CHIEF JUDGE

William David Blake Lark (Bill)

Together with his wife Lyn, in May of 1992, Bill established Lark Distillery. Bill was also a founding member of the Australian Distillers

Association and the Tasmanian Whisky producers Association. In 2008 he was a founding Director of Starward Distillery (Victoria Valley

Distillery) and a few years later in 2012, Bill co-founded Old Kempton Distillery.

During 2013 he was named ‘Ministers Champion’ at the Tasmanian Tourism Awards and 2014 saw Lark Distillery awarded both the Telstra

Tasmanian and Australian Small Business of the Year. 2015 was a big year for Bill who was personally awarded the Hospitality Ministers

Award for Excellence for his ‘Contribution to the Industry’. That same year, Bill became inductee no. 28 into the World Whisky Hall of Fame in

the UK making him the first Australian Inductee.

Bill has previously been involved in the judging of several Australian Spirit Awards and in February 2019, was appointed Head Judge of

the inaugural Australian Gin Awards and Head Judge for the Tasting Australia Spirit Awards in South Australia. Currently, Bill is engaged as

the Global brand Ambassador for Lark Distilling co.

AdamKEANE

Adam Keane is the current State Sales Manager for Select Brands Australia and has spent the last 25 years working in the Liquor & Hospitality industry in Australia and Overseas. Over the years,

Adam has represented Australia in several Cocktail Competitions and has owned some of Perth’s coolest venues such as Lucky

Chans Laundry, Noodle Bar and formerly, The Classroom.

Adam also runs Cocktail Gastronomy, an elite Cocktail

and Cuisine based event business. Adam has been in

Sales and Ambassadors roles for Pernod Ricard, Liquid Mix

and now represents a number of Spirit companies such as

Halewood Artisanal Spirts and WA’s own Craft Revolution.

BenKAGI

Ben is currently a valued member of the Distilling team for the Internationally Aapplauded

Limeburners Whisky. Ben’s role is in Quality Control and he also works in Product Development.

Ben has been in the International Liquor business since finishing

school and has judged professionally with Wine and

now Spirits over the last three decades. Ben’s areas of special

interest are Dark, Sweet and Botanical Spirits.

Anthony Reynolds was born and raised in Perth, WA. His work

in the liquor industry started in 1995 with the implementation of his family’s vineyard in Margaret

River. After the establishment of the vineyard, Anthony moved

into winemaking, completing a Bachelor of Science in Wine

Science at Charles Sturt University.

A decade of winemaking, including working abroad

in France, was ended by an unplanned transition back

to Perth and resulting in the acquisition of a premium

liquor store. After 7 years of retail management, Anthony

took his first steps into the world of distillation joining Old

Youngs Distillery in 2017. In 2018 opportunity presented

and Anthony became the Head Distiller at The West Winds

Gin where he still works today, in charge of all production.

Throughout his many years in the liquor industry, Adam has attended countless tastings,

trade days, been part of competition judging, held panel

member positions and judged at the 2020 Perth Royal Distilled

Spirits awards.

BenTASSONE

Ben Tassone has been running bars and restaurants around

the world for over 20 years. Ben is currently the venue manager

of the Margret River Distilling Company and has been there since it opened in 2015. Being

part of a fantastic company that has produced internationally awarded Whiskies and Gins

and being around such quality products, is a feeling of

privilege for Ben.

Ben is an integral part of the company’s quality control

of the Giniversity Gin range which has helped to develop

his refined pallet. This year Ben was fortunate to be awarded the ‘Global Visitor Attraction

Manager of the Year’ by Icons of Gin.

CharlesDOCUS

Charles was a lawyer by trade in the Hospitality/Liquor Licensing

at Lavan. He was admitted to the Supreme Court of Western

Australia in 2016 after completing a Juris Doctor at Murdoch

University and started practising in Corporate Litigation in 2015.

His extensive French legal education in Civil Litigation,

Family Law and Wills and Estate allowed him to contribute

efficiently to innovative Australian companies and Law firms.

Charles practiced as a Notary Clerk in France after completing a French Masters in Family and

Criminal Law and had a great experience in international Corporate Litigation firms.

Charles is now fully committed to his company 3Two1 Drinks.

3Two1 imports spirits, syrups and liqueurs and is inspired by the

perfect recipe of a daiquiri with 3 part spirits, 2 parts sour and one part sugar. It participates

to the success of great cocktail bars and great hospitality in

general supplying his clients with the best products nationally in a

complementary portfolio.

JUDGES

Cameron Syme is the founder and Head Distiller of Limeburners and Giniversity,

two of Australia’s longest standing and favourite craft

distilleries. Cameron was founding President and remains Vice President of the Australian

Distillers’ Association inc.

Cameron has been acknowledged internationally

as creating some of the World’s great Whiskies, including twice

winning Best International Craft Whisky in the World (USA’s

ADI) and Australia’s first Gold medal at the London IWSC (International Wine & Spirit

Competition). In 2019 Cameron was acknowledged as an Icon

of Australian Whisky at the World Whisky Awards in the UK. Cameron’s spirits have over 16 consecutive years of internal

medals and trophies. Cameron is also a highly regarded

domestic and international spirit judge.

JUDGES

Award-winning sommelier, restaurateur and certified wine educator, Foni Pollitt, is behind one of Perth’s top restaurants - Mayfair Lane Pub and Dining

Room. Since opening with husband Chris in 2017, the

accolades have continued to roll in – ‘Best Pub Restaurant Wine

List’ in Gourmet Traveller’s Wine List of the Year Awards in 2019

and 2020 with the award of Three Glasses, and featured in the Top 50 Restaurants for the Western Australian Good Food Guide in

2017, 2018, 2019 and 2020.

Last year Mayfair Lane took out the ‘Jury Prize’ at the World of Fine Wine Awards in London.

This was a big win considering 94 venues were picked around

the world, with only 18 from Australia, and one from Perth –

Mayfair Lane.

Foni was awarded WA Good Food Guide ‘Sommelier of the Year’ in 2018 and is in the process of

obtaining a Masters of Wine. As a WSET educator, Foni loves

sharing her passion for wine with students – taking her guests

on a journey, and encouraging everyone to discover their own

tastes and preferences.

MitchKEANE

Entering into hospitality in his teens, Mitch honed his skills in

venues across Melbourne before venturing to Europe where he

tendered bars and fell in love with the industry.

Eventually ending up in Perth, he worked in venues such

as Mechanics Institute and Dominion League. It was through

these venues his passion for spirits was ignited. Mitch landed a role with The West Winds Gin

as a Brand Ambassador and, over time, worked his way up

to Head Distiller.

Leaving West Winds Gin for an exciting opportunity with Diageo in 2019, Mitch now is currently working on some

exciting new projects within the hospitality industry.

James has followed a far from traditional path into distilling.

After studying psychology at UWA, he worked in graphic design, advertising, sports

administration and as a National Head Hockey Coach before

taking up the challenge to distil world-class spirits.

Since launching Old Young’s Distillery in the Swan Valley in 2016, James has seen the business go from strength to

strength including winning Australian Champion Distiller

in 2017 and 2018 and WA Champion Distiller in 2020. He has gathered a swag of national and international

awards including 10 Trophies, 19 Gold, 43 Silver and 42 Bronze

medals for his Gins and Vodkas. He has previously judged at

the European Gin of the Year Awards and the 2019 and 2020

Perth Royal Distilled Spirits Awards.

JamesYOUNG



Nathan DeTienne is a lifelong lover of spirits. Most specifically

a lover of Whisky.

Originally hailing from Seattle, USA, he moved to Perth over 10 years ago to join his wife, Thao.

Together, Nathan and Thao have had a long involvement in the hospitality industry, originally

starting a Whisky blog, visiting over 70 Distilleries, working for a craft beer importer, running

tasting events and more.

These days you’ll find Nathan overseeing Dram Full, a worldwide

Whisky club, co-founded with friends in the Whisky world,

planning the next Whisky Freedom - Australia’s largest independent

bottler and craft distillery expo, or running his spirit import company,

NTD Spirits.

Sam’s experience with spirits comes from a passion for flavour.

With a background in kitchens and coffee, the deep dive into

the world of spirits began in 2007. From running intimate

Whisky dinners and spirit and cocktail classes, to helping host

large scale expo events, Sam enjoys sharing the knowledge

he has accrued and relishes the opportunity to learn more with

great enthusiasm.

ASSOCIATE JUDGES

Andy fell in love with the drinks industry back in 2002 when he

first stepped behind a bar.

With the opening of a number of venues under his belt including

399 and Five Bar, Andy felt it was time to take on a new path and

forged his way into the brand and production side of the industry as

Brand Ambassador for Diageo. Working in this capacity allowed Andy the privilege to work on a number of industry events and brand activations including the

World Class Cocktail Competition.

After developing a passion for Sales, Marketing and Brand

Experience, Andy was head-hunted by Cherubino Wines where

he worked as National Sales Manager, a role which has gained

him experience and the ability to work closer to the decision-making process and provided

plenty of opportunity to see the elements of alcohol production.

At the end of 2020, to satisfy his creative need and fill a gap he

noticed in the market, Andy, along with his cofounder Mitch Keane,

started Idle Hands Drinks Co. which focuses on great tasting

cocktails and a more efficient way for venues to cater to their guests.

AndrewMCINTRE

LizALLINGHAM

After spending a couple of years in the Craft Beer Industry, Liz

discovered that her true passion lies in making cocktails. Liz’s role

as Bar Supervisor at Bobeche has allowed her to throw herself

headfirst into the wonderful world of spirits and showcase some of the best product Western

Australia has to offer.

Jamie has worked in hospitality for over 15 years, running

spirit-specialised venues such as Varnish on King and Goody

Two’s (Whisky), Caballitos (Tequila and Mezcal), The Flour Factory (Gin), Luxe Bar and The

Hawksmoor (Cocktails).

Jamie has experienced spirit production around the world, visiting Whisky Distilleries in

Scotland and Japan, Bourbon and Barrel producers in

Kentucky, various Mezcalerías in Oaxaca, Cognac in France, and

Gin in London and Plymouth.

Jamie is currently the WA Brand Ambassador for Brown

Forman’s premium range of spirits including Woodford

Reserve whiskeys, Herradura tequila and Fords Gin.

ASSOCIATE JUDGES

Shirley Yeung is the Venue Manager at Foxtrot Unicorn

Bar in the Perth CBD. She has over 10 years’ experience in the hospitality industry with more than five years working behind

bars including stints at the former Clarences Bar and

Panama Social.

Shirley is a big voice in advocating for women in hospitality and has

founded ‘Mix Haus’ as a result of that. She has participated in

many cocktail competitions, both regional and nationally and has recently been nominated for ‘Bar Manager of the Year’ at the National Australian Bar awards.

Steve has worked in the brewing industry over the past 15 years.

His experience includes working at Matilda Bay, Little Creatures, Feral Brewery, Gage Roads and

Otherside Brewing. Steve has previously experienced judging as a captain at the Perth Royal Beer Awards and the nationally led Independent Beer Awards.

A lover of all things brewed and distilled.

Will has worked in the brewing industry for the last 14 years as Head Brewer and Lead in new product development with the

Feral Brewing Co. He was Chief Judge for the Perth Royal Beer Awards in 2020 and 2021 and has a healthy knowledge on all aspects of the spirit industry.

ASSOCIATE JUDGES


William has been involved in Wine and Spirits for the last

20 years working the floor and behind the bars in some of the

most prestigious venues around Australia. A certified Sommelier

and currently studying for a WSET Diploma, William is currently the Venue Manager for Cherubino City Cellar after working as the

Beverage Manager for the Frasers Group.

William has judged at the Swan Valley Wine Show and previously

participated as an Associate Judge at the Perth Royal Wine

and Perth Royal Distilled Spirits Awards, the WA Wine Show,

Margaret River Wine Show and the Geographe and WA Alternate

Varieties Wine Show.
