When planning a vacation desti-nation, Italy always tops mylist. Why? Its simple: Italia isimmaculate in every sense of the word, from its amazing history and architectureto its majestic scenery, pristine beaches, passionate people, beautiful language, andout-of-this-world culinary masterpieces.Indeed, Italia is molto bella!
And dont even get me started on thepasta! First and foremost, Im addicted topasta. Call me carb crazy because I am.Everyone knows that Italy is the pastacapital of the world. Pasta reigns here, andfor good reason. Pasta is Italys pride andjoy, and some of the best youll ever findon the planet.
Yet, when I cant be whisked away toItaly (a girl can dream, right?), being thepasta fool that I am, Ill devour any plateof pasta that is placed before me. And boy,was I craving oodles of noodles this week!
So, in pursuit of the perfect pasta, myappetite and I were ready to tackle someof the best Ono, You Know pasta entreesright here at home. Be it rich and creamy,or meaty and savory, pasta is the definite, sure fire way to my heart! It was love at
first bite!
Il Lupino Trattoria& Wine Bar
Its evident thatItalians are masters attransforming simple, everyday ingredientsinto dishes that arequick, healthy andundoubtedly deli-
cious. And here at Il Lupino Trattoria &Wine Bar at Royal Hawaiian Center inWaikiki, globally revered executive chefNicola Sayada prepares a plethora of dish-es all made from scratch, thus bringingabout a culinary landscape revolution thatultimately turns Italian classics on theirheads, while utilizing essential elements
found in Italian cuisine. With five-star ambitions at affordable
prices, this sleek and modern eatery sitsin a relaxing, sophisticated environment, featuring indoor and alfresco bar and din-ing, an open kitchen and a salumeria. And as the first to bring the Italian tradi-tion of salumeria to Hawaii, Il Lupinooffers prosciutto, salami, and other curedmeats and Italian cheeses carved fresh atthe diners request.
The menu here is diverse, offeringantipasti, soups, salads, brick oven-bakedthin crust pizza, pasta, and chicken, beef, fish and pork entrees, to name a few.Sayada also effortlessly creates haunting-ly beautiful renditions of traditional anddelectable pasta, be it PenneallArrabbiata, which for $16 featurespenne with spicy tomato and garlic sauceserved with basil and pecorino, orLinguine alle Vongole ($19), offeringseafood lovers linguine with fresh clamsserved in your choice of garlic (bianco) ortomato (rosso) sauce. And while all areremarkably delicious, my premier pick ofthe bunch has to be Il Lupino's Tagliatelleai Tartufi ($18).
This edible work of art features al denteTagliatelle imported from Italy doused ina citrus cream sauce made with shallotsand a dash of white wine and lemon zest. Its then garnished with fresh asparagusspears, a special black truffle puree and ahint of white truffle oil. What I love mostabout this pasta dish is that it gives off arich, creamy flavor that is intense, but notoverpowering in the least. Perfect forspringtime, Tagliatelle ai Tartufi is a must-try and I guarantee that itll leave youcraving more.
A mecca of all things Italia awaits din-ers at Il Lupino Trattoria & Wine Barwhere fine dining meets casual ambiance.

The Easter egg hunt is a veryexciting tradition that we have here, says Camilla Carboni, sales/on-linemarketing coordinator for the resort.Everyone runs out and searches foreggs. We have two Easter bunniesthat will greet our guests and takephotos with them.
There also will be opportunities towin prizes, because in some of theeggs are little tags to win differentofferings such as gift baskets andnight stays at the resort theres ahuge selection of prizes, she adds. Were expecting close to 250 peopleto show up for the Easter egg hunt.
Once all the eggs are accounted for, guests will continue to celebrate thejoy of Easter at Surf LanaiRestaurant. Easter brunch will beserved from 10 a.m. to 2 p.m. and ispriced at $88 for adults and $53 forchildren ages 6 to 12. (Children ages5 and under eat for free with a payingadult.)
Executive chef Hans Stierli hascreated an alluring brunch buffet, andplans to captivate tastebuds with an array ofupscale cuisine.
The Easter Brunch isall about the freshest cui-sine, Stierli says. Thebuffet is reflective of thediversity of our kitchenand different cultureshere in Hawaii. We try touse local ingredientswhenever possible.
Carboni adds, This isthe first year that ourEaster Brunch is beingheld at Surf LanaiRestaurant, and we reallywant to give that ocean-view experience. Its alittle more casual thisyear, but very family-ori-ented. The buffet is a mixof Western, Asian and
Island-inspired cuisine. The buffet offers something for
everyone, including stations foromelets and eggs, waffles and soups. And breakfast entrees run the gamut, spotlighting morning favorites suchas Eggs Benedict, Canadian Baconand Hollandaise, Crispy Bacon,Banger Sausage and Bacon OnionRosti.
I really think the abundance ofthe seafood is really impressive,

Some of the best dishes atKit n Kitchen are not evenfound on the menu. Thegood news is that you dont haveto be a FOK (friend of Kit) to getthe special treatment, you justhave to ask. Thats pretty muchhow Volcano Stone GrilledGarlic Seafood Butter Rice($14.95) came about.
A long time diner was looking
for something different and KitYiu, the talented owner and chef, created the dish on the spot.Three years later it remains apopular dish even though it doesnot appear on the menu. Goodthing too, because the pile ofcrispy rice, shrimp and musselsis outstanding. Served on a siz-zling 500-degree stone andmixed with a butter tomato sauce
and a touch of garlic, the creamyappetizer is as tasty as it is visu-ally appealing.
Another guest-created optionis Stone Grilled Ribeye Steak($20.95). The steak plate hasbeen on the menu for quite sometime, but guests have found thetender cuts of steak, onion, greenbell peppers and enoki mush-rooms are perfect for sharing. The sides of garlic shoyu andchimichurri-dipping sauces pro-vide an additional depth of fla-vor, which adds to the enjoymentwithout covering the natural fla-vors of the steak.
Regular diners at theUniversity Avenue eatery wouldlikely riot if Calamari StuffedRisotto ($9.95) was taken off themenu. Dont worry, its not goinganywhere. The large calamaripocket is stuffed with a fresh andlight tomato rice sauce thatsomehow seems to get betterwith each bite.
Need more options? Try
Garlic Butter Shrimp ($9.95).Sweet shrimp is fried in a garlicbutter sauce and served on top ofFrench bread garlic toast. Yum!
If you cant make it into Kit nKitchen during regular lunch anddinner hours, the Owls menumay be a good option. Servedfrom 9 p.m. to midnight, the spe-cial menu offers lunch, brunch, late night and breakfast itemssuch as Eggs Benedict ($8.95),Steak and Eggs ($11.95), pizza, grilled panini sandwiches, andeven Kung Fu Soup Noodles($8.95) that comes with twotypes of broth, four noodleoptions and 16 available sidesranging from Portuguese sausageto fish ball and beef tongue.
Kit n Kitchen even offers freedelivery options. Call 942-7622for more information.

Ilove bread and pastries, and have been told thatFendu Boulangerie has thebest croissants on this Island. So, I finally made the visit tothe European-style bakery inManoa Marketplace, and con-cur its just perfect andtotally worth the drive fromany part of the Island.
But Fendu Boulangerieoffers more than just tastycroissants. Theres a greatassortment of breakfast pas-tries, breads, tea pastries, cookies, muffins, biscuits, aline of desserts, pizza, aswell as panini and deli-stylesandwiches.
Chocolate croissant is oneof the most popular items, butyou also have to try LemonMeringue Pie ($5.25) featur-ing an almond sugar doughbase, and a filling that is across between sabayon sauceand lemon curd. We blendsabayon with it, so it gives it anice texture, explainschef/owner Niel Koep. Andwere using Sicilian lemons.
Chocolate lovers will wantto try the signature ValrhonaBittersweet Chocolate Dome($5.75) with Grand Marniercreme brulee in the middle, alayer of chocolate chunk andmacadamia nut sponge cakeon the bottom, and moussemade with ValrhonaChocolate on the outside. Andstarting today, Koep has added
a new menu item Garlicand Herb Chicken TenderloinPizza with Anaheim ChiliPeppers ($17.25 for 14-inch,$10.50 for 8-inch).
A popular place in themorning for those on theirway to work or school, Koepalso plans to add some break-
fast sandwiches to the menuwithin the next few months. And just in time for Easter, hell be making some bunnyand egg-shaped treats.
We do not add any chemi-cals, and no hydrogenatedshortening, adds Koep, whois from New Jersey andmoved to Hawaii in 1990.Everything is all natural. Weuse olive oil, vegetable oil orbutter only.

Spring is in the air, and Imnot talking hopping bun-nies or the delicious scent
of tropical flowers intoxicat-ing the sidewalks. Im talkingabout the bountiful yield ofperfectly ripe fruit in my FruitBowl ($7.30) at IHOP on
Kuhio Avenue. Its a volup-tuous, eye-catching medley ofjuicy orange, red and yellowhunks cantaloupe, water-melon, pineapple, red grapes each mouthful gushingwith flavor.
The fruit is seasonal, saysgeneral manager DavidBagood. We tend to switchbetween watermelon and hon-eydew.
Though stacks of pancakes
on neighboring plates catchmy eye, Im on a hunt formenu items IHOP offers thatare meatless, fish-less andeggless. The treats I find alsohappen to be among therestaurants SIMPLE & FITselection, which features dish-es that are under 600 calories.
I notice Bagoods not cring-ing at my finicky request foringredient checks on variousdishes. He says he eats just
about everything, but when hehas no qualms admitting hesenjoyed eating vegan food, Ifeel immediately at ease.
Next comes the House Salad($4.85): just what youdexpect, with chunks of iceberglettuce, slices of tomato andonion, topped with croutonsand reduced-fat Italian dress-ing. Bagood notes that cus-tomers generally order thesalad or the fruit bowl with anentree. But Im at the pleasant-ly satisfied stage and I evenopt to take half of the fruitsalad to-go. The best part isthat between the fruit (130calories) and the salad (50),Ive enjoyed a filling mealwith no guilt.
Whats life without a littleguilt? I look out the window at
vacationers streaming by onthis sunny afternoon and thenback at the enticing photos onthe menus drink selectionpage, and decide to enjoy a lit-tle vacation of my own. Outcomes an Iced Mocha ($4.25)from the freshly brewed coffeeselection, which also offersVanilla or Original. It comeswith free refills, points outBagood. Thats the cherry onmy happy spring day!

Cant get enough of Kennys specials
By Ali Resich
Its no secret that Kennys is every-bodys favorite local-style diner, serv-ing up the best in American classicsand local creations. You may not know, however, that popular demand inspiredKennys to take some of its most request-ed daily specials and make them availablemultiple days a week.
Prime Rib Au Jus ($16.99, regular cut;$20.99 Kennys cut), for example, is anunbeatable meal consisting of succulentlyjuicy prime rib served au jus with a side ofhorseradish. The eaterys newest souschef, James Drewery, says the secret tothe dishs success is a slow cookingprocess that does justice to the premiumcut of meat. The hefty slab is now avail-able Friday through Sunday (while sup-plies last).
Drewery, who moved to the Islandsfrom Virginia, perfected another dailyspecial: Kennys Hawaiian Plate ($17.99).The comforting compilation includes laulau, kalua pig, chicken long rice, sweetpotato, lomi lomi salmon, haupia and riceor poi.
I really enjoy this restaurant, and (staff
members) teach me their way of cooking, which is phenomenal. Everyone has theirspecialty, everyone participates, he says.
The chefs new talents have caught on,as Kennys Hawaiian Plate is now servedThursday through Sunday. If you prefersmaller combinations, Lau Lau Plate($14.99) and Kalua Pig Plate ($14.99),accompanied by all the same fixings, alsoare available.
Rest assured, you can spend the entireweekend feasting on Kennys unstoppablespecials.

As two customers walk intoShochan one late afternoon lastweek, they are immediately greet-ed by the restaurants friendly staff andafter they place their order, owner andhead chef Shinji Yamamoto gets to work.He pours batter onto the stove and seasonsit with bonito powder while it cooks.Next, he fries up a mixture of noodles, bean sprouts, pork and cabbage beforebriskly cracking and frying an egg. In onefluid motion, he expertly joins all of theingredients together, then adds a sweetbrown sauce on top of the egg.
Yamamoto is making Shochans signa-ture dish Okonomiyaki HiroshimaStyle ($7.80). This healthy dish is popularin Japan, but seems to be hard to find herein the Islands. With Shochan, okonomiya-ki enthusiasts are in luck. The restaurantoffers authentic, tasty okonomiyaki, aswell as a number of other flavorful dishes.
In addition to Hiroshima-style, therestaurant also offers Kansai-styleokonomiyaki with Pork ($7.80), Squid($10.80) or Shrimp ($10.80).
Shochan opened its Kapahulu eatery inFebruary for lunch, and started servingdinner as well last month. Previously,Shochan had been located on UniversityAvenue since 2007. Fans of the previouslocation can still find their old favorites atthe new location, along with a number ofadded menu items.
New menu items include two categoriesof tasty treats: Teppanyaki and Kushiage.Teppanyaki dishes include Pork ($9),Beef ($10), Chicken ($8) and Scallop
($12). For lunch, which is served from11:30 a.m. to 5 p.m., certain Teppanyakiitems are offered as a set with pupu, riceand miso soup. Kushiage (which manypeople order as appetizers) optionsinclude Pumpkin ($1), Enoki Mushroomwith Bacon ($1.50), Okra with Cheese($1.50), Pork Loin ($2), Shrimp withShiso ($2) and Tarako ($2.50).
Shochan also offers pupu options suchas Yaki Edamame ($3) and FriedChicken ($6).
Yamamoto says that in addition tookonomiyaki, oden is another popularmenu item. Oden contains various ingre-dients bathed in a flavorful broth, and din-ers can pick the items they want.
Shochans oden offerings include ItoKonnyaku ($1), Konnyaku ($1), Egg ($1),Rice Cake ($2), Fried Tofu ($2) andTendon ($2).
Another added feature at the new loca-tion is an open stove top at the back of thedining room where customers canwatch in awe as Yamamoto works.
We wanted customers to be able to seeand enjoy how we cook our food,Yamamoto explains.
The restaurant currently is in theprocess of obtaining its liquor license.
Contact Christina OConnor at [email protected]
If youve never tried okonomiyaki, there is no bet-ter place to start than Shochan. After all, therestaurant brings the authentic tastes of theJapanese dish right to its kitchen.
Owner and head chef Shinji Yamamoto grew up cooking okonomiyaki.Yamamoto explains that in Hiroshima, there are hundreds, maybe eventhousands of okonomiyaki restaurants. Among those eateries is oneowned by his grandmother-in-law.
When he came to the Islands, Yamamoto noticed there werent anyrestaurants serving okonomiyaki the way his grandmother-in-law makes it.
There are many Kansai-style okonomiyaki restaurants in the UnitedStates, but there are no Hiroshima-style okonomiyaki restaurants,Yamamoto says. So I wanted to be the first one.
We pretty much took the store from Hiroshima and brought it here,Yamamoto says. Its the same atmosphere you will feel like yourein Hiroshima.
Many of Shochan's ingredi-ents are imported from Japan including the tastyokonomiyaki sauce.
Plus, Yamamoto says that withall of its vegetables such asbean sprouts and a heaping pile ofcabbage Hiroshima-styleokonomiyaki is very healthy.
We just want everybody to knowabout okonomiyaki and enjoy it,Yamamoto says.

Lung Fung managerEddie Ma likes to sepa-rate his restaurant fromthe typical and traditional chopsuey-style restaurants.Although decorated in tradi-tional Chinese dcor, LungFung is always recreating itsmenu to become a more pro-gressive and, more important-ly, healthier eatery for Chinesecuisine lovers.
We are constantly updatingthe cooking style to match howthey are cooking in Chinatoday. We are more than a chopsuey house. That style was pop-ular 20 years ago, says Ma.
Located outside of the hub-bub of Honolulu in AinaHaina, Lung Fung has a loyal, residential fan base, and seeingeach returning guest motivatesMa to continue to match andimprove each dish that passes
through the kitchen.Seeing the same cus-
tomers gives me more energyto continue to do better.
Because they are so loyal, itmakes me feel I have to con-tinue to do better for them, says Ma, who has been man-
aging the restaurant for morethan a decade.
For his new and returningguests, Ma has just launched apromotion, which includes anorder of Honey Glazed WalnutShrimp ($6.99) when youorder an entree at regularprice. A perfect starter dish,Honey Glazed Walnut Shrimpfeatures hearty selections ofshrimp coated in dry flour andquickly fried. The fried shrimpare then served over toastedhoney glazed walnuts.
Lung Fung also knows howto cook with garlic, as itsCrispy Garlic Shrimp is verypopular, as well as Spicy WonTon with Garlic.

ono,youknow
since he came on board in 2005 when therestaurant first opened.
Gigantic portions are signature here, sobe sure to come hungry. With so much tochoose from, including lasagna, pizza andflatbread, or fresh pasta, selecting anentree can be a grueling task for an inde-cisive diner like myself. Yet, the fact that Isimply adore pasta makes narrowingdown my choices all the easier.
Carmelas Chicken Rigatoni ($16) is aclassic, according to Longworth, whosays its been on the menu since the verybeginning.
We can never take Carmelas Chickenoff the menu, or I think well be in trou-ble. This dish features pieces of roastedchicken, fresh rigatoni imported fromItaly, sweet caramelized onions andmushrooms, and its topped with amarsala cream sauce, he explains.
And for a twist on your typical pastadish, opt for Pasta Carbonara ($16).
Dinner is served, as this heavenly dishlures in your appetite with morsels ofpancetta, sprinkles of parmesan and apoached egg atop a bed of fresh spaghettialla chitarra.
At first people are a little hesitantabout this dish, but for the most part itsbeen well received, Longworth says. When you cut into the egg, it just oozesinto the pasta and it makes it very deli-cious. Once people try it, they love it.

Zippys RestaurantsLast, but not least, a tribute to pasta
wouldnt be complete without taking thetime to highlight one of my top-rankedcomfort foods Zippys famousspaghetti! As far as local dining goes, itsclear that Zippy's is legendary. ZippysRestaurants has been an iconic landmarkin Hawaii since 1966 when foundersCharlie and Francis Higa opened thedoors to the first eatery in McCully. Sincethen, Zippys has become a part ofHawaiis ohana with 24 locations on Oahuand one in Kahului, Maui.
The Spaghetti with Meat Sauce isone of the top-selling items here, saysJay Crisologo, creative specialist forZippys Restaurants.
Spaghetti with Meat Sauce is priced at$7.15 (fast food counter) and $8.15(restaurant), and is served with an irre-sistible slice of garlic bread. Really, noth-ing is quite as satisfying to the tummywhen its simple classics that youre in
pursuit of just like mom used to make.Another spaghetti variety that Zippys
offers its pasta-loving patrons isSpaghetti with Chili ($7.15 fast foodcounter, $8.15 restaurant). Served with aside of garlic bread, Spaghetti with Chiliis just another way to enjoy one ofZippy's signature items.
Zippys chili is served in many ways, and a lot of people like to eat it overspaghetti, Crisologo explains. Whathasnt changed much about our chili is therecipe its generally stayed the samesince 1966.
Prices are slightly higher at Ala Moana,Pearlridge and Kahului locations, butHawaiis foodies are crazy about Zippys. When hunger strikes I know where mynext stop will be!

Atlantis Seafood & Steak, located in the heart ofWaikiki, serves up morethan exceptional and fresh foodfor its customers. All thoseemployed at the restaurant takecustomer service seriously andaim to provide each patron withthe best dining experience possi-ble.
Dining Out recently foundAustralia natives Ella Reid, andAnnie and Debra Geaney spend-ing part of their Hawaiian vaca-tion enjoying dinner at therestaurant. They were allimpressed with the decor, serv-ice and, of course, the food.
Our waiter was outstanding. He was very attentive, but notoverbearing, Ella said. We werevery happy. I would give themfour-and-a-half out of five stars.
Annie agreed and added thatthe chairs were extremely comfy.
Atlantis Seafood & Steak hasimpressed these Aussies andmade their stay in the Islands amemorable and enjoyable one.
Ella Reid: Everything was
divine. The New England ClamChowder ($5.95) had the rightamount of seafood, and it was agood portion. I had the FiletMignon Neptune ($29.95), andit was well-cooked and well-seasoned.
Annie Geaney: It was one ofthe best meals weve had sincebeing on vacation. I had the
Prime Rib (8 oz.) & Scallops($29.95). The scallops werechunky. It was beautiful.
Debra Geaney: The steak wascooked exactly how we like it. Theyalso served mashed potatoes.Thats what we eat in Australia, and this is the first restaurant thatoffered it as an option.
