Welcome to the latest edition of the Folkestone Handbook; we’d like to wish you all a very happy Christmas, and a peaceful New Year.

In the run up to Christmas, we bring you news of the Folkestone Winter Shelter, to help make sure everyone has a warm meal and somewhere to sleep during the coldest months; and we also bring you news of the Boxing Day Dip at the Sunny Sands, organised for charity by The Lions Club.

We read a great article recently, which focused on the idea that if we all shop and enjoy what we have locally, we’ll be helping local people have a happier Christmas, rather than adding to the profits of huge chains such as supermarkets. We loved this idea, and have taken it to heart with our Christmas shopping, and have come across some fantastic local talents. In relation to this, we’d love to say “Happy Birthday” to the Folkestone based collective ‘Mermaids and Seagulls’ who are celebrating their first birthday this Christmas; do visit their pop up

shop as mentioned within the handbook ‘What’s On’ pages for some really beautiful, unique gifts.

50 Years of change in Sandgate

The challenge was to compress half a century of history into 15,000 words and a hundred rare pictures. That was the request last January when I was asked to produce a book that could encapsulate the story of Sandgate since the formation of its village society in 1962.

It was a time of major changes in urban life across the country. The first motorway began to speed up the pace of

life. Towns and cities suddenly faced competition from neighbours. Disappearing over the decade were individual shops as major chains took hold of the shopping centres. In 1962 Sandgate supported nearly sixty sole traders offering a comprehensive array of products and services. The story of this sometimes unwanted change would form the major narrative in our book.

Under threat in 1962 was the Royal Kent Hotel. In nearby Folkestone, hotels were also closing as our holiday tastes changed. But could Sandgate’s major hotel be saved – that was the campaign that united the village and led to the formation of the Sandgate Society. Councillors in Folkestone suggested the demolition would be a good thing – as it would help the villagers realise they lived near the sea. One councillor even suggested the village should be totally demolished and then rebuilt.

Inevitably the Hotel was removed from the landscape,

as was the nearby Bevan Nursing Home. Sandgate’s listed 16th century Castle even came close to being replaced by three blocks of flats. The village not only faced the power of developers, it also took a pounding from nature in the form of flooding and earthslips. Happily by the mid 1980s these threats had subsided after major and costly remedial work.

I also wanted to explore the interlinked lives of the major landowner and the high profile local MPs like Mayer De Rothschild and the Sassoons. Philip Sassoon lived at Shorncliffe Lodge in Sandgate before creating the stunning Port Lympne house, home to much gaiety in the 1920s.

The village is much more than regular roadworks and delays along the A259 coast road. I hope our book, with its collection of previously unseen black and white and colour photographs, will reveal much hidden history. It was a real pleasure to compile it.

3 New Businesses Launch and 2 Businesses Re-launch in Kent VillageSaturday 1st December 2012 saw the launch of three new shops and the re-launch of two existing businesses, with a large crowd enjoying the tours of each of the 5 businesses before the cutting of the ribbon. Helped by the Christmas spirit being the first day of December people enjoyed themselves even more and this must show that re-growth and re-generation is on the up with this fabulous event breaking the recent trend.

What made this so special? The fact that it took place in the historic village of Lyminge near Canterbury and is the hard work of husband and wife team Gareth & Lyle Hurford-Jones who passionately believe that Lyminge is a terrific village that deserves great shops and businesses and that this principle of investing in your own community can be used to help other small businesses and producers within Kent.

Method1. Put all the marinade ingredients in a small blender or pestle and mortar and mix to a rough paste.2. Place the shanks in a deep roasting tin, smother in the paste, cover and leave for 2 hours.3. Pre heat the oven to 180 celsius or gas mark 7.4. Keep the shanks covered and roast for 1 ½ hours.5. Uncover shanks and roast for a further ½ hour.6. Remove from the oven and allow to rest for 10 minutes and to serve simply.7. Place the shanks in bowls and add some of the rich roasting juice.

Delicious with buttery mashed potatoes and some dark greens.Chef’s tip: No need to add any salt to the marinade

as the anchovies provide the salt content.

Ingredients:• 4 Lamb shanks

For the marinade:• 2 cloves Garlic

• Handful of fresh Rosemary

• 2 tablespoons Olive Oil

• 1 Tablespoon Red Wine Vinegar

• 4 anchovy fillets (the salty ones from a jar or tin)

This recipe is simple to prepare and great for dinner parties because once the marinating is done, just leave the shanks in the oven and serve when you’re ready.

The Folkestone based collective ‘Mermaids and Seagulls’ will be celebrating their first birthday this Christmas as they return to the Old High Street with another pop up shop.

The Creative Quarter will be buzzing this year with new talent joining some of the original members. New businesses will be bringing statement scarves, retro children’s dresses, glass decorations, crazy prints and even skull doorstops to the shop.

The shop is open daily from the 1st to the 23rd December between 10a.m. and 5p.m. at no.67 The Old High Street.

The shop follows the group’s very successful exhibition hosted at the George’s House Gallery in the summer.

Choose a themeChoosing a theme brings unity to the overall look. It should suit your house and the way your family celebrates the festive season, whether laid-back and relaxed, sophisticated or formal. For some, that might mean a traditional, living fir tree and a colour theme of red, green and gold. For others, a kitsch fake tree with fluorescent ornaments; or perhaps a minimal, modern style with pure silver and glass.

Dress the treeStart by winding it with lights, making sure they’re evenly distributed. Next, drape your garlands, again aiming for evenness and an impression of generosity without overloading the tree. On small or slim trees, use slender garlands; on larger trees use heavier, fancier garlands. Last, hang your ornaments, with the

largest first, filling in around them with smaller ones. Place some nearer the trunk for a sense of depth and interest.

Hang a wreath For some, the making of a family wreath using foraged leaves, flowers, seeds, nuts and fruit is a significant part of the holiday season. Alternatively, ready-made examples are available in any style imaginable, from classic to contemporary, heart-shaped or circular, small or large, utterly simple or lavish and complex.

Make some decorationsHome-made Christmas decorations can be as elaborate or simple as you wish. Multi-coloured paper chains are the ultimate in family favourites, as are cutwork paper stars and clove-studded oranges. How about pom pom snowmen, peg-doll angels or glitter-covered pine cones? Or mini stocking shapes cut out of felt and ginger biscuits to hang from the tree? It’s all great fun and will create happy memories for years to come.

Wrap your presentsTransform present-wrapping from a chore to a pleasure by taking a little extra time and trouble. When they’re piled under the tree they will look so much better if they’re colour-coordinated and criss-crossed with ribbons and bows. Even brown paper or newsprint looks lovely if adorned with a home-made label, while sequins, feathers, glitter, stamped

designs and wired beads can all provide additional allure.

Sort out your cardsIt pays to establish a system as soon as the cards start arriving. Clear a shelf or two, and arrange them close together, large at the back and small at the front, in neat rows. Smaller cards can be tucked around a mirror or picture frame. An alternative is to staple them to ribbons (weighted by a bauble or pine cone) to hang in rows from a mantelpiece or along the side of the staircase.

Create displaysNothing says Christmas like poinsettias in pots, scented candles on the mantelpiece and ivy, holly and mistletoe draped over every available surface. Now’s the time to dig out that special table runner and your best crockery, glassware and cutlery for an eye-catching table display, finished off with a dish, tray or platter filled with greenery, candles and other festive decorations.

Looking after your tree

Buy a tree that’s as fresh as possible. As soon as possible, cut half an inch off the bottom of the trunk, to help it absorb water. Trim away low-down or interior branches that you don’t need. Put the tree in a stand that can hold plenty of water, and never let it run out. Avoid standing the tree in a sunny window or near a radiator.

Snuffles and Sneezes!

Do you seem to have year round hayfever? Wake up with that ‘all bunged up’ feeling? Are you constantly blowing your nose or fed up with sneezing all the time?I see many people in my clinic who have been told they have to live with Rhiniitis, meaning generalised inflammation of the upper respiratory channels. Most often this is put down to an unidentified ‘allergy’ which is causing inflammation! Whatever the cause, as a sufferer, you will know how irritating it can be.

Sometimes dietary changes can help. Whether there is an environmental allergen involved or not, identifying food intolerance can often lessen the load on the body if certain foods are eliminated from the diet. Dairy products and sugar are common mucus forming foods that can irritate any problems involving phlegm.

Diet may not be a problem at all, or may only be part of the whole picture. A detailed consultation with a professional herbalist is often helpful to piece together the symptoms and case history

to identify patterns that you might not have noticed.

In terms of self help pure essential oil of tea tree (anti-septic) and eucalyptus smithii (decongestant) might be helpful to blocked sinuses if applied topically. Dilute a couple of drops of each in 25mls of carrier oil and massage into the painful areas. Elderflowers are anti-catarrhal, anti-inflammatory and anti-allergic so can provide relief from a runny nose and sneezing whether allergy is implicated or not. These are often available in health food shops and best made into a tea from the dried flowers. You might be lucky and find a combination herbal tea with added eyebright

and/or plantain – both these herbs also have anti-catarrhal effects and support the upper respiratory system in general.

Widely available nettle and chamomile possess anti-allergic properties so, whilst having no direct anti-catarrhal action may help if allergy is a feature.

Echinacea or elderberry may help as immune system support but it’s always best to seek professional advice if infection is present or the problem is persistent.

Recurrent infection of the sinuses can be extremely painful and would call for more detailed help involving full consultation with a herbalist.

The Folkestone Churches Winter Shelter

The Shelter will run this winter from 3rd December 2012 to 25th February 2013.

The work of the Winter Shelter helps some of the most vulnerable people in Folkestone and surrounding areas, giving them a hot meal and a warm bed in addition to support with accessing services that allow them to take some control of their lives.

The Folkestone Churches Winter Shelter is hosted by various local churches with around 250 volunteers and 4 staff working together to provide a warm welcome, hot food and comfortable bed for homeless guests in the Shepway area. Behind the scenes, staff provide advocacy for guests and work closely with local agencies to support the individual short term and long term needs of those who access our service.

The Folkestone Winter Shelter is dependent upon voluntary donations from supporters, and would be very pleased to hear from anyone who

would like to donate or get involved in supporting the Shelter in another way.

The Folkestone Churches Winter Shelter project was established in 2009 by Churches Together Folkestone and other local interests having witnessed the hardships facing homeless people locally.

For the last two years, the Folkestone Rainbow Centre, an ecumenical charity that has 25 years of experience catering for the lonely, the isolated, the socially excluded and the homeless has overseen the operation of the shelter project. A steering group meets regularly to help ensure that the shelter is fit for purpose and continues to develop to meet the needs of the homeless and vulnerably housed in Shepway.

Over the 12 week course of the shelter, volunteers provide the staffing hours essential to ensure the shelter runs its course. In addition many people give up their time in cooking off site and delivering food to the shelter venues. The roles volunteers undertake

include setting up the venue, helping with the cooking at the church, engaging and chatting with the guests in the evening, staying overnight and clearing up the next morning.

Every volunteer is asked to complete a volunteer form so the Folkestone Churches Winter Shelter can centrally hold details of their availability, experience, special skills (e.g. first aid), contact details etc. Volunteers have to supply details of a referee who can provide suitable references and FCWS also carries out enhanced CRB checks.

Even if you’re sure you’re not going to venture into your garden much this winter, make sure you have every possible encouragement by creating a winter planter or two. They will not only look gorgeous from the warm comfort of your house, but will also help to coax you outside from time to time.

Choose a larger container as it’s more likely to protect the roots on the plants due to the greater volume of compost. I’d avoid any container less than 30cm (12in) diameter if possible.

Any container will insulate the roots a little, but one made from thick wood (such as a wooden trough or window box, or a half-barrel) will be very effective. Good quality,

fairy chunky plastic also works quite well. Try to avoid metal as this tends to conduct cold.

Warm undergarments are all the rage for winter planters. A lining of bubble-wrap polythene or even a few layers of old fabric or carpet, sandwiched between the sides of the container and the compost will help to keep both compost and roots warm.

If you live in a particularly cold area, or simply want to decrease the risk of winter damage further, try to position winter planters out of the windiest areas. If possible place them fairly close to a house wall on the south or west side as this will help to provide a little extra warmth.

You’ll be amazed at the range of plants available at your local

garden centre for adding winter colour and interest to pots and planters. Some of my favourites are the universal or other winter flowering pansies or even hardier smaller flowered violas.

For some seriously sturdy winter colour, try the winter flowering heathers as these make a good base for the display and you can then add trailing plants such as variegated ivies to help provide extra colour, texture and interesting leaf shapes. All these plants will last for years, not just the winter months.

At this time of year, garden centres may offer very tiny versions of shrubs such as skimmias, Pieris or hollies and many of the dwarf conifers. They will provide good colour and interest in a container for a year or two and can then be planted in your garden to reach their full size.

In warmer areas, you can add bright patches of colour to your display using the ‘winter cherry’ or solanum which has bright yellow and orange fruits. You could also use a few winter flowering cyclamen but these definitely need a very sheltered spot such as a window box on a protected wall.

Don’t forget to add in a few early spring flowering bulbs such as miniature narcissus, crocus and miniature iris. Hide them beneath the roots of your winter bedding plants; you’ll forget they are there until they burst out in spring.
