Welcome to the Veggie Guide to Leicester 2015Leicester is a hot-bed of vegetarian food! The city has over 60 vegetarian cafés, restaurants and shops. The first vegetarian cafe, The Good Earth, opened in 1965, and continues to be popular today! Due to the large Hindu and Sikh population in Leicester, many of the vegetarian restaurants are meat, fish and egg free, and all have vegan options. There are also numerous vegetarian-friendly and vegan-friendly cafés and restaurants across the city and county, a selection of which are listed here. Since the 2013 edition we have seen a rise in the number of restaurants improving their vegetarian and vegan options or even having a separate vegan menus
Leicester may well be the VEGGIE CAPITAL OF EUROPE!
The restaurants are mostly located in the city centre and along Narborough Road and Belgrave Road, whilst the location of shops ranges across the whole of Leicester. This guide also includes establishments across Leicestershire, with some fantastic vegan-friendly restaurants and pubs in the countryside.

Veganism is the abstinence of animal products, for food, clothes and beauty products. People choose veganism for animal welfare reasons, its health-benefits, to lessen their environmental impact.
Founder of the Vegan Society, Donald Watson, lived at 67 Evesham Road in Leicester in the 1930s and 40s and was the secretary of Leicester Vegetarian Society. In 1944 the society held a meeting at Gaby Robert’s house in Knighton, where Watson suggested forming a new society, and coined the word “vegan”, created from the first and last letters of vegetarian. And thus, the Vegan Society was formed in Leicester, in November, 1944.- 67 Evesham Road, where veganism started
The family tradition of caring for animals continues to this day. Sue Daniels, daughter of Gaby Roberts has been a lifelong campaigner, and founded the Leicestershire Vegetarian and Vegan Group in 2001.
Primarily a social group, with an interest in vegetarian and vegan food, its members also raise thousands of pounds every year for animal charities. Sue says “For every person who becomes vegetarian or vegan more animals are saved from suffering.”

Crunchy on the outside with a creamy chocolate ganache joining the cookies in the middle.
Once a month, vegans, vegetarians and the vegan-curious get together to share new recipes, cookbooks and culinary discoveries at the Vegan Recipe Club - Leicester.
I brought these cookies to the last meeting... They quickly disappeared.
Cookies:
100g/½ cup (packed) ground roasted hazelnuts 55g/¼ cup soft brown sugar 55g/¼ cup granulated sugar 60ml/¼ cup neutral oil (rapeseed/ sunflower) 30ml/2 tablespoons cold water 1.5g/¼ teaspoon salt 5g/1 teaspoon baking powder
Preheat oven to 180°C/350°F/gas mark 6. Line baking sheets with baking paper. In a medium sized mixing bowl, measure the oil and water then add the sugars and salt. Stir energetically with a fork until the sugar starts dissolving and the mixture becomes smooth and glossy (2 minutes).
Mix the nuts in, then sieve the flour and baking powder and stir in until no dry flour is visible.
I Use a round teaspoon-sized measuring spoon to make half-round, cookie shapes, and arrange on a baking tray a couple of cm apart. Alternatively, using a teaspoon of the mixture, gently form a ball, then slightly flatten and place on the tray.
Bake for approximately 15 minutes until lightly browned. Remove from oven to cool, then sandwich them using ganache.
Ganache filling:
90g/¼ cup dark chocolate chips or chopped bar chocolate 60ml/ ¼ cup non-dairy milk (coconut/soya both work well) 5ml/1 teaspoon vanilla extract
In a saucepan, heat milk until barely simmering. Remove from heat and add chocolate. Stir gently until smooth, add vanilla and continue to stir for another minute to help bring down temperature.
Once the ganache has cooled, scoop out approximately 1>4 a teaspoonful and roll the mixture into a ball and then squash it between two cookies to give an even filling.
Leave the cookies to set for about half an hour, then enjoy!
