    Data evaluation for soft drink quality

    control using principal component

    analysis and back-propagation neural

    networks.

    This work describes an alternative for chemical data

    research, with the aim of evaluating nished product

    quality. Analytical data for additives in soft drinks are

    interpreted by the use of multivariate data analysis

    principal component analysis !"#A$, factor analysis,

    cluster analysis, and articial neural networks. Taking into

    account various chemical components like sorbic, ben%oic,and ascorbic acids& saccharose& ca'eine& (a, ), #a, *g,

    +e, n, #u, ", and , soft drinks were characteri%ed and

    classied. The ratios of (a, ), #a *g, ", and )/(a have

    been studied. The application of "#A, cluster analysis, and

    articial neural networks showed that combination of

    these chemometric tools o'ers e'ective means for

    modeling and classifying soft drinks in accordance with

    their contents in additives and heavy metals.

    important, since otherwise the sample can quickly block

    the electrolyte bridge, leading to inaccurate results. The

    +DA has determined that that the levels of ben%ene foundin beverages to date do not pose a safety concern for

    consumers. +DA continues to test beverage samples forthe presence of ben%ene.

    *ost soft drinks are acidic in nature and e0posure tothese drinks may result in enamel erosion. This studysought to measure the p8 of 6I commercial brands of softdrinks, the dissolution of enamel resulting from immersionin these drinks, and the in2uence of p8 on enamel loss.#omparison of the erosive potential of cola versus non-cola drinks as well as regular sugared and diet versions ofthe same brands was undertaken. The p8 was measuredimmediately after opening the soft drink can. =namelslices obtained from freshly e0tracted teeth were

    immersed in the soft drinks and weighed at baseline andafter N, 6H, and HO hours of immersion. (on-cola drinkshad signicantly higher p8 values than cola drinks butshowed higher mean percent weight loss. y contrast,sugared versions of the cola and non-cola drinks showedsignicantly lower p8 values and higher mean percentweight loss than their diet counterparts. The p8 value ofthe soft drink did not have a signicant in2uence on themean percent weight loss !r P -I.6O$. "rolonged e0posure

    to soft drinks can lead to signicant enamel loss. (on-coladrinks are more erosive than cola drinks. :ugared versionsof cola and non-cola drinks proved to be more erosivethan their diet counterparts. The erosive potential of thesoft drinks was not related to their p8 value.

    Testing the p8 of :oft Drinks

    9n physical science, students are often asked toidentify a substance as an acid or a base through a litmus

    test. A litmus strip turns faded violet when dipped in aneutral liquid, pink when dipped in an acidic liquid, andblue when dipped in a basic liquid. Although a litmus testis useful to identify acids and bases, it does not give ane0act measurement of the p8 of a substance. To obtain anumerical value for p8, students can use a probeconnected to a graphing calculator or computer as part ofa hands-on investigation of something all students canidentify withsoft drinks.

    ?hat is p8Qp8 is a unit of measure that is used to e0pressthe degree of acidity of a substance. The p8notation is an inde0 of hydrogen1s chemicalactivity or its potential in a solution. The p8scale goes from I to MH, with a p8 of Lconsidered neutral. A substance with a p8 belowL is considered acid, and one with a p8 above Lis considered basic !alkaline$.

    The p8 of a solution can be measured with a p8meter with an electrode system whose voltageoutput is proportional to the active acid !8R5$concentration in solution. Distilled water has ap8of about L. Tap water varies between a p8 of N.Oand L.6 and is generally slightly alkaline in hardwater areas !Soyce 6IIR$.

    of what is involved in using this technology in theclassroom. This activity can be accomplished using avariety of probe ware connected to a laptop, desktop, or"DA. The activity can easily be adapted to whateverhardware you have on hand.

    Testing the p8 level of soft drinks.

    9n this activity, you will predict the p8 of severalsoft drinks. @ou will then use a probe and

    graphing calculator to determine the actual p8 of each soft drink and compare the results to yourpredictions. @ou will then come up with your ownquestion to investigate about the p8 of softdrinks.
