WHO WE ARE

08 13MARINE CORPS COMMUNITY SERVICES // IWAKUNI, JAPAN

I would like to star t this month’s commentary by informing the community that we will have a disruption of service in the Library from November 2, through the end of December. MCCS will be completely renovating the library with new fixtures, carpets, painting and materials. I really dislike closing a facility but in this case there is no other option with the extent of renovations required.

November is the perhaps the most notable month for our community because it was during this month in 1775 that the United States Marine Corps was founded. If you are a Marine, you know that the biggest celebration of the year is the Marine Corps Ball, where along with your brothers and sisters you will honor the traditions and legacy of the Corps. Locally, MCCS Iwakuni is busy preparing to ensure that our community enjoys a celebration they will never forget. From the beauty exper ts at Head to Toe Beauty Salon to the staf f at Starch and Stripes, we are giving our best to help you and your dates look their best.

While we celebrate the Marine Corps Bir thday this month, it is equally important that we pause and reflect on another important holiday. Veterans Day is recognized annually on November 11 and originated as Armistice Day, honoring the end of World War I which formally ended at the 11th hour of the 11th day of the 11th month in 1918. Our nation and our community are filled with Veterans that have served our country in all armed forces and we know first hand about the contributions and sacrifices Veterans have done for our country.

Speaking of holidays, we can’t forget about your stomach’s favorite—Thanksgiving. The Single Marine Program will be hosting a football-themed Thanksgiving feast and feeding our single and unaccompanied servicemembers. Club Iwakuni is available for take-out Thanksgiving meals and will also host a scrumptious buffet. If you’re hosting dinner at your home, why not invite a servicemember to join your family? It’s hard being away from families this time of year and they really enjoy sharing a meal with you.

As the holidays approach, let our MCCS professionals help you find the balance between indulging at celebrations to maintaining a physical fitness standard. Some strategies for keeping fit are: joining a holiday run/walk, at tending a Group Fitness class or commuting to work with your own two feet. Hiking is a great way to burn calories and Outdoor Recreation has maps to many locations within the region that feature great courses and spectacular fall colors.

Fall is one of the most beautiful seasons in Japan. Whether you hike it, walk it or photograph it, make sure you get outside and see it with your friends or family. Let’s all enjoy the star t of the holiday season and remember to look out for each other. Happy Holidays!

How to make Okonomiyaki

1. First pour the batter on Teppan (iron griddles), and then make a thin circle. You can purchase oko-nomiyaki mix at any grocery store. Look for the Japanese characters

お好み焼き粉 and a photo of okonomiyaki on the front of the bag.

2. Put a heap of sliced cabbage on the batter, and then place beansprouts, thin-sliced pork, Tenkasu (crunchy bits of cook-ing Tempura dough), and other toppings.

3. Cook it thoroughly over time, then turn it over with a big spatula and cook for a little more.

4. Meanwhile, fry noodles on the side, and then put them on the Okonomiyaki.

5. Crack an egg onto the Teppan and make it in the same circu-lar size of Okonomiyaki. Put the Okonomiyaki on the egg. Apply spe-cial sauce called Okonomi sauce on the Okonomiyaki. The sauce has a sweet and sour, thick characteristic flavor and is made of concentrated vegetables and fruits. At the end, add seasonings, Aonori (dried sea-weed), Katsuobushi (small pieces of sliced, dried, bonito that looks like it is dancing when used as a topping), Negi (green onion) and Shoga (Red ginger) as toppings.

Have you tried Okonomiyaki yet? Usually, it is called a Japanese pancake but it is not sweet like a pancake. It contains a variety of ingredients like meat and many vegetables. Okonomiyaki is a well-known dish throughout Japan, and there are two main types that are named after the places where it is claimed as a local soul food. Osaka style is distinct because all of the ingre-dients are mixed, whereas Hiroshima style has all of the ingredients in different layers, (similar to a crepe), and includes noodles as one of the ingredients. The name is derived from the word okonomi, meaning "what you like" or "what you want," so you can pick your favorite ingredients from the menu. Yaki means "grilled" or "cooked” and you might recognize it from eating yakiniku and yakisoba.

Let’s talk about Hiroshima style to begin. There are more than two thousand (two thousand!) Okonomiyaki restaurants in Hiroshima. Iwakuni is close to Hiroshima, so you can see many Hiroshima style restaurants in this area, too. Basic Hiroshima Okonomiyaki contains a heap of cabbage, noodles, thin-sliced pork, and eggs. You can add optional ingredients such as sea-sonal seafood or other toppings to make your Okonomiyaki. They include seafood such as Hiroshima oysters, (seasonal), scallops, squid, shrimp, or cheese which add a rich and thick flavor. It's also tempting to add Mochi (rice cakes), or extra Negi (green onion) as a topping. There are a lot of ingredients available for you to choose from.

Hiroshima Okonomiyaki is loved by the locals so you can order it as a take-out or even buy it at a grocery deli. But if you want to experi-ence Hiroshima’s food culture, Okonomimura is an essential place to visit. Okonomimura, or Okonomiyaki Village, is a building in downtown Hiroshima which has over 25 Okonomiyaki res-taurants. The origin was a group of street stands

that opened at the center of the city after World War II. Now it has become one of Hiroshima’s top sightseeing spots.

When you go into an okonomiyaki restaurant, there is a counter you can sit at in front of the Okonomiyaki master chef cooking with an iron griddle called Teppan. You can experience the process of learning how to make Okonomiyaki; it is extremely fun to see! Of course, you can also choose to have a seat at a regular table away from the heat. When you look around in a restaurant, you will see people using spatulas to cut and eat Okonomiyaki. Once you master using the spatula, you will be a real Hiroshima Okonomiyaki lover.

Never feel guilty about indulging in Okonomiyaki! First, it makes you feel full be-cause it contains various ingredients. It is a well-balanced, healthy food. Cabbage is especially nutritious since it includes minerals, vitamins, protein, calcium and dietary fiber which aid in digestion and the absorption of nutrients.

If or when you become an Okonomiyaki lover, how about trying to cook it yourself? The MCCS Cultural Adaptation Program offers an Okonomiyaki Museum trip on December 18. The museum is located in an Okonomi sauce factory where we will experience mak-ing Okonomiyaki using Teppan (professional iron griddles). After that, we will visit a Momiji Manju factory. Momiji Manju is a Hiroshima’s specialty souvenir cake that is shaped like a Maple (Momiji) leaf. It’s a good dessert after lunch!

Please check the Cultural Adaptation section in this issue for more information or stop by the Library.

COMMUNITY ARTICLE

Since 1987, I have been wood working as a hobby in my spare time. I was previously stationed at MCAS New River and unfortunately, that Wood Hobby closed down due to lack of participation and funds. One of the first things I discovered when I moved to MCAS Iwakuni was that there is a fully stocked Wood Hobby shop here! It has been great getting back into wood working again.

What separates Iwakuni’s Wood Hobby Shop from the others that I have been to is that they have different monthly sessions that teach you how to make different projects. Whether you are a novice or a pro, I guarantee that they can show you something new. The staff can teach you how to make something as big as a table or something smaller like a one-of-a-kind wooden pen from exotic woods. They have a variety of jigs and can teach you how to cut woods into different shapes to accomplish any project.

If you’re a seasoned wood worker, the staff can still help you out. They are great for exchanging ideas and suggest-ing safety approaches to your new projects. Because I at-tempt to never do the same project twice, and I prefer to

make one-of-a-kind gifts, I often seek help from them. Other Marines

who are wood hobby enthusiasts are also inspiring and I get ideas from watching them working on their projects. That inspiration motivates me to build even more unique pieces.

Since I have moved here I have made many gifts: Plaques with katana swords, shadow boxes, custom wooden pens; designs using wood burning techniques, paddles; and wooden replicas of different bullets and bombs. It gives me great pleasure and pride to see how happy and sur-prised people are when they see a small idea they gave me come to life that they can in turn give as a gift.

As Marines, we work so hard giving blood, sweat and tears for the Country and Corps. I want to make sure those Marines know that what they did counted; and every time they look at their gift, they are reminded of that. When people at their next duty station ask where they got that custom gift from, they can share their story. The Wood Hobby Shop helps me make that happen.

One of the coolest things I have been able to do at the Wood Hobby Shop was take my wife and son. After they took the (free!) mandatory safety class, I was able to show them what they could make with wood by using all the ma-chines. It is truly all up to their imagination, skill level and

patience. They have since created their own spe-cial gifts to keep and to share with family and friends, and so can you.

DO IT YOURSELF

Wood Hobby has a free safety class that is mandatory before you may begin taking classes or utilizing the facility. No registration is required, just drop in.

Safety classes are held Wednesdays 5-6 PM and Saturdays Noon - 1PM

The UNITED STATES MARINE CORPS Birthday

Some people spend an entire lifetime wondering if they made a difference in the world. But, the Marines don't have that problem.

Ronald Reagan, President of the United States

On November 10, Marines around the globe, both deployed and at home, will unanimously celebrate the birth of the Marine Corps. Since 1921, the Birthday has been an official Marine Corps holiday. Since then, culture and tradition have resonated through the years with formal balls and pageantry that honor the legacy of Marines past, present and future. This month, the brothers and sisters of the Corps will continue that tradition, and locally,

MCAS Iwakuni Marines will celebrate at the Marine Corps Ball on November 19, 20 and 21.

To celebrate the Marine Corps’ 240th Birthday, Marines from our community have shared anecdotes of their service. Although their experiences are unique, they are part of the same story. That story is the what it is to be a United States Marine. Semper Fidelis.

The Spirit of Outstanding Leadership, Bravery, and Honor

CWO2 Vivian Boone, OIC IMB/OMB IPAC, Iwakuni

Every Marine has their story of why they joined the Marine Corps, and mine is pretty common. I was a 17-year-old junior attending Anacostia High School in southeast Washington DC when the Marine Corps recruiter approached me. I was not particularly intrigued by the Dress Blues they wore or convinced after a session of choosing which benefits tags meant the most to me. I joined simply because the Marine Corps recruiter was the first to approach me.

I swore into the Delayed Entry Program in the summer of my junior year and shipped to recruit training within a week of graduating high school in 2003. My upbringing is definitely not that of a fairytale, and because of this I used the Marine Corps as an escape from having to conform to the norm of my environment. Upon joining, I had a bit of a rough start, but I eventually adapted from fighting against the organiza-tion to figuring out how to make this new way of life work for me.

I am indebted to the Marine Corps for placing effective leaders in my life that substituted for what I lacked in my upbringing. I have built a strong sense of confidence, high self-esteem, and I’ve learned how to set positive goals and achieve positive results. I continue to serve because I know that there are many that can relate to my story. This is one of the traits that makes our organization unique—the fact that we are composed of a plethora of backgrounds, and yet we are still able to come together and flourish as America’s finest.

As an organization, we celebrate the birthday of the Marine Corps with a birthday ball at duty stations and posts around the world. The birth of the Marine Corps is still very signifi-cant to me even after 12 years of serving because it is a con-stant reminder for me to continually strive to be like those that have carried the torch before me. I may not ever be able to live up to the legacy of General Lejeune or Gunnery Sergeant Basilone, but I will ensure that I continue in their spirit of outstanding leadership, bravery, and honor. Our birthday serves as a time to reflect on our time-honored core values of honor, courage, and commitment as well as show appreciation of the roads paved by our predecessors, allowing us to wear proudly this uniform today.

A Story of Perseverance

SSgt Durham, Robert, USMC

In 2000, I left my tri-color cammies behind, accepted my entry-level separation and left Parris Island a civilian rather than a Marine. After 168 days as a recruit, I fled the cloistered culture of the Marine Corps as a failure. I didn’t even have a high school diploma. On training day 48 I suffered a severe ankle sprain and fractures, which doctors determined, was too severe to heal properly.

Every day afterward was spent in regret of not finishing what I started. The impressionable 19-year-old me tried to find a job. I ended up as a mall cop, only to move up as loss prevention for Macy’s. From there I worked as a hospital dispatcher, security guard and even as a funeral director’s assistant. I spent 9/11 working at the local humane society. Eventually, I landed a job with Indiana Department of Corrections as a correctional officer. I even became part of the K-9 unit and emergency response team.

The title “Officer Durham” still didn’t sound right to me. I really could not stand the fact I never earned the title of “Marine.”

Fueled by stubbornness, patriotism and ignorance, I tried many times to get back in the Corps. Finally, I found a motivated staff sergeant, fresh out of recruiter’s school. By some miracle, he was able to convince his commanding officer that a 25-year-old with a prior entry-level separa-tion and a G.E.D. should get another shot.

I left for recruit training at MCRD San Diego a month later. I tread care-fully this time, trying to avoid ankle-breaking holes. I graduated as a Marine on Aug. 12, 2015.

My first trip to boot camp started on Oct. 18, 1999. I spent six years of my life just trying to become a Marine. I take the title very seriously, and loathe those that don’t. I take my role in the Corps as a staff noncommis-sioned officer seriously, but just feel lucky to be called “Marine” at all.

By working hard and trying to become a good Marine; I have found in return that the Corps provides for me. I have stepped up and out from my low-income trailer park roots and now provide for a family of four. The Marine Corps has given me everything I have today, I will try to do my best and give all I have for it.

I Wanted More, So I Enlisted in the Corps

Sgt Henson, Matthew J, H&HS ATC

Prior to the enlisting into the Marine Corps, I was a Deputy Sheriff for the Cleveland County Sheriff’s Department. During my tenure at there I always felt that I could be doing more. After discussing the idea with my wife, I made the decision to enlist. I have been in now going on eight years. Being a Marine has opened my eyes to numer-ous things.

Over these years, I have learned to trust the individuals to my left and right and to be more open to constructive criticism. I have learned that not one person or section within a specified unit is more important than another. Mission accomplishment has more than just one moving part. The Marine Corps has given me the op-portunity to further my education as well. I am currently working on finishing up my Bachelor’s Degree in Psychology. Learning is continuous and with my life experience, I continuously try to share this knowledge with Junior Marines in hopes that they will be able to carry away something valuable that will help them later in their lives.

The Marine Corps has changed me as a whole, in general, it has changed my perception of people, it has given me the opportunity to give back through volunteer events, and it has given my family and me opportunities to travel to places that we would have never had the opportunity to outside the Marine Corps.

I ended up as a mall cop, only to move up as loss prevention for Macy’s. From there I worked as a hos-pital dispatcher, security guard and even as a funeral director’s assistant. I spent 9/11 working at the local humane society. Eventually, I landed a job with Indiana Department of Corrections as a correctional officer. I even be-came part of the K-9 unit and emergency response team.

By some miracle, he was able to convince his command-ing officer that a 25-year-old with a prior entry-level separation and a G.E.D. should get another shot.

I left for recruit training at MCRD San Diego a month later. I tread carefully this time, trying to avoid ankle-breaking holes. I graduated as a Marine on Aug. 12, 2005.

My first trip to boot camp started on Oct. 18, 1999. I spent six years of my life just trying to become a Marine. I take the title very seriously and loathe those that don’t. I take my role in the Corps as a staff noncommissioned of-ficer seriously, but just feel lucky to be called “Marine” at all.

By working hard and trying to become a good Marine; I have found in return that the Corps provides for me. I have stepped up and out from my low-income trailer park roots and now provide for a family of four. The Marine Corps has given me everything I have today; I will try to do my best and give all I have for it.

How Serving Has Shaped Me

Sgt. Rubio, Antonio J., Public Affairs Press Chief

Everyone has a reason for doing something. I enlisted into the Marine Corps because military members are abundant in my family.

My last three years in the Marine Corps, as a combat correspondent, has been a roller coaster of experiences, from living in the austere environment of Tinian without running water to living the good life at Osan Air Force Base, Korea, during a training exercise. As the reporter with each training exercise, I was always the lone wolf. To better explain the feeling, it’s damn near like being that new kid in high school who just transferred and can’t find a place to fit in. You wander from group to group seeing who you’d best get along with. The only difference is that I am a Marine, and through many experi-ences, my confidence has drastically improved. Living in the gym has also helped.

On top of that, I haven’t seen another organization whose bond is tighter than the Marine Corps’. The friendships forged out of pain, misery, love and laughter last a lifetime and friends soon become family. My confidence in myself, in my Marines and my Corps, is what continues to drive me, and with the support of my family and my God, I feel invincible. I don’t know how long I will stay in the Corps, but what I do know is that the organization has done more for me than I could have ever imagined it would.

Participating In The Tradition

SSgt. Puma, Jeremaih, MALS-12

The Marine Corps Birthday with the celebration, camaraderie, and ceremony is a representation of hundreds of years of history, pride, tradition, and heritage. It’s a time set aside for all of us as Marines to get together, build camaraderie, and reflect on our long shared history. We have the pageant with Marines and Sailors dressed in all the uniforms we’ve worn during different periods in our history, with narrative to remind us what we have done and where we came from. The reading of Major General Lejeune’s Birthday Message ordering that all commands will read it every year, commemorating the birthday of the Corps, and the annual message from the cur-rent Commandant. The Birthday cake being given to the oldest then youngest Marines present symbolizing the passing down of experi-ence and responsibility for the Corps from the old to the new.

I have had the opportunity to participate in several Birthday Balls over the years as a part of the sword detail, and color guard, marching the American and Marine Corps flags into the ceremony. Attending the Birthday Ball as a Marine has always filled me with a deep sense of pride, knowing that I am a part of something bigger and better than myself along with all of the other Marines. I enjoy the camaraderie and celebration of our history, everyone dressed up in our Dress Blue Uniform with medals and ribbons, all of us shar-ing the pride we have in being a part of the Marine Corps.

Here’s to Us and Those Who Want to Be Us

GySgt King, Douglas R., Squadron GySgt MALS-12

The Marine Corps is full of people that do not fit the stereo-typical Marine type A personality. We come from all walks of life, single parent families, broken homes, and even perfect homes. Regardless of where we come from, by the time we hit that mythical place we call “the fleet,” there is something in all of us that will never leave. That something is a seed that was planted long ago from a movie, a poster, a family mem-ber, or just a wanting to belong to something greater. Over time that seed roots itself in the heart of that young man or woman and turns them into something most will never truly understand.

We run to the aid of those in need without the thought of our safety. We love those close to us and call them our broth-ers and sisters even though we only met them in boot camp, MCT, or at our first duty station. We say kill after almost ev-erything we say. We build that bond because of one thing, a title that took “only” 3 months to be branded as a United States Marine. A title that not even death himself can take from us.

We all have our reasons for joining this “gun club” we call the Marine Corps. Some good, some on a whim, and for some the choice was made for them. The reasons why shouldn’t mat-ter in the long run What matters is what you do with the op-portunity you have to lead and mentor your replacement to carry on the traditions that make our beloved Corps what it is.

Every year for one night we celebrate our Marine Corps birthday to do just that. We keep our traditions alive by teaching every new “boot” what it means to be a Marine. On that night anywhere in the world, you will not find a better-dressed man or woman than a Marine in dress blues. Just ask the husbands, wives, girlfriends, aunts, uncles, or even grandmothers of that Marine and they will agree. I’m just saying.

I’m pretty sure there are some statistics out there can prove everything that I said is true and will hold true for the next 100 years to come. If that’s not enough, just ask that 18-year-old kid that’s about to turn down a full ride to that community college in his hometown to become one of “us”.

We ain't the prettiest or the smartest, but we are the one thing that makes up for both. We are United States Marines. Here’s to us and those who want to be us.

Oh yeah almost forgot … Kill!

GO “HOME” FOR THE HOLIDAYSit M

What fond memories do you have of Thanksgiving? Are you picturing images of family gatherings in the home and around the table? A lot of us will say they recall the aroma of Mom’s turkey or ham, the taste of stuffing, or a sweet potato pie aroma lin-gering pleasantly until evening around the home. Alternatively, maybe you can hear joyous laughter of everyone catching up on life events and the background sounds of a football game on T.V. These are just a few of the fond memories that many mentions when asked to recall Thanksgiving back home in the States.

For the single and unaccompanied service-members stationed here at MCAS Iwakuni, who may not be returning home to cel-ebrate Thanksgiving this year, the Single Marine Program (SMP) is a place to come to relax and feel at home during the holidays. The day before Thanksgiving, the Hornet’s Nest and Marine Lounge will serve a large spread of delicious food to celebrate the holiday and give thanks.

This year’s party theme will be the “Pre- Thanksgiving Turkey Bowl”. The SMP Hornet’s Nest will be decorated in a football theme and single, and unaccompanied ser-vicemembers are encouraged to sport their favorite team’s jersey. They will also be able to participate in football-themed games/competitions for a chance to win great priz-es while enjoying the company of old and new friends. If you’re single or unaccom-panied, come celebrate, kick back in the

lounge and eat until you're stuffed. The SMP will serve fried chicken, cranberry sauce, mashed potatoes, greens, and desserts. As the SMP Coordinator puts it,

“all these goodies you will eat up and on the couch you will wind up”

The SMP Marine Lounge, located on the South Side of the installation in Crossroads, will host a Movie Marathon for those want-ing just to relax and enjoy movies with friends while enjoying the array of delicious food and desserts being served. The sched-uled events are free of charge and will begin at 5 PM at both locations.

SMP’s goal for this event, and events throughout the year, is to create a fun, “home-like” environment and experiences for all the Single and Unaccompanied Servicemembers who visit the facility. The SMP Hornet’s Nest is open 24/7 which al-lows patrons the opportunity to come in and feel at home any time of the year. Both locations provide free use of Wi-Fi, comput-ers, movie room, T.V.s, and recliners, game room, pool tables, air hockey, gaming sys-tems as well as contests, tournaments and special events. The Hornet’s Nest has a full facility gym including a locker room and a dry sauna. The SMP wants patrons to know that we want them to feel at home when they are here.

There are plenty of options for single and unaccompanied servicemembers this Thanksgiving. Take a trip with ITT, get a group together and grill a bird at the bar-racks or get your fill at Club Iwakuni’s Thanksgiving Buffet. However, if you’re looking for that comfortable, homey feel-ing, we’ll have a plate for you at SMP.
