It is almost summer time so it is time to think about some of our
favorite salads. The “Rex-ipe” for May is a spin off the old favorite
Macaroni Salad. Enjoy!
MACARONI (and Cheese) SALAD
INGREDIENTS:
1 lb. Elbow Macaroni
8 oz. Kraft 3 Cheese Crumbles
(Monterey Jack, Colby & Cheddar) ¼ cup Grated Parmesan Cheese
½ Med. Red Onion
1 Med. Yellow Onion
½ Red Bell Pepper
½ Green Bell Pepper
4 Kosher Dill Pickles
3 to 4 Tbsp. Pickle juice from the jar
8 oz. Frozen “Baby” Peas
5 Hard Boiled Eggs
¾ cup* Mayonnaise
¾ cup* Sour Cream 2 Tbsp. Yellow or Dijon Mustard
1 tsp. Garlic Powder
Garnish Regular or Smoked Paprika, Chives, Halved Grape
Tomatoes (8 -10)
PREPARATION
Cook the macaroni al dente according to the instructions on the
package. Dice the onions, bell peppers, kosher dill pickles, and hard
boiled eggs and put it all in a large mixing bowl. Add the cheese
crumbles, parmesan cheese and frozen baby peas, mayonnaise, sour
cream, mustard and pickle juice. Mix thoroughly. Add the drained
and cooled macaroni and mix until completely combined. Salt and
pepper to taste. Cover and chill overnight (or a minimum of 3 hours).
If necessary, re-season and re-moisten with *equal parts of mayo and
sour cream.
Dust with Paprika, add halved tomatoes and sprinkle with chives and
serve.
Hint: *For a more mild salad use more mayonnaise. For a little “zing”
add some pickle juice and adjust the ratio of mayo and sour cream to use more sour cream.

MISSION SULLANA
I want to thank all who have prayed for Mission Sullana and special thanks to those who have so generously donated to the building fund of Community Church El Shaday in Sullana, Peru. We have currently raised over $5000 and while we have not reached our goal, there is still time for others to join us in this worthwhile endeavor - to give Pastor Leonardo and congregation the first church of their very own. FBC Family,
My journey through seminary has finally come to a close! Again, I
would like to thank you all for your prayerful and financial support.
This has been a tremendous period of growth for me spiritually and
mentally. I have been refined and molded (and only mildly tortured by
Jim McConnell)! The Lord has faithfully seen me through, as He
always does.
Thank you so much for how well you have loved me and my family.
