Exhibits for Section 5 Pot Plants and Section 6 Bonsai will be accepted in the Pavilion (located behind the
grandstand) on Friday morning 2nd September between 10.00am and 11.00am unless other arrangements
are arranged prior to this day.
HOME BREW
Exhibits for Section 15 Home Brew will be accepted at the Office by 4.00pm Tuesday 30th August.
ALL OTHER EXHIBITS
Will be accepted in Pavilion (located behind the grandstand) on Thursday evening 1st September between
7.00pm and 8.00pm or on Friday morning 2nd September between 10.00am and 11.00am.
Alternatively, exhibits can be left at the Dapto Showground Office if the above two days and times
cannot be met.
Exhibitor's tickets are to be attached to all exhibits prior to checking in with Stewards. Exhibits are to be checked
in with the Section Steward and must not have name in clear view or on the front of the article. Exhibits breaching
these rules will not be included in Judging.

* It is important you read the schedule carefully
* read your recipe – it could mean a difference between success and failure
* always weigh your ingredients
* never turn your cake onto cake cooler. The marks are regarded as a decoration.
* place on board covered with tea towels
* do not use package cake mixture – unless stated
* use castor sugar for finer cakes
* most important to use fresh ingredients, especially shortening
* do not use corn flour in sponge unless on schedule
* do not use ring tin unless stated
* do not put your cakes in plastic containers or bags before judging as this can
draw moisture – use cellophane for best results
* biscuits and pikelets should be dainty
* lamingtons should be butter mixture. Approximately 4cm
* ice cake on top only, unless otherwise specified

* do not over flavor especially soda
* do not trim a cake
* you have taken care with your cake, so take care with your presentation

RICH FRUIT CAKE for Class 5
The following recipe is compulsory for all entrants
in the Rich Fruit Cake Competition
HERE'S WHAT YOU NEED
250g (8 oz.) sultanas 60g (2 oz.) self-raising flour
250g (8 oz.) chopped raisins 1/4 teaspoon grated nutmeg
250g (8 oz.) currants 1/2 teaspoon ground ginger
125g (4 oz.) chopped mixed peel 1/2 teaspoon ground cloves
90g (3 oz.) chopped red glace cherries 250g (8 oz.) butter
90g (3 oz.) chopped blanched almonds 250g (8 oz.) soft brown sugar
1/3 cup sherry or brandy 250g (8 oz.) plain flour
1/2 teaspoon lemon essence or finely grated lemon rind 4 large eggs
1/2 teaspoon almond essence 1/2 teaspoon vanilla essence
Mix together all the fruits & nuts & sprinkle with the sherry or brandy. Cover & leave for at least one (1) hour,
preferably overnight. Sift together the flours & spices. Cream together the butter & sugar with the essences.
Add the eggs 1 at a time, beating well after each addition, & then alternately add the fruit & flour mixtures. Mix
thoroughly. The mixture should be stiff enough to support a wooden spoon. Place the mixture into a prepared
tin no larger than 20cm (8 inches) & bake in a slow oven for approximately 3½ - 4 hours. Allow cake to cool in
tin.
NOTE: To ensure uniformity and depending upon the size it is suggested the raisins be snipped into 2 or 3
pieces, cherries into 4 to 6 pieces and almonds crosswise into 3 or 4 pieces
Group 5 Zone Final for Rich Fruit Cake competition (Class 5) will be held at Albion Park. Cakes from
previous judging, cut in half, will be accepted at zone judging. Winner from zone judging will compete
at Sydney Royal Easter Show and will be required to deliver a cake to Sydney the same week. (It may
be advisable to bake two cakes by the Group Final)

The winner of Section 9014 at Dapto Show will proceed to the Group 5 Final. Group 5 winners will receive THE RON and DOROTHY BREWER MEMORIAL
1st $125, 2nd $50 and 3rd $25 (donated by the Brewer Families) Group 5 Final will be held at Albion Park Show 2017.
This class is supported by the South Coast and Tablelands Group 5, involving three levels of judging at Local Shows, Group level against other Show winners in our Group, then judged with all other Group entries from NSW at the Sydney Royal. This competition was initiated in 2005 and is to encourage and promote the use of wool.
CONDITIONS: For the purpose of this competition the following definitions apply:
a) Garment: an item that can be worn e.g. dress, jacket, scarf, hat b) Article: a utility item that is not worn but can be used in the home e.g. blanket; with an outfit e.g. bag; for
amusement e.g. toy as a decoration e.g. picture etc. 2. The whole article and/or garment must be constructed of, and contain a minimum of, 80% wool. 3. Exhibits (articles/garments) may be knitted, crocheted, sewn, felted etc. and must be hand crafted (use of sewing

exhibitor/s. 7. An exhibit having won at a local show may be exhibited (the same three article/garments) at the Group Final. The
winning exhibit at the Group Final is then eligible to compete in the State Final. 8. An exhibitor is only eligible to represent one Society at Group level and one Group at State level. 9. An exhibit (article/garment) that has previously competed at Group level is not eligible to compete again.
10. If this class is not scheduled or attracts no entries at a local show, the Chief Pavilion Steward in consultation with the appropriate Pavilion Section Judges, may select three suitable individual exhibits and, with the exhibitors permission, enter them in the Group judging as an exhibit representing the particular Society concerned.
11. It is the responsibility of the Group Secretary and winner to co-ordinate the transfer of the winning entry to the ASC Office in Sydney for the State judging.

JESSICA FOX
Jess is 19 years of age and has grown up in Dapto and lived here all her life. She went to the local catholic primary school, St Johns and completed her high schooling at Corpus Christi in Oak Flats. Jess currently works in hospitality and is completing a Bachelor of Health and Physical Education at the University of Wollongong. After finishing her degree, Jess would like to be a PDHPE teacher with the ultimate goal of becoming a School Principal.
Jess is passionate about health and nutrition and plays competitive netball. Having grown up around the Dapto show society, she is a strong advocate for her local community and an avid animal lover.
Jess is competitive by nature and with her bright and bubbly personality we know she will positively represent the Dapto Show Society as this year’s Showgirl.
HISTORY OF DAPTO SHOWGROUND
On Sunday 8th November 1856, a public meeting was called at George Brown’s Illawarra Hotel in
Dapto for all persons in favour of forming an Agricultural & Horticultural (A&H) Society in Dapto.
At the meeting it was decided that the “The Dapto Agricultural and Horticultural Society” be
formed. David Irving was elected President, John Brown was elected Secretary and a committee of
a further twenty one gentlemen formed the committee.
The first Dapto Show was held on Wednesday 28th January 1857 and was deemed a success
despite the fact that at the time farmers in the area where shifting production from Wheat to
Dairy due to the outbreak of disease rust.
As Dapto’s population increased, a train station was built in 1887 and the township of Dapto
formed around it. In the early 20th century, Patrick Hill Osborne donated 10 acres to the Dapto
A&H Society close to the centre of the growing township. The land grant was described as “level,
but raised, and has good drainage, which will keep it dry in the wettest of weather.” This is where
the Showground is still situated today.
During the early 1900’s the Society hosted many events including a Juvenile Ball. The Juvenile Ball
has since become non-existent and the Society, like many others in NSW now conducts a Miss
Showgirl Competition. The Dapto A&H Society has only had one Zone Finalist represent the Society
at Royal level, Renee Campbell (nee Buhagiar) in 1996.
In late 1936 the Society was offered a licence to conduct greyhound racing at the Showground.
This largely came about due to the Society, like many other Societies in NSW at the time, having
financial difficulties. The Committee believed that by conducting greyhound race meetings at the
showground it would assist to reduce the financial problems the Society had encountered.
Not long after in mid-1937 the Dapto Greyhound Racing Club was formed and greyhound racing
began on a grass track. The track remained grass until late 1991, when Dapto became one of the
first Greyhound racing tracks to become Loam. In 2006, the Club underwent further renovations
when a brand new track was built.
On the morning of Saturday 6th July 1991, the Secretary Mr Bill Dwyer (whom was living on the
Showground property at the time) was awoken by a loud explosion. He looked outside the window
to see the front office buildings on fire (the land on which McDonalds now stands). It is believed
the fire was lit under suspicious circumstances. Luckily the safe in which the minutes and
important records were kept survived with only a few documents damaged.
A transportable building was sourced from Walden at Port Kembla and until this was built the staff
set up a temporary office in the tote building.
In 1993, a new office building the main bar area was built. The office block and bar area is still in
use today, with an extension of the main bar area completed in June 2006.
Presently the Dapto A&H committee consists of twenty men and women who come from many
different backgrounds and all bring unique qualities and ideas to form the Dapto A&H Society.
The town has over the past 150 years changed significantly with farms sold off slowly to allow for
residential homes to be built. This has meant that the Society has had to continually reinvent itself
to cater for the needs of the local community, for example cattle was once a main focus of the
show but without local farms this event was dropped years ago. The showground now attracts
more sporting events and a variety of local community organisations utilise the grounds and
facilities for communal events.
Dapto is now one of the largest suburbs in the Illawarra and continues to grow rapidly with a
population of approx. 15,000 people.
