RARE MEDIUM AND ABG IS BROUGHT TO YOU BY Rare Medium, together with the Australian Butcher’s Guild, invites you on a two day Paddock to Plate tour to explore the production processes of lamb and goat meat and see firsthand the factors that affect meat quality. The tour will travel to Central Western NSW where we will visit the property of The Gourmet Goat lady and her award winning farmed goat meat. We will also be visiting a producer of Border Leicester sheep and discovering the science behind producing MSA graded lamb. We are always looking at new and innovative ways to use different cuts of beef in recipes and the chef at Lazy River Estate in Dubbo will showcase his Masterpieces for our lunch on Tuesday. This tour is all about experiencing firsthand the production of quality goat and lamb in NSW and it is your chance to ask questions, talk with other chefs & butchers and get new ideas for your own business.
