Ingredients for the Olive Salad2 cups pitted olives, coarsely chopped (try a blend of gourmet olives such as Kalamata, Nicoise and Italian olives)1/4 cup finely diced red onion2 tbsp. celery, finely diced (about ½ stalk)1/2 cup roasted red pepper strips, coarsely diced1/4 cup Meijer olive oil1 clove garlic, minced (or 1/8 tsp. McCormick garlic powder)2 tbsp. red wine vinegar1/2 tsp. fresh ground black pepper (or to taste)Optional: 2 tbsp. grated parmesan cheese

Ingredients for the Sandwich1 large loaf Meijer deli focaccia, halved lengthwise, cut into quarters (Italian or Sourdough bread may be substituted)6 oz. smoked ham, thinly sliced (or Prosciutto)6 oz. hard salami, thinly sliced6 oz. mortadella, thinly sliced (optional)6 oz. provolone cheeseLeaf lettuce Garnish with pickled pepperoncini

Instructions

Combine olives, onion, celery, red pepper, garlic, olive oil and vinegar in a small bowl. Stir to combine. Add pepper (seasoning to taste) and optional parmesan cheese and stir to mix well. If bread is thick, remove some of the doughy insides. Place bread slices down face up and spoon half of olive mixture onto bottom half of bread. Layer meat and cheese onto bottom half of bread and then top with remaining bread. Wrap sandwich in plastic and allow to chill for one hour before serving. Add leaf lettuce and pepperoncini (if desired). Slice into desired portions and serve.
