22 reStAurAnt FeAture rACInG’S north turn Racing has been a large part of this area’s history since the early 1900’s. One of the greatest racing shows on earth was born right at the location of Ponce Inlet’s Racing’s North Turn Beach Bar & Grill. Aptly named, as the birth of Daytona Beach’s NASCAR racing courses north turn is right where this historical restaurant sits. Back in the day, the great race was started at the North Turn on the paved section of A1A heading south 2 miles then turned east to run back north 2 miles along the ocean on the sandy beaches of Ponce Inlet to complete the oval track. Come Experience All Racing’s North Turn and Read about them on page 22.

30 CheF FeAture mIGueL GArnICA SeASIde bIStro Chef Miguel Garnica has a different story about how he became involved in the culinary arts. It started as a child in Ft. Lauderdale at his home. His Mother worked late, so when Miguel finished school each afternoon, he would arrive home and prepare dinner for sister, mother and himself. This was what kick-started his love for preparing food. It was the adoration and satisfaction of seeing his sister and mother enjoying what he had prepared for them. Come Experience All the Wonderful Dishes and Read about him and Seaside Bistro on page 30.

ur cover story this month is about a local, family owned and operated restaurant. A family that has been in the business for

generations and are very proud to be a part of our local restaurant community. Fil’s Italian Pizzeria opened in October 2010 with Filippo and his mother Filippa Vaglica running this quaint Italian restaurant in Port Orange. Brothers Rocky and Joey also help out at various times. Fil’s Father was from Brooklyn and his Mother, from Italy, met in Brooklyn. His Father was in the restaurant business there. Together they raised their children in the restaurant business in Florida. It became a family tradition. Most people from the area remember the Whistle Stop Italian Restaurant in Edgewater, Florida. A very popular Italian restaurant for many years before Fil’s father passed away. Fil’s Sister, Caterina Tiano and her husband Vittorio also have an Italian restaurant in New Smyrna Beach named Tiano’s. There are aunts, uncles and cousins, all restaurant owners across the country as well. The

rich history of the Vaglica family adds quality and authenticity to the fine offerings of Fil’s. Most

all of the recipes are from family members, that have been handed down over time.

All tried, true and authentic Italian recipes. Some of the finest pizza’s

in our area comes from Fil’s, with a reputation as “The

Best Brooklyn Style Pizza in Town!“ But, that

is not all that you will find there.

There are tasty treats like Pepperoni Rolls, Calzone, Pasta Combos, Linguine with White or Red Clam Sauce, Chicken Marsala, Veal Parmigiana, the list goes on and on. All of the ingredients they use, are the finest, freshest, hand selected that they can find in our area. Many of the ingredients are imported from Italy. Fil’s Mother, given a little advance notice, will even prepare one of your own family recipes if you don’t find it on their menu. She will accommodate almost every request if you have the recipe or can give her a description of what it is you desire. They have a variety of homemade desserts that are wonderful too. Tiramisu, Cannoli, Italian Rum Cake, New York Style Cheesecake, all delightful. They serve Coffee, Tea, Sodas, Beer and Wine for your personal enjoyment. The pictures that adorn the walls throughout the dining areas were donated for display by spectators and families of racers that came to the events held there. The memorabilia is like a museum. There are replica race cars on display as well as many racing artifacts. This is just a part of what you get when you visit the “Turn”. CHEF Miguel garnicaSeaside

Bistro Bar

hef Miguel Garnica has a different story about how he became involved in the culinary arts. It started as a child in Ft. Lauderdale at his

home. His Mother worked late, so when Miguel finished school each afternoon, he would arrive home and prepare dinner for sister, mother and himself. This was what kick-started his love for preparing food. It was the adoration and satisfaction of seeing his sister and mother enjoying what he had prepared for them. At age 16, he started working in local restaurants to help out at home. This was also really feeding a passion to be around food and the ways of how an organized kitchen ran. This continued until he was in his early twenty’s. By then, he had worked at almost every level in the back and the front of the restaurants he was employed by. Seeking other interests, and the promise of more money, he left the restaurant business and began working in construction. The home building business was booming in South Florida. He wanted the money that was available to him. But, that didn’t last. The economy plunged, and the construction business all but ceased to exist. Miguel knew of only one other thing he had longed to do, become a chef. It was at that time, he knew, he should have never left the restaurant business. He had worked under some really good chefs, and had a natural talent. He came to Daytona Beach to find work. He started as Sous Chef at the Holiday Inn & Suites Seaside Cafe Restaurant, and worked his way up to Chef. During that time, a new mentor entered his life, Executive Chef Frank Allen. A veteran of eighteen years in the business, Frank recognized the talent and potential that Miguel had. Frank actually was hired at the Holiday Inn & Suites as Food and Beverage Director to create a new and interesting restaurant. He took Chef Miguel under his wings and taught him the ways that had made him successful. While collaborating on a new concept, menus, and design of the Seaside Bistro and Bar. Frank and Miguel still performed the day to day tasks of operating room service, banquets, breakfast, lunch and dinner services for the Holiday Inn & Suites. The task of creating Seaside Bistro and Bar was completed, with Chef

Miguel at the helm. Of the many things that Frank saw in Miguel, number 1, was his dedication to perfection. He strives to make sure every dinner that leaves the kitchen is the very best it can be. He uses the highest quality, freshest ingredients available. The concept of the restaurant, was to bring high end dining to middle America vacation budgets. The guests could enjoy great food at affordable prices with good sized portions. All the while dining at a wonderful Ocean Front setting. The affordable prices, combined with great food and an atmosphere like this, can only mean one thing. Success! The Early Bird Special is a perfect example. While dining on the dinner of your choice, you are served one glass of their fine house wines. You can choose from Merlot, White Zinfandel, Cabernet or Chardonnay. All of this for only $15.00 ! The regular menu is just as exciting. You can select from many wonderful entrees. They have a Bistro Surf and Turf. Char-broiled top sirloin and 1/2 baked stuffed Maine Lobster with Lemon and Butter, just $22.00 ! They have a 14 oz. T-Bone Steak with Crispy onion straws only $15.00 ! Or try the Pecan Crusted Haddock, a cold water Haddock filet prepared golden brown, encrusted with pecans only $15.00. All of these are served with your choice of Mashed potato’s or rice pilaf and their fresh vegetable of the day. You can add a dinner salad or small Caesar to any entree for only $2.50. ClanCy’s CANTINA301 Flagler Ave. •New Smyrna Beach • (386) 428.4500

This months bartender we love is Nita Heustess from Clancy’s Cantina in New Smyrna Beach. Originally from Atlanta, Nita moved her fourteen years ago. Eleven of which has been right here at Clancy’s. She loves tending bar. She claims “ Everyday is different” that is what makes her happy. She started as a cocktail waitress 25 years ago and worked her way up to Bartender. She has a great following, everyone loves her at Clancy’s. One of her passions in life, is her love of animals. A house favorite drink, and one of Nita’s favorites is the Mexican Godfather. Here is how you can try one at home. Start with a shaker mixing tin and a 12 oz. glass with ice. add 11/2 oz. of Jose Cuervo Gold Tequila, 1/2 oz of Amaretto, add a splash of Orange Juice and top off with your favorite sour mix. You can rim the glass with salt or sugar for varying tastes and garnish with an orange or lime slice. Pour over the rocks and enjoy. Better yet, stop by Clancy’s Cantina and have Nita make you one. You will be glad you did. By the way, Clancy’s has great Mexican food too!
