Dozens of Bronx artists, as well as 20 Bronx-based arts organizations under the supervision of the Bronx Arts Alliance, are hosting an art show on the main floor of the Freedman Home. “We Are Still Here: Art IN the Bronx” — on display through Sunday, March 17 — is one of the most comprehensive and diverse collections of living and breathing Bronx artists ever. “The energy is something I’ve never felt before. It’s re- ally down deep. It’s in your soul,”said cura- tor Jeanine Alfieri, who also has sculp- tures in the show. Ms. Alfieri said about 85 percent of the 60-piece show is made by Bronx art- ists. And some pieces created outside the Bronx were submitted by Bronx-based orga- nizations, like Wave Hill and the Derfner Judaica Musesum at the Hebrew Home. Lucky for all of us — and not just the Irish — St. Patrick’s Day is just a few days away. And no meal is more traditional than the classic corned beef and cab-bage, with a side of potatoes.

The best thing to do is to buy a pre-brined brisket and get it simmering on low in a pot with some Guinness. There’s really little else you need to do besides slicing and eating.

GUINNESS-BRAISED CORNED BEEF AND

CABBAGEServes 4 to 6.

While lots of recipes use a lager in the braising liquid. I wanted to experiment with Guin-ness. After simmering for hours, the Guinness loses any bitterness and its bold flavor becomes a sub-tle and earthy element in the jus.

1 3-3 1/2-pound corned beef brisket

8 ozs. Guinness2 onions, quartered2 large carrots, peeled

and cut in large pieces5 garlic cloves, smashed2 bay leaves1 Tbsp. black pepper-

corns1 head green cabbage

Place the brisket in a large Dutch oven suitable for brais-ing. Add the Guinness and cover with cold water by half an inch.

Add one onion, one carrot, garlic, bay leaves and pepper-corns. Bring to a gentle simmer. Do not boil. Skim and discard any impurities from the surface of the liquid. Cook over low heat for 3 hours.

Meanwhile, leaving the core intact, cut the cabbage in half lengthwise and then cut each half

into quarters.After the beef has braised

for 3 hours, remove the braising vegetables and add the fresh car-rot, onion and cabbage. Cover and cook for another 2 hours. Remove meat and slice across grain. Serve on platter alongside vegetables and butter and pars-ley potatoes.

BUTTER AND PARSLEY POTATOESServes 4 to 6.

Choose small, waxy potatoes that are the same size. This

will enable them to cook at the same rate. Baby Yukons, finger-lings or la ratte potatoes are fine choices. Lots of green parsley gives this flavorful, earthy dish some life. Along with the butter and garlic, these potatoes might make you forget entirely about the main course.

2 lbs. baby potatoes, skin on, scrubbed

1 stick unsalted butter3 garlic cloves, minced1/4 Cup parsley leaves,

roughly choppedkosher salt and pepper

Place the potatoes in large pot. Cover with cold water and season generously with salt.

Bring to a boil and simmer. Cook until the potatoes are pierced easily with a knife. Re-move and cut in half.

Meanwhile, melt the butter in large skillet over medium-low heat. Add the garlic and cook gently for about 1 minute. Do not let brown. Transfer the potatoes to the skillet and coat in butter. Season with salt and pepper to taste, and garnish with parsley. Serve immediately.

Home brewing for the holiday

Beer drinkers often dream-about what it would be like to brew their own. Before advance-ments in home-brewing tech-nology, this may have been just a passing whim. But now that there are brewing supply stores and ingredients that can be pur-chased in-store or online more readily, many enthusiasts have determined there’s never been a better time to craft their own.

Brewing beer at home can be both inexpensive and easy. In honor of St. Patrick’s Day, you may want to try your hand at home-brewing.

Kits also can be purchased that include all of the ingredi-ents needed to make beer. The process will vary depending on the variety of beer, but some common steps include:

Sanitize all equipment.Make the “wort” from boil-

ing water and the malt extract. Then add the hops and keep it boiling.

Cool the wort down until the boiling pot is cold enough to touch.

Strain the wort into the fer-menting container.

Add yeast to the fermenter. Stir gently.

Put the airlock on and store somewhere cool and dark for a week to 10 days.

Prime your beer with boiled sugar water. The sugar will re-activate the yeast and carbonate the beverage while it is bottled.

Fill the bottles to one inch below the top. Securely cap the bottles immediately after filling.

Let the bottles sit for an additional week at room tem-perature to condition. Then the bottles can be chilled for drink-ing. — Metro
