ew World and Old World wine classi-

fications have always been a little bit at

odds with one another. In France, for

example, one doesnt buy a bottle of Pinot

Noir, one buys a bottle of Burgundy. Euro-

pean winemakers have always put an

emphasis on terroir, soil and land, not on

grape variety. New World winemakers have

made the grape varietal king and so buying

wines from either Old or New World

purveyors has become more of an education

    than an exercise in choice.

Enter Bion Rice, whose family wine-

making foundations include SunstoneWinery in Santa Ynez, and who decided that

while he learned winemaking in the New

World, it was the Old World idea of blending

and cuvee winemaking that intrigued him.

The longer I spent in the winery learning the

craft and science of winemaking, the more

interested I became in the art of blending

wine. I found that blending really appealed to

my senses and was more creative. Turning

from his roots at Sunstone to the Old World

art of blending wines, Rice began Artiste

Winery and Studio in downtown Santa Ynez.

Artiste is not just another winery, though

as is evinced by Rices dedication to cuvee

blending rather than a focus on varietals.

Artiste allows me to focus solely on quality,

    without being ultimately concerned with

    designating single-vineyards and political

appellations, or staying vintage and varietal

on the label, he says. Still, that wasnt the

    entire basis for his focus.

Working together with artists, Rice devel-

oped, not only a unique winemaking facility,

but an artists studio as well. Rice built a

winery dedicated to using the highest qualitygrapes to produce truly singular wines from

vineyards all over the state. He is, in essence,

using California as his pallet to create exotic

tastes for your palate. Its a synergy borne of

the artistry of winemaking and thus, Artistes

    name.

The winerys showcase of local and world-

renowned artists at the facility showing their

work is the lynchpin in this unique wine

studio. This month, Artiste will host

paintings of Craig Nelson an artist known

his rich, lush oil paintings, Nelson i

favorite of many collectors including Jam

Garner, Neil Simon, The Toyota Corporat

and many others. His work will be displa

at Artiste for all to see.

But it doesnt stop with seeing other art

work at Artiste. In the Santa Ynez tas

studio, prepare to explore your own arti

side as a public canvas is on display for e

customer to paint, draw or express their o

    creativity while tasting premium Califor

cuvees. Thats why we chose a salon set

for our Tasting Studio, where visitors m

express themselves and share their opiniwith others, says Rice. In museums

galleries, visitors are expected to keep qu

and to themselves. At Artiste, howev

customers are encouraged to express not o

their own creativity, but their opinions

thoughts about the wines theyre drinking

hope Artiste opens peoples minds ab

blends and helps them to trust and share t

own impressions, Rice adds. At Artiste,

subjective is celebrated, talked about and shared.

The studio itself is a sort of monument to the 1870s impressionist

art movement in France. The studio is designed to look like the Hotely

Baudy in Giverny, France where the impressionist movement is

thought to have begun. Its location in Santa Ynez, itself a unique fron-

tier town that still retains a kind of old world charm, allows Artiste to

stand out from other tasting rooms by drawing attention not to vine-

yards, but to a town setting and a creative and artistic setting.

Each release from Artiste includes a release from one of its many

artists on the label and is accompanied by a food pairing and art show

featuring those very paintings and a discussion with the artist as well

as autographed bottles. The synergy of art and wine comes full circle

when the inspiration within the bottle becomes the same inspiration

outside the bottle, on its label.

Rices unique blends, themselves an homage to Old World wine

blending traditions have given birth to beautifully crafted wines such

as Toretta. With a base of the Italian varietal, Nebbiolo, Rice blends in

Merlot, Cabernet Franc and a small bit of Barbera. The Bordeaux

combine with the Cal-Itals and the result is now an Artiste library

wine.Artiste goes where few other wineries have chosen to go, directly

into the art of winemaking. But rather than make that art inaccessible

and out of touch, Bion Rice, and the rest of the Artiste crew, have

brought the artists and the winemakers right out in front for all to see.

Customers can even sit in on Rices blending sessions and talk about

the choices he makes while he makes them. In short, Artiste brings its

art and its wine to the people.

Artiste is located at 3569 Sagunto Street in Santa Ynez. They are

    open from 11 a.m. to 5 p.m. daily.

On Saturday, December 1st, Artiste welcomes Sonoma County

Artist Craig Nelson. Join Artiste in celebrating the opening of his

    by Dave Wilcox

ttention to detail comes with the territory

of a pharmacist. Filling a prescriptionalmost correctly just doesnt cut it.

Joe Rosilez brings that same precision and

lofty standards to his winemaking for J. Paul

    Rosilez Winery in Paso Robles.

    Almost just isnt good enough.

Im probably the pickiest guy making

wine, J. Paul said during a brief break from

his job as pharmacist. Besides the chemistry

background a pharmacist brings to the art of

making wine, Rosilez said that being a stickler

for details helps him as a winemaker.

Everything has to be done just right, hesaid. Im making sure that when the wine gets

into the bottle, its exactly what it needs to be.

    J. Paul produces an array of wines using

fruit sourced primarily from Herder Vineyards

near Creston. The vineyards, southeast of the

    J. Paul Rosilez winery and tasting room,

    provides the winemaker with Chardonnay,

    Viognier, Syrah, Zinfandel, Petite Syrah,

    Merlot and Cabernet Sauvignon.

The winerys 2001 Pinot Noir from the

Gold Coast Farms vineyard in the Santa Maria

Valley earned a gold medal at the OrangeCounty Fair.

    Besides the 100-percent varietal releases,

    J. Paul also produces a red blend combining

Sangiovese and Cabernet Sauvignon that is

bottled under the label Apothecary. Also

available is a dessert-style wine using Semillon

and Sauvignon Blanc called Katash a

blending of the names of his two daughters,Katelyn, 3, and Ashley, 5.

That is their college fund, J. Paul said of

    the sales of Katash.

    J. Paul and his wife, Whitney, are expecting

their third child, which promises to make

their lives even busier if thats possible.

Its crazy, summed up J. Paul.

Just how tight is J. Pauls schedule?

Well, the interview for this article occurred

in a tiny waiting room just outside the phar-

macy where he works. He admits he doesnt

need much sleep maybe four hours a night.Thats fortunate, since J. Paul said he

performs most of his winemaking between 10

p.m. and 2 a.m. Seems like Midnight Cellars

might have been an appropriate name.

So, how did the pharmacist become a

winemaker? In a sense, J. Paul married into the

business. Not that his wife came from a family

of winemakers. But it was Whitney who intro-

duced J. Paul to wine appreciation. Before they

married, the couple spent a lot of time touring

Napa Valley wineries and, ultimately, held

their wedding at Chimney Rock Winery. As a wedding present, Whitney presented

her new husband with a de-stemmer and wine

press. The familys veterinarian gave the couple

five tons of grapes and J. Paul embarked on a

    winemaking career.

The venture began in Lodi, where J. Pauls

family raised livestock. In the first year, J. Paul

produced five barrels. He received help from

Adam LaZarre of Monterey Countys Hahn

    Estates Winery.

When the family decided to move south,

they initially looked in Santa Ynez. But thenthey found a 40-acre parcel east of Paso Robles

    and built a 5,000-square-foot winery and a

tasting room on the property. J. Paul said they

pressed their first wine there this year.

Were a family winery, said J. Paul, noting

that his mother typically staffs the tasting room

while he works at the pharmacy and his wife,

who was a pharmacist herself until two years

    ago, raises the children.

    J. Paul Rosilez produces about 3,000 cases

annually, said J. Paul, with most of the sa

coming through the tasting room and w

club. The winery did land a contract to sup

Santa Barbaras exclusive Bacara Resort with

    Chardonnay.

    J. Paul said his winemaking style is one t

    emphasizes producing approachable, fo

friendly wines that arent overly extracted.

makes textured wines with softened edg

Reds are aged between 18 and 24 mont

then kept in the bottle for a year before they

    released.

Quality is always the biggest issue,

said. If a wine isnt up to standards, we wo

    force it into the bottle.

The payoff for the long hours, said J. Pa

is that people enjoy his efforts.

The best thing I get is when people co

into the pharmacy and compliment my win

he said. It doesnt take a lot. If theyre enjoy

what youre doing, then you do, too.

The J. Paul Rosilez Winery tasting room

located at 4889 Dry Creek Road at the intsection of Highway 46 East and Jardine Ro

The adobe-style building is on the left. Up

eight wines are generally poured each d

including two library wines. The tasting ro

is open Thursday through Monday from

a.m. to 6 p.m. Be sure to visit bef

December 1 for an exhibit featuring the art

Kevin Sweeney. Call (805) 226-0550 for ad

In the wine trade, the term

    cult is usually associated with

rare, pricy wines that are bought

    and sold at auction, sometimes

    changing hands several times

    before someone realizes theyre

    meant to be consumed rather

than traded. At the other end of

    the spectrum is Beaujolais

Nouveau, a wine and an annual

    harvest celebration started in

    France centuries ago that

continues today as well as in

other countries. This cult is all

about enjoying the first wine of

the vintage with good friends andhearty food on the third

    Thursday of each November.

    In honor of this practice,

    Adelaida Cellars presents its

    Annual Beaujolais Celebration

and Fall Pickup Party at 6 p.m.,

    Friday, November 16, in the

Barrel Room of its west side Paso

    Robles facility.

    Chef extraordinaire Claude

    Chazalon will be serving tradi-

tional coq au vin (chicken with

wine) for up to 120 guests,

    including wine club members

wishing to pick up their fall ship-

ments. The cost is $30 per

    person and is complimentary to

    all wine club members.

    Beaujolais Nouveau is made

    from the Gamay Beaujolais grape,

and unlike most red wines, it is

    bottled without barrel aging prior

to release. The wine is extremelyrare in California and it is

    believed that Adelaida Cellars is

    its only Paso Robles producer.

Our goal is to capture the

    exuberant personality of the

    Gamay grape, said winemaker

    Terry Culton. This aromatic dry

red wine is meant for immediate

    gratification and consumption.

    Fruit for Adelaidas Beaujolais

    Nouveau was harvested August

29 at the winerys HMR Estate

    Vineyard. One acre of Gamay

    Beaujolais was planted in 1964

on what was then called Hoffman

Mountain Ranch. The historicvineyard also boasts the oldest

Pinot Noir vines on the South

    Central Coast.

    Reservations can by made

    by calling 1-800-676-1232 or

    online at www.adelaida.com.

    Established in 1981, Adelaida

    Cellars is a family-owned and

    operated vineyard and winery

situated 16 miles from the Pacific

Ocean at 1,800 feet of elevation

in the Santa Lucia Mountains. Its

    highly acclaimed Pinot Noir,

    Cabernet Sauvignon, Rhne vari-

    etals and Zinfandel originate in

    two principal vineyards (HMR

    and Viking) that are recognized

    for their chalky mountain soils,

    temperate climates and long

    growing seasons. The winery

    offers many interactive functions

throughout the year: an invitingtasting room, educational semi-

rroyo Robles is certainly a family-run enterprise.

Bob and Tanis Shore, along with their children,

Brianna and Jason, started making wine in 1998,

sharing equipment with three other wineries in a

converted apple barn in See Canyon near Avila

    Beach.

Bob is the winemaker, with help from assistant

    winemaker Mauricio Marchant, while Brianna

handles the tasting room and marketing, and Jason

oversees the wine club and technical support.

Bob Shore spent 30 years as a petroleum engi-

neer after graduating from Stanford University, then

decided he wanted to be a farmer. The family

initially grew stone fruit, table grapes and cotton

and wheat in the San Joaquin Valley, said Brianna.

Ultimately, the family decided to get into the wine

    making business.

Their wine press has moved three times, buttheyve settled successfully in Paso Robles, where

they are planning to open a winery sometime in

2008 on the 60-acre vineyard the Shores own off of

San Marcos Road. Twenty-four acres of the vineyard

are planted, much of it to Syrah, which is the heart

of the Arroyo Robles Rhne-oriented program.

Not that the winery is a one-note operation.

Arroyo Robles produces an impressive array of vari-

    etals, including Chardonnay, Viognier, Cabernet

Sauvignon, Zinfandel, Grenache, Petite Sirah and

    Tempranillo. Additionally, they produce

Mourvedre Rose! and a Syrah Rose!, along wit

pair of sparkling wines and a trio of varietal Por

The Arroyo Robles 2005 Chardonnay, using fr

from Monterey County, captured a gold meda

    the 2006 Mid-State Fair.

Set to be released this fall is a 2005 Tempran

and a 2005 blend bottled under the label Li

Star, featuring Tempranillo, Syrah, Petite Sirah a

    a splash of Merlot.

With the opening of their handsome downto

tasting room in March 2006 across from P

Robles historic City Park, said Brianna Shore,

winery is becoming a well-known piece of

    regions booming reputation.

With this location, she said, things have j

    skyrocketed.

Arroyo Robles currently produces about 3,

cases annually, said Shore, but plans are to incre

that number to 5,000.Shore also said distribution soon will beco

more widespread. Up to now, however, dema

through Arroyo Robles wine club and at the tast

room is often threatening to overwhelm supply.

The Arroyo Robles tasting room is at 739 12

St., at the corner of 12th and Park streets in

historic Mastagni Building, and is open daily fr

Just a few years ago women wine-

makers were a novelty. Only a handful

of persistent and talented females were

able to push their way to the top in avery competitive field. More and more

though, women are not only at the

helm of some very prestigious wine

    operations, they are also garnering

their share of accolades and awards.

Patricia Bello of B&E Vineyards is a

perfect example of the creative spirit

that epitomized the women of the vine.

Patricia did not come to her calling

in the usual fashion. She and her husband, Jerry began by planting

grapes and selling them to local vintners. Patricia, a cutting horse

trainer and breeder left the farming duties to Jerry. The vineyardsprovided her with a marvelous view from her hilltop home and she

came to love their brilliant displays in the fall and spring, but wine-

making was not something she even considered. Along the way

though, she developed an expensive habit. I love a good bottle of

wine but unfortunately I seem to particularly like the ones that cost a

hundred dollars or more. Thats why I had to start making my own!

My goal was to produce a really great wine that was also affordable.

With the assistance of other local winemakers, Patricia honed her

craft and became a truly exceptional winemaker, overseeing the

production of nearly 4000 cases of Cabernet Sauvignon, Merlot, Syrah

and a red blend called Red Rhythm. Her insistence on a twenty mon

aging in French oak barrels produces a rich, velvety wine that

helped her meet her goal of a creating fine wines that will fit i

almost anyones budget. This year her 2004 Cabernet took the gold

the Paso Robles County Fair and her Syrah and Red Rhythm both w

gold medals at the San Francisco Chronicles Wine Competition.

B&E Vineyards is located on Creston Road in Paso Robles. A dr

out to their tasting room will not only provide one with the oppo

nity to enjoy fabulous wines, but a chance to take in the awe-inspir

view of rolling vineyards that Patricia so loves. On the top of

highest hill on the property, the Bellos have built a charming west

style saloon in which visitors can relax, sip three different reds (a R

is in the works) and be entertained by the warmth and wit of

winemaker herself.B&E Vineyards is open Friday through Sunday from 11 a.m

5 p.m. and on weekdays by appointment.

The Marian Theatre will come alive with The Sound of Music this

holiday season. Running November 8 through December 23, this

classic and endearing musical is based on the book The Story of the

Trapp Family Singers. It features an unforgettable Rodgers and

Hammerstein score, including My Favorite Things, Do-Re-Mi and

    Climb Every Mountain.

A spirited young postulant named Maria is sent to serve as a

governess for Captain Von Trapp, a widower with seven children. Her

unorthodox methods quickly win over the children but clash with the

regimental conduct the Captain insists upon. Director Roger DeLau-

rier said, What should be the happy ending after the fairytale

romance the lonely mountain girl gets her prince is delayed by the

invasion of Austria. The happy ending does come however, when they

    escape.

Every month, Cest Cheese hosts a Monday, Tuesday and

Wednesday evening cheese tasting, usually during the third week of

the month. Cest Cheese features a selection of five delicious cheeses

from a different country or region, to which each is paired with an

appropriate glass of wine. Although, they have been known to getcrazy and mix things up a little bit with special feature tastings from

time to time such as chocolate and wine, honey and cheese, or even

fondue and raclette. The tastings are seated and you should arrive

punctually since it is more of a structured event where guests all taste

the cheeses in the same order, learn how they are made, the history of

the region from which they come and discuss cheese as a group.

Tastings generally run from 6:30 to 8 p.m. or so, and reservations

are required, as they do tend to sell out. Prices are $15 per person or

$20 with wine (subject to slight variation from time to time). You can

sign up one of two ways: phone (805) 965-0318 or email:

    [email protected]

    Private Cheese Tastings

For those looking to entertain a larger group, Cest Cheese also

hosts private cheese tastings, which they are able to structure a little

more eleborately, usually entailing four cheese flights along with four

    paired wines.

Group cheese tastings are $50 per person (including wine) fo

    fun and informative evening.

Cest Cheese is located at 825 Santa Barbara Street in Santa Barba

For more information, call (805) 965-0318 or visit the website
