TASTING NoTeS:After many years of hearing creative suggestions of how ouraward winning Sparkling Almond has been mixed with various fruit juices, we took that to heart and created our own version of the famous orange Mimosa. Based on the award winning “oH MY GoSH” Almond Champagne, the orange Mimosa is a sparkling citrus delight that capturesthe essence of the popular cocktail. Naturally fermented, withpure almond and orange flavor added. A unique SparklingWine that is appreciated by Champagne lovers. Yet, thosewho do not normally like Champagne find the orange Mimosa approachable and enjoyable.

CUISINe PAIRING SUGGeSTIoNS: Pairs well with crusted seafood with basil, garlic and oranges,duck confit or roast duck, beef ribs or short ribs with orange-chipotle BBQ sauce. Serve with chocolate ganache orwhite chocolate. Goes wonderfully with hot tubs, romanticdinners, picnics, and warm fireplaces.

In 1995, retired Gerry & Rosie Wilson were planning a move toSolvang to be closer to their daughter when their son Bill asked themto move to Southern California and open a winery. Today known as the “Home of the famous Almond Champagne,”the winery has garnered numerous prestigious international wineawards, and their production has increased to approximately 50,000cases per year. e family is proud that Wilson Creek is unofficiallythe winery of many U.S. Navy ships, including eight aircraft carriers.
