It has green apple, lemon, guava, and grass aromas. A crisp acidity at the beginning turns into a warm, buttery mouthfeel with notes of honey. WINEMAKING The Viognier is harvested at night and pressed in the field to ensure limited skin contact. The lots were fermented at Pedernales Cellars in stainless steel at 55F and finished at 13.1% alcohol. A small portion of the wine was allowed to undergo malo- lactic fermentation to add mouth-feel and complexity. Before bottling the wine was fined and then filtered through plate and frame. VINEYARDS The grapes for our Texas Viognier come from the Bingham Vineyards of the Texas High Plains. This vineyard has been a key part of the Pedernales winemaking program from the beginning and provides many of the best premium grapes from the High Plains of Texas. VINTAGE After years of challenges, Mother Nature finally smiled upon the high plains. Weather was ideal with rain at ideal times and even sun to help ripen the grapes to their full potential.
