    by Mark Storer

Ifirst got acquainted with Opolo wines before the winery actually

started. Founder Rick Quinn lives in my hometown and along

with other friends we made wine at Quinns home in 1998. At that

time, we made Cabernet Sauvignon, Merlot and a few others. There

were more than 20 of us in the group and I didnt know everyone.

Within a year of that date, Quinn and his neighbor and partner DaveNichols founded Opolo Vineyards in Paso Robles. Normally, a writer

isnt supposed to get so close to his subjects, but I cannot ignore the

simple truth that the story of Opolo is also the story of how I got into

    the world of wine.

The name Opolo actually comes from the Dalmatian Coast, where

Quinns ancestral roots are. Opolo is a dry Ros wine from that region.

Quinn and Nichols copyrighted the name and applied it to their label,

    their hobby.

Truly, says Quinn at his day-job office in Ventura County, a real

estate firm, its a hobby that got out of control. Nichols, who also has

a day job running an electronics firm in Ventura County, concurs. I

get up there [to Paso Robles] a couple days a week, he says. Bothmen have serious jobs and so they designed Opolo to be serious fun.

The winerys beginnings really are the Cinderella story of Paso

Robles wineries. Quinn was the first of the duo to purchase land in

the area in 1994. I planted in 1995, he says. The winerys first

vintage was in 1999. But the tasting room didnt open until 2001. It

went crazy, then, says Quinn. Weve learned a lot since then.

The awards started rolling in, too. Gold medals from all over piled

up over the years and they continue to do so. Opolos reputation has

been built on creating serious wines, yes but there is no pretension.

The tasting room still sits in the old tractor shed where the first vine-

yards were planted off Vineyard Drive in Paso Robles. Its still boa

over barrels, says Nichols referring to the Opolo bar. Weekends f

the old shed crowded with smiling, happy customers tasting an ex

    ordinary variety of wines.

Weve never met a grape we didnt like, says Nichols.

produce some 30 different varietals and blends. When you come

the tasting room, you can spend a couple of hours there. I think th

part of what people like. From a rich bold Cabernet to a smMalbec, from Chardonnay to Petite Verdot, Opolo produces variet

well as quality. Our winemaking is based on our palates,

Quinn. Its winemaking by a committee of staff members but bot

us have veto power. Quinn and Nichols ultimately make the w

making decisions. We make what we like to drink.

Stripping the pretension out of winemaking is part of the goa

Opolo. Opolo has always been fun, says Quinn. We really hav

good time with it. Wine has always been kind of snooty and we w

to take that out of it. We drink what we like and we want you to dr

    what you like.

Using the tasting room as their focus, building membership for

wine club, Quinn and Nichols have become famous for what can obe called their gatherings. Hosting whole-roasted lamb dinners

home-made carne asada, barbecued chicken and various dis

Opolo club members come up to the winery for the weekend

enjoy the atmosphere, the food and the wine. We cook it oursel

and get everyone involved, says Quinn.

The sun sets over the rolling Paso Robles hills and the even

breeze stirs up a brisk coolness that mellows the warm day. Mos

the events feature music and dancing from a variety of perform

mostly Serbian and Croatian. Family members, even distant relati

come to lend a hand. They come for a good time, Quinn says. Fr

a grape stomp for the kids to food and wine pairing, people are

    having a blast, says Nichols.

The unique reputation that Quinn and Nichols have built comes

from their dedication to making great wine and having fun doing it.

Less than a decade old, Opolo opened in Paso Robles when there were

only 40 wineries in the area. Now, there are some 200 wineries and the

region continues to grow. Opolo owns and operates some 300 acres of

grapes while purchasing some as well as selling some to other

wineries. It all starts in the vineyard, says Quinn. Producing great

    fruit produces great wine.

The interview winds down and I feel less like Ive been working and

more like Ive been reminiscing with old friends. I dont know that Im

entitled to feel that way, but I cant help it. Rick Quinn and Dave

Nichols arent interested in pretension, after all. Quinn shows me some

pictures of various gatherings at Opolo and the old tractor shed is

crowded with people, all of them smiling, laughing, sipping, tasting

and enjoying. There are photos of the aftermath of the 2004 earthquake

with barrels and bottles, most of them miraculously unbroken (Nicholsattributes this to the unique and signature heavier bottles that Opolo

uses), strewn over the floor. There are photos of the numerous awards

from all over the country recognizing Opolos extraordinary wines.

Mostly, though, there are photos of family and friends enjoying them-

selves, tasting wine and eating food, happy in each others company

and having serious fun. That, of course, is what Opolo is all about.

You can visit the tasting room at 7110 Vineyard Drive in Paso

Robles, open daily from 10 a.m. to 5 p.m. For more information, call

    (805) 238-9593.

wood floors. No standing here, TRIO aims for

comfort. The spacious windows look out on the

main drag in Solvang so you can sip luxurious

wines and catch glimpses of the Danish town.

Wine is a holistic thing, winemaker Kris

Curran says. Its about food, family, friends, conversation and you

cant extricate one of those things from the other. While at TRIO youllmake friends, have great wine and find intriguing conversations. As

for food, the winery used to be a Danish bakery, though you wont find

any pastries in the tasting room. Crispy baked pita chips are offered to

    cleanse the palette.

The interior is simply decorated, all the better to focus your energy

and attention on the wines in front of you. Two different lists are

presented, a $10 list which includes five wines, and a $15 list that

provides seven tastings. As an added bonus, and something you rarely

see, all the white and red wines are appropriately chilled.

The wines include the Badge, Curran

Di Bruno labels, and there is a clear favoring

Rhne and Italian varietals. The Badge labe

dedicated to Pinot Noir and a recently relea

Chardonnay. The Di Bruno lineup includes P

    Grigio, Sangiovese and Syrah.

Curran wines include several different Syra

plus Sangiovese and a unique Grenache Bla

which, Kris says, there are less than 100 ac

    planted in the entire country.

dont make a lot of them, Kris Curran says of

    5,000 case production.

It should come as no surprise that Bru

DAlfonso and Kris Curran finally opened th

own tasting room. Combined, they have made wine for some of

most respected wineries in Santa Barbara County including, SanfoSeasmoke, Foley Estates, Koehler and Vandale. All the while they h

place to showcase their styles. One cannot live without hope, Bru

David Young loves his work. He is one of the few people who is

living exactly the life he imagined, or at least very close to it. As

owner, winemaker and general head of everything at Minassian-

Young Winery, Young is master of his kingdom, and at 30 years old, thats quite an accomplishment.

Ive wanted to be in agriculture since I was in sixth grade, says

Young. My family grew vegetables and I got involved. Ive always

known this. Minassian-Young is a combination of his mothers

maiden name and his fathers surname. Theyre sort of silent partners

    and I run things.

At 16 years of age, Young was living in Napa Valley and working in

the Baratelli Vineyards. He learned, quite literally, from the ground up.

At 17, he was hired by Quail Ridge Winery. I learned to make wine

by learning to scrub barrels and clean up, says Young. From there, he

was off to Cal Poly San Luis Obispo to major in Fruit Science. It was

a great education. I remember Ken Volk (of Kenneth Volk Vineyards

and a Cal Poly alum) coming to speak to us and telling us to make as

much wine as you can. And he did. Young and his friends fermented

everything they could to learn about the process. We made beer and

cider, a lot of cider. Apples were pretty easy to come by with See

Canyon right near by, he says.

Degree in hand, a desire to grow and make wine, Young set out into

the wine business and never looked back. Working for a time at

Norman Vineyards in Paso Robles, Young learned of a piece of prop-

erty coming up for sale from Peachy Canyon Vineyards on the West

side. They had 27 acres, 10 of which is 27 year-old dry farm

Zinfandel. It was beyond my budget, but my parents kicked in w

me and we bought the parcel. The Zinfandel is farmed organic

and the vineyards also grow Rhne varietals including Syr

    Mourvedre and Counoise.

Almost everything we make is a blend, except for the ZinfandYoung points out. Our main focus is vintage and vineyard. I try for

Old World style where the terroir is important. All the Bordeau

make comes from one vineyard and so I try to express that vineyard

    those wines.

Minassian-Young Winery, in business now since 2002, is no

estate grown, however. Young purchases grapes from various v

yards as well. Focusing on terroir and organic vineyards has for

him to be picky, of course, but that means better wines. At arou

3000 cases a year, quality control is a full-time job. About a thir

our wine is from our estate and I purchase two-thirds.

Sitting on the West Side of Paso Robles directly off of Pea

Canyon Road, Young and, as he describes it, a few friends run

winery. Ive got a couple of girls Ive hired to run the tasting room

I have a guy who works in the vineyard with me and the girls help

with production occasionally. The tasting room and the winery are

the same property and thats just how Young wants it. Its kind of

whole point of tasting, isnt it? he asks. The reason for coming to t

the wine is to see where its grown, how its made.

I looked all over the west coast when I started looking for vi

yards. This is probably one of the nicest places Ive ever farme

Young says about Paso Robles. Were really starting to figure out

varietals here. The West Side and the East Side, were all really growing

good fruit, making good wine, he adds.

That good fruit has translated into a fine, varied array of wines for

Minassian-Young. Zinfandel is still one-third of his production, the

other two-thirds are broken up between Rhne varietals, whites and

Bordeaux. Were making a Rhne-based white blend that used to beprimarily Marsanne, now its Rousanne based with Viognier and

Marsanne as well. Growing conditions have changed the Marsanne

crop and it hasnt been as prolific as Young would have liked. But as

any good farmer does, Young learned to adapt and made quality wines

leaning heavier on the Rousanne that was getting better with each

    vintage.

Fall 07 harvest was pretty good, says Young. I was really happy

with this year. Its progressing nicely. At six years old, Minassian-Young

Winery is one of the younger members of the rapidly growing Paso

Robles Wine community. The past couple of years have been really

good to us. Thereve been a few stalls here and there, but everything

    seems to have hung on.

With a past so focused and dedicated, David Young is preparing his

winery for a future focused on quality and taste. There are really paral-

lels between here and the Rhne valley, says Young. Its just a great

place to be right now. Young should know. Hes been preparing for this

    work all his young life.

Minassian-Young is located at 4045 Peachy Canyon Road in Paso

Robles, open Friday, Saturday and Sunday from 11 a.m. to 5 p.m.

of Walnut Grove, on the Sacramento River Delta and over the

course of one hundred and fifty-eight years our family has farmed

pears, asparagus, tomatoes and other field crops. They have never

Salisbury Vineyards wines and vineyards are a testament to the

benefits of seven generations of cumulative knowledge of the land.

Eight years ago, our Avila Valley vines were planted with incredible

care and planning by John Salisbury. The Pinot Noir, Chardonnay,Pinot Grigio, Cool Weather Syrah and the newly planted Albario

were meticulously chosen based on appropriate clones and root-

stocks then planted in blocks arranged by soil type, angles and

directions of the slopes, and the varying microclimates in Avila

of eight different clones on four specific rootstocks. The results

from all this attention to detail have been phenomenal, as we have

had many heavily awarded and noted wines, and we are consis-

about 3,000 cases per year and is located in

the historic village of Arroyo Grande. Wood

Winery is dedicated to handcrafting wines of

distinction and elegance and is indeed a veryspecial place. Boutique wine (not necessarily

limited quantity and expresses a particular

passion of the winemaker. Not only does

Paul Hoover might describe himself first

and foremost as a farmer, but it is when he

takes his love for growing things and applies

it to the crafting of his award-winning wines

for Still Waters Vineyards that his true genius

is apparent. I consider myself first a wine

grower because Im passionate about agricul-

ture, but with winemaking I get to enjoy the

entire process, from growing the finest fruit to

seeing it to the end with the production of

great wine. I want to stay small because I feel

the hands-on approach allows you work with

the wine during the whole process and really put my signature and

touch on the wines. For example, its unusual for winery of my size to

make twelve different types of wine including five whites.

As a graduate of nearby Cal Poly, Paul initially took his degree inagriculture and entered the resort and restaurant business. The call of

the fields was strong, though and after a number of successful years in

that business, Paul and his wife Patricia followed their hearts and

bought a vineyard. The vineyard is located in an area with soils and

climate perfect for growing premium wine grapes. The ranch sits high

atop hills that slope gently from the north to the south, giving the

vines the perfect exposure to the summer sun as it rises and sets over

the El Pomar area. Light afternoon winds blow through the vines

providing good airflow through the canopy for proper ripening. As the

sun sets, the onshore winds flow from the Pacific Ocean cooling the

vineyard to night temperatures in the 50s. The 40-50 daily temper-

ature swings allow the fruit to cool at night, lengthening the ripeningprocess to intensify the flavor and allowing the seeds to mature,

providing proper tannin and flavors. All of these influences from

Mother Nature help create the perfect balance of Still Waters Vine-

yards estate wines. The setting is also perfect for people. If its a

glimpse of the magnificence of California that you seek, the breath-

taking panoramic view of acres of lush vi

and rolling, golden hills available at S

Waters Vineyards is second to none. Th

truly a place of unsurpassed beauty a

many have taken advantage of the setting

    their weddings and parties.

This is not your average tasting ro

either. Says Paul, My resort backgrou

drew me to this site because of the uni

opportunity to create both an indoor

outdoor setting for tasting room gue

which includes a picnic area underneath

100-year-old olive grove from which we produce our gourm

Spanish olive oil. Tasting room manager and assistant winema

Kasey Justus, and her staff always provide a warm environment for

guests. At Still Waters Vineyards you can truly taste, smell and witnthe passion for growing things that has helped Paul and Patr

    Hoover realize their dreams.
