Desert wine obtained from the fading of grapes with black berry belonging to the Aleatico variety. The fading is takes place by letting the fruit on the vine, retarding the harvest until the grape loses about 30-40% of its weight. The harvestes grapes are carried to the wine-cellar, where it undergoes the fermentation in red. The fermentation is interrupted when 12,50% alcohol is achieved. This way we get a desert wine with a strong structure, with softness sensations and perfumes elegance, and a sweet aftertaste.

Excellent with tasty and spicy cheese, or cheese and honey, as desert with fresh fruit, bicuits and cakes without creames.

A sleeper of the vintage, the 2005 Les Forts de Latour (10,000 cases produced) is made in the style of its big brother, offering notes of blue and black fruits, crushed rocks, and flowers, sweeter tannins, but not the weight, depth, or extract of Latour. This impressive second wine will drink well in 4-5 years, and last for 20+ years. Ask just about anybody which first-growth is pushing quality to the highest level, and the majority will claim it is Latour. With owner Francois Pinault giving perfectionist administrator Frederic Engerer carte blanche, this estate has been producing spectacular wines since 2000. New cellars, winemaking facilities, and barrel rooms only add to their ability to produce classic wines. Production is much smaller than at other Medoc first-growths with only 44% of the 2005 production making it into the grand vin.

The outstanding 2007 Les Forts de Latour reveals a touch of graphite and black currant fruit intermixed with an unmistakable minerality. It is a generous, silky textured, medium to full-bodied, evolved, elegant, and pure offering that is ideal for drinking over the next 10-12 years.

Grand cru Latour ‐ AOC Paillac–1stCru 750ML -2007 €404.09

Plentiful rain during the winter replenished the groundwater levels and the end of the cold damp winter was marked by very early budburst. The temperatures in March and April were quite high, which was good for growth. From then until August the weather was grey and mild, without extremes. Luckily the weather in September was good and settled which allowed the grapes to ripen well in calm conditions. Complete ripening for the sugar, tannins and skins was only achieved 125 days after flowering – a vegetative cycle longer than usual in a year with 13 lunar cycles.

Very ripe red fruit on the nose. Closed at first, then full and open. Elegant and charming, still somewhat discreet, good length. Integrated oak.

Grand cru Château Lafite Rothschild ‐ AOC Paillac 750ML -2007 €715.62

Currently closed and backward, this wine seems to share a more similar character to Trotanoy than in any recent vintages I recall. Powerful, structured, masculine, but a long-term proposition, this dark ruby/purple-colored wine displays notes of caramelized, sweet black cherries and wild berry fruit with plenty of spice, earth, and a hint of herbaceousness. The wine has very high tannins, impressive concentration, but that mouth-searing level of tannin. This is one Petrus that should probably be forgotten for at least 8-10 years and drunk over the following two to three decades. I always find it ironic that Petrus, which is virtually 100% Merlot, is more backward than the first growths of Medoc, which are Cabernet Sauvignon-dominated.
