a 2 1/2 hour experience that left me feeling relaxed and refreshed. This four-treatment combination began with 30 minutes in the steam room and the Jacuzzi, followed by a Thai Turmeric Body Scrub designed to soften your skin and awaken your senses. The scrub was followed by a traditional Thai massage, the pressure applied gently but fi rmly. "Is this pressure okay? Too strong? How are you feeling?" my therapist asked me from time to time. “Mmm… perfect…” were the only responses that seemed to suit how I felt. My last step, which came all too soon, was the Thai Herb Purifying Facial Treatment, using creams and herbs that left my face feeling smooth and glowing – and even looked good enough to eat!

Sukko Spa’s restaurant, Suk Savoey Spa Cuisine, presents a unique concept: "Menu by Blood Types" and "Menu by Element". For those who want to exercise, the Suk Sanan Club provides a myriad of fi tness opportunities,

including ‘Rue Sri Dat Ton’ (the hermit self stretching), a traditional Thai exercise or, for something more strenuous, try ‘Muay Thai Chaiya’, a traditional and eff ective art of self-defense. Bobby Duchowny studied aromatherapy – a healing art that promotes massage, when combined with specifi c herb and spice oils, as a method to reduce stress, boost energy and heal certain physical ailments – at the American Aromatherapy Association.

Some years ago while on holiday in Thailand, he visited an organic farm in Petchaboon province and became interested in the natural healing properties of Thai herbs and spices.

“I was particularly attracted to lemon grass as it was used in many popular Thai foods, as a medicine for stomach disorders and even as a repellent for mosquitoes,” he recalls.

Bobby used lemon grass as his signature herb to create a line of essential oils, face and body creams, shower gels and bath crystals, which he and his wife Palita sold at Bangkok’s world-famous Weekend Market.

What started, several years ago, as a modest enterprise has blossomed into a successful operation off ering over 90 oils and a wide range of body care products through many outlets, as well as supplying many of Thailand’s top resorts and spas with aromatherapy oils.

Lemongrass HouseTo visit this home of award-winning spa oils, creams, soaps and so many other exquisite products is a delight. The aromas are enchanting. At Lemongrass, you can enjoy a spa treatment to sample and choose from their huge range, then take home your choice to enjoy at your leisure. They even have a great range of kid’s spa products.

“Our advantage is that we produce the freshest spa products and our stock is never kept longer than three months; using fresh spa products can be likened to eating fresh food rather than processed food.”

Based on his years of experiences at some of the top spas in Southeast Asia, Bobby has developed a full line of healthy skin care products. For example, his hydrating face and body creams have 25 per cent aloe vera, white orchid and cucumber extracts. And he’s developed a revitalizing mineral muscle soak made from Andaman Sea salt crystals, blended with white orchid and chamomile extracts, to help draw out impurities and soothe and revive tense muscles.

“People are sensitive to diff erent scents at diff erent times of day. It’s a good idea to get a variety of essential oils and experiment with what smells and feels good to you,” he says. “Our aromatherapy massage and body oils can be either uplifting or calming to the spirit. They’re carefully balanced hand-blended oils created by adding pure essential oils to nourishing, vitamin E enriched, sweet almond and jojoba base oils.

Lemongrass has won many awards, including Condé Nast Hot List 2007, and has been featured in several top magazines, including Time Magazine’s “Best of Asia”. According to Time, “If you want to smell like no one else, try mixing a selection from the more than 90 natural scents at Lemongrass House.”

Lemongrass House is located in Cherngtalay, Surin Beach and Chalong, where you can buy their full range of spa products at modest prices, making perfect gifts for friends and family who can enjoy the aromatic scents of Asia in the privacy of their homes – no matter where in the world they live.

The Royal Spa and Health Club

In the heart of bustling Phuket Town lies a quiet haven of heavenly peace. With the continuous sounds of water, trickling, bubbling and steaming, and with the sweet fruity scents that fi ll the air, the being is enticed into a fl owing stillness of body and mind.

The Royal Spa and Health Club is a popular tropical day spa with both locals and visitors alike, which is managed by the Royal Spa Development and Management Company. With an excellent reputation in the spa development industry through its experience and attention to detail, the Royal Spa and Health Club off ers a distinctly personal experience.

Of the signature treatments, the Royal Stone Therapy is one that is particularly interesting. The Hot Stone massage technique, founded 5000 years ago, uses black volcanic stones, which are heated and placed on the body, producing a profound eff ect, stilling the mind and easing the body.

Unlike many of the high-end spa complexes on the island, which market themselves exclusively to tourists, the reasonable prices and relaxed but professional staff at the Royal Spa, means that many local Thais, as well as tourists, are beginning to use the spa. This has helped to erase the often stiff , and over-formal atmosphere at many of Phuket’s spa resorts, giving the Royal Spa an ambience of authentic relaxation and pleasure.

All the therapists working at the Royal Spa have been trained at the in-house 'Phuket Spa Academy', established in 2004, to provide a comprehensive spa training course. The curriculum and assessments provide a measurement of therapist expertise and knowledge within the Thai spa industry. Since then, the Royal Spa Development and Management Company have provided comprehensive and professional spa management, and development programs, for spa retreats throughout Thailand. Their aim is to provide a standard of service and expertise throughout the Thai spa industry, to ensure a high quality of service and standard of treatment, throughout Thailand. It truly off ers the ‘one stop services for Thai spa business’ and a quality of relaxed professionalism, rarely found in luxury spa resorts.

Right now The Royal Spa have 12 branches that are managed in resorts in Patong, Kata, Karon, Panwa, Ao Chalong and Phuket Town and you are welcome to experience our spas with us anytime. As a special for our 8th year anniversary, we off er 'BUY ONE GET ONE FREE' value.

Whether you are interested to buy or lease land in Thailand it is important to investigate the legal rights regarding the land you could receive by entering into an agreement. Thai law knows diff erent land right classifi cations giving the benefi ciary various levels of rights to land, ranging from occupation rights to full ownership rights.

As a potential buyer or lessee you should be aware of the fact that not all land rights grant a right to build a house on the land or can be even legally transferred. In this article we will review the land rights people may acquire in Thailand. We will review the diff erent land classifi cation rights in Thailand starting from the lesser rights up to full ownership rights.

What can you do with minor claims on land?Minor claims on land are for example the Por. Tor. Bor. 5, the Nor. Sor. 2 and the Sor. Kor. 1. The Por. Tor. Bor. 5 is an evidence showing that the occupier of a land plot has been issued a tax number and has paid tax for using the benefi t of the land. The issuance of Por. Tor. Bor. 5 is done without any survey by the authorities and grants no claim to the occupant. The document can be used as evidence towards proving possession against other private individuals, but not against the State. Another lesser claim is the Nor. Sor. 2. It serves to establish that the benefi ciary has temporary rights to occupy the land. Nor. Sor. 2 certifi cates were issued on a transitional basis with the understanding that they would eventually be transformed into a certifi cate of use or full title ownership (please see below). If the respective land plot is under an evidence called Sor. Kor. 1 the holder of the document is entitled to occupy and utilize the land. The acquisition of a Sor. Kor. 1 is deemed the fi rst step towards the issuance of a certifi cate of use or full title ownership (please see below). But still the Sor. Kor. 1 provides only a claim of ownership and not the right to ownership.

All lesser claims mentioned above have in common that no offi cial permission to build a house may be granted on such land. Furthermore legally none of those documents are transferable except by inheritance. Only higher land rights will grant the right to build a house and are fully transferable. The highest claims on land are the Nor Sor Sam (NS-3) or certifi cate of utilization, the Nor Sor Sam Kor (NS-3K) or certifi ed certifi cate of use and the Chanote (NS-4) claims.

What are the advantages of higher land rights? The land title deeds Nor Sor Sam (NS-3) and Nor Sor Sam Kor (NS-3K) are legal land title certifi cates registered at and issued by the land department that show who has the right to possess the land and use the benefi t of the land as an owner. Having such rights it is possible to register a lease, usufruct or sale at the land department. The name showing on such land title deed is the person who has the right to the land and has the legal right to possess the land. This right is recognized by law and can be used as evidence in any dispute.

The certifi cate of utilization or Nor Sor Sam (NS-3) shows that the owner has been granted the right to possess the land and use the benefi t of the land as an owner, but these rights still have to be confi rmed by the authorities.

Despite the fact that the right is not yet confi rmed, the law recognizes the right of possession of the NS-3 holder and the NS-3 may be used as evidence toward proving possession in any dispute. It can also be freely transferred and juristic acts may be registered on it. But as the right of possession evidenced by a NS-3 is not yet confi rmed, any transaction or legal acts registered on a NS-3 must be published for 30 days to allow third parties to oppose the transaction.

The certifi ed certifi cate of use or Nor. Sor. Sam Kor (NS-3K) is a certifi cate of possession as well. Like an NS-3, this document evidences the holder’s right to possess the land and obtain benefi t from the land as an owner. But more than that, the NS-3K also evidences that the holder’s rights have been confi rmed and certifi ed by the authorities. As the right of use is confi rmed, legal acts or transactions concerning the land do not need to be published. NS-3K claims have been more accurately surveyed than NS-3 and each plot of land is crossed referenced with a master survey of the area and a corresponding aerial photograph with points of reference on the map.

The Chanote title. Finally the Chanote title or Nor. Sor. 4 (NS-4) is the highest land title and mainly found in the more and longer developed areas of Thailand. Other than the land classifi cation rights mentioned above the Chanote is the only land title deed certifi cate that off ers full certifi ed ownership of land. Land plots held under Chanotes are accurately surveyed and GPS plotted in relation to a national survey grid and marked by unique numbered marker posts set in the ground. Therefore Chanote titles are obviously the preferred title whether you buy or lease land in Thailand.

The Best Apartment in the World– lies in beautiful Phuket

Kata Rocks Club Penthouse, 460sqm.Winner "Best Apartment in the World 2010," International Property Awards

Kata Rocks developer Richard Pope receiving the award for "Best Apartment in the World 2010" at the gala dinner hosted by the International Property Awards in London.

Feature

BEST INTERNATIONAL APARTMENT

Kata Rocks Club Penthouseby Kata Rocks

Nestled on a stunning granite platform, between the beautiful beaches of Kata and Kata Noi, lies Kata Rocks – one of the island’s latest luxury developments bringing some well-deserved international attention to the island.

Kata Rocks has recently been awarded the title of ‘Best Apartment in the World 2010’ by the prestigious International Property Awards for their impressive 460 sqm Club Penthouse. Spanning two fl oors, the spacious apartment boasts four bedrooms, two jacuzzis, and a 10m long private infi nity swimming pool with completely uninterrupted views over the Andaman Sea and Ko Phu island. Combine the location with the amenities on off er and it is no surprise that the apartment beat entries from over 110 countries to win the coveted title.

“The Asian economies are providing much of the world’s growth at the moment, and Phuket is right at the heart of this,” remarks Richard Pope, developer of Kata Rocks. “Over recent years there has been a defi nite move up-market, as evidenced by the number of world-class villa and apartment developments that have been constructed. This award shows that the very best can be found right here in Phuket, Thailand.”

Kata Rocks was conceived and designed by Mr. Pope in partnership with award-winning architect Adrian McCarroll of Original Vision. Together they have ensured that each and every one of the thirty-four units, ranging from 134-460 sqm, enjoys completely uninterrupted sea and sunset views.

Rounding out the ‘dream design team’ at Kata Rocks is celebrity interior designer Kelly Hoppen MBE, who is best known for her modern interpretation of the East-meets-West aesthetic. Ms. Hoppen’s designs are complemented by the lighting of longtime collaborator, lighting designer Rob Clift. Together, their client list includes David Beckham, Jude Law and Sir Elton John, among many others. Their continued partnership at Kata Rocks adds yet another name to this list, as adventurer and TV personality Bear Grylls has purchased one of the award-winning Club Penthouses.

The International Property Awards, sponsored by Bloomberg Television and Google, are independently judged by 54 international experts from all areas of the property profession. Most members of the Phuket-based Kata Rocks team attended the gala prize-giving event held in London late last November, including developer Richard Pope who was presented with the award. The dinner was attended by over 500 guests, with several countries sending their ambassadors as representatives.

“It is an honour for us to have received the title of ‘Best Apartment in the World 2010’ for our Kata Rocks Club Penthouse,” says Mr. Pope. “To have been judged by an independent panel of international experts who have deemed our apartment as ‘Best in the World’ on this, our fi rst development in the Asia Pacifi c region, is simply astounding.”

He adds, “To bring the title ‘Best Apartment in the World’ to Phuket is fantastic for the island. Phuket is fast becoming the French Riviera of the East, and we’re delighted to make our contribution to that advancing reputation.”

Phuket Thai Hua Museum The oldest Chinese school in Phuket, Thai Hua School was built in 1911 and has now become the Thai Hua Museum, serving as a community and exhibition centre for baba arts and culture.

The museum is a two-storey building with the upper level balconied internally to look down on the ground fl oor. Many of the exhibits and artifacts relate to the art and culture of China. Some of the old schoolrooms still remain as they were in the past with old school desks and photographs of former students.

The Phuket Thai Hua Museum is on Krabi road. It’s open on Tuesday through Friday from 1 to 8pm and Saturday and Sunday from 9am to 8pm. Entrance is free. It's certainly worth a visit.

Old Phuket Town

Much of Phuket’s development has taken place in the last ten years and the building style is resolutely modern – some say, stridently so; but parts of Phuket City are little changed from a hundred years ago. At that time the island was a busy trading port and supported a thriving tin mining industry. The then captains of industry built their prestigious homes in the Sino-Portuguese style. Narrow housefronts ornately decorated with red and gold, the mystic signs representing sacred guardians of the access, yielded to storied accommodations with tall ceilings and interiors often incorporated delightful gardens. Nowadays the streets in the Chinese quarter have transformed themselves into busy thoroughfares featuring antique shops, speciality restaurants and more. Well worth a visit.

Cheer up everyone. The much maligned, some would say unfairly these days, airline meal is going through a revolution… and there is now evidence to show why passengers always think the food is bland.

Firstly, the gastronomic revolution. Air New Zealand is leading the way. It will install induction ovens on its new Boeing 777-300ER aircraft to ensure freshly prepared food. They will even have in-fl ight wine tasting in the forward galley. (Just for the record an induction cooker uses a form of induction heating for cooking. It is chiefl y distinguished from other common forms of stovetop cooking by the fact that the heat is generated directly in the cooking vessel, as opposed to being generated in the stovetop by electrical coils or burning gas).

Italy's Alitalia has taken Italian cuisine, literally, to new heights by being awarded the 'Best Airline Cuisine' by Global Traveler magazine readers. By rotating the menu every three months and including products authentic to particular Italian regions, coupled with linen, tableware and personal care items designed by top Italian designers (and Italy is defi nitely style city when it comes to design) Alitalia has elevated the best of one of the world's most popular cuisines to a new airline meal level.

Asian airlines have a long history of serving much more palatable cuisine than American and some, like Cathay Pacifi c, can actually make eggs to order, which was almost unheard of a few short years ago. Others, like Asiana Airlines of South Korea, often voted the best in the world, off er shaved truffl es on the risotto and All Nippon Airlines of Japan off ers an 'out of this world' Kaiseki meal, a traditional multicourse Japanese dinner. Many airlines now partner with famous restaurants or celebrity chefs for menu advice.

However, it is well established that the taste buds are less sensitive at 35,000 feet while travelling at 40C below zero at Mach 1 speed or just below, so chefs and menu designers must work harder to bring out the fl avor of all food, not just the mass produced economy class food. For example on Delta, a large American airline, the consulting chef included in his menu balsamic cipollini onions with the roast chicken breast, blue cheese sauce with mascarpone mashed potatoes and cheese ravioli tossed with eggplant and artichoke caponata. Yummy.

Which is all well and good, but the simple fact is that airline food must endure several obstacles, not common in earth bound restaurants, that often gives it that blandness passengers complain about and every comedian since the start of commercial airline fl ights has made jokes about. (Believe it or not, the fi rst commercial fl ight was a Russian Sikorsky Ilya Muromets airliner in 1913.)

Some of those obstacles? For example, meals fi t on trays that must be easily stacked, so large or vertical foods like whole chickens or lamb shanks don't work. If there is turbulence and the crew must remain in their seats, the food may sit in

a reheating oven longer than planned, so it dries out easily. After being cooked in the airline catering division, the food is blast chilled to around 38F degrees. The fl ight attendants have photos and large folders of notes and instructions on how to serve the reheated food.

'White Noise'

But what about that inexplicable blandness of airline food? Well, a recent study by Manchester University in United Kingdom found that the 'white noise' heard inside an aircraft's cabin, a random collection of sounds such as the muffl ed noise of aircraft engines, is capable of diminishing the taste of salt and sugar. This explains why airline food is 'improved' with extra salt, sugar and other fl avourings.

The study confi rmed that sound plays an important role in the perception of taste. One enterprising chef has exploited the trait in a specially designed seafood dish served to diners hooked up to iPods listening to the sound of surf crashing on a beach. The study even found that sounds aff ected how crunchy some types of food sounded to diners, which in turn aff ected their perceptions of freshness and palatability.

The study involved blindfolded diners assessing the sweetness, saltiness, crunchiness and overall fl avour of the food as 'white noise' was played. While louder noise reduced the reported sweetness or saltiness, it increased the measure of crunch.

Finally, how hygienic are those airline galleys? You would think with all the movement of the food from preparation to packaging to reheating to serving that a few nasty bugs would creep in along the way. In the United States they are taking no chances with the Federal Department of Aviation [FDA] cracking down on unsanitary conditions at airline caterers. The FDA inspectors had found live cockroaches, ants and fl ies at a food preparation facility.

All a bit sobering. Maybe it is best to remember the wise lyrics of Stephen Sondheim, a famous American songwriter: "Anything that's gray, don't eat."

Beating the Heat

Useful info

Our bodies have the capacity to create a lot of heat, particularly internal heat. We normally cool ourselves by sweating, radiating this heat out through our skin and by our normal breathing. Under some circumstances, such as the unusually high temperatures found in the tropics, coupled with high humidity and vigorous exercise, our natural cooling system may begin to fail, allowing internal heat to build up, sometimes to dangerous levels. This increased heat manifests itself in various forms, from heat rash, heat cramps and heat exhaustion, to the potentially lethal heatstroke.

Heat rash is very common here in Phuket. It’s sometimes referred to as prickly heat, sweat rash or miliaria, and new Phuket residents and visitors may fi nd that they develop this condition, as they become accustomed to the heat and humidity. A rash of red or pink dots is generally found on the body, particularly those areas covered by clothing. The dots can look like pimples. It occurs because the sweat ducts become blocked and swell, which can cause discomfort and itching. The rash areas may get irritated by clothing

It’s hot in Phuket, so how can we beat the heat?

Even sitting in the shade, you're at risk of over-exposure to the fi erce tropical sun

or scratching, and a skin infection will then occur. Most heat rashes heal themselves without problems, with the use of common treatments readily available from supermarkets and pharmacies. Good personal hygiene is also important. If you think you’ve an infection, you should seek medical advice.

Heat cramps occur in muscles after exercise because sweating causes the body to lose water, salt and minerals (electrolytes). The loss of salt and water aff ects the exercised muscles, which cramp and become painful. Leg muscles, such as the calf or thigh muscles, are usually the most aff ected. To

prevent heat cramps, drink a rehydration or sports drink, such as Gatorade, or take the readily available ORS solutions that you mix with water. People who are adequately hydrated are less likely to experience heat cramps. It’s incorrect to take salt as this is absorbed slowly and is likely to cause stomach irritation. Taking salt can also aggravate the water loss problem, as it will pull fl uid from the tissues into the blood system. If you get heat cramps whilst exercising, you should stop physical activity, gently massage and stretch the aff ected area. Don’t resume vigorous exercise until the heat cramps have gone, as it’s possible to tear and cause serious injury to muscle and soft tissue.

Many people get swollen hands, feet or ankles when they sit or stand for a long time while in a hot environment. This is referred to as heat edema. Heat causes the blood vessels to dilate, so that body fl uid is moved into the hands or legs by gravity. The balance of salt in the body is also a risk factor for heat edema. If salt loss is less than normal, the increased salt level draws fl uid by gravity into the hands and legs. Older adults have an increased risk of heat edema, especially if they’ve other medical conditions that aff ect their circulation. Heat edema is also common in women during pregnancy. The best treatment is to use gravity to put the excessive fl uid back into the right places, so elevate your feet. This will reduce the swelling. If the edema becomes excessive, to the extent that it aff ects your daily activities, or it’s painful to walk, consult your doctor. He may give you some medication to get rid of the extra fl uid, and correct any fl uid balance problems that may become evident.

Heat exhaustion or sunstroke occurs when a person can’t sweat enough to cool the body. It generally develops when a person is working or exercising in hot weather. Symptoms of heat exhaustion include fatigue, weakness, headache, dizziness, and nausea, and skin that is cool, moist and pale, or fl ushed. Mild cases of heat exhaustion can be treated at home. Keep cool; air-conditioned spaces are best, and use cold towels and water to cool the body. Applying cold compresses to the head, armpits and groin is most eff ective.

Tel: +66 (0)76 249400, Email: [email protected]

Peter Davison is the Manager International Services at Phuket International Hospital.

Heat exhaustion can sometimes lead to heatstroke, which requires emergency treatment. Also known as ‘Core Temperature Emergency’, heat stroke is potentially fatal. In this condition, the body’s temperature regulation centre in the brain has been rendered inoperable, and the temperature continues to rise, causing eventual brain damage. Immediate active intervention is necessary to avoid coma and death. To treat heat stroke, immediate cooling of the body is required. Remove clothing. Use ice packs to the neck, groin and armpits. Cover with a wet sheet and use a fan or air-conditioning if available, and be prepared to resuscitate.

Taking minor precautions, drinking lots of fl uid and replacing electrolytes can go a long way in beating the heat, particularly if you exercise. You should also remember that your urine output is a good indication of your hydration status, and as well as preventing kidney stones, drinking lots of fl uid is generally good for you. If you’re only urinating every three to fi ve hours, or if your urine smells off ensive, or is not a light straw color, you aren’t drinking enough.
