Thoughts from our other staff...
Our church will be collecting items to send to a special needs home in Guatemala. These items are given to the mothers who arrive with special needs children who need surgery. They stay for weeks, by the side of their children, with no clothes other than the ones on their backs. We will get these items to Kathy Wheeler, Nancy Lester's sister, who spends 6 months a year as a volunteer there.
Our church will be making skirts and collecting the following items for mothers and children:
Small or medium tops (No plunging necklines or sleeveless ones, please).
Sandals or flip flops in size 6 or 7. Lightweight towels, wash cloths. Trial size: soap, shampoo, crime rinse, deodorant. Hair brushes, pony tail or headbands. Receiving blankets and onesies.

Welcome to our Interim Music Director, Rex Simon’s “Rex-ipes” column! Rex is a true chef at heart and would like to share some of his favorite dishes with you! Something a little different (and tasty) from our talented staff!
There has been some interest shown for me to share some of the recipes I have developed over the years as well as some that have been handed down in my family for many generations. I must admit that over the past several years I have “tweaked” most of them. In most cases the tweaking was made necessary because of advanced and improved cooking methods, utensils and equipment. Other times changes were made - - - well - - - just because.
No matter. Today we start a series we will call “REX-IPES”. This column will appear in The Visitor once each month and hopefully each “Rex-ipe” will delight your taste buds.
Here is number 1. A favorite side dish of the Simon family.
SMASHED PARSLEY, GARLIC AND HERB POTATOES INGREDIENTS: 1 ½ lbs. Baby Red or Yukon Gold Potatoes – rinsed, skins on and halved ¼ lb. Unsalted Butter (cut into 4 pieces) 3 T Sour Cream 2 T Fresh chopped Parsley 2 t Granulated or Garlic powder 2 T Italian Seasoning 2 t (divided) Salt 1 t Black Pepper 1/3 t Crushed Red Pepper (optional) 1 t Fresh Chopped Chives (for garnish)
GLOSSARY: T – Tablespoon t - Teaspoon
DIRECTIONS: Place halved potatoes in a pot of cold water. (The water should cover the potatoes.) Add 1 teaspoon (t) salt and bring the water and potatoes to a boil. Cook for about 9 -12 minutes or until the potatoes are cooked through but not to the point they split when a fork is inserted. The fork should go into the potato half but have to be pulled out. Be careful to not overcook. When the potatoes are done, drain, (don’t rinse) and return them to the pot and cover. Remove any excess moisture by leaving them over a LOW burner for about 2 minutes. Turn off the burner and add the remaining salt, herbs (except chives), garlic, butter and sour cream. Using a fork, gently SMASH the potatoes into small chunks, while mixing the herbs, butter and sour cream. Be careful not to over mash or mix. Garnish with chives, serve and enjoy. You may want to re-season with salt and pepper according to your own taste. Serves from 2-6. (I’m just saying.)
