my favorite fruit of all time. Let’s givethree cheers for pineapple! Regarded as atropical plant, it’s no surprise that pineap-ple is a beloved fruit of our island home;however, Southeast Asia actually domi-nates world production with Thailand andthe Philippines leading the pack.

Pineapple may be consumed fresh,canned or juiced and is spotlighted in awide variety of cuisine. Its refreshinglysweet and tangy taste is like no other, andthe mere thought of it makes my mouthwater. So instead of fantasizing about this“perfect” fruit, in my opinion, why notpick up where we left off and devour aplethora of pineapple delights at the fol-lowing Ono, You Know establishments.

Eggs ‘n ThingsBreakfast fanatics know that Eggs ‘n

Things is ono at any time of the day ornight. Located in the heart of Waikiki onSaratoga Road with a second “eggspress”location on Kalakaua Avenue, thisrenowned eatery is on top of its game withits mouth-watering spread that draws incrowds of kamaaina and tourists alike.

And perfecting the art of pineapple,general manager Michael Skedeleskiwasted no time captivating my appetitewith exhilarating entrees that present anideal balance of both tangy and sweet.

“We actually use a lot of pineapple inour dishes, and we always try to use MauiGold pineapple — always keeping itlocal,” Skedeleski explains. We usepineapple in our salad dressings and werecently started offering Pineapple PorkChop with a pineapple glaze. Touristsreally appreciate the addition of pineapple

to a classic dish such as pork chops.”However, this week, I just had to pay

tribute to one dish especially, which hasbeen on the menu since the restaurant’sinception in 1974. Enter Eggs ‘n Things’Pineapple Sour Cream Crepe ($11.95),featuring three gigantic crepes filled to thebrim with the best pairing on earth: sourcream and freshly diced pineapples. Theseone-of-a-kind crepes have a bit of a kick,but according to Skedeleski, “it’s a simpleclassic that’s available morning and night.Some may be hesitant about the sourcream, but it’s actually very good.”

“Jon, Sean and I were night owls beforewe founded Kissaten, and we’d always beout late at night and had crazy schedules,”

Taba recalls. “We wanted a place wherewe could go to get coffee or food — we’dalways run on coffee and a 24-hourlifestyle — and there’s many people likeus who want coffee or crave a certain foodat 2 a.m.

“Kissaten is a night-to-day concept aswell,” she adds. “It’s a coffee shop duringthe day and it turns into a hangout atnight. We cater to every craving at anytime of the day. We have a good businessprofessional following, and it’s a greatplace for families and seniors.”

With a fusion of cuisine sprawled outon its ever-expanding menu, Kissatenoffers comfort food with a gourmet twist,encompassing Japanese, Italian andFrench culinary influences derived fromthe creative mind of Ishimi. Depending onthe time of day, Kissaten features break-fast (6-11 a.m.), lunch (11 a.m.-9 p.m.),dinner (11 a.m.-9 p.m.) and late-night (9p.m.-6 a.m.) menu options to satisfy agrumbling stomach.

“We come up with new items everymonth or two. We usually start off withspecials and if they do well, then we addthem on to our regular menus,” Tabaexplains. “Heading into summer, we’recoming up with a lot more specials. Forexample, our Panko Crusted Dijon

has exhibited an affinity for Kissaten’sFrittata ($7) — an open-faced omelettecomprised of egg whites, fresh cherrytomatoes, spinach and goat cheese gar-nished with organic mesculin andParmesan cheese — and HomemadeGranola with Berries ($5, $4 withoutberries) — served with a glass of milk. Ofcourse, you would lack the completeKissaten experience without sampling afew of the restaurant’s best coffee and teaconcoctions. No refrigerated mocha frap-puccinos here — everything is made freshto order, including Matcha Tea Latte andCaramella ($3.50 small, $4 medium,$4.50 large, served either hot or iced).

“We go through a local vendor for ourcoffee and we offer a full menu of coffees— anything you would typically find atyour usual coffee shop,” Taba says,adding, “We offer coffee specials as well.Currently, we're working on a bacon-fla-vored coffee and a new signature latte.”

Always on the edge of innovation, Tabasays, Kissaten is the premier choice fordiners who wish to attain a quick powerlunch, complete with free Wi-Fi with pur-chase. Wasting no time, the restaurant’sdiligent staff can whip up lunchtimefavorites, such as Southwest ChickenSalad ($8), which features a brilliantmedley of romaine lettuce, diced redonions, corn, cherry tomatoes and bakedchicken breast, drizzled with ranch dress-ing and barbecue sauce, and finished offwith a sprinkle of crushed corn chips.

“This is one of our most popular sal-ads,” Taba states. “It started off as a spe-cial and then it gained quite a following,so we decided to add it to the regularmenu, and it’s actually overtaking someof our older items.”

Then make yourself at home onKissaten’s comfy couch and cozy up toTomato Bisque in a Bread Bowl ($7). Theeatery’s most famous soup is available

during lunch and dinner, and boastsextravagant flavors derived from a tomatoonion garlic bisque topped with freshchives, Parmesan cheese and Brazil oil.

The exemplary cuisine continues oninto the night as the restaurant picks upwith its late-night crowd. As the rest ofthe world sleeps, some patrons are insteadgravitating toward best-selling optionsfrom Kissaten’s late-night menu.

“Our Pho Noodle Soup ($7) is onlyoffered on our late-night menu, and it’s

made from our own recipe,” Taba says.The night gets even sweeter with

Homemade Bread Pudding ($3) adornedwith cranberries, raisins and a heavenlysugar glaze. Absolutely divine.

“It’s crazy running a 24-hour business,but between Jon, Sean and myself we’vefigured out a good schedule. We hope toexpand and continue to bring in new cus-tomers,” Taba says.

Lumphai Denson,who opened ThaiTown Cafe a month

ago, is taking her lifetimeof experience in thekitchen and putting ittoward her very ownauthentic Thai restaurant.After moving to Hawaii inNovember of 1990,Denson worked in threeother Thai establishmentsbefore opening her currentKalihi-based venture withthe help of her son,Suriyon O’Neal.

Together, the pair presentdishes reminiscent of

Denson’s hometown:Phetchabun, a northernprovince of Thailand. It wasthere, at the tender age of 9,that Denson began to pickup her basic cooking skills.“I learned from my mom,she was a food vendor inPhetchabun,” says Denson.

Ever since, she’s perfect-ed the recipes that hermother originally taughther, such as Chuchee Pla($8.75; $22, small wholefish; $25, medium wholefish). Denson’s take ondeep-fried fish fillets gen-erously covered in a tradi-tional sweet chili sauce. “Iknow this recipe from

Thailand, but I make myown special sauce — theingredients are different.”The resulting flavor is rich,with a slight resemblanceto sweet-and-sour sauce.

Denson also makes localThai favorites that shepicked up along the way.Her Crab Fried Rice($8.50) combines crabmeat, egg, onion, tomatoesand a house special saucewith stir-fried rice. “Frommy experience, I see thatmost people like crab,” saysDenson when explainingher inspiration for the dish.

Shabu-shabu is a big hit, and forgood reason. Besides the fact thatit’s just so much fun to say, shabu-

shabu, which translates to “swish-swish” (more fun), also is enjoyable toeat, as you get to "swish" your food ina pot, cooking it right at the table.

It’s similar to the Chinese hot pot,but according to Shabu Shabu Housesupervisor Grant Murata, they are def-initely not the same.

"I wish people wouldn’t call it ‘hot

pot,’” he says. “We have real Japanese-style shabu-shabu."

The difference? A hot pot is filledwith broth, while Japanese shabu-shabu uses water with a bit of konbu(seaweed) for flavor, which helps bringout the clean, fresh flavors of the food.

But if there’s one thing about shabu-shabu that non-meat eaters have a beefwith, it’s exactly that — beef is usuallythe star, with vegetables taking onmore of a supporting role.

If you think vegetablesdeserve the spotlight andmeat should exit thestage altogether, atShabu Shabu House youcan immerse yourself(and an assortment of veg-gies) in shabu-shabu with theVegetable Shabu Shabu set ($11.95 forlunch, $15.95 for dinner). It’s a rain-bow of fresh vegetables — onions,peppers, cauliflower, broccoli, sweetpotato, kabocha squash and more,depending on the season — as well asudon, tofu and rice. Although some ofthe dipping sauces do contain hondashi, which is fish-based, ShabuShabu House accommodates non-meateaters with its ginger sauce, which is asimple shoyu, vinegar and ginger mix.Many customers also enjoy grateddiakon mixed with shoyu, and flavor-ful sesame oil also is available to add asplash of flavor.

For the final act, by the time allthose vitamin-rich veggies are finishedswimming, the water is transformedinto a healthy broth for the udon, to topoff your meal with a satisfied slurp.

Fukuya Delicatessen & Catering is a family-run business that was started in 1939 byJihei and Tsuya Takayama. Today, Fukuya is

run by the founders’ great-grandson, ArrisonIwahiro, who spent much of his youthlearning the trade from his parentsand grandparents.

“I just hung around (the restaurant)when my grandparents were runningthe place,” he says. “And then when myparents were doing it, I was aroundmore often.

“It was just a two-person operationwhen (my great-grandparents) started,”Iwahiro says. “At first it was basicallyjust to serve the nearby workers, butthen as it went on, the restaurant got alittle busier, and we went into catering.”

Fukuya began its catering operationsby mainly providing food to weddingparties, expanding over time to include a wide range of events. Just asit has beefed up its catering repertoire over the years, the menu hasexpanded as well.

“We realized that we do have to move with the times, so we haveadded more modern-day type of things as well,” Iwahiro says. He explainsthat some of these more modern-style dishes include Garlic Chicken($2.20), Mochiko Chicken ($2) and Ahi Burgers ($1.90).

But longtime regulars have no need to worry — the longtime favorite dish-es are still around, too.

“Some of the things have changed a little, but in general, we try to keep itkind of that more old-fashioned style,” says Iwahiro.

Who or what inspires you as owner of Ert’sGrill? I really like to cook. Getting complimentsfrom people and my customers is what reallypushes me forward and inspires me. My brotherRobert, “Ert,” who I named the restaurant after,was my biggest fan and told me early on that I wasa great cook.

What is your favorite dish on the menu?Why? My favorite dish is definitely SmokedMeat. It takes a lot of time and effort to make itwell, I have to hone it. The end result is a perfectbalance of a little sweet, a little salty and a smokyflavor.

What is your favorite ingredient to workwith? Why? Garlic. It’s the natural flavor thatspices up all dishes in many different ways. Itenhances and brings out flavors in most dishes.

Is there a dish that you create that’s not on yourmenu, but available upon request? We have a specialsauce that some people know about. It’s like a tartarsauce with an Oriental flavor. We serve it on our PulehuChicken Sandwich and Shrimp and Chips. People alsorequest it to put on our cheeseburgers, steak, fries andanything you can think of!

ince October 1961, Rainbow Drive-In hasprovided some of the best plate lunchesat reasonable prices to Hawaii’s locals.

Now, more than 50 years later, long lunch linesand numerous takeout orders are a continuedsign of customer satisfaction.

“Our peak times are from 11 a.m. to 1 p.m. (forlunch), and at night, it’s from 5 to 7:30 p.m.,” saysexecutive general manager Lance Shimabuku.

While Rainbow Drive-In has been more popularamong locals in previous years — and continues todraw a large local clientele — Shimabuku says thatmore customers from the Mainland have visited theeatery since last year.

“We have a lot of surfers and locals, but after wedid a segment on Diners, Drive-Ins and Dives lastyear on Food Network, we’ve been having a lot ofMainland visitors,” he confirms.

Rainbow Drive-In is well known for its goodfood, friendly serviceand reasonable prices,according to Shimabuku.Indeed, plate lunchesrange from $6 to $8.25,including Mahi Mahiwith tartar sauce ($8.25),BBQ Steak ($7.25), Beefor Pork Cutlet with Gravy($7.25) and Chili DogPlate ($6.75). Items on thebreakfast menu — such asSweet Bread French Toast ($5.50) and Corned BeefHash with Gravy and Egg ($5.50) — are priced at$5.50 or less. Besides the entrée, all plate lunchescome with two scoops of rice and one scoop of mac-aroni salad or coleslaw.

When it comes to Rainbow Drive-In’s signaturedishes, Shimabuku is quick to name Loco MocoPlate ($7), Mix Plate ($7.75) — comprising

Barbecue Steak, Mahi andBoneless Chicken — andBoneless Chicken with Gravy($7). However, many of the other menu items arecustomer favorites, such as the renowned Chili,which is sold by bucket ($18.50) or is available inChili Rice or Chili Cracker Bowl ($3) options.

“Our Bento ($7.50) — which consists of ourBoneless Chicken, BBQ Steak, Spam and rice withfurikake — is popular,” Shimabuku says. “So is our

Chili Dog Boat ($4.25) — it’s a hot dog with ourfamous chili on it. Our Loco Moco Bowl ($3.95) —which consists of one scoop of rice, one hamburger,one egg and gravy — also is popular. It’s a mini ver-sion of our Loco Moco Plate ($7); the egg is cookedany way you decide.”

With summer just around the corner, Shimabukuanticipates numerous orders of the eatery’s popularSlush drinks (regular $1.75, large $1.85).

“Summer’s going to be really hot and it’s such arefreshing drink; it’s a sure way to beat the tropical heat!”

In addition to the plate lunches on its daily menu,Rainbow Drive-In also offers customers a variety ofspecials that are only served on certain days. Forexample, Roast Pork with Gravy ($7) is only servedSundays, Wednesdays and Fridays, while ShoyuChicken ($6.50) is served Mondays, Wednesdays,Fridays and Saturdays. Other specials include PorkLong Rice ($6.25) — served on Mondays andFridays — and Spaghetti with Weiner ($6.25) andChopped Steak with Vegetables ($6.75), both of

which are served Tuesdays and Thursdays. The end of June marks a one-

weekend-only special at RainbowDrive-In, according to owner JimGusukuma.

“We’re teaming up with 50th StatePoultry on the last week-end of June —June 30-July1,” he states.“(We’ll beserving) a rotis-

serie, huli huli-style chickenonly for that weekend. We’regoing to sell plates for $7 andwe’ll be selling the chicken(itself) for $5.”
