• 250g granulated sugar • Thumb-sized piece of ginger, chopped • ¼ a nutmeg, freshly grated • 2 oranges, halved •12 whole cloves • 6 whole allspice • 2 cinnamon sticks • 1L water

Put all the ingredients in a heavy based saucepan. Bring to slow simmer to dissolve sugar then continue to simmer for half an hour until syrupy. Strain through fine sieve. Will keep in sterilised bottles for 3 months if you have any leftover! Blend 100ml per 75cl bottle of wine.

Within easy reach of Calais for a day trip with a difference is the picturesque town of Lille.

Love the Louvre, but hate the queues? Spend the morning exploring the series of temporary exhibitions set up by Louvre-Lens, plus the collection in the Galerie du Temps.

For lunch, Estaminet T’Rijsel (25 Rue de Gand) is a traditional Flanders bistro. You’ll find all sorts of local specialities: hearty stews, roast meat covered in a sauce made with the local Maroilles cheese, and (if you have a strong

constitution) Pot’je Vleesch! They have a lovely selection of regional beers and a cracking wine list to boot.

Spend the afternoon exploring Lille’s fascinating Flemish architecture. Vieux Lille is a particularly pretty area, still predominantly cobbled streets and independent shops. Visit Meert, the chocolatier on Rue Esquermoise (remember we’re next door to Belgium!).

And don’t miss the pride of the north, Le Beffroi! You can pay €6 to climb the 400 or so steps to the top for a beautiful view of Lille (or there is always the lift...).

Lille

As you head south out of Calais, take the undulating D490,

sweeping along the clifftops through the unspoilt coastal towns of Wissant and Wimereux, all the way to Boulogne. Boulogne-sur-Mer is France’s biggest fishing port, and the importance of this industry permeates the town; from Nausicaa, the vast aquarium, to the numerous fish restaurants and stalls lining the port.

Spend the morning exploring the markets and local shops. Place Dalton is open Wednesdays and Saturdays until 12.30pm. Down near the harbour, this lively market is a food lover’s Mecca: not only does the market burst with the best of the region’s food stalls, but very close by are a huge variety of excellent local shops, including top notch patisseries and delicatessens for you to while away the time after the market closes. Don’t forget to try the infamous Vieux Boulogne, the smelliest cheese in the world, at Philippe Olivier’s cheese-rammed shop.

As you wend your way back to Calais, make a pit-stop at Christophe Noyon’s brewery, Brasserie des 2 Caps (2caps.fr), which he started at his father’s farm in Tardinghen a few years ago. The beers are absolutely fantastic, and now stocked by us in both Calais and Coquelles!

Wrap up warm for a wintery day in the open air. Head the 15km

inland to Ardres. The picturesque 25 minute drive is the perfect beginning to your day out in France.

Ardres is a beautiful Medieval town, overlooking the flat coastal marshlands back towards Calais and the Channel. A traditional market town, it’s the kind of place that will have you planning to emigrate before you’ve finished your first café. Explore the town centre, popping into the church in the town square to view it’s stunning stained glass windows. On Thursday until 1.30pm browse the market stalls in the square, visiting the butcher to buy top notch aged Spanish beef. You have to taste it to believe how good it is!

For lunch, Francois 1er has to be your number one option. With a carefully honed range of set menus and plats-du-jour, there’s an option for every price point and a great wine list to keep you interested between courses.

In the afternoon, head back towards Calais beach for the day’s main event: sand yachting. One of the region’s best loved sports, it’s a real adventure to try and definitely not something that’s restricted to the summer months. The best thing about trying it in winter? You can almost guarantee that that wind will be blowing. Hold on to your hats!

ChristmasMarkets

A visit to a Christmas market is a lovely way to mark the start of the season’s festivities. A golden opportunity to stock up on French goodies to take home with you – just don’t forget your cool box!

Calais

Every year on the last day in November the Mayor turns on the town’s Christmas lights, officially kicking off the festive season. Explore the stalls of the Christmas fair in Place des Armes or, if you’re visiting after December 12th, hop in the car and nip 20km along the coast to the pretty town of Gravelines where their Christmas market is famously diverse. With over 70 stalls, it’s an easy way to lose an afternoon.

Boulogne-sur-mer, 30 mins from Calais

Enter the old town through the immense stone gates cut into the castle walls. Dripping with twinkling lights, it will set the scene for a wonderland of Christmas food, activities and gifts.

Licques, 40 mins from Calais

The Christmas market at Licques is locally famous. On 12th - 13th December celebrate la Fête de la Dinde or the turkey festival. A true spectacle, local dignitaries lead a procession of turkeys through the town. If you want to get involved like a local, you’re offered a glass of local liquer, Licquoise, then you choose your turkey. Alternatively, the incredible market attached is a gastronome’s delight showcasing a huge range of produce from across France. Everything you need for a truly French feast!

Lille, 1 hour from Calais

The Lille Christmas market starts a little earlier than most – running from the 18th November to the end of December. With an incredible fairground and giant Christmas tree, it’s a fun market to take the kids to, while the incredible cheap shopping in the market and town will keep adults busy.

If you’re coming to shop with us in Calais we know two things about you: you’re not afraid to explore in France and you like your wine!

We have so many fantastic producers. A visit to Calais the perfect excuse to hit the open road and head off to visit some of them in one of the world’s greatest wine regions: Champagne. A three hour drive from Calais, that’s the journey from London to Leeds: which would you rather make? Take advantage of our overnight travel offers to make a weekend of it.

In the region, Champagne production is centred around the two towns of Reims and Épernay. Both are lovely, but for a short visit Épernay is the more picturesque of the two, with the Champagne houses conveniently clustered along the Avenue

de Champagne through the centre of the town.

As you arrive, follow the signs up the hill to the little village of Bouzy. Enjoy the panoramic views of the town and acres and acres of vines. The vineyard is always changing and growing, so even visiting in winter is an interesting experience as you see the vines lying dormant beneath frozen earth. If you’re lucky, you’ll even see the vineyard workers moving swiftly through the vineyard as they begin to prune the vines for the coming spring.

Back in the town take your time to wander through the pretty streets, wrapping up warm to enjoy an aperitif of pastis in the central square before you make your way up the Avenue de Champagne.

Calais:From the Eurotunnel: On exiting the terminal take the A16 (signposted Calais). Drive for about 10 minutes until you reach junction 47; this is signposted Calais Port/Car Ferry. Exit at junction 47 and on the following road take the first exit at junction 3 (signposted Zone Marcel Doret). Take the first exit on the roundabout and then head straight on, crossing a mini roundabout before the store appears straight ahead of you.

From the ferry terminal: On exiting the terminal follow the signs for the A16/A26 (signposted Paris/Reims). Continue on the A26 for about 5 minutes and exit at Junction 3. You will come to a roundabout where you need to take the fourth exit signposted Zone Marcel Doret. Keep going straight on, crossing a mini roundabout before the store appears straight ahead of you.

Coquelles:From the Eurotunnel: On exiting the terminal take the A16 (signposted Boulogne). On the A16 take the first exit you come to which is junction 41, signposted Coquelles/Sangatte. Turn right at the roundabout off the slip road and then you will come almost immediately to another roundabout (you can’t miss this as there is a big drill on the middle of the roundabout). Turn right again onto Avenue Charles de Gaulle and then drive for about 5 minutes. At this point you will see us on the left hand side after a small selection of hotels. To enter the store, go all the way around the roundabout in front of you and then take the entrance on your right.

From the Ferry Terminal: On exiting the terminal take the A26 and drive for about 5 minutes until you reach the A16 motorway. Take the right hand slip road signposted Boulogne/Channel Tunnel and then on the motorway drive for about 10 minutes until you reach junction 41. Exit at Junction 41 and then turn right at the roundabout off the slip road and you will come almost immediately to another roundabout (you can’t miss this as there is a big drill on the middle of the roundabout). Turn right again onto Avenue Charles de Gaulle and then drive for about 5 minutes. At this point you will see us on the right hand side. To enter the store, go all the way around the roundabout in front of you and then take the entrance on your right.
