It’s scheduled to perform at the Lehman Center for Performing Arts at 8 p.m. on Saturday, Oct. 27, in what will be the ensemble’s only performance in New Y ork City. The performance will be “historic,” according to Lehman Center Executive Director Eva Bornstein, making it an emblem for the center’s 32nd season as a whole, which kicked off on Saturday with Michel Camilo’s Mano A Mano Trio and Tipica 73. Acts ranging from African drumming and Chinese acrobatics to Broadway shows and Russian ballets will also be featured at the venue between now and May 2013. “This next season is about internation- al attractions coming to the Bronx from around the globe,” Ms. Bornstein said. “Basically, we’re trying to offer as much variety as possible.” Mr. Bornstein said the next notable event — Ballet Folklórico de México Amalia Hernández — is a “prime exam- ple” of the sort of diversity the Lehman Center is trying to encompass in its ros- ter. The performance by the world-re- nowned company will take place at 6 p.m. on Sunday, Sept. 23. International-themed performances will generally be held on weekends, so children are able to attend, Ms. Bornstein said. T he National Symphony Orchestra of Cuba has embarked on its first-ever United States tour since

the Cuban government eased travel restrictions on its citizens.

It’s scheduled to perform at the Lehman Center for Performing Arts at 8 p.m. on Saturday, Oct. 27, in what will be the ensemble’s only performance in New York City.

The performance will be “historic,” according to Lehman Center Executive Director Eva Bornstein, making it an emblem for the center’s 32nd season as a whole, which kicked off on Saturday with Michel Camilo’s Mano A Mano Trio and Tipica 73. Acts ranging from African drumming and Chinese acrobatics to Broadway shows and Russian ballets will also be featured at the venue between now and May 2013.

Eggplant is one of those versatile ingredients that lends itself to a variety of dishes and cuisines. A favorite amongst vegetarians and meat lovers alike, eggplant’s mild, creamy flesh can be used in stand out mezze, as a main course, or fla-vorful side dish.

While not necessary for all eggplant dishes, you’ll often see a recipe call for salting the vegetable. Some say this takes away a bit of the bitterness. Mostly, the salt draws out wa-ter which would otherwise, in recipes such as the one below, prevent the eggplant from fry-ing properly and instead act as a sponge, absorbing excess oil.

One simple way to make eggplant is to salt it, dry it, and fry it. You can serve the rounds topped with salted plain yogurt, freshly cracked pepper and ol-

ive oil. It tastes amazing stuffed into a freshly baked pita along with raw tahini, sliced Persian cucumbers, tomatoes, warm hard boiled eggs and boiled, sliced potatoes. You can also shingle it on a platter with as-sorted roasted vegetables and drizzle with harissa and picked cilantro leaves.

PAN-FRIED EGGPLANT

3 large, firm Italian eggplant

kosher salt, to taste

Canola oil, as neededCut the eggplant crosswise

into 1/4-inch slices. Layer them in a colander, sprinkling each layer with a generous amount of salt. Place the col-ander over a bowl and allow to rest at least 3 hours.

Lay 2 layers of paper towel over a large tray and squeeze any excess water out of each eggplant slice. Arrange on pa-per towel and repeat with all eggplant slices. For additional space, place 2 layers of paper towel over the slices and contin-ue the process of drying them.

Pat well before frying.Meanwhile, heat a large pan

with 1/2-inch canola oil. Heat over medium-high heat. Fry the eggplant in batches on both sides until dark golden brown (the oil should bubble fairly vig-orously otherwise the oil is not hot enough). Add oil as needed to the pan should you need ex-tra.

After frying each batch, drain on paper towels. The egg-plant can be eaten immediately hot, at room temperature or stored in the refrigerator for up to 3 days.

Dietician says healthier eating means more careful shopping

The average super market offers some 45,000 food prod-ucts, many of which are pack-aged, processed and a poor choice for someone who wants to eat healthy — even when the package says otherwise with claims of being natural, whole grain and even organic.

“People love the idea of convenience, especially with their food,” says registered dietitian Anika DeCoster, as-sistant program manager of LifeTime WeightLoss. “Most of the convenience and processed foods on the market are barely recognizable to the human body. The body can’t properly digest, absorb or use nutrients in these modified foods effec-tively, which negatively impacts metabolism, weight and energy production.”

Of those 45,000 products, there are four DeCoster says you can stop buying now.

Breakfast cereal. Most Americans consume an over-abundance of sugar via pro-cessed foods, like breakfast cereals that contain simple car-bohydrates, which our bodies treat like sugar when they en-ter the bloodstream. Too much sugar in the diet can lead to obesity —which can be a cause for Type 2 diabetes. Cereal is not the breakfast of champi-ons. If you miss the crunch, start making your own granola packed with nuts and seeds, which provide healthy fats and protein, without the excess sug-ar and added trans-fats found in store-bought varieties.

Fruit juice and soda. One of the main culprits of the obe-sity epidemic, soda — even diet soda — has a negative impact on healthy eating. Fruit juice, while seemingly more healthy since it is made with fruit, contains so much sugar, it out-weighs any benefits. Water is the only beverage a body truly needs. “If you need a flavor kick, try buying natural, car-bonated water and add a little lime or lemon,” recommended DeCoster.

Salad dressing. Eating a salad? Good for you. Top it with dressing loaded with sugar, additives and preservatives and you’ve just doused those healthy vegetables with an un-healthy dose of products your body doesn’t need.

Making your own salad dressing is simple: whisk to-gether oil — like olive, walnut, or sesame seed varieties — with acid, like red wine vinegar, bal-samic vinegar or lemon juice. Season with dry or fresh herbs and change the consistency with anything from peanut but-ter or mustard to sour cream or avocados.

Non-fat flavored yogurt. “In-stead, buy plain full-fat Greek yogurt and add your own flavor-ings such as nuts/seeds, a little organic honey or berries,” De-Coster says. That’s right, full-fat. “The fat in the yogurt helps your body absorb fat-soluble vitamins like vitamin D, which is the most common vitamin de-ficiency.”

Plus this natural fat is es-sential for fortifying brain and cell membranes, and because it is digested more slowly, you’re less likely to be hungry an hour later. — ARA

The Campaign is a tooth-less, only occasionally funny, run-of-the-mill, frat-boy prank film. It settles for the easy laugh when it had the oppor-tunity of going for the jugular. This is a big disappointment, as it was directed by the talent-ed and experienced Jay Roach, whose work includes a couple of the past decade’s best po-litical films, Game Change and

Recount.The plot follows the re-

election campaign of five-term Democratic Congressman Cam Brady (Will Ferrell), who is running unopposed. A hack politician in the boy-next-door mold, Brady loves the lifestyle of his position but makes no worthwhile contribution to his party or his country. When a sexual dalliance exposes a sud-den weakness in the polls, the Republican financial power-houses, the evil Motch Broth-ers (John Lithgow and Dan Ackroyd) snap into action.

Seeing an opportunity for financial gain, the Motches make a deal to, literally, sell a town in Brady’s congressional district to the Chinese. All they need is a little political support.

The brothers throw their vast wealth behind the campaign to unseat Brady, recruiting a charisma-deprived everyman, fledgling Republican Marty Huggins (Zack Galifianakis) to take on the serial womanizing Democrat. To ensure Huggins’ success, the Motches place a slick, ruthless political opera-tive, Wattley (Dylan McDer-mott) in charge of the clueless Huggins’ campaign.

This sounds like the stuff of pure political satire, harking back to Preston Sturges’ The Great McGinty, Barry Levin-son’s Wag the Dog and Trey Parker and Matt Stone’s South Park – Bigger, Longer and Un-cut. And Roach would have seemed the perfect choice to direct such a picture.
