The summer is upon us and our sales level is nearly as high as the
pollen count! It has been a remarkable few months with sales and
lettings experiencing high levels of activity which is evident
throughout the pages of this magazine.
Our summer edition of inhouse features our latest creation, with
the launch of our under £500,000 section. We have been aware for
sometime that because of our high standards of presentation and
service that some clients think that we may not be interested in

DAVID SULLIVAN
As a long standing inhabitant of the Sunday Times richlist with a personal fortune estimated at £454 million weask David Sullivan, proud co-owner of West Ham Unitedand hugely successful media and property businessman,why he has chosen to make his home in our part of Essex.
Jim: You have been resident in this area for many
years, what made you decide on Theydon Bois?
David: I looked for a house I could knock down
and build another house, or a plot of land where I
would get planning permission, because it was very
difficult when I was looking. It’s a little bit easier
now. It was an old wreck that was here.
Jim: Were you heavily involved in the architectural
design?
David: No, I can remember saying I wanted it
to look like a Georgian Mansion, because I like
Georgian. In a way it’s not so different from my
house in Chigwell, I said I wanted it to look like
the house from Gone With The Wind.
Jim: If you were building the house again,
would you change much?
David: I would only have one pool rather than two.
Jim: Do you use either?
David: When we get the weather! In the winter I
use the indoor pool for a couple of months. I would
have had a pool built where either the roof/wall can
be removed to make it an indoor/outdoor pool. I
also have a tiny gym, and I would have made that
into a big gym. Gyms were not as fashionable as
they are now and because I’ve had a dodgy heart I
exercise all the time. Also this room is where I
entertain a lot, so I would have made this bigger if I
hadn’t had so many problems with the planning
permission. I’ve had about sixty/seventy parties here.
Comfortably you get 26 round here, but I’ve had
32. You can’t go beyond 32 around the dining room
table. 32 is cramming it.
Jim: How many square feet is the property?
David: It’s supposed to be 25,000 sq ft. fourteen
bedrooms, 8 bathrooms I think? I’ve had the tennis
court re done. But I don’t play much, although I use
the gym everyday.
Jim: My understanding is you paid about 7.5
million pounds to put this together?
David: Yes about 7 million.
Jim: Was it a good investment?
David: At the time it was madness. I sold my old
house for £960,000, and I don’t think any house
had sold for around a million in Chigwell at that
time. I built something seven times the value of
anything ever been sold. But I don’t go out
sometimes for three/four days, so I spend my
working and private life here. So I might as well
have it for me, I built it for me.

Jim: You have owned other properties in the area?
David: Yes, Stradbroke Drive, Sunset Avenue, and
a Town House in Woodford Green. I bought it for
£7,000 and sold it for £32,000 in the same year.
Those were the good old days!
Jim: If you were to instruct me today to sell your
house, how much do you think it would achieve?
David: It’s worth whatever you can get for it! I’ve
had people approach me offering 18-20 Million for
it. There might be some mad man who would give
you 25-30 million for it. If I had to sell it in eight
weeks you might still only get 7/8 million for it.
It’s on the day who knows?
Jim: At what price would you go?
David: I wouldn’t sell for anything…. well maybe
I would sell for fifty million! With the greatest
reluctance, you would have to prise me out.
Jim: So what would you sell first, your home
or West Ham?
David: Neither!! I wouldn’t sell either!
Jim: Is it a family house or a statement house?
David: Well my kids are here three to four days a
week. It’s nice that they can actually go and play in
the wing, and they are not on top of you. I think
any home more then x million pounds is a
statement home, and people buy it as a statement.
If you go back historically this was always the
Manor house in Theydon Bois.
Jim: So when you were growing up in Cardiff
did you ever imagine that you would own a house
this big?
David: I probably never imagined houses this big
existed! Funnily enough I went back to my old
three bed Council house in Cardiff two years ago,
because I wanted to show my kids. The property
has changed hands several time and been extended,
and wasn’t quite as pokey as I’d described it, it was
a bit embarrassing; it wasn’t as bad as I’d told them!
Jim: Do you think it’s harder now for first time
buyers, than it was for you?
David: Yes, unless you have a parent who can help
you. I think if you work hard and you pay your
taxes, there shouldn’t be any inheritance tax.
I certainly don’t think there should be any
inheritance tax on your primary residence,
whatever the value. I’ll end up having to leave the
country when I get a bit older, not that I want to,
but I feel I will be driven out. I think the have and

the have nots are down to whether your parents
can put a deposit down for you on a house.
Jim: Do you think they have a duty to do that?
David: If they can afford to, but plenty can’t.
Then the other thing is when your parents die, it
depends how many children they have and who it’s
divided between. Then the have and have nots
become a function of their parents. What does a two
bedroom flat cost in this area and how much deposit
would you have to put down?
Jim: In this area around £200,000, with a deposit
of 25%.
David: Who the hell can save £50,000? Normal
people Jim cannot save £50,000. I think they will go
back to high percentages (loans), but the percentages
were too high in the past! All that 95% or 100%
interest only mortgages were a disaster waiting to
happen. My first flat I paid £4,200 for and I put a
deposit of £1200 down, and I couldn’t buy
something for £4,600 because I didn’t have enough
deposit. What I do know is that you had to put
more than 5% down. I sold that property for
£10,000 in a year. It was a boom time, and then I
purchased something for £17,000 and again sold
that for £32,000.
BUSINESS
Jim: You’re currently positioned on the Sunday
Times Rich List at 114th, with a view that your
fortune is estimated at 454 million. Do you think
that’s a fair assessment?
David: I think it’s impossible to value anything.
I know there are people out there who have got a lot
more then they think, and there are people who
have a lot less than they think. It’s just a game really,
I’ve got quite a lot of money, but I wouldn’t like to
assess it. I think you are rich when you don’t know
how much you have got! I think that’s a true
statement!
Jim: How do you feel about being included on
those public lists?
David: Well, you end up giving a lot more money
to charities, because you get a lot of post from
charities, and you get driven mad by people. But it’s
not bad really as you can get credit. I think people
take them (lists) far too seriously. I had a pal of mine
on it when it just started. He was a big property guy,
he had night clubs and hotels but they were all
franchises, he didn’t really own anything, it wasn’t
real money. He was listed at about 30 Million and
that was a lot of money then. Three days later he
went bankrupt!
Jim: At which point did you stop working for a
living and start working because you enjoy it?
David: Very early on, when I was 28, I bought race
horses, I made films. My motive was, I’ve got quite a
few million in the bank and I want to do something
just for fun.
Jim: Take it back before then, before the few
million. When you got your first million did you
feel hungry to earn more money, did you feel secure?
David: When you come from nothing you don’t feel
secure even if you’ve got millions and millions. But
twice in my life I did things because I wanted to do
them; once when I bought the race horses and again
when I was 43 I looked to buy a football club, for
two years I looked to buy a club. So twice in my life
I have done stupid things, but things that excited
me, that presented me with a challenge.
Jim: Do you think you’re a workaholic? Does your
family think you are?
David: There is an economic theory that most
people are maximisers or satisfiers. 99% of people
are satisfiers; they will work their socks off to get a
satisfactory lifestyle. A maximiser is a person who,
whatever he does it isn’t enough, he is driven. I am
a mellowed maximiser. I was a total maximiser in
my youth. I don’t work as hard as I used to, in my
twenties I was driven. I always worked six days a
week but not seven, you can drive yourself for six
days from eight in the morning till ten in the
evening, but you have to reflect for one day. In the
past I have taken four days holiday in twelve years,
from the age of 21 to 33. The longest holiday I had
is ten days. I tend to have a couple of days here and
there, I even went to Australia for three days!
FOOTBALL
Jim: What do you think makes a good Football
Manager?
David: There is no common denominator, a lot
of people - good players have not made good
Managers, I think the best Managers are players who
achieve things through graft not just through natural
skill. Although the great talents in the main have not
made great Managers.
Jim: Like Bobby Moore?
David: Yes like Bobby Moore, and plenty more like
that, Brian Robson, Bobby Charlton had a go for a
while. Maradona started badly but he has finally
got them into the final but how far they go I don’t
know. I’ve put my West Ham top on for this
interview too Jim! If you actually look at some,
like Jose Mourinho really he was not any sort of
footballer at all.
Jim: So is it PR that brings them into that position,
when the press gets behind them and then players
believe they are special?
David: No, no I think for some, like Jose Mourinho
he is a very talented man, it’s not just luck. He’s
been to four or five different places and he’s done it.
That’s not luck, anyone can get lucky once, but I
don’t think you get lucky that number of times.
Arsene Wenger wasn’t a particularly good player,
they are intelligent people. It’s experience and
intelligence.
Jim: I know it was your lifelong ambition to own
West Ham, but why West Ham? you come from
Cardiff?
David: Well because I’ve been here since the age of
10-11. I was brought up in Hornchurch. West Ham
is the club of East London and Essex. I always had a
business from the age of eleven; I used to sell old
football programmes. I actually got moved on by the
stewards at West Ham! I was about thirteen, so I’ve
got bitter memories (laughing).
Jim: It’s an emotional purchase over a commercial
one, does that mean you choose trophies over profit?
David: Oh yes! Every day, no matter what!
Although I don’t want to go bankrupt over it! If you
said to me would you prefer the business to make
ten million next year or would you prefer to win the
FA Cup, or say, come fourth in the league I would
be happy to finish fourth in the league even if we
lost ten million. If I could break even and do that,
I’d be over the moon. My dream is to break even
and deliver the best possible team. I don’t want to
leave a legacy of more debt than what we went in
with. I also don’t want to become profitable at the
cost of not having a team.

Jim: You have a reputation for expressing your
opinion on the team’s performance publicly, and you
have taken much criticism for doing so. Why do you
feel it’s important for you to have your say that
directly?
David: I do it in a very controlled way. The team
were performing so badly, and we were in a real
state, and I thought it might just gee them up and
motivate them! Whether it did, who knows?
Jim: Did you get any reaction from the team?
David: From the supporters YES!!! From the team?
(laughing). Nine out of ten supporters said they
agreed with me, they said thank god! If your sales
team were not performing, you would say hold on
guys, you’ve got to do better. I think footballers live
in a cocoon and they are very spoilt people!
Jim: Do you think you can change that? Do you
think other club owners have a similar thought?
David: I know a lot of them would like to bring in
rules of capped wages, or if the team is relegated a
system to be in place where wages are automatically
halved. That may well come into Premier League
contracts this summer. There is a big move afoot
that all Premier League contracts must say if a team
is relegated all wages are halved.
Jim: The Olympic Stadium, what do you think your
chances are of acquiring it?
David: Very very good! The big problem is the
enormous cost of converting it. They have spent 560
million on the stadium and only a third of the seats
are covered. Why cover a third? Their argument is
it’s July and it will be sunny, but if that’s the case
why cover any seats? It doesn’t make sense.
For football we would have to put a new roof on,
there seems no logic in only covering a third.

Jim: How many acres of land do you have here David?
David: I think it’s about ten or eleven acres, but the
thing is its all garden. See if you have a hundred
acres, you have a three acre garden, and the rest has
got to be worked, that doesn’t appeal to me. It’s very
private here. My house actually looks better from
the back than the front! It’s a labour of love.
Jim: Do you plan any major works here?
David: I have people in all the time maintaining it
Jim, I just cannot face having builders in. I’m doing
this place in town, its five flats I’ve got 22,000 sq ft
and I’m going to turn it into five flats, and I’m going
to keep the biggest one!
Jim: Were you affected by the recession?
David: Well, most of what you’re holding took a hit
Jim, I am hurt but I can sustain it. There is the odd
thing I think: why did I buy that? I bought a whole
pile of property in Bath, with terribly low yield and
tenants that are aggravation. I thought long term,
more and more people have got more leisure time,
and once they leave London the tourists go to
Stratford, Bath, and York. But what’s not helping is
they built a new shopping centre in Bath; that’s held
me back. I’ve got to stick it out for ten to fifteen
years, and ultimately get some rent reviews; at the
moment there are no rent reviews.
Jim: Although your children are very young, do you
expect them to earn their pocket money or do you
just give it to them?
David: I give it to them; I’m soft with my kids.
I have a real problem with getting them to
understand money and the value of it. My younger
one is better; he’s a saver, and my older one spends
everything!
Jim: Property or Pension?
David: Property, I’ve always said what a person
should do as an individual, because it’s the one
loophole in our tax system, is buy the biggest and
best house you can afford, then trade down when
you are old, and pay no tax on the gain. You can
control it that way. They cannot tax your own
house.
I’m very lucky here Jim, I’m one of the few houses in
the area that doesn’t see or hear the M25. I’m
insulated, yet I’m near everything. It is ideal!

This is one car that we’ve all been waiting for:
the all-new Jaguar XJ. It’s here at last, and we
are amongst the very first to drive it!
Make no mistake; this is Jaguar’s most important new
car. Right now, the future for the company is looking
good; with a £340m European Investment bank loan
under its belt, Jaguar can genuinely look towards the
future. Yet that old adage, ‘the proof is in the pudding’
applies to this Company and to this car more than at any
other time in Jaguar’s existence. In short, the new Jaguar
XJ must be popular, and it must sell.
ON THE OUTSIDEWith the stakes being so high, the Company had two
options – either to ‘go safe’ and produce a much
improved car not unlike the previous Jaguar XJ models
we have come to know and love, or take a chance, do a
‘Star Trek’, and boldly go (in design terms) where no
Jaguar has gone before.
Take the former option and it means the ‘new’ Jag XJ
will be no different to the new pair of slippers you
bought the other day. Those new slippers look just like
your old ones don’t they? Maybe a slight change in
pattern and design, and better quality, but we know
they’ll be good ‘n’ comfy for another ten years. That’s
boring, but it’s what one gets used to, and smacks of a
married life with sex on Tuesdays and Thursdays between
9pm and 11pm, as long as you did the dishwasher when
it was your turn…and shared the cooking for the week!
Thankfully, Jaguar went the Star Trek route, and the new
XJ steps well and truly out of those old slippers and into
a bold new world.
Now before you mention that radical rear end, I’ll touch
on it first. Ian Callum, Jaguar’s lead designer, says it’s his
favourite bit: “We thought long and carefully about the
rear end design of the car”, said Mr Callum, “and we
know it works, in fact it’s my favourite bit of the whole
car”. So lets defer to the great man who penned modern
day Astons and the beautiful sleek Jaguar XK, for he is a
Man Who Knows. Like it or not, I can assure you that
the rear end really grows on you and makes good design
sense, especially when you see the car in the flesh. Yes,
this is a car that looks better in the flesh by far, and really
cuts a dash on the road, as every single passer by
confirmed with an admiring glance.

My final take on the new Jag’s design is this; A Jaguar XJ must have ‘presence’
and ‘substance’. Go anywhere in the World and a Jaguar XJ grille commands
recognition. This new XJ succeeds on all these fronts, but in a totally new way;
it’s making a bold statement for the future, and being a lover of the look of the
‘Old XJ’, the new car makes me feel like, well…. an ‘old man’. Go further and
put the new XJ side by side with the old, and it’s blatantly clear that the world
has moved on, and so I’m throwing my old slippers in the bin, going for the new
shape, and refuse to do the dishwasher, regardless of the consequences. It’s that
kind of statement that the new XJ makes.
Up front, the new car looks like the bigger brother to the mid-sized Jaguar XF
saloon – well no prizes, for that is exactly what it is; a bigger more substantial
‘new Jag’. From the side angle we see traces of new XK, lovely sleek lines, and a
subtle and refreshing sharpness about the whole car. As you can see, the ‘total
design’ concept works especially well in black, but subtle grey and even the latest
fashion trendy white works well for the car.
WITH THE BOSSJaguar chose Paris, and the wonderful City of Versailles for the car’s European
launch. Initial bad luck for me turned to good, for having been delayed on the
plane to Paris I was fortunate to have Jaguar MD Geoff Cousins as my co driver.
Little did he know what he was in for, for after I had made half a million wrong
turns he asked jokingly, “Do you ever manage to find your way to where you re
going?”. I told him that I couldn’t answer that, as I never really got there to
find out. ➛

The big bonus for me of course was that I spent the whole time behind the wheel
while he focused on getting us to a hotel somewhere in Versailles, allowing me to
explore the most exciting aspect of this car; the driving. But hold on just a second
while I share with you what its like to sit behind the wheel of one of the most
luxurious cockpits in the World.
ON THE INSIDEIt’s opulent, high tech, loaded with gadgets, a bit glitzy, but tastefully so – no old
Jaguar cues here, it’s all new; from the stylish 3D instrument cluster, to the
streamed blue lighting finish to the cabin at night.
It is remarkably comfortable behind the wheel; you sit snug, with every
conceivable variation of seating position available. Yet never has Mr Petrol Head
here been so eager to tell you just how comfortable the new XJ is…in the back!
Jaguar deliberately had us scribblers chauffer driven from the airport to the
formal presentation, and I can honestly say that it is one of the most comfortable
back seat drives that I have ever experienced – a genius designed those rear seats.
Admittedly, we were in the long wheelbase version of the car, for Jaguar also see
this new XJ as an upmarket chauffeur mobile for the select upper tier.
ON THE ROADAnd so to the driving: If you have sampled the new Jaguar XF you'll know that
its ride quality and handling are World Class. Can the bigger XJ match it? Yes,
and in 5.0 litre, supercharged form its ride is a global benchmark.
On day one we drove the entry level yet highly competent and refined 3.0 litre ➛

twin turbo diesel. This'll be the best seller, and we powered it for miles cross-
country. It was so quiet that you almost have to listen out for the diesel just to
convince yourself that you’re not in a petrol engined car, so highly refined is its
power delivery. It’s also up to any sensible and usable road performance challenge
you care to name; the all aluminium body shows that size doesn't always have to
mean weight, and so the XJ diesel proves well up to fast cross country terrain,
and you'll soon be getting on a pace without a problem. We left everyone
standing, meeting and passing cars like an express train. The diesel really lacks for
nothing in usable performance; and the stats plainly speak for themselves; 0-
60mph in 6.4 seconds, limited to a top speed of 155mph and the bigger victory
lies in an average 40.1mpg. Yours for £53,000.
Add another forty grand to the equation and you can join me for the drive on
day two. Letting me loose for the day in the amazing 5.0 litre Supersport (0-
60mph in 4.7 seconds, 510bhp, 155mph top end and 23mpg) was like a red rag
to a bull. This is the serious petrol heads version; the one you buy to drive hard
on a Sunday morning when there is no commuter journey to work, or travel
chores with the kids. It’s the car that best exudes the Drivers Car concept of a big
powerful Jaguar that was made to be driven. Old concept, new way, astonishing
performance, grin a minute style; the reason an enthusiast buys a powerful Jaguar
saloon. The spirit of Jaguar’s founder, Sir William Lyon breathes here…..Jaguar

Shoes. They’re not really the most innovative product,
are they? Exciting - yes. Confidence boosting – yes.
But innovative – well, not really…
Not until now, anyway.
Jane Rafter is the brains behind Slinks, a new range of luxury,
customised sandals that are revolutionising the market. The idea is
simple, yet brilliant; sandals with individually designed, detachable
uppers, which can be changed and attached quickly to a stylish
handmade leather sole, leading to several pairs of sandals in one.
It’s an idea that has always been close to Rafter’s heart. “I have
always loved beautiful things and creating something with my
hands. I remember at the age of eight, we all used to wear these
plain white canvas pumps. I used to sit for hours hand-painting
them; customising a pair so they were unique.”
Considering her background, it’s no surprise that she displayed an
inventive imagination. “I grew up in a lovely little house in
Madrid; we never had a television,” she says. “This encouraged us
to use our initiative to entertain ourselves. I was always making
things, dressing up, collecting flowers, beads, dragon flies – and
designing something from it all. My father is a theatre director and
my mother grew up on a dairy farm, so there was always a mixture
of creative and practical ideas around. This is something that I've
tried to carry through my work.”
Having studied at the National College of Art & Design in
Dublin, before working in couture and high street design, Rafter
was familiar with the world of fashion. But she was constantly
aware that something bigger awaited her. “I always knew that
I wanted to work for myself and start a company, but was never
100% sure doing what,” she says. “I did a fashion show a few years
ago where I made foot jewellery; a selection of crystals with beaded
and interlinked rings to create a cover for the top of the foot.
I used to delight in wearing them around my flat – and at house
parties, friends loved them. They worked really well, and I thought
there must be a way of combining them with a base so that they
could be worn out and about.”
However, like all budding entrepreneurs, she still needed the
confidence to get her idea off the ground. The inspiration
eventually came when “friends started getting married … after the
eighth summer wedding one year, I thought it was time to stop
finding new sandals each time and
bring my idea to life.”
At first, Rafter was cautious, working
on her fledgling project during the
evenings and at weekends. “I am not a
ruthless risk-taker, and I wanted to
prove to myself before I jumped fully in
that other people would believe in the
product as much as I did.”
Eventually, Rafter was able to devote
more time to Slinks, and the first year
of trading saw £37,000 worth of sales,
but she was still working part-time as
an office manager. Something was
needed to launch Slinks into the big
time, and that something was the BBC’s
Dragons’ Den.
Jane Rafter faced the Dragons on 12th
August 2009, and impressed them with
her idea, even though she describes it as
a “petrifying” experience. “It is more or
less exactly as you see it on television.
You walk into the den and the five
Dragons are sitting there, stony-faced,”
she says. “I was in there for about an
hour and fifteen minutes – all of it
standing in front of the Dragons
having them fire question after question
at me.”
So how did she cope with the pressure
of being in front of the Dragons?
“I started my pitch and just went for it.
I tried to forget about the cameras,
be honest about me and the business
and do my best.”
Rafter was hoping for a £75,000
injection into the business, giving up
20% of its equity in return. In the end,
she had to give up 40% of her
company, shared between Theo Paphitis
and James Caan, but gained the full
investment that she was hoping for;
which is why people may be surprised
to hear that Rafter pulled out of the
deal before the paperwork was
completed. Where she had previously
been cautious, she was now taking risks
– but Rafter has no regrets.
“Dragons’ Den for me was fantastic – it
gave me a huge amount of confidence
and proved that you can achieve what
you want.” However, she does point out
that the Den “is a good route for
business, but not the only one.” She is
still in touch with the Dragons though,
and Rafter remains “on very good
terms” with Messrs Paphitis and Caan.
Having been through the experience of
entering the Den, she has advice for any
budding entrepreneurs wishing to do
the same. “Prepare, prepare, prepare!
Know your pitch inside out. Think of
every possible angle of your business –
both the positive and the negative – and
write down questions and answers for
them all. Know your figures, but most
importantly understand them.
Think of everything you possibly can.”
Although Rafter didn’t take the
Dragons’ money, she did reap the
benefits of appearing on the
programme. She was seen by a Brand
Buyer from John Lewis, who loved the
idea. A few days later, Rafter was

invited to a meeting, resulting in Slinks finding their way into five
John Lewis stores, as-well as their online shop. Rafter couldn’t be
more pleased. “John Lewis is a fantastic shop to be part of. It is an
established British institution, and having Slinks stocked by them
has helped with the recognition of the brand. Both Dragons’ Den
and John Lewis have made many, many more people aware of
Slinks.”
Another advantage of the last six months is that Rafter has been
able to shift her production from Spain to India, thus bringing her
costs down and consequently increasing her sales. But she wasn’t
interested in those sales coming at a cost to her employees. Rafter
demands excellent working conditions in Slinks’ factories, and
only employs workers who are at least 18-years-old.
“Working with the right people is very important to me,” she says.
“I have been to India a couple of times – firstly to visit the factory
and be certain that the working ethos fitted in with my company,
and then for finalising designs and sampling. I get on very well
with the factory owner and I now stay with him and his family
in their home, so it's nice to get a taste of real India rather than
just staying in a hotel all the time.”
Rafter has also been tasting success and recognition over the last
twelve months, including the Exceptional Creative Award at the
British Female Inventor of the Year Awards in 2009. But perhaps
the greatest reward that Rafter has received is the fact that she is
now working full-time on Slinks; a prize that she clearly loves. In
fact, she waxes lyrical about the benefits of
finally being her own boss. “The flexibility, and
doing a variety of roles. It is constantly busy and
always varied. You never get bored of doing one
thing. It has allowed me to meet so many
different people.”
The ultimate benefit, though, would appear to
be “pride in achieving something that you have
created”, and one suspects that this will be the
driving factor in the future of Slinks.
Certainly Rafter has big ambitions. “With the
first product on the market, we are on our way
to establishing ourselves as an original, yet
commercial design company. There are more
plans for Slinks as a product and expanding it in
many ways. I am working on introducing these
into the next collection. I'd love to stock
worldwide and continue to sell successfully from
the website. I'd like to introduce more products
that are both beautiful and innovative, and have
started working on these.”
This determination to continually improve upon
a successful product is the reason that Rafter is
reaping the rewards of Slinks’ success, and if the
early story of Slinks is anything to go by, Rafter
should have no problem achieving her goals.
After all, shoes will always be her passion (“I love
them all – a pair of shoes can change your whole
look in seconds”), so there will no danger of
Rafter losing her enthusiasm for Slinks.
But it is her outlook for the company which
suggests more than anything that Rafter means
business. When she is asked what she would like
to be doing in ten years time, Rafter has it
mapped out. “Ideally, running a successful
design company which is making women's feet
sparkle all over the world – a company to be
proud of,” she says. “I'd love travel; to continue
being part of my work, and introducing design
skills from other parts of the world. I'd like to
have launched other successful products, and
still have design involvement and be developing
new products.”
She then pauses, before adding; “An office in
New York would be a bonus!”

Since the release of their first album, Up All Night, in
2004, Razorlight have been one of the most popular
bands on the planet. Their mixture of rock and roll and
catchy pop songs has brought them five UK top-ten singles –
including a number one with ‘America’ in 2006. The band
have also notched up four million album sales, and have
headlined festivals and sold out arenas all over the world.
The band’s notoriety has also been enhanced by their
flamboyant frontman, Johnny Borrell, who at times has been
the darling of the tabloid press, with his celebrity girlfriends
and self-proclamations of his ‘genius’.
But Razorlight’s adherence to the traditions of rock and roll
doesn’t stop there. In true Spinal Tap fashion, the band have
had three drummers. Up All Night featured the percussive
skills of Christian Smith Pancorvo, before he gave way to
Andy Burrows, who played on both of Razorlight’s
subsequent albums; Razorlight and Slipway Fires. He also
co-wrote the hits ‘America’ and ‘Before I Fall to Pieces’, and
was influential in helping Razorlight to break into rock’s
premier league.
So when Burrows announced that he was leaving the band
with immediate effect in March 2009, it came as quite a
shock to Borrell, bass guitarist Carl Dalemo, and lead
guitarist Björn Ågren. In the middle of a world tour, a
replacement was needed, and quickly; and it came in the form

to incorporate my ideas with the guys and work on new songs together – I
mean, that’s absolutely huge for me. So I’m really, really proud of that.”
Razorlight’s new album is being put on hold this summer, though, when they
play at Sandown Park on Wednesday 21st July. The racecourse’s ‘Music Nights’
event is now in its fifth year and incorporates an evening of racing, followed by
a concert from an internationally acclaimed artist. The course has previously
played host to such diverse acts as UB40, Madness and Girls Aloud, but
Razorlight are the first guitar band to play there. Skully recognises that it’s a
slightly unusual departure for the band, but he welcomes it. “One of the things
we like to do is to play all these different, weird events. Last year we played
in a quarry in Germany – it’s more interesting, and you try a different sort
of format.”
At first, the format of the Music Nights doesn’t appear to go hand in hand with
Razorlight’s raison d’être. An audience wearing smart casual dress and enjoying
picnics seems to be at odds with the supposed ethos of rock and roll – possibly
backed up by the fact that the other two acts performing at Sandown Park this
summer are Spandau Ballet and Westlife – but Skully is unperturbed by this.
“We can’t wait, man. Once you have gone a couple of months without doing
any gigs, you start to have withdrawal, and you’re like, ‘Aaaah, I really wanna
play’. So it’s gonna be a lot of fun – especially cos it’s gonna be a beautiful night,
it’ll be summer, we’ll just go out there and play some hits, have a blast – you
know, really enjoy it. We can’t wait for Sandown.”

But the main highlight for Skully
was the fact that – on the back of
the tour - he secured a permanent
place in the band. Originally he
was only supposed to stay until
the end of the tour in December
2009, but the musical connection
that was created on the road
proved to be too strong. Now a
fully-fledged member of
Razorlight, Skully is clearly loving
his life as a full-time member of
the group – especially now that
Razorlight are back in the studio.
“Our last gig was around
Christmas time, and we took a
little time off – and then got in a
room and just started working on
ideas and seeing how it felt,”
Skully says. “And now that we’re
making a new album, being able

such an influential figure at such
short notice was never going to
be easy. “I’ve been in bands my
whole life, but every band I’ve
ever been in, I started, so it was a
different experience to just jump
in,” Skully says. “I mean, I had
three days to learn the show and
off we went – we were on tour –
so it was like being thrown in at
the deep end, definitely.”
Such an arrangement would more
often than not have ended in
failure, but one of the first things
that is apparent about Skully
when you speak to him is his
passion for music, and …
well, for life itself. And it is this
enthusiasm that helped him to
thrive when others would have
struggled. “I went in and was just
loving playing the songs. I liked
that I had the pressure on. I was
enjoying myself, and the guys
were really nice, and everyone was
really excited and motivated to
get going – so I think we hit it off
musically and personally.”
Skully’s sudden arrival in the
middle of a world tour also
provided him with a lot of
unexpected highlights. “Oh man,
there’s been so many,” he says in
his laid back drawl. “O2 Arena
was fantastic; going to Japan was
really exciting for me. We went to
Australia, we went to Turkey, we
went all over Europe, we went all
over the UK, we did loads and

Razorlight’s 90 minute set will also be the first opportunity for
people to hear the new songs that have been written and
recorded with Skully. He predicts that people may hear some
differences. “I think whenever you change a band member,
you’re gonna get somewhat of a different result – as you could
even notice with the original drummer of Razorlight,” Skully
says. “When he left, and Andy joined, the band’s sound
changed. I think that’s just natural, because – especially when
there’s only four people in a group – each person’s input is
very important.”
This difference in approach shouldn’t be too hard for the band
to cope with, though. Throughout Razorlight’s history, their
sound has evolved, a fact that isn’t lost on their new drummer.
“Every album they’ve done – all three albums – are very unique
from one another. A lot of bands just go out there and make the
same record over and over again – they do one thing and that’s
it. With Razorlight, one of the things I really enjoy about it
creatively is that there’s no rules, there’s no limits. If we wanna
explore something that’s funky or dancey, that’s ok. If we wanna
do something that’s slow and ballad-like, then we can do that.”
But this diversity has sometimes come at a cost. When Slipway
Fires was released in November 2008, the reaction from the
press was generally negative, and while the first single from the
album, ‘Wire To Wire’, reached number five in the UK charts, the second single,
‘Hostage of Love’, failed to chart at all. No more singles were released from the
album, and rumours abounded that Razorlight were about to split up. But Skully
doesn’t feel that the negative coverage affected the band. “I think they should be
very proud of Slipway Fires because there’s some really beautiful music on that,
and yeah, maybe it didn’t produce as many hits as the second one, but that’s sort
of irrelevant.”
“I don’t think you can sit there and listen to the critics. You’ve gotta make music
that is important to you. When you make music, in a way it’s a selfish thing
because it’s your ideas, and you’re putting your heart out there, and people can
like it, hate it – they can have any number of reactions to it, and you can’t really
predict that. You can’t really pay too much attention to it because you’re not
writing for them.”
This songwriting mindset is obviously the fuel that keeps Razorlight moving
forward. “The standard has to be high – the bar is set very, very high, and
everyone wants to make something great,” Skully says. “When Johnny’s writing
lyrics and writing songs, I don’t think he’s sitting there thinking, ‘Oh man, I hope
this sells millions’. He doesn’t care – he wants to write great music.”
It’s probably just as well that Borrell has this attitude, for he remains a
controversial figure. When Andy Burrows left Razorlight, he cited Borrell as the
main reason for his departure, describing his time in the band as ‘hell’. But Skully
obviously has a lot of affection for the Carshalton lead singer.
“Johnny’s an incredibly intelligent, thoughtful person, and that
spin might not come across in the press. It’s very fashionable to
hate on him sometimes, and I don’t know why that is, but that’s
just the way it is. But he doesn’t sit there and harp on it. I don’t
think he pays any attention to it because we’re here to do our
thing – make music.”
And while this music sometimes divides critics, Razorlight are
continually feted by their peers. Some of the biggest bands in
history have asked Razorlight to support them on tour, including
Queen, The Who and The Rolling Stones. The band are also
due to support U2 in Helsinki in August, a gig that Skully is
particularly looking forward to. “It was nice to get the U2 shows.
I’ve not been in the band when they’ve supported U2 in the past,
but they already know U2. I think Johnny’s friendly with Bono
and the rest of them. I’ll be very excited to meet them.”
Because of all of their support slots, Skully doesn’t think the
band gets starstruck anymore – and while he admits that could
still happen to him, he still maintains a sense of cool about the

situation. “I suppose if
you meet one of your
personal heroes – that’s
exciting. Like, for me,
if I ever got a chance to
support Elvis Costello,
I think I might be, ‘Wow,
I’m excited’, because he’s a
real hero of mine.”
“But another one of my heroes is Dave Grohl, and we got to play with Them
Crooked Vultures at a festival over the summer – and we had a beer, and, you
know, it was cool,” he says. “I think once you’re in it, you just think ‘This is
another musician who makes great music that I’m really amazed to meet’, but I
don’t sit there and get all jumbled with my words. I just say, ‘Hey, what’s up?’”
The encounter with Grohl brings back happy memories for Skully. “My very first
concert I ever went to as a boy was Nirvana Unplugged in New York (the band’s
famous 1993 MTV performance) – and it was amazing. And I actually got to
meet him and he gave me his drumsticks. I’ll never forget it. And he was so nice
to me, and I told him I was starting to play drums and I really looked up to him,
and he sat there and talked to me for a while, and he said, ‘That’s really great. I’m
glad you appreciate what I’m doing. Stick with it, have fun with it.’”
There is no doubt that this is exactly what
Skully is doing. His enthusiasm has enabled
him to make the most of the opportunity
that Razorlight have presented him with,
and this positive outlook seems to have been
a shot in the arm for the band – at a time
when they needed it the most. The marriage
between Skully and Razorlight is still clearly
in its honeymoon period, and Skully can’t
wait for the future.
“Just being able to see the world and play
music to thousands of people wherever you
go, and they love it and they’re singing along
– I mean, that’s a special feeling,” he says.
“It’s exciting. It’s an exciting time!”

Horse racing without hats would be like Wimbledon without
strawberries. Hats and racing are simply meant to go
together. Stephen Jones, milliner to royals and rock-stars
alike, would have it no other way. “Racing, and especially any Ladies’
Day, is all about exuberance and about having fun,” says Jones. “I
think as many people go to the races for the fashion, as for the racing.
And all you have to look at is ‘My Fair Lady’ with the Ascot scene to
realise it’s always been that way.”
Though the racing fraternity might disagree, Jones does have a point.
Each year, almost as many column inches are dedicated to the
extravagant outfits and headwear of racing patrons, as to the racing
itself. This year, at the biggest racing catwalk of them all; Royal Ascot,

the event embraced its legacy as an iconic
fashion venue, with a celebrated catwalk
collaboration between Stephen Jones and
Britain’s grande dame of fashion, Vivienne
Westwood. Here, Jones exhibited his
Spring/Summer collection, before being
whisked off to Shanghai for another series of
couture shows. Jones is currently also
developing a new range of headwear for the
iconic Creative Director of Dior, John
Galliano – oh, and let’s not forget the hat
designs he is working on for an upcoming
blockbuster film.
But life hasn’t always been so busy and jet-set.
In 1976, a young Stephen Jones began
studying fashion at Saint Martins College in
London. Despite a flair for design, Jones had
one obvious shortcoming. “I couldn’t sew,” he
says simply. Not the greatest admission for a
young fashion-design hopeful. “So my
tailoring tutor sent me to Lachasse in Mayfair,
which was a very grand old fashion couture
house, to work as an intern.”
The extra holiday work turned out to be a
blessing. It was during his time at Lachasse
that Jones stumbled upon hat -making.
“One day I noticed the millinery workroom
next-door to the tailoring workroom, and it
just looked like the most fascinating place. I
asked for a transfer and literally, after my first
day in the new department, I knew that was
what I wanted to do. I was just incredibly
lucky.”
Luck is something that Jones claims would
continue to follow him throughout his early
career, although perhaps a profusion of design
talent and an outrageous originality had more
to do with it. After graduating in 1979, Jones’
acquaintance with Blitz Nightclub host Steve
Strange (a club which actively encouraged a
quirky and eccentric dress-code, and nurtured
the rise of the New Romantic movement) led
to his first big break in the fashion industry.
“Steve ran the Blitz Club at night, but during
the day he used to work as a shop assistant in a
shop called PX. It was absolutely the trendiest
shop in London,” Jones says in his soft, well
spoken way. “PX had a basement which they
weren’t using, and through Steve they asked➛

me to take it over. Within a year of
leaving college I had my own shop,
which for me I couldn’t believe; it was
just wonderful.”
At the height of the punk era, Jones’
eclectic style and love of outlandish
design were perfectly in keeping with the
time, and he counted amongst his friends
and regular clients many of the top
musical icons of the day including Boy
George, Spandau Ballet, Duran Duran
and Annie Lennox.
By the turn of the decade, Jones’ talents
had permeated a wider social sphere, and
he was a milliner in demand. He recalls of
the early 80s: “It was at this time that
I was starting to make hats for the
Princess of Wales, and others like the wife
of the Governor of the Bank of England.
My work oscillated from the elite to the
underworld, but actually it was this
mixture that was what was so fascinating
and so interesting for me.”
Jones had earned a reputation for his
dramatic style, but he learned to
restrain his exuberance when the
occasion demanded.
“A lot of the hats I made for the Princess
of Wales were actually really low key,
which I liked. They were quite discreet
hats that she wore during her private life,
like a little beret, or a simple cap, or a
small felt or something like that. It wasn’t
the big dressy stuff,” Jones recalls.
“But what was so wonderful was that
she still wore them all with such
consummate style.”
For the ensuing three decades, Jones
continued to attract commissions from
the world’s elite, growing in reputation
and influence through his collaborations
with major fashion houses and designers
from Gaultier to Galliano. Today, Jones’
light shines brighter than ever, and he
counts Marilyn Manson, Pink, Gwen
Stefani and Beyonce Knowles amongst
his recent clients.
It is perhaps the recognition of his peers
though, rather than his obvious career

success, that he most cherishes. In 2008,
Jones - whose work is now represented in
permanent collections at the Victoria &
Albert Museum, and the Louvre - was
awarded the British Fashion Council’s
prestigious ‘Outstanding Achievement in
Fashion Design’ award.
“As I was walking up to collect the award,
I turned around and I was being given a
standing ovation from all these people
who I’ve worked with all my life,” Jones
says. “That was an extraordinary feeling,
because they were all people who I really,
really respected, but I was terrified too
because I had to make a big speech!”
Jones also received an OBE in the 2010
New Year honours list in recognition of
his dedication to British fashion, but still
he feels that he has far more to give.
Today his focus is on his upcoming
collection, as well as on the orders which
have flooded his Covent Garden store in
preparation for the racing season.
I sense Jones wants to get back to work,
but before I let him go, I can’t resist
asking him for some race day outfit
advice. “I think you have to remember
that racing is a daytime event, and it’s not
a cocktail party. What’s important is that
the hat has to blend in with what you’re
wearing,” he says.
“If you were going to a cocktail party you
could have a little black dress with an
extravagant hat in a contrasting colour,
but for the daytime it is better to
coordinate your complete outfit because
then you will tend to look more graceful.”
Ultimately, Jones says, racing is all about
having fun and letting your imagination
run wild; within reason.
“I love going to the races, and I just really
love seeing everybody dressed up to the
nines. I mean we have to be so practical
in our lives, especially women, and it’s
great when they can just let rip and have
a great time!”

Every month it seems, a new
celebrity chef comes to our
screens, promising to revolutionise
the way we think about food, and
extolling the virtues of healthy eating
and home cooking. Entire television
networks are now dedicated to the
subject, while the more famous of these
culinary gurus have created entire
business empires by trading on their
names alone.
One man for whom success has come the
old-fashioned way - grafting from the age
of 14 in a French patisserie, and creating
such a stir that he was invited to become
head chef for Cecile de Rothschild in
Paris at the age of 22 - is the man
considered by many to be the godfather
of modern British dining; the great
Michel Roux.
While publishing deals
and television
appearances
have brought
him something
of a celebrity
following of late,
this is still a man
for whom a basic
passion for food, and a
striving for culinary
excellence, is the main
driving force.
“It’s a kind of love,” Roux says
of cooking. “You have to look at yourself
everyday and say, ‘Am I still there? Am I
still hungry?’, because the day you’re not
hungry anymore, then it’s time to pack it
in. It’s bad news. You must always
question yourself and push yourself a bit
further.”
In 1967, Roux moved from his native
France to the UK, to open London’s Le
Gavroche restaurant with his brother
Albert. Le Gavroche marked the
beginning of a gastronomic revolution in
the UK, introducing the best of French
cuisine to the British palate, at a time
when England’s culinary landscape could
be described as bleak at best.

With luminaries including Charlie Chaplin, Sophia
Loren and Robert Redford attending the glittering
opening night, the Roux brothers guaranteed themselves
headlines, but the hype was immediately followed by
culinary success. Le Gavroche became the first restaurant
in the country to be awarded one, then two and finally
three Michelin stars.
“We had an instant success,” Michel Roux says of Le
Gavroche, which within months of opening had earned a
reputation as ‘the’ place to eat in the capital; its tables
bursting with London’s high society.
Catering for such prestigious clientele was not
new to the Roux brothers though.
Albert had formerly acted as
private chef to the
Cazalet family

Mother), while Michel had
performed a similar role for the
Rothschild’s in Paris for the five years
preceding Le Gavroche’s opening.
“At the age of 22, I was cooking for the ‘who’s who’ of
France and England. I cooked for whoever was visiting
the Rothschild family; Greta Garbo, Marie Bell,
Pompidou, Picasso...” Roux reels off a jaw-dropping list.
“People don’t give you a job like that if you’re not
amongst the best in the world at what you do.”
In 1972, Michel Roux left Le Gavroche to open the
Waterside Inn in Bray, Berkshire. Success was again quick
to follow. The Waterside gained its first Michelin star in
1974, when the guide was initially issued. Three years
later, it was awarded a second star, and in 1985, the
restaurant gained the ultimate culinary accolade when its
‘exquisite French cuisine and matchless service’ were
awarded three Michelin stars. Remarkably, the Waterside
Inn has retained its three-star status ever since,
representing an incredible quarter-century of supreme
culinary excellence and achievement.
“It feels like a marathon, and any
marathon which goes on for 25 years is a
very long marathon!” Roux says with a
laugh. “When we were first awarded the
three stars in 1985, well, it created a lot
of excitement. It was a bit like winning
an Olympic gold medal because you
never really think it will happen.
“And every year in January [when
Michelin publishes its new list]
we hope the news will be good,
but we never really know –
there is always that
anticipation; that question
mark. But in fact if we
were blasé and were
thinking that success
was guaranteed,
then it would be
time to pack up
and get out of
the game.”
Despite his incredible
success as restaurateur and
chef, it is Roux’s nurturing of the
younger generation which he holds most
dear. The Roux Scholarship was set up
27 years ago by Michel and Albert, to
foster young cooking talent in this
country. The annual competition has
gone on to become one of the most
prestigious contests for young chefs in
the world.
“For me personally, if I have to single
one thing which I’m proud of, that
would be it,” Roux says
in his deep baritone voice, no less-
heavily accented for his forty years in the
UK. “It is essential to my wellbeing
because I feel so good to be able to help
and further young people; and for them,
it’s more than a turning point, it’s like
suddenly someone switches the light on.
“My current scholar is flying back from
the US where he was with Thomas
Keller at The French Laundry, the three-
star Michelin restaurant. [When the
scholars travel overseas] they learn the
customs, they learn the markets, they see
the ingredients, the spices, the herbs,

they see new methods, and they are like a
sponge; they absorb so much.”
It is a glowing testament to the success of
the project – which offers the victor a
chance to cook and train under the
supervision of a leading three-star
Michelin chef – that six or seven of the
scholarship’s previous winners now hold
Michelin stars in their own right.
But it is Michel’s own son Alain who is
perhaps his greatest and proudest success
story. Undaunted by the successes of his
father and uncle, Alain was determined
to pursue a career as a chef, and spent
eight years working in top restaurants in
France before he was invited to join the
team at Waterside Inn as demi-chef de
partie, aged 23. Now, aged 42, he has
taken up the reins from his father as chef
patron at Waterside Inn.
Although it must have been difficult to
let go, Roux Snr concedes that Waterside
Inn is now Alain’s ship to sail.
Roux remains executive director of the
restaurant though, and following a move
to Switzerland in 2008, now takes on an
overseeing, ambassadorial role. “When I
travel, I like to tell people: ‘You must go
and see my son, and enjoy a lunch or
dinner there – go and meet him and visit
his kitchen...’ and so on,” says Roux.
However, Roux Snr returned to the
kitchens of Berkshire this year, when he
teamed up with Alain to produce a
stunning summer menu for guests of the
Panoramic Restaurant at Royal Ascot.

It was an opportunity he relished, particularly because
the event is so local to the Waterside Inn. For the past 35
years, he has regularly popped down the road to enjoy a
flutter on the horses.
So did he get an opportunity to enjoy the event this year,
or was he just toiling in the kitchen?
“Well firstly, we were there to look after the guests,” Roux
says. “But it was Alain’s show really; he brought his sous-
chef and key people, so when I saw that the show was
moving nicely, then I took a break to enjoy racing.”
‘What, and left Alain alone to cope with the stress of the
kitchen?’ I ask.
“Absolutely, yes!” Roux says with a deep laugh. “The way
it should be!”
Finally, I ask the greatest chef of them all
for a stand-out moment in his
distinguished 55 year career.
Cooking for Picasso? Spearheading the
gastronomic revolution of the UK?
“I think it was when the son of Her
Majesty the Queen asked me to cook for
her 70th birthday. That was, well,
magnifique!” Roux says with relish.
“And since then, I have cooked for her
on quite a few occasions, and it’s never
too many. She’s a great lady, and in my
opinion one of the... well, it’s what
Britain stands for.”
And as for the future? “The young are
top of my list,” says Roux. “I’m often
asked to give lectures in universities
around the world. I’m also a prolific
writer and I love writing, and I can write
and do new dishes in my house in
Switzerland, or in the south of France.
“And I have to say, when I’m by myself,
I love nothing more than just going to
the market and buying a few things,
then going back home and single-
handedly just knocking off a dish with
two or three or four fresh ingredients.
Simple and delicious!”

For over 180 years, Cowes Week has been an
integral part of the British sporting and social
calendar. The annual sailing gala takes place in
the testing Solent waters off the Isle of Wight,
and is routinely held between the end of Glorious
Goodwood and the start of the grouse shooting season –
in other words, the week that crisscrosses July and
August. This has been the case since 1826, with only the
two World Wars managing to blow this iconic event off-
course, enabling Cowes Week to claim the title of the
largest and longest-running regatta in the world.
Cowes is therefore seen as a traditional and quintessential
British event, although according to Michelle Warner,Cream’s Andy Evans explores th
e British
institution that is
Cowes Week.

constantly moving with the times.
“While the early August dates still remain, Cowes Week
has evolved enormously since that first regatta, when just
seven boats lined up on the start line,” she says.
“The event organisers work hard to protect the rich
heritage of the event, whilst ensuring its relevance to
today’s audience; it is this delicate balancing act that
helps ensure the success of Cowes Week.”
Nowhere are these changes more apparent than on the
water. When Cowes Week first began, it was at the
behest of King George IV, who had an interest in
yachting. The event therefore attracted royalty and the
nobility, who watched races involving naval warships,
square riggers and other historic vessels; and the festival
soon became a three day regatta. Following World War
II, the world of sailing – and particularly yachting –
became much broader in its appeal. No longer was
Cowes Week the domain of the privileged few; now,
anybody could be a part of the event. Warner believes
that this attitude is at the heart of the regatta.
“Fundamental to Cowes Week’s strategy is ensuring an
all-inclusive approach – anyone can come and take part,”
Warner says.
This inclusivity has led to the gala now evolving into an
eight day racing event, during which more than 1000
boats take place in some 320 races. The competitors are
in their thousands, and range from weekend sailors to
Olympic champions. The event also includes disabled as-
well as able-bodied competitors – and as sailing is one of
the few sports where men and women compete against
each other, a third of Cowes’ participants are female.
The boats used are just as varied as the crews who race
them. From super yachts to classic Bembridge Redwings,
the Solent water is a unique and beautiful sight during
the regatta. As Warner remarks, “there is a diverse mix of
boat types. From the perspective of the participants,
Cowes Week offers exciting and challenging racing.”
And of course, excitement for those on the water means
thrills for those on the shoreline. 100,000 spectators
attend Cowes Week every year, and Warner believes that
this is partly due to the fact that the crowds can get so
close to the action. “From a spectator’s point of view,
one of the great things about Cowes Week is that much
of the racing can be enjoyed from the shore – and there
are also now a number of fantastic opportunities to go
afloat to watch the racing,” she says.
The races all start from the Royal Yacht Squadron, and
the surrounding area provides excellent viewing
opportunities for spectators, with the blasting of the
cannons which start the races adding to the drama.
The regatta provides an awe-inspiring experience,
with races starting every five minutes. “The sheer scale
creates a huge buzz,” says Warner, “and the festival
atmosphere ashore tops it all off!”
Ah, yes! The festival atmosphere ... the Cowes spectators
certainly know how to enjoy themselves, but that’s
hardly surprising. Cowes Week is famous for putting on
a range of daily open-air entertainment for its visitors,
which lasts into the early hours of the morning. From
busy restaurants and pubs that overflow onto the main
high street, to live music and specially-constructed
cocktail marquees – the onshore atmosphere is electric.

The small town of Cowes certainly
becomes a hive of social activity for
those eight days.
But when an event like Cowes
incorporates such contemporary
elements, there is always the risk of
alienating some of its more
traditional supporters. However,
Warner insists that this
modernisation is justified.
“With any developments and
growth, there will always be people
who fondly reminisce on how things
used to be,” she says. “But all the
measures we take each year are an
effort to improve things, based on
the feedback that we receive.
The growth of the event over time
is testament to this approach.”
Cowes certainly hasn’t been afraid to
innovate in the past. For the last 150
years, the regatta has finished on the
Friday with a huge firework display,
launched from barges on the Solent.
This extravaganza is seen as a
wonderful highlight of the week,
and one of Cowes’ great traditions –
but one can imagine the opposition
when the displays first started to take
place. The gala also took on a
sponsor, Skandia, in the 1990s,
which helped Cowes Week to
become more outward-reaching.
Modernisation has therefore always
been part of Cowes’ history.
Sometimes, such changes have
literally saved the event.
Immediately after World War II,
the three day regatta was increased
to accommodate events organised
by sailing clubs in Cowes and its
surrounding areas. By 1953,
the regatta had turned into a nine
day chaotic marathon. Each club ran
its own event to its own sailing
instructions and racing marks, and
there were different start and finish
lines for each club. “Many classes
were given the same courses – all of
which were taken from a book of
around 500 options,” says Warner.
“This often led to congestion at
marks, boring long legs and many
classes simply running out of time.”
This format rapidly became a mess,
and something needed to change.
So, in 1964 – at the request of the
Admiral of the Royal Yacht
Squadron, Prince Philip – the Cowes
Combined Clubs was founded to
run Cowes Week. The club was
made up of the seven sailing clubs
that had previously put on events –
resulting in one set of sailing
instructions and racing marks for
the whole week. It was also because
of this arrangement that the Royal
Yacht Squadron became the
universal starting point.
But this doesn’t mean that obstacles
are a thing of the past. The growth
of Cowes Week has led to some
additional problems for Warner and
the organisational team. “Probably the biggest logistical
feat is in dealing with the needs and desires of 1,000
boats. Course setting for the 40 different classes is
particularly hard, especially in the Solent with its
complex sea-breeze patterns.”
These difficulties can catch out even the most
experienced competitors. Last year, the double Olympic
gold medallist Shirley Robertson was involved in an
accident when her catamaran collided with a spectator
boat that had drifted onto the course – hospitalising one
of the spectators on board. But, as Warner explains,
Cowes Week is planning around these eventualities.
“In recent years, we have had the benefit of some
sophisticated course setting software to help the race
officers in their tasks. This has gradually evolved,
along with its supporting infrastructure. Now, our
courses are normally challenging, exciting and fun
for all the competitors.”

There are some things that you can’t plan for though.
The 2009 event was hampered by a lack of wind on the
Solent, and ten per cent of the competing boats had to
retire over the course of the week. The unusually calm
conditions also adversely affected the Artemis Challenge;
a race that pairs solo round-the-world skippers with
celebrity crew members on board Open 60 high-
performance boats (the ‘Formula 1’ vessels of the sailing
world). Wind speeds struggled to get out of single
figures, and luminaries such as Zara Phillips, Mike
Tindall and Sir Robin Knox Johnston were stranded in
the lifeless waters for nearly seven hours before the race
was abandoned.
However, the Artemis Challenge is still one of the most
eagerly-awaited races in the Cowes Week calendar. The
event started in 2008, and has attracted such names as
Davina McCall, Alastair Campbell and Dame Ellen

MacArthur – adding to the glamour
of Cowes Week and drawing in huge
crowds. But Warner believes that
people are as interested in the
round-the-world skippers as they are
in the celebrities on board. “Round-
the-world sailing is easy to follow
and understand. In addition, you
have a strong human interest
element and the personality of the
sailor can be built with the public, so
that they feel engaged in the
experiences of the sailor.” Warner
feels it is this element of the race
that truly intrigues spectators. “A
round-the-world race is something
that few of us will ever even consider
doing, and therefore we are curious
to understand what motivates and
drives someone to do this – further
feeding our curiosity.”
But for all of these innovations,
Cowes Week remains an established
and essential part of British life. The
mixture of competitive sailing,
entertainment and glamour has
always been a part of the event’s
allure – and no doubt always will be.
And Warner is confident that the
world’s most iconic regatta will
continue to broaden its appeal, while
maintaining its heritage. “Cowes
Week will continue to develop and
evolve through listening to, and
working with, the event’s
participating sailors, and many
thousands of spectators – both
onsite and online.”
“In addition, Cowes Week will
continue to provide a platform for
the promotion of sailing to a non-
sailing audience through the media
attention the event receives, and by
engaging with non-sailing visitors to
Cowes Week. There are some
exciting times ahead.”

Pondering the notion of her ideal
summer holiday, one may be
forgiven for thinking that
successful entrepreneur and

might be a well deserved rest. However
rather than the solitude of an isolated
stretch of beach or a therapeutic spa
treatment, Mich is adamant in her
response; “At home with my boys.
Cycling, playing Badminton and drinking
white wine spritzers.”
Given the intense schedule Mich has to
adhere to in order to remain the most
gifted and innovative cake maker in the
business, the source of her incredible and
boundless energy is every bit as
awe-inspiring as the gastronomic
creations she conjures up at the Little
Venice Cake Company.
So how exactly does Mich manage to
balance family life with her successful
business? “I’m immensely organised,
I have lists coming out of my ears!”
A multitude of lists is something of an
occupational hazard with Mich’s bespoke
cake making. While mere mortals are
tasked with following simple recipes,
Mich has to not only bake the perfect
cake but contend with a list of decoration
requirements that would make most
people’s heads spin. Recalling one of her
more challenging requests she remembers;
“It was a white chocolate helter skelter
creation with models of the Pink Panther
scaling the cake. There was a model of
Inspector Clouseau (Peter Sellers) on top

complete with mac, moustache and a spy
glass and we scattered the cake table with
Swarovski crystals.”
Producing such elaborate masterpieces has seen
Mich receive praise from an illustrious range of
high profile clients, including wowing certain
figures renown for being fierce critics where food is
concerned. “We made Gordon Ramsay’s 40th
Birthday cake – a chocolate creation with gilded
Venetian masks all made from chocolate,”
prompting him to say “Mich is the Bentley of
Cake Makers.” Other clients have included Sir Paul
McCartney, David Beckham, Pierce Brosnon,
and even royalty. “We made a cake for Her Majesty
the Queen’s Diamond wedding anniversary.
We took it to the palace as a gift for the Queen
who displayed and served it at a private Royal
Family lunch.”
Understandably, given the status of some of Mich’s
clientele, certain events require the expert planning
of a military operation and go far beyond the making of the cake.
She explains “Many high profile events are covered by celebrity
magazines so we need to adhere to their requirements. We do have
to sign confidentiality agreements – sometimes in several different
languages (if the event is held abroad) and ensure no images or details
of the cake leak to the press.”
Alongside her elite team of patissiers, chocolatiers and sugarcrafters,
Mich and her team at the Little Venice Cake Company are seemingly
capable of any challenge, including emergency rescue operations.
“We had a bride and groom call in distress just a few weeks ago the
day before their wedding. The bride’s Granny had baked a cake and
the couple had sourced another company to decorate the cake. It was
shocking and the bride was in tears – literally. They delivered the cake
to us which we stripped, recovered, decorated, delivered to the
country venue the following day and assembled it in front of the
guests as they were arriving. They were so happy!”
Before she was rescuing them professionally, it was in fact a wedding
cake that brought Mich’s natural genius to light. “It was while I was
still at school that a lecturer asked me to decorate her wedding cake.
I had entered and won a cookery competition but had never

attempted anything so specific. I attended a four day
course to learn the basics, discovered I really enjoyed
and had a talent for decorating, and went on to
decorate her cake. They celebrated their 20th
anniversary the night of my second book launch, and
had kept the sugar flowers I made for their wedding
cake in a glass case. They brought them with them on
the night!”
The intricate decoration applied to all of the
creations of Mich and her team are certainly worthy
of being cherished in a glass case for decades,
and understandably take intensive work and patience
to finish. “Typically we work on our cakes for 1-2
weeks depending on the level of intricacy – whether
hand piped, hand painted or hand moulded. All the
cakes are baked fresh so we only have a few days to
bring everything together to ensure the cakes remain
fresh – we have to do a lot of preparation and
late nights!”
As true works of culinary art, the incredible variety of
cakes that the Couture Cake Queen has produced is
nothing short of astounding and her imagination
appears to be limitless. “I get inspiration from fashion,
nature, interior design, vintage exhibitions, -
inspiration is easy – it is harder to find the hours in
the day to realise all the dreams!”
Exhibiting at the recent ‘Spirit of Summer Fair’ in
Olympia, London, Mich was happy to share a slice
of her own magic with visitors, by offering cake
decorating demonstrations and master classes.
However Mich was equally excited about the
opportunity to see other exhibitions, and feed her
boundless imagination. “ I like to peruse events with
an open mind and be inspired and enjoy thinking how
I can translate anything into a cake!” she says.
Despite her undeniable enthusiasm for her work, with
summer approaching and the possibility of a well
deserved break at home with her family, Mich is quick
to quell visions of elaborately catered picnics, keeping
her business and family life completely separate.
“I enjoy alfresco dining – but only in the garden.
When I’m with my children my time is theirs. I tend
to make simple salads, pasta and ciabatta indoors and
then adjourn outdoors.” But should Mich succumb
and decide to indulge in one of her own creations there
is little uncertainty over which it would be; “Our
brand new Chocolate truffle torte layered with subtle
perfumed rose buttercream – sublime!”
