LETTER FROM THE PRESIDENT CULINARY EVENTSRESERVATIONS

Twice in the last few months I've mentioned making reservations in my letters, but it is such an important topic that I'm dedicating a good portion of my letter specifically to it this month.

For those of you who have visited the Clubhouse in the last few months you've probably noticed something… we're growing! In January we focused ourselves on creating a strong marketing committee, and we've been making an aggressive push to get our name out there and to raise the awareness of our hospitality operation ~ which in turns raises the awareness of our cultural offerings.

I'm pleased to say that our efforts are working, and I think that our year-to-date financials are a great indication of that success. Through the end of May we're positive for 2011 and we're $27,935 ahead of where we were at this time last year. But with our success comes something new for our Members. We're selling out some of our events, and we're having to turn people away. Thus the point of this letter, making reservations.

Some recent examples: at our May entertainment Cena we had over 90 guests. Each of our Regional Cenas this year has sold out, and we have turned people away from each. Our recent Festa della Repubblica Celebration sold out several days in advance and we had turn off our online reservation system early. Even then we still turned many people away from it. The counter side to this is events such as Mother's Day, which I mentioned last month. I still have people expressing to me their dissatisfaction at our decision to cancel it. I even had my own mother in NY express to me her unhappiness with that decision, and she wasn't even coming! For as much as we hated to cancel the Mother’s Day Brunch, those are the hard business decisions we must make in order for the Club to be financially stable, and when we have no reservations just 2 days before, we have to make tough decisions like that.

Aside from our regular weekly events such as Cena and Pasta Night (which we're energizing for the summer ~ see related article), I personally review reservations for each event scheduled each week. We then make one of two decisions ~ we market the heck out of them or we cancel them. And once we decide to keep them, we then need to judge labor scheduling and food ordering in order to provide a quality experience for everyone attending.

I'm asking you, our Membership, to please help us out. If you're planning to attend an event, please make a reservation (and more than a day or two in advance) so we know you're coming. You can book them online or you can simply call Vito or Angelo at the Club and tell them. If you help us, we can provide a better experience for you.

In closing this month I wish to offer my personal Thank You and Congratulations to Chef Tommaso. Tommaso put up with me for over a month as we perfected our recipe for Spiedies which were entered in the Taste Addison Competition. I'm very pleased to announce that the Italian Club of Dallas was the winner of the 2011 Taste Addison ~ People's Choice Award as voted by the public! We'll be doing a strong marketing push on this which will in turn drive more traffic to the Club ~ and which further adds to my request that you make reservations!

UPDATES TO ICD LANGUAGE PROGRAM “LINKS OF LOVE” CCA GOLF TOURNAMENT

HONORING ITALIAN SOLDIERS MEMBER NEWS

Lisa Marie Gala, a lifetime member of the ICD, graduated with honors receiving her MBA from Stephen's College in Columbia, Missouri on May 7.

Lynne Barnard toured Italy with four granddaughters and her daughter accompanying her. Two granddaughters graduated from high school. The trip included visits to Rome, Siena and Sorrento. This was Lynne's third trip to Italy. We can't wait to hear all about it!

With warmest condolences, we pray for MaryAnn Webster and her family for the loss of her aunt Nelly (Caffau) Johnson. She died on May 13 at 84 years of age. She was born in Trieste, Italy but settled in Rockwall, Texas. She courageously fought lung cancer for 3 1/2 years. Our hearts go out to you in your time of sorrow.

LENTILS WITH SPECKLENTICCHIE CON LO SPECK

Lentils work quite nicely with many cuts of pork, so it comes as no surprise that they're a natural with speck as well.

This recipe will serve 4.

Ingredients:• 5 ounces (125 g) speck, finely diced• A medium onion, thinly sliced into rings• 1 1/2 tablespoons flour• 1 1/8 pounds (500 g) lentils• 1 tablespoon lard• 2 tablespoons vinegar• 1 bay leaf• Salt, pepper, and a sprig of marjoram

Preparation:Check the label on your package of lentils to see how long they should soak. Once you have soaked them rinse them, and then boil them in abundant lightly salted water to which you have added a bay leaf. When the lentils are almost done, sauté the lard in a pot with the flour, vinegar, and a little water, seasoning the mixture with salt, pepper, and marjoram, and stirring it about lest it stick and burn; in the meantime gently sauté the speck and the onions in a skillet. Drain the lentils and gently stir them into the lard mixture; transfer the lentils to a serving dish and sprinkle them with the speck and the onions.

As the capacity crowd settled into their seats to enjoy a gourmet Italian meal as well as the wine provided courtesy of Giacomo Butera and Margaux & Associates, the volume of the laughter steadily grew, the visits table-to-table became more and more frequent, and the scene took on the feel of a large Italian family party ~ because that is really what it was! Never was that more evident than when Soprano Marsha Anderson and Tenor Ron Montgomery took center stage to perform three Italian duets, including the “Brindisi” from Verdi's “La Traviata.” As a finale, the duo began singing “Va Pensiero,” a tribute to Verdi's symbolic significance to the Unification and the unofficial Italian anthem. The crowd of diners heartily joined in, making it a rousing chorus of voices paying tribute to Italy. When the dessert cake was being cut, Marsha and Ron were called on again to lead everyone in a spontaneous rendition of “Tanti Auguri a Te” (“Happy Birthday”) to the country we all love so much. As the hour grew late and the evening was drawing to a close, no one wanted to be the first one to say “arrivederci.” (Some stayed talking into the early morning!) But only when the party ends can we start thinking about the 2012 celebration of Italy's national holidays!
