What the #^!& was I thinking? My wife and I are too old for this. They are up at odd hours, demand constant supervision, can’t leave them alone, can’t go anywhere, they teethe, always hun-gry, they poop all the time, they throw up every-where, yet they are worth all the work. Yes, that’s right, we have a new blonde addition to our family. No, I am not talking about a baby,

I’m talking about a new puppy. Do you know why babies and puppies are so darn cute? So you don’t kill them. That must be God’s plan. Our newest Golden Retriever is Savvy, short for Sauvignon Blanc, or savage. She is absolutely adorable and loves people. She is super smart too, too smart if you ask me. She is starting to follow in the footsteps of her five older predecessors and loves saying hi to our guests in the afternoon. I apologize in advance if she jumps on you, kisses your face, or begs for your food, she is still in training. If you want to enhance and brighten your day, just play with a Golden Retriever puppy. Their love of life is contagious. Go on, Celebrate. ~Bill Wilson

I occasionally get reminders from the gentle folks in the Marketing Department about my often tardy articles for this newsletter, usually in

the form of an email, occasionally tied to a brick. This most recent reminder has, as always, suggestions for topics includ-ing: Valentine’s Day, Presidents Day, St Patrick’s Day and Easter. So not having time to choose, I will write about all of them. I must confess to inspiration from a beautifully written book I enjoyed over the holidays, Braiding Sweetgrass: Indigenous Wisdom, Scientific Knowledge and the Teachings of Plants, By Robin Wall Kimmere. This is a rare work of excellent pros, indigenous wisdom and scientific insight masterfully woven into a paradigm shifting thought provoking story. Kimmere, a Citizen of the Potawatomi Nation of the Western Great Lakes region, expounds on the native perspective that we receive the bounty of this earth as a gift from fellow members of a family not as rights taken from property owned. With each harvest it must be asked what can we give back in return for our gifts? And in our giving, we can assure continued prosperity for all members of our community from microbe to mathematician. Sustainability is a step in the right direction, but it begs the question: sustaining what? Are we sustaining an industrialized agricultural system that is altering the climate, polluting our aquafers and

driving ever increasingly worse health statistics despite advances in medicine or sustaining a world of constant regeneration and improved quality of life for all? emphasis on “all”. This is the common element of these symbols of seasonal rebirth. Valentine’s Day - Romance and love, the ultimate expression of caring for another’s well-being, Presidents Day with the idealized optimistic concept of public service to others above one’s own self-interest, St. Patrick who saw the Holy Trinity in the trifoliate clover and Easter - the recognition of sacrifice as the precursor to rebirth and regeneration. Not to mention the Easter Bunny who is also pretty generous. “Caring is not abstract, the circle of ecological compassion we feel is enlarged by direct experience of the living world and shrunken by its lack… in learning reciprocity the hands lead the heart” - Robin Wall Kimmere, Braiding Sweetgrass This is why we love to have you experience the vineyard in any season. The stewardship we take so seriously ultimately expresses as an explosion of laughter from an overdue outing with friends as a gentle reminder of what is important and avoids the brick of not expressing the ultimate gift of gratitude for all we have. F r o m S o u l t o S o i l ~ Greg Pennyroyal -Vineyard Manager WHAT DO YOU KNOW ABOUT WINE? “The more you know about wine, the more fun it is” is an axiom I have experienced and seen others experience. It is like traveling; the more you know about a destination, the people, and its history, the more you enjoy the experience. When I first got into wine after we started the business (heck, I thought if this is going to be our family business then why not dive in and learn all I can) I knew zilch about wine. Nada. Nothing. I think I knew Chardonnay and Zinfandel were grape names, but that was about it. So I started reading wine books. I tried to visit as many wineries as possible in California including Napa, Sonoma, Paso Robles, Santa Barbara, etc. I took experiential wine classes throughout So Cal. On top of this, I was fortunate to host six wine cruises in Europe with Gerry, Rosie and my wife, Deanna. There is nothing that can match actually visiting a wine region and soaking it all in. I also learned a ton picking the brains of our winemaker Gus Viz-girda, and our vineyard manager, Greg Pennyroyal. Then the three of us started teaching some experiential wine classes at the winery

which involved learning about wine areas, wine and food pairing, and wine making. I learned a ton as I taught the classes. The feedback we received from members was great. In 2018 we want to continue our “wine experiences” and wine education at Wilson Creek. We plan on doing smaller, more experiential classes, mainly in the Upper Room. Some classes we have in mind include: “Aroma Experience” where we will taste the wines and smell the aromas, “Wine and Dessert experience” where we pair wines and

dessert wines with desserts, “Sparkling Mixology Experience” where we creative fun sparkling wine cocktails, and “VIP vineyard and winery tour” where you can tour the vineyards (while tasting) and then finish with some red wines in the Upper Room. We

are also considering: an oak experience, wine and chocolate, and maybe a wine blending experience. What kind of wine experiences do you want to do at the winery? What do you want to learn about? Just email [email protected] and put “wine experiences” in the subject line and share your ideas. If we choose your experience, we will comp 4 tickets to that experience for you! So, let’s learn together and have

even more fun experiencing wines.

Executive Chef P r e s e n t s

IRISH POTATO PIE1 sheet frozen puff pastry, thawed

4 tablespoons butter

7 thick slices of bacon, chopped

5 potatoes (4 large), peeled and sliced thin

1 onion, peeled and sliced thin

1 tablespoon fresh dill

1/2 cup heavy cream

Salt and pepper

Chive for garnish

Preheat oven to 350° F. Place the thawed puff pastry in a 8-9 inch tart pan and crimp the edges. Remove the excess dough and piece it along the rim if needed to make the rim even in some places. Refrigerate the crust until ready to fill.

Place the butter and bacon in a large skillet over medium-high heat. Sauté until the bacon is crispy then toss in the onions, followed by the potatoes and dill. Season with 1/2 teaspoon salt and 1/4 teaspoon ground pepper. Gently stir 3-5 minutes,to mix the onions and potatoes and coat in bacon grease. (The potatoes don’t need to be cooked through.) Then spoon the mixture into the crust and drizzle with heavy cream.

Bake on the low rack in the oven for 35-45 minutes, until the potatoes are fork-tender and the crust is golden. Rest for 10 minutes, then sprinkle with chopped chive and cut.
