Family time is the perfect time! Spring is in the air. My favorite time of year. New beginnings and new hopes of an incredible vintage to come. Our grounds are in full bloom and this is a great time of year to visit Wine Country.

Speaking of new, the new wine releases are hitting the shelf this Spring and our wine team has done it again. They have made some of the best wines yet. The amazing work our vineyard team started years ago in the field, has rewarded us with some outstanding wines to enjoy now and to lay down for future pleasure. My favorite day to come to Wilson Creek is on Sunday for our awesome bubble brunch. The culinary team has stepped up their game and our brunch is now the talk of the town. The waffles alone are worth the visit. Crab, mussels, shrimp, oysters, carving stations, the best bacon, sausage and desserts galore to choose from. The best omelet maker, the amazing Luciano, will dazzle you with operating five pans at the same time. We eat here as a family every Sunday and it is fun to watch all of the happy faces leave with full stomachs and smiling faces. Every year we set aside a Sunday to honor our mothers for not only giving us life but for providing us with hugs and support as we grew up. As a child, we ran to Mom for a cure and a welcome hug for our “boo-boos” - be it a skinned knee or a failed relationship. Being a mother is one of the toughest and yet rewarding jobs - preparing a child to leave the nest and go out into the world prepared to live a full and rewarding life. The saying is - “The father may be the

coach, but the mother is the quarterback.” Mothers’ Day coincides with the warm sunny days of Spring. Here in Wine Country, it is the time of the beauty and green lushness of our vineyards after a winter of dormant and pruned vines, offering the promise of a future crop of grapes, followed by delicious wines. I spent the last two days in February staring at row upon row

of partially filled wine glasses. Each set of six to ten glasses were placed in front of me in a large sweeping arch, each with a reference number neatly printed on a paper wine stem ring. My only clue as to their content, was the wine class typed on top of the judging sheet – 2013 Malbec. Your first thought may very well be – Wow, what a lucky guy. He gets to try all those wines. But I assure you it’s more difficult than you think. First of all, wine judging starts out very early – 8:00 am early. I do admit that I drink a fair amount of wine throughout a typical working week, but starting that early in the morning – well that’s hardcore. The first wine tastes are a shock to my system (as well as to the other judges – I can see it in their eyes). My brain tells me –this isn’t coffee - what’s going on? I’m not ready to start working. To be fair with the first 10 wines that I taste, I re-taste them before my final judgment. The day is very long and exhausting. Often the first day of the wine competition can extend to 4:00 pm. True, we do break for a quick lunch at noon - but than we get right back into it again. The level of concentration is very high and keen throughout the judging causing great mental fatigue. The process is the same and then repeated.

1. Six to ten wines are presented at once in a large sweeping arch in front of you.

2. A judges wine sheet with only the wine type and number referenced is used for scoring.

3. The wines are then quickly smelled and tasted with a spit cup nearby (yes it’s used).4. First impressions on wine color, aroma and taste are recorded for each wine.5. All four judges discuss the wines tasted and the final score for each wine is recorded.6. The above steps are then repeated, for the next flight of six to ten wines. A great amount of focus is needed to properly judge the wine, as well as spit and spit and spit again. All that spitting makes for a very interesting sound of 30 to 40 wine judges forcibly spitting wine into the bottoms of large styrofoam cups. Spitting out the wine is a necessity, for at the end of the day about 150 or more wines would have been tasted. Wine judge rookies would sneak in a small swallow now and then when a nice wine is detected. This is not recommended, for within a short time the effects of “sneak-swallowing” will impair your judgment and make you more talkative during final flight evaluation. Some rookie judges are never invited again. The more experienced judges simply write down the wine number of an excellent wine and call for a second taste near the end of the day. It may seem that I’m not enthusiastic about wine judging - that’s not true. I relish it, and jump at any chance to do it. True they can be long and tedious, and mentally exhausting to the point of wanting to take a long nap. Yet, I am willing to suffer for a chance to sharpen my skills in wine tasting and wine making. Believe it or not, wine competition judging is not all fun and games.

One of the great aspects of winemaking is that time-lines are not

measured in days or fiscal quarters but in multiple years. When deciding to plant a new red varietal vineyard, the soil must be prepared a year in advance, then the vines need to grow for three to four years before harvest. After harvest, the juice can spend up to two years in a barrel and another two years aging in the cellar. That first taste in your glass may contain nine years of planning and crafting. In science, a testing method’s “robustness” is a description of its consistency over time to deliver accurate results. In common language it is the quality of being sturdy and strong in form, constitution, or construction. In wine making it is marked by richness and fullness of flavor. This week, I had the unique pleasure to experience with my Mt. San Jacinto College Viticulture class, a multi-generational history lesson spanning over a century. A favorite wine trivia question for our wine tour is “where is the oldest continuously producing vineyard in California?” Most answer Napa or Sonoma, but the correct answer is Temecula. We are often described as a “new” wine region but the historical fact is that we are the original. The Old Mission San Luis Rey de Francia recognized Temecula

as the premiere wine growing region in California prior to all other wine regions in the state. The original vineyard was lost but a later planting of the original Mission grapes from the Spanish Missions were replanted in 1886 and an additional commercial vineyard planted in 1908. They are still in production in Temecula, and this season my Viticulture class has been tasked with reviving and caring for this historical gem. It made my heart soar to see our next generation of winemakers, my students, sharing with tribal members who own the vineyards. The history of the origins of California winemaking is shared with students who are bringing the best of modern science to this ancient craft. This is why I choose to be a winemaker in the vineyards; I am able not only to cultivate my beloved vines but also this culture which I find endlessly rich, rewarding and beautiful. Galileo said: “Wine is sunlight, held together by water.” but I think it is more than just sunlight, it is culture, humanity and community. We love having you visit our winery to experience all that is captured in a bottle and to add your sunlight for the next bottling. Q: WHAT SHOULD I DO WITH THE REST OF A BOTTLE OF WINE AFTER I’VE HAD ONLY A GLASS OR TWO? WILL THE WINE GO BAD? Mark W. ~ Folsom, CA

A: Great question and YES the wine will go bad. Why? The three enemies of wine are heat, light, and oxygen. So the oxygen in the unfinished bottle will oxidize the wine over time and make it taste flat. (Hint: always store your wines in a dark and cool place like a basic wine refrigerator you get from Home Depot or even in the back of a closet. The worst place to store that nice bottle is in your kitchen on an exposed wine rack. The warm kitchen (70-72 degrees) and light will degrade your good bottles of wine.) If you have some wine left in a bottle, now what? Yes, some of you never have that problem… But here are some options: 1. Pump the oxygen out: This involves getting a pump system where you put a rubber sealer into the bottle and hand pump the oxygen out. It works, but it takes time and a lot of pumping. 2. Chill it: will might work for whites where you can put the wine in the refrigerator for a few days (3-4 days max). The cold will slow down the oxidation process, however it is not a perfect solution and isn’t great for

reds as you need to warm the red up a tad to serve them. 3. Replace the oxygen: this is what we do in our large fermentation tanks when a tank is not completely full of wine. We pump in a harmless gas over the top of the wine that is heavier than oxygen (CO2, Nitrogen or Argon). These gasses “kick out” the oxygen and put an

inert “air blanket” over the wine that keeps any remaining oxygen from oxidizing the wine. Someone smart invented a can that does the same thing for individual bottles called “Wine Preserver”. You just squirt a few puffs of inert gas into the unfinished filled bottle and it protects the wine for a week or so... just enough time to enjoy it later (we sell it at the winery or you can get online). There are other systems out there as well that involve a tap system and a small tank of argon. I have a Coravin wine preserver which puts a needle through the actual cork and extracts wine through the needle while the cork is in the bottle. It simultaneously injects argon into the bottle as the wine is extracted. Check it out online. The Coravin is

ingenious but expensive (over $350, and the replacement gas cartridges are pricey). In short, get the wine preserver in a can. It is easy and it works. Price around $10-12 per can… 120 full uses. Spring for a Coravin (model 2) if you have an extra $350 laying around. Let me know what works for you and keep the questions coming.

1 ham shank or butt, unsliced2 cups orange marmalade

1/4 cup prepared horseradish1 teaspoon ground clove

Combine the marmalade and horseradish by whisking in a small bowl. Set aside.

Pre-heat conventional oven to 350 degrees. Place the ham bone side down in a roasting

pan or baking dish. Cover the ham with foil. Roast for 20-30 minutes per pound, to an

internal temperature of 140 degrees. Remove the ham from the oven and glaze

with the orange marmalade mixture. Return to the oven and cook to an internal temperature of 150 degrees, 5-10 minutes

more. Let sit covered for 20 minutes. Slice thin and serve.
