“Pork belly is so delicious because ithas a layer of fat over the meat, and youhave to have that fat for the meat to bejuicy,” Linda explains, adding, “A lot ofpeople order pork belly for parties, andwe can prepare it with vegetables or taro,but people must order it a day in advance.The party size costs $38 and can feed atable of 10.”

Yet, if you’re just craving pork belly onany given day, The Mandalay serves upquite a masterpiece.

“It’s a long cooking process,” Lindasays. “Our chefs first season the porkbelly with shoyu and five spice, then theydeep-fry it and then finally roast it.”Lastly, it’s drenched in a sauce comprisedof five spice, shoyu and bean curd.

“Everything is cookedfresh daily,” Fong says.“We specialize inCantonese food, but dooffer Szechuan-style cui-sine as well, which isknown to be a bit spicier,”she adds. “People also canrequest for no MSG.”

Beef Stew Casserole is atraditional Cantonese-styledish cooked in a ceramicbowl and features tender,m e l t - i n - y o u r - m o u t hmorsels of beef, bean curdand mushrooms, seasonedwith five spice, and gar-nished with ginger andonion. Shrimp with HoneyGlazed Walnut is a localChinese classic, and vege-tarians relish BlackMushroom with Tofu and

Choy Sum, which is stir-fried and generouslysplashed with oyster sauceand garlic.

“Currently, our LiveMaine Lobster ($13.99)and Dungeness Crab($25.99) is in highdemand,” Fong states, not-ing that customers canrequest to have it preparedwith salt and pepper sea-soning, ginger and onionsauce, black bean sauce orhave it steamed. “All craband lobster are brought infresh every day.”

And as a way to giveback to its patrons, GoldenDuck is offering three of itsclassic dishes — OysterSauce Chicken CakeNoodle, Chinese ChickenSalad and Crispy Gau Gee(10 pieces) — for a specialprice of $5.99 per dish.

“We cater to familiesand encourage them todine here, and it’s specialslike these that we arehappy to offer,” Fong sayswith a smile.

For dinner parties of 10to 12 individuals, Fongrecommends takingadvantage of the setmenus. With six set menusto choose from, ranging inprice from $168 to $288,

each menu presents youwith a spread highlightingsome of the best in GoldenDuck cuisine. The best-selling menu is priced at$198, and includes a feastof Seafood Tofu orScallop Soup; ChineseChicken Salad; BarbecuePork and Roast DuckPlatter or Peking Duck;Crispy Chicken or HotGinger Chicken; SteamSea Bass Filet or Sweet-and-Sour Sea Bass Filet;Salt and Pepper Shrimp orShrimp Canton;Tenderloin Beef withTwin Mushroom or BlackPepper Tenderloin Beef;House Special ChowMein; Steam Rice; anddessert.

Speaking of dessert,make it a sweet ending atGolden Duck with anassortment of treats hand-made at Fong’s SingCheong Yuan Bakery onMaunakea Street. Almondcookies, mini moon cakes,Chinese pretzels, peanutcandy and macadamia nutcandy round out the farethat will satisfy everysweet tooth.

“Business has beengood, and we couldn’t bemore thankful,” Fong says.

Adega’s taste of Portugal

Adega Portuguesa owner Trigo daSilva came to Hawaii in 2007 tocontinue his career as a journal-

ist. After getting acclimated to theIslands and our diverse cultures, da Silvamade a decision that Honolulu, with arooted Portuguese community, needed tobring more attention to the experience ofhis people and upbringing.

“I am trying to share with them ourculture, our food, our music and lan-guage. On one hand I was missing myfood, and on the other hand I spoke tothese people, some who never have beento Portugal, and they keep saying I amproud to be Portuguese,” says da Silva.

Adega’s menu focuses on many tra-ditional, staple dishes of Portugal. Toget to the heart of a Portuguese menuyou don’t have to look any further thenBacalhau, considered by some to bethe national dish of the country.Bacalhau Adega ($22) is a colorful,flavorful dish centered around a bone-

less filet of salted and seasoned codfish. The cod is topped with red pep-pers, garlic and onions. It is servedwith roasted red potatoes and a heartymix of sauteed vegetables.

No Portuguese meal should go with-out entertainment. Adega has livemusic each night, and this Saturdayrenowned fado singer JosephineCarreira will perform at 8 p.m.“Josephine is a local singer. Wahoo’s Fish Tacohas been reelingin nothing but a

fresh catch since it firstopened at Ward GatewayCenter in 2006. A secondlocation soon followed atKahala Korner, and sistersStephanie Gambetta andNoel Pietsch have noregrets about bringing this“California-Mex” conceptto the Islands.

Wahoo’s Fish Taco is aCalifornia-based chain thatoffers a beachy vibe andstellar cuisine to match.

“Healthy food at a rea-sonable price is what wegive to our customers,”Pietsch says, noting that allfish and meats are grilled,and there are no preserva-tives in any of the food.

Everything is made freshdaily at Wahoo’s, and that’sportrayed in items such asWahoo’s Salad withChicken ($10.55), and No.2 Combo Platter withSpicy Chicken Enchiladaand Fish Taco ($9.95).

And what, you may ask, makesHinone Mizunone so different from allother restaurants of its kind? The rice.

The restaurant uses the sameCalifornia rice like everybody else,but it’s cooked in a special pot —kamadaki gohan style, which is a tra-ditional way of cooking rice.

“Before you walk in there’s a win-dow to the left and you can see uscooking the rice,” says operationsmanager Eiki Tamaki. “We have arice warmer, but we don’t have a ricecooker. We have to time it ourselvesto get the rice exactly how we wantit, and we have to constantly watch itso it doesn’t burn.”

And the Hinoki wood makes a bigdifferent in the taste. “This is the waythey used to cook the rice all the timebefore, and that’s what we’re knownfor,” Tamaki adds.

“When you taste it, you can tastemore of the sweetness,” he says.“And even when they have leftovers,a lot of our customers take it homebecause they microwave it and it stilltastes the same.”

According to Tamaki, HinoneMizunone makes anywhere from 15 to20 orders of rice at a time. “We wantour customers to eat fresh-cooked riceall the time, and we just keep makingthe rice.”

And excellent rice, coupled withtasty entrees, makes for one delicious

teishoku meal. Teishoku sets areserved with rice, miso soup, two sidedishes and pickles.

Broiled Salmon ($10) is deliveredfresh every other day and cut at therestaurant. “It’s regular broiled salmon,but this cut is taken from the salmon wetake sashimi from, so it’s pretty fatty

and it’s good,” Tamaki says.Two types of saba are available at

Hinone Mizunone: Broiled Saba($8.50) and Saba Nitsuke ($8.50).The sauce for the Saba Nitsuke isshoyu-based. “It’s rare to findNitsuke Saba in Hawaii,” Tamakisays. “Many restaurants have miso

saba, but not shoyu-based saba. Ourrestaurant in Japan serves the shoyu-based saba, so we serve it here, too.”

Just like the saba, there are twotypes of pork tonkatsu. There’s onewith homemade sauce similar to reg-ular tonkatsu sauce but with wonder-ful additions of mayonnaise and a bit

of spicy mustard. Tonkatsu withHomemade Sauce and Tonkatsu withOroshi-Ponzu are both priced at$10.50, so you can take your pick.Oroshi ponzu sauce is a mixture ofsoy sauce, citrus juices, grounddaikon radish and a little oil.

And yes, the Japanese have theirown version of fried chicken —Karaage Chicken, which costs $9.50at Hinone Mizunone, and offers theperfect blend of flavor and texture.Customers can rest assured the chick-en is fresh all the time, never frozen.

Curry and udon also are availableat the eatery, and both are made witha beef base, which means excellentflavor! You can choose from localfavorites such as Chicken KatsuCurry ($9.50) and Deluxe Udon($9.50). Or, if you want the best ofboth worlds, there also is a DeluxeUdon & Curry Set ($15.50).

The restaurant, which openedin May 2011, offers a variety ofitems from the expected to thesurprising.

Bacon Wrapped Asparagus($7.95) is a good example of thelater. Fresh asparagus iswrapped in thinly sliced bacon,fried and served with a parsleygarnish.

Another simple crowdfavorite is Cheese Bread($5.95). St. Germain extra-thickcut white bread is topped withbutter, and mozzarella, Swissand Cheddar cheeses to make ahot, gooey and crunchy mealstarter for a main course ofsushi, tempura, spicy ahi orwhatever is to your liking.

Dynamite ($8.95) is a smallcasserole with a bed of mush-

rooms and zucchini, layeredwith scallops and shrimp, andglazed with the dynamite sauce.According to co-ownerEmerson Ribao, the topping ofmayonnaise, tobiko, shoyu andlemon results in a creamy tex-ture that is as tasty as it isattractive.

Mussels a la “M” ($7.95), the“M” stands for Emerson, is the

restaurant’s uniquetake on traditionalescargot. Instead ofsnails, mussels arebaked with garlic,tomato, fresh pars-ley, brandy and but-ter. After removingthe shells, the mus-cles are placed on afresh baguette and re-baked to maintain thecrispy texture of thedish.

Stuffed ChickenWings ($7.95) is a Thai-inspireddish served with a sweet chilisauce. After the wings aredeboned, the pieces are stuffedwith ground pork andVietnamese-style vermicellinoodles, and seasoned withminced carrots, garlic, pepper,bay leafs and sea salt. Thewings are then deep-fried, andserved hot and crispy.

It may be called New Violet’sGrill, but the dining spottucked away in Kalihi’s

Kapalama Shopping Center hasactually been part of the commu-nity for more than 60 years. Witha menu full of local comfortfoods as well as Japanese andOkinawan specialties, generationafter generation have made it aregular haunt.

“It’s good home cooking,”says co-owner Cindy Suehisawith a laugh. “Everything’s fromscratch.”

Cindy and her sister Joeyrecently took over the eatery inMay, but it has been in the familysince their Aunty bought the

establishment — previouslynamed Violet’s Grill — in 1998.When brother Kevin took overthe operation in 2001, a freshstart called for a fresh name, andNew Violet’s Grill it was.

A burst of freshness also goesinto every meal, including oneof the most popular items, PorkTofu ($13.95). Filled with ahealthy dose of won bok cab-bage, carrots, green onions,round onions and bean sproutsto accompany the pork and tofu,it’s simple shoyu sauce givesthis dish the comforting flavoryou won’t forget.

Another great dish to try is AhiBelly Mitsuke with Tofu($16.95), which features ahibelly that has been cooked in ashoyu sugar sauce to bring out itsrich, moist flavor. Tofu and greenonion also soak up the tastygoodness.

Ichiriki general manager Min Kimsays there is a quote that often goesaround the restaurant’s kitchen:

“Sharing from one pot makes for closerrelationships.”

For Kim, that quote sums up the fam-ily-like atmosphere of the Piikoi Streetrestaurant. “It’s more like a livingroom,” she says. “Everyone gathers andthey cook food together in the pots. It’sa totally different experience. It is veryinteractive, very engaging.”

The restaurant, which also has a sec-ond location in Aiea, specializes in threedifferent types of food: nabe, sukiyakiand shabu shabu. Customers can selectvarious broth and vegetable, meat orseafood combinations and cook it all upright there at their table.

“I like to think of Ichiriki as a diningexperience,” Kim says. “We are teachinga type of dining and culture that our cus-tomers get to experience.”

To kick off your Ichiriki experience, agood place to start is with one of therestaurant’s most popular appetizers —Ahi Katsu ($5.95), which features freshahi marinated in a tasty sauce, andwrapped in a shiso leaf and lightly friedto reach a perfect golden brown.

One of Ichiriki’s most popular nabedishes is Miso Nabe ($21.95 for dinner;

$11.95 for lunch), which isserved with pork, a sampling ofvarious kinds of seafood, and avariety of vegetables. The dishalso includes Ichiriki’s crowd-pleasing homemade meatballs,which are comprised of groundchicken, soft tofu, green onions andginger, and are made fresh in house

every day. And for those who think theyknow miso, they are in for a surprisewhen they try Ichiriki’s special concoc-

tion. “We get (the miso) direct fromJapan, and it’s a blend of two very

high quality misos, so the flavorin it is going to be a lot thick-

er and richer,” Kimexplains.

Rich Dining Experience

Ichiriki Japanese Nabe Restaurant wasfounded several years ago by co-ownersIssei Kazama and Riki Kobayashi. The name

“Ichiriki” was derived from a combination of the Japanese charactersin each of their names — and together the name means “one power.”

“They wanted to show what can happen when people come together,”general manager Min Kim says. “They are friends and they always wantedto open their own restaurant together.”

The cuisine served at Ichiriki reflects each of the owners’ food experi-ences. Kazama grew up eating his mother’s home-cooked nabe, andKobayashi studied this type of dining in Japan.

Kim says that the meaning “one power” is extremely fitting for therestaurant. “It really brings people together,” she says. Cooking nabe,shabu shabu and sukiyaki certainly is a bonding experience for cus-tomers — and Kim says that it creates great relationships between thestaff and guests as well.

“If you are eating here, our servers are going to help you out,” Kim says,adding that they can walk customers through the cooking process andeven identify which flavors will pair well together. “Our servers are trainedto always guide the customers to understand how to best enjoy the food.”

and flavored with peppers and garlic —giving it a little kick without being over-powering. As seen in the photo, this dishcomes with a special type of paper. “Thepaper absorbs the natural oils in themeats, so it’s known to be very healthy,”Kim explains.

Another must-try dish includesMushroom Yuzu Nabe ($24.95), whichfeatures an assortment of four differenttypes of mushrooms — shiitake, enoki,shimeji and eryngii — all swimming inthe delightfully peppered citrus yuzubroth. “I really love the way the mush-rooms and the yuzu broth complementeach other,” Kim adds. “It’s a perfectpairing.”

All of the nabe dishes also are servedwith a choice of rice, udon or zosui tofinish off your meal. Kim explains thatthe rice, udon or zosui is mixed with thebroth at the end of the meal, when it is

at its most flavorful.And if all of this doesn’t

already have your mouth water-ing, Ichiriki currently is in theprocess of creating new menuitems. The new items should beunveiled sometime this fall.Although the restaurant isn’trevealing any of these dishes yet,Kim does say that many of thenew dishes will be based on cus-tomer feedback — a kind of inter-activity that is manifested in thephilosophy of Ichiriki.

“One thing (the founders)always teach us is that when mak-ing any kind of decision — evensomething simple — we need towonder how it is going to affectour customers,” Kim says. “Thefirst question we ask is, ‘is thisgoing to make our customershappy?’”

And it seems that for all ofIchiriki’s menu decisions, theanswer is a resounding “yes!”

culture as the lunar harvest festival, is onesuch celebration that features a signaturedish: mooncake, which symbolize thegathering of friends and family. RoyalGarden Chinese Restaurant in Ala MoanaHotel is home to some of Hawaii’s freshestand tastiest mooncake varieties, and willcontinue serving the rich, flavorfulmorsels through this year’s festival cele-bration Sept. 30.

According to Royal Garden ownerCalvin Wong, one would be hard-pressedto find a better mooncake. In contrast tosome other establishments that ship in thecakes from China, Royal Garden makesbatches of fresh cakes daily in the eatery’skitchen. Wong explains that the secretbehind the cakes involves “Top, A-gradelotus seed paste made special for us inHong Kong, not too much sugar and cot-tonseed oil. No preservatives added!”

Royal Garden offers the moist moon-cake in artistic gift sets, which featureeight different varieties of the sweet treat.

Ranging in price from $16.95 to $33.95,the gift sets include four cakes apiece, andincorporate flavors such as White LotusSeed Paste with Double Egg Yolk; RedBean Paste with Single Egg Yolk; and theMixed Nuts Mooncake. Wong estimatesthat Royal Garden sells around 7,000 giftsets every year — a sign that customersappreciate the quality and craftsmanshipthat goes into creating each cake fromscratch in continuation of the restaurant’stradition that dates back 10 years.

“Our mooncake is made fresh daily,

fresh from the oven,” Wong says. “We liketo offer the best. Other places have to addpreservatives because they ship the cakesin from Hong Kong. Sometimes it takesseveral months for those to get here.”

Before stocking up on the mouth-water-ing mooncake, diners also can look for-ward to enjoying some of Royal Garden’sexcellent dim sum selections availabledaily for lunch only. Shrimp Gau, PorkHash and Seafood Gau ($3.50 each formost of the dim sum selections that usual-ly include three to four pieces) are just afew of the most-requested choices fromthe dim sum carts brought directly totables by the restaurant’s friendly andhelpful staff. Egg Tart ($3.10) is one of thenumerous sweet delights also available onthe dim sum menu that features more than50 items.

Royal Garden also serves up stellarentrees at daily lunch and dinner services.The “Live” Dungeness Crab and MaineLobster (market price) are prepared freshon the spot as the crustaceans make theirway from the in-house tank to the kitchen,where they are prepared in what Wongcalls “Royal Garden style.” Wongexplained that the crab or lobster is cookedin minced garlic, shallots, butter andchicken broth in order to bring out a wide

range of flavors and aromas.“I travel all the way from here to Hong

Kong, and nobody cooks it the sameway,” says Wong with a smile. “It mayhave the same name, but you can’t touchour recipe!”

Wong also recommends the Big RockSalt Chicken ($39.95 for a whole, four-pound chicken) that features a ranch-raisedbird flown in from the Mainland. Dinersare advised to call ahead at least one day inadvance when ordering this dish.

Shrimp with Honey Glazed Walnuts($17.95) still serves as one of the restau-rant’s top-sellers, as the traditional dishcombines the two unique flavors andenvelopes them in a sweet, creamy sauce.Stop in for lunch or dinner daily, and seewhat other culinary creations are sproutingup at Royal Garden.
