Indian cuisine has shaped the history of
international relations; the spice trade between
India and Europe was the primary catalyst for
Europe's Age of Discovery. Spices were bought
from India and traded around Europe and Asia.
Indian cuisine has influenced other cuisines across
the world, especially those from Europe (especially
Britain), the Middle East, Southern African, East
Africa, Southeast Asia, North America, Mauritius,
Fiji, Oceania, and the carabian.

SOUTHINDIANCUISINE
A classic favorite that
never disappoints
South Indian cuisine includes the cuisines of the five southern states of India—
Andhra Pradesh, Karnataka, Kerala, Tamil Nadu and Telangana—and the union
territories of Lakshadweep, Pondicherry, and the Andaman and Nicobar
Islands. There are typically vegetarian and non-vegetarian dishes for all five states.
Additionally, all regions have typical main dishes, snacks, light meals, desserts, and
drinks that are well known in their respective region.
Coconut is native to Southern India and spread to Europe, Arabia and Persia over
the centuries. Coconut of Indian origin was brought to the Americas by Portuguese
merchants. The similarities among the five states' cuisines include the presence of
rice as a staple food, the use of lentils and spices, dried red chilies and fresh green
chilies, coconut, and native fruits and vegetables including tamarind,
plantain, jackfruit, snake gourd, garlic, and ginger.
CHINESE CUISINE Chinese cuisine is an important part of Chinese culture, which includes
cuisines originating from the diverse regions of China as well as from
Overseas Chinese who have settled in other parts of the world. Because of
the Chinese diaspora and historical power of the country, Chinese cuisine
has influenced many other cuisines in Asia, with modifications made to
cater to local palates. Chinese food staples such as rice, soy sauce, noodles,
tea, chili oil, and tofu, and utensils such as chopsticks and the wok, can now
be found worldwide.
The preferences for seasoning and cooking techniques of Chinese provinces
depend on differences in historical background and ethnic groups.
Geographic features including mountains, rivers, forests, and deserts also
have a strong effect on the locally available ingredients, considering that the
climate of China varies from tropical in the south to subarctic in the
northeast. Imperial royal and noble preference also play a role in the
change of Chinese cuisine. Because of imperial expansion and trading,
ingredients and cooking techniques from other cultures have been
integrated into Chinese cuisines over time.
CONTINENTAL FOODContinental food refers to dishes made and consumed in the European countries. Dishes of French, Spanish
and Italian cuisine fall under the category of ‘Continental food’. The key specialty of this food is, they
concentrate more on ingredients like olive oil, wine, herbs and minimal spices. Akshay adds, "Continental
food involves cooking techniques like frying, roasting and baking. Also, the food is rich and usually high in
calories."
European cuisine comprises the cuisines of Europe including the cuisines brought to other countries by
European settlers and colonists. Sometimes the term "European", or more specifically "continental" cuisine,
is used to refer more strictly to the cuisine of the western parts of mainland Europe.
The cuisines of Western countries are diverse, although there are common characteristics that distinguish
them from those of other regions. Compared with traditional cooking of East Asia, meat is more prominent
and substantial in serving size. Steak and cutlets in particular are common dishes across the West.[dubious –
discuss] Western cuisines also emphasize grape wine[dubious – discuss] and sauces as condiments,
seasonings, or accompaniments (in part due to the difficulty of seasonings penetrating the often larger
pieces of meat used in Western cooking). Many dairy products are utilized in cooking. There are hundreds
of varieties of cheese and other fermented milk products. White wheat-flour bread has long been the
prestige starch, but historically, most people ate bread, flat cakes, or porridge made from rye, spelled
barley, and oats. The better-off also made pasta, dumplings, and pastries. The potato has become a major
starch plant in the diet of Europeans and their diaspora since the European colonization of the Americas.
Maize is much less common in most European diets than it is in the Americas; however, cornmeal (polenta
or mămăligă) is a major part of the cuisine of Italy and the Balkans. Although flatbreads (especially with
toppings such as pizza or tarte flambée) and rice are eaten in Europe, they are only stapled foods in limited
areas, particularly in Southern Europe. Salads (cold dishes with uncooked or cooked vegetables, sometimes
with a dressing) are an integral part of European cuisine.
