Q: Why was it interesting to you to partner with a brand like BACARDÍ? AT: As a chef I’m always looking for unique and creative ways to work with different ingredients, and the versatility of the BACARDÍ Gran Reserva rums gave me unlimited possibilities.

Q: What was the inspiration behind your BACARDÍ Gran Reserva cocktails?AT: My inspiration stemmed from the fall season, as well as where the cocktails premiered. The Headless Horseman is a spiced-up play on a classic Dark and Stormy, with carrot eau de vie, smoked maple syrup and finely ground coffee creating a smooth, authentic finish — it’s a hearty drink that holds up in the Chicago fall. The Siam Daiquiri is a take on my favorite rum cocktail, with a touch of Thai aromatics, inspired by my hometown of Los Angeles.

Q: What would you say is the parallel between food and cocktails? AT: Food and cocktails complement each other to enhance the overall dining experience. You can get incredibly creative in the types of

ingredients without getting over-complicated. That’s something I’ve always strived to do in developing my dishes and something BACARDÍ is passionate about.

Q: What was it like to transition from developing culinary recipes to cocktail recipes? AT: The thought process is similar, as I had to think about what flavors and textures would work well together and what preparation methods worked best. It was just a matter of using different techniques and considering the rums’ nuances. It doesn’t hurt that the BACARDÍ Gran Reserva rums are such adaptable spirits and fantastic to mix.

Prep Time: 15 minutes Cook Time: 25 minutes

Ingredients

3 tablespoons olive oil, divided2 cups diced red onion4 cups seeded, diced plum tomatoes1⁄4 cup red wine vinegar1 cup halved Lindsay® Ripe Pitted Olives2 cups diced Lindsay® Red Roasted Peppers or Lindsay® Sweet Cherry Peppers or Lindsay® Sliced Sweet Banana Peppers1 cup chopped, fresh basil 1 (16-ounce) tube prepared polenta, cut into 16 slices

Directions:

Heat oven to 475° F. Heat 2 table spoons of the oil in heavy sauce pan. Add red onion, and cook over medium-high heat for 3 minutes. Add tomatoes and vinegar. Reduce heat; sauté 5 minutes. Add olives, peppers and basil; sauté 5 minutes. Season to taste with salt and pepper if desired. Keep warm.

Meanwhile, brush remaining 1 table-spoon oil over both sides of polenta rounds. Place on a large baking sheet coated with cooking spray. Bake until golden brown, about 6 or 7 minutes per side.

Arrange polenta slices on plates, and portion olive mixture on top. Serve and enjoy!

a smidgen so that when you reheat the waffles they don’t get too dark before they’re thoroughly warmed.

2. Completely cool the waffles before freezing them.

I BOUGHT a new kitchen gadget — a waffle maker! I was so excited to put it to

good use that I made two batches of waffles. That’s a lot of waffle eating for just

the two of us, so I decided that I should learn how to freeze waffles in batches so

we could pop a couple in the toaster or oven for any time we wanted to eat them.

INSTRUCTIONS• Heat waffle iron.• In a medium bowl whisk

together the all-purpose and whole wheat flour with the baking soda, baking powder, salt and sugar.

• In a separate bowl, combine the eggs, butter and buttermilk. Add the egg mixture to the flour mixture and stir until combined. Let the ingredients sit for 5 minutes.

• Cook the waffles and let them completely cool on a backing rack. Once they are cool, flash freeze them for about two hours then put them in individual freezer bags or airtight containers.

• To reheat them, just pop in a 350-degree oven for 10–15 minutes or toast for 1–2 minutes.

Homemade Onion Soup Mix Makes Mealtime Better

Powder PerfectONION SOUP MIX is one of my pantry staples. I use it in several recipes, the most requested of which is my Sunday Pot Roast Dinner, where I add a few tablespoons of it to a slow cooker filled with a hefty chuck roast, carrots, and potatoes. At roughly $3 per envelope of the tasty soup mix, I wanted to see if I could create my own version of the tasty Onion Soup Mix to keep stored in my pantry and to help save some grocery money. Let’s grab a mason jar and get started!

This recipe makes roughly what one store bought envelope would provide you. But I like to make several batches at a time to store for future recipes like Onion Soup Casserole, Onion Soup Meatloaf or to even add a tablespoon or two to a Beef Stew.

INGREDIENTS2½ tablespoons dried chopped onion4 teaspoons beef bouillon1 teaspoon onion powder⅛ teaspoon salt⅛ teaspoon pepper

INSTRUCTIONS• In a medium mason jar,

add dried chopped onion, beef bouillon, onion powder, salt, and pepper.

CHOOSE YOUR WEAPON. The trick is to use a cleaner with enzymes, which are natural cleaning agents that accelerate chemical reactions and break down organic materials to permanently and safely eliminate stains and odors without harsh chemicals.

ACT FAST. The sooner you treat the spill, the easier it will come out, because the enzymes can act before the stain sets in.

SPRAY AND BLOT. First, spray your enzymatic cleaner on the spot, saturating the stain. Then blot with a clean, dry towel to remove the

First check the fuse box or circuit breaker to make sure it’s getting power. If it’s not a problem with the power source, call an electrician.

• If only one of the top elements doesn’t heat: You could have defective element wiring, a terminal block or a switch that needs re-placing. In any of these instances, call a qualified professional.

Experts say...Encourage good sleep habits by aiming to put your baby to bed when she’s drowsy, rather than fast asleep.

SHOPPING TIPS• Skip secondhand. It may be tempting

to take your friend up on the offer of a hand-me-down crib, but it’s not in your child’s best interest. Always purchase new ASTM Certified cribs to ensure they comply with the latest standards. For example, drop-side cribs are no longer approved, and newer cribs require stronger crib slats and mattress supports, higher- quality hardware and more rigorous testing procedures. Avoid used mattresses as well: They are likely not firm enough and may contain bacteria from the previous user. A few studies have found a corre-lation between used mattresses and a higher risk of SIDS. Also, all new mattresses must pass state and federal flammability standards, as well as the Consumer Product Safety Improvement Act of 2008 (CPSIA), which requires testing for toxic substances.

1. Start your prenatal care as early as possible and keep all appointments OB/GYN’s front offices are incredibly busy and your appointment is not always top of mind for them! It’s up to you to remember appointments and be sure they are scheduled in a timely manner. Prenatal vitamins and folic acid are important for you and your baby’s health.

2. Maintain a healthy diet and healthy lifestyle Talk with your doctor about the right nutrition program for you to maintain a healthy weight. Exercise is important, and it’s best if you start a program be- fore you get pregnant and then continue through your pregnancy and delivery. Research indicates there is an increased risk of stillbirth with women who have a higher Body Mass Index (BMI).

3. Get plenty of rest Studies show that women who get six hours of sleep or less are more likely to have prolonged labor. The position in which you sleep is also important. Sleeping on your left side as much as possible during the last trimester can also reduce the risk of stillbirth.

4. Practice counting your baby’s kicks

Dr. Ruth Fretts notes that counting your baby’s kicks is the easiest and most effective way to reduce the risk of stillbirth. Monitor your baby’s activity EVERY DAY beginning in week 28. Use a Kicks Count! Chart to log the amount of time it takes to count 10 kicks. If you notice a change in your baby’s normal pattern, call your doctor immediately.

5. Become your own advocate Understand tests available to you if you are concerned about your baby’s movements. Have the confidence to be persistent in requesting them: Non-Stress Test, Biophysical Profile, Ultrasound and Contraction Stress Test.

I HAVE NOTICED that one area in our home that goes unorganized is our bedroom. I’m sick of the clutter and it is time we do something about it. Here are my best tips for organizing a bedroom.

LESS IS BESTAs you’re organizing your bedroom, think of the mantra “less is best.” Whenever I think I want to hold onto something, I talk myself into parting ways. I don’t need 15 sweaters or 30 pairs of shoes. I’m always happy to give them to someone else who has far less than I do. 

TIDY UP DAILYBecause bedrooms are hidden off to the side and you don’t usually have peo- ple looking in there, it can be hard to stay motivated to keep it clean and orga-nized. One thing I have been doing is setting a timer for 15 minutes and getting as much cleaning/organizing done as I can.

TAME THE CLOSETIn the past, we have tackled our closet mess. In fact, you can read our tips for organizing a closet. The bottom line for the disorganization was too much stuff. Sometimes we still have to go in and do a bit of elimination, which is never fun or easy, but a necessary evil.

MORNINGLose the snooze. Repeatedly hitting the snooze button can interrupt your natural sleep and wake-up cycle and impair your morning mental function. A few “snooze-busting” tricks: • Set a coffee pot to be ready at

your wake-up time, and let the aroma lure you out of bed.

AFTERNOONGet moving. A study published in Mental Health and Physical Activity found that getting 150 minutes per week (about 21 minutes a day) of moderate to vigorous activity led to a 65 percent improvement in sleep quality.Take a siesta. If you can’t fit a solid eight sleep hours into your night, sneak in naps to help make up the deficit. People who nap for a half hour three times per week reduce their chance of heart attack by 37 percent.

EVENINGPower down. Turn off electronic devices one hour before sleep (set an alarm to alert you). If you leave your phone on overnight, screen incoming calls to top-priority numbers.Keep it dim. Bright lights wake up your brain, so use a nightlight to light your path to the bathroom if you need to use it during the night.

The most common allergen is the microscopic dust mite, according to a recent study, “The Growing Incidence of Allergies and Asthma in America.”According to the report, more dust mites live in the bedroom than in any other room of the home. Because people spend a third of each day in bed, the bed is naturally dust mites’ prime feeding ground. Unfortunately, the bedroom is also the toughest part of your home to protect. “Dry carpet cleaning and furniture sanitation may discourage dust mites, mold and mildew,” the report states. “However, mattresses present an impossible cleaning dilemma. Mites and their feces live deep inside the mattress and are unreachable.”

SEAL THEM OUT. The best — and often the only — way to protect your sleep environment from dust mites and other common allergens is to use medical-quality,

total-encasement mattress and pillow protectors, says Philip M. Tierno Jr., Ph.D., director of microbiology and immunology at New York University and author of “The Secret Life of Germs.”

RETHINK SOFT SURFACES. Consider replacing home décor like curtains, upholstered sofas and wall- to-wall carpet with harder surfaces such as blinds, leather sofas and wood flooring to make your home

5. MISSING, CRACKED OR CURLED SHINGLES. If your shingles are dry or practically break when touched, that means they have reached the end of their useful life and it’s time to invest in a new roof.

6. DARK, DIRTY-LOOKING AREAS ON YOUR ROOF. This could mean that your roof has vegetation, fungus, mold or algae growth, or that the shingles have lost their protective granules. Cleaning shingles can shorten their life. A better option: Buy shingles with StainGuard protection.

7. EXCESSIVE ENERGY COSTS. In warm weather, inadequate ventilation traps hot air in the attic. In both hot and cold weather, moisture in the attic can become trapped and condense on the rafters if it’s not insulated properly. This moisture can drip down onto the insulation and reduce its effectiveness, potentially increasing energy costs.

1. AN ATTIC LEAK. Always check your attic after a strong storm or wind-driven rain. Also, ice damming can cause water to enter the house if you don’t have an adequate shingle underlayment or if the flashing (the aluminum or steel used over roof joints, like chimneys and pipes) has deteriorated.

2. BLISTERING OR PEELING INTERIOR OR EXTERIOR PAINT. Trapped moisture from poor attic ventilation often causes paint to peel. The attic air needs to flow freely from the soffit to the ridge to reduce humidity.

3. STAINS ON INTERIOR CEILINGS AND WALLS; MOLD OR MILDEW GROWTH. Inadequate or faulty shingle under- layment can allow water to seep into the house, causing mold, mildew or stains. Poor ventilation can also lead to excessive moisture.

4. EXTERIOR DECAY. Poor attic ventilation is a possible cause. Combat the problem: Put a vapor barrier between the insulation and the inside of the house. It reduces the amount of moisture coming in, while allowing moisture to escape.
