WINE COUNTRY NEWS | WINE COUNTRY THIS MONTH
If you have strolled through the streets of Los Olivos recently, you
may have discovered one of downtowns newest additions, Coghlan
Vineyard and Jewelers. Husband and wife co-owners, Eric and
Samantha Coghlan opened the doors of their tasting room and jewelrystore in May of 2011. Established in 1956, Coghlan Jewelers was origi-
nally started by Eric Coghlans grandfather in the small town of
Kosciusko, Mississippi. Determined to follow in the footsteps of his
grandfather and father, Eric attended the Gemological Institute of
America (GIA). While attending GIA in Southern California, Eric was
introduced to his future wife, Samantha. Samantha was attending GIA
to further her education as a jewelry designer after starting her own
business at the age of 16. Both Eric and Samantha became Certified
Graduate Jeweler Gemologists upon graduation from GIA. With a
mutual desire to combine forces to create one-of-a-kind jewelry, Eric
and Samantha began looking for a unique place to settle and show theirart.
In 2009, they bought a beautiful property in Happy Canyon which
had a vineyard planted entirely to Cabernet Sauvignon. In 2010, Eric
and Samantha added Cabernet Franc, Malbec, Grenache, Grenache
Blanc and Petit Verdot. The Coghlans are in the process of getting their
estate vineyard certified and established as organic. They are very
passionate about farming organically as they reside on the property with
their two boys and many animals that they love.
The Coghlans wine program has earned high accolades already, in
February of 2011 their 2009 Santa Rita Hills Pinot Noir took a second
place award out of 360 wines at the Pinot Noir Summit in San Frcisco, Ca. The Prince of Pinot titled the wine Heaven Scent
described it as being Harmoniously composed with impressive len
on the finish. A great marriage of fruit and oak. The Coghlans
excited about the release of their 2009 Santa Ynez Valley Caber
Sauvignon and their 2009 Fusion, which is composed of a fifty-f
blend of Cabernet and Merlot. Both wines have been described
being extremely smooth for such a young Cabernet.
With the 2011 harvest in full swing, the Coghlans are immen
excited about not only the future of their estate wine program but
about the holiday season that is quickly approaching. They will not o
be releasing five new wines, they will be putting out several new jew
pieces just in time for you to find something hand made and one-o
kind for that special someone.
Their dream of opening their own jewelry store quickly beca
entwined with opening their own tasting room, a dream whose real
tion was aided by the addition of winemaker Allan Phillips. The f
piece of the puzzle was finding and renovating the beautiful cott
where they opened their tasting room and jewelry store in downto
Los Olivos.
Visitors will often have the chance to meet both Eric and Saman
as well as their two little boys, Ozzy and Cash. Samantha has create
space that is chic and inspiring to showcase their wonderfully ha
crafted wines and jewelry. The tasting bar itself is a work of art, offeviews of the beautiful, distinctive Coghlan jewelry pieces. Each of t
wine bottles is adorned with a beautiful gem to further reinforce
marriage between the two passions of wine and jewelry. To captu
feeling in a moment, whether it is savoring the sun and some wine
the back patio, or playing bocce ball with friends, the Coghans in
you to come and enjoy.
Coghlan Vineyard and Jewelers is open daily from 11 a.m. to 5 p
and is located at 2366 Alamo Pintado Avenue, Los Olivos. For m

by Michael Cervin
Wild Horse Winery has long been one of the leading wineries
on Californias Central Coast. Though they have grown to become
a major force in the production of Central Coast wines, producing
nearly 200,000 cases each year, they have remained firmly in
control of quality and innovation. Wild Horse has a long legacy,
starting in the early 1980s when then-owner Ken Volk formed the
winery. Originally set up as a winery that would focus on wines
made from various and diverse appellations around California,
Wild Horse has steadily increased its production, quality and
consumer base.
It would be easy to assume that because Wild Horse is corpo-
rate-owned that the quality of the wines might suffer a little. But
surprisingly, the quality of the wines has actually increased over
the years. Clay Brock is our General Manager and Director of
Winemaking, and Chrissy Wittmann is also our winemaker, saystasting room manager Leslie Churchill. Winemaking here will
always be focused on the great fruit of the Central Coast, she says.
Those fruit sources include Santa Barbara, San Luis Obispo and
Monterey counties. And since Brock and Wittmann have been
working together for years, not only solidifying a strong relation-
ship with each other, but also with the wines themselves, they are
accustomed to turning out an exceptional array of wines you will
not see anywhere else. Few wineries in California source their
grapes from such a broad spectrum of vineyards as does Wild
Horse, but this has allowed them to select grapes from the specific
areas they feel best showcase a particular wine or region.
example, they can produce a Pinot Noir from three dist
growing regions in Santa Barbara and San Luis Obispo countie

vineyards. Or, they can secure grape varieties that grow better i

Churchill says. Even though Pinot Noirs are what we are kno
for and something that will always be our flagship wine, we do
want to lose sight of our fantastic estate wines like Blaufranki
and Verdelho. We also make a wonderful Malvasia Bianca,
notes. They recently released an Unbridled (Reserve) Malbec an
new Unbridled Pinot Noir (from the famed Righetti Vineyard
Edna Valley). This is exactly why being a large winery can hamazing benefits.

room is a modest structure with a low-key feel to it. A simple wo

items, cookbooks, clothing with their iconic horse emblazoned on
it and wine themed gift items. They also have picnic tables around
and under the grape arbor that leads directly into the tasting room.
With so many tasting rooms in the Paso Robles area these days,
how does Wild Horse seek to compete with the crowded field? By
staying true to who we are. By always making top quality wines
and providing excellent customer service, Churchill admits. They
also offer a number of special events throughout the year as well
as events for wine club members. Wild Horses next event will be
Harvest Fest, October 21-23 with a great line up of food, music
and wine.
Some of their top quality wines include Viognier, Chardonnay
and their Malvasia Bianca, which is a perennial favorite. As for
hearty reds, Syrah, Zinfandel, Cabernet Sauvignon, Merlot and
their flagship variety, Pinot Noir are always available. Be certain
when you visit to try the heirloom varietals they have become
known for like Negrette and Blaufrankish; wines you simply will
not find in many places. Their fee structure is simple: $10 for 5
tastes and a logo glass, or just $5 without the glass. They usually
have about 20 wines open from their everyday drinkers to their
high end reserves, all available for you to try. So, just like the wild
horses that still roam the Templeton area, swing on in, free of
constraints, and taste the best of the California Central Coast.
Wild Horse Winery is open daily 11 a.m. to 5 p.m. Call in

Carina Cellars owner David
Hardee has turned a passion for food
and wine into a winery dedicated to
showcasing the Central Coasts quali-
ties as a phenomenal winegrowing
region. David, who lives on Carina
Cellars Westside Paso Robles prop-erty, says that he has accumulated his
knowledge of wine over time, I have
been drinking and collecting wine all
my life. As David has traveled to
renowned wine regions in France,
Austria, Germany, Argentina, Italy
and Spain, his confidence in the
Central Coast has weight to it. The
Central Coast is where it is at, David
says, in terms of wine regions in North America.
Carina Cellars had been operating at its Los Olivos location for
five years when David bought the 83-acre property in Paso Robles.
He was interested in Paso Robles as a place to grow the best Rhne
varieties in North America. Looking at the soil and the climate,
David envisioned what now sits on the property: a vineyard of
mainly Rhne varieties thriving in the very unique microclimate of
Paso Robles west side. Carina Cellars vineyard on Adelaida Road
produces Mourvedre, Syrah, Grenache, Viognier, Grenache Blanc,
Tannat, Zinfandel and Cabernet Sauvignon, most of which are now
in their fourth or fifth leaf.
Twenty-three acres on the Carina Cellars property have been
planted in grapevines, and each year Carina Cellars produces around
2000 cases of wine, much of it estate-grown. With a focus on blends,
Carina Cellars produces about
wines each year. David explains t
they produce six core wines wh
are fairly consistent from year to ye
and then look to the vineyards
dictate the remaining blends. He s
that with these ever-evolving blenthey let the wine tell us what to
with it each year.
One blend that Carina Cel
produces each year, and which
best-seller, is their 7 Percent win
blend of 93% Syrah and 7% Viogn

David says, the Romans taught
French how to do it in the Northern Rhne 2000 years ago
fact that they brag about the 7% is fairly unusual. David finds t
the Viognier makes the Syrah more feminine, more elegant a
that it smoothes it out.
While Carina Cellars is the vision of owner David Hardee
relies on the expertise of Winemaker Joey Tensley, with whom he
been working since 2002, to produce the trademark Carina Cel
blends. Joey is also familiar with winemaking regions worldw
and works as a consultant winemaker for wineries in France a
Argentina when he is not working the Central Coast harvest.
Carina Cellars strives to produce wines which let the qualitie
each varietal come through in the wine as David says, We do
really screw with the wines. To achieve this goal they focus much
their attention on the vineyards, and grow low-yield crops each y

to maintain the quality of the
grapes they harvest. For David,
quality control is absolutely
important, critical.
The Carina Cellars Paso
Robles property, with Paso
Robles trademark rolling hills
and oak trees, was a walnut
ranch when David purchased it.
It is now home to not only theCarina Cellars vineyards but a
production facility, tasting room
and guesthouse as well. The
three-bedroom, two-bath guest-
house, which allows guests
sweeping views of the
surrounding area, is available as
a vacation rental. Guests are
encouraged to take advantage of
the private vineyard tour offered
to them, and to take a dip in the
infinity pool.
Along with their wine-tasting
menu, the Carina Cellars tasting
room offers pairing plates of
cheeses, meats and chocolate to
compliment their wines. With
its focus on fine wines and
hospitality, Carina Cellars is a
reflection of owner David
Hardees lifelong passion for
food and wine just a few
minutes up the road!
Carina Cellars is open for
tasting Friday- Monday from 11
a.m. to 5 p.m. at 3525 Adelaida
Road in Paso Robles, and daily
from 11 a.m. to 5 p.m. at their

Named after owner Bill Foleys daughtersLindsay and Courtney, Lincourt was founded
in 1996 and today produces boutique, hand-
crafted wines from the estate vineyards in
Santa Ynez and Santa Rita Hills.
The quaint and charming tasting room is
an original 1926 Sears Craftsman kit home.
The building was shipped via railway (now
Alamo Pintado Road just outside the vine-
yard) and brought up the hill and pieced
together by numbers. Located on the prop-
erty of an old dairy farm, the building, whichsits in its original spot since it was built, still
has the original glass windows as well.
At the Lincourt tasting room, which offers
a selection of Bordeaux and Burgundy vari-
etals, guests can taste six wines for $10.
White wines include Pinot Grigio, Pinot
Blanc, Sauvignon Blanc and three different
Chardonnays. Red wines include Cabernet
Sauvignon, Merlot, Pinot Noir and Syrah, as
well as a Ros of Grenache. The wines are
approachable, fruit-forward wines that range
in retail price between $18 to $40. In
November Lincourt will be releasing two
new Chardonnays and two new Pinot Noirs.
These wines will be handcrafted, limited-
production wines which will only be avail-
able in the tasting room.
Lincourt tasting room is the perfect place
to stop in the middle of the day for lunch.
With tables under the veranda looking out at
the vineyards and grassy areas, it is the id
spot for a picnic lunch. Lunch can be pic

can be purchased in the tasting room.

Business owner and restaurant afficianado Jim Spallino, together
with Alfonso Curti, former executive chef of Grappolo in SantaYnez, have a winning combination for Orcutts next big thing: alocal Italian trattoria. Both Spallino and Curti have dreamed ofhaving a restaurant of their own and when the opportunity to takeon the Wine Cottage Bistro presented itself, they jumped! Curti, anative Calabrian, moved to California from Italy a little more thanten years ago and made a name for himself working at his familysrestaurant in Santa Ynez during that time. His culinary careerbegan as a young teenager where he worked in a family bakery andlater he served in the Italian Army as a chef for troops. Perhaps hisgreatest teachers were his Nonna and Mamma where he learned
the heart of Italian cooking. When Spallino frequented the family restaurant in Santa Ynez, right away he zeroed in on the heart of the place: Chef Curti andplanted the seed for Alfonso to dream of having his own trattoria.
Trattoria Uliveto is a gathering place for families, friends, busi-ness associates, locals and tourists with a passion for quality foodand fine wine. You will be transported to a small trattoria in theheart of Italy when you meet the staff, taste the food and soak inthe atmosphere. Favorite offerings start with the Grissini: home-
made breadsticks, wrapped in prosciutto and soaked in butter an
sage, then a salad of arugula, parmesean, lemon and extra virginolive oil. For the main course one might try a pasta of penne, sausage and mushrooms in a tomato cream sauce or a pizza fromwood-burning pizza oven. Meat lovers will not be disappointedwith a bistecca of the day prepared to your liking or perhaps thebreaded pork chop with arugula, tomato and extra virgin olive oLastly, your sweet tooth will be satiated with a rich chocolatemousse or perhaps Alfonsos Torta della Nonna. 2008 Mirror Perfectly
Paired with Pizza di Jada(with pepperoni & sausage)Pizza and wine is such a fun pairing! This hearty meat pie beckons
for a big bold red and the 2008 Mirror definitely delivers. This recipeis great as I usually have most of the ingredients on hand. Using pre-made crusts are good for making individual pizzas or having yourguests make their own pie. My favorite part of making pizza is alwaysthe wine. I love to take the time and put together all the componentswhile slowly sipping a glass of delicious wine. There arent many mealsthat allow for leisurely preparation, but thats exactly what makingpizza is all about.
Jada Vineyard and Winery produces Rhne and Bordeaux winesfrom their estate vineyard on the west side of Paso Robles. The 2008Mirror contains 58% Estate Syrah, 30% Estate Cabernet Sauvignon,8% Estate Petit Verdot and 4% Merlot which makes it a very wellrounded wine. Winemaker Scott Hawley has taken full advantage ofall the varietal components. The Cabernet Sauvignon provides thefoundation of ripe round tannins and precise acidity on which thewine is built while the Syrah creates volume and balance. The PetitVerdot adds beautiful color, generous tannin and a distinctive aromaticcontribution of violets and dried herbs, tied together with a smallpercentage of Merlot. The luscious depth of this wine balances thespice in the sausage and finishes with hints of blueberries, plums and
black cherries along with black tea and cedar.Their tasting room is nestled in the heart of the Templeton Gap, at5620 Vineyard Drive, off of Highway 46 West. Stop in for a tasting ora wine and gourmet cheese pairing. They have two upcoming specialreleases: the 2009 Hells Kitchen, their signature Rhne blend, andtheir 2009 Strayts, which is a new red blend that was released for thefirst time last year. With only 160 cases made, it is a very limitedproduction wine that their customers have become fanatical about.Jada is open Monday through Sunday from 11 a.m. to 5 p.m. Fortours or to schedule a VIP tasting, call (805) 226-4200.

Castoro Cellars is one of the older wineries in the Paso Robles AVA.
Husband and wife team Niels and Bimmer Udsen began making winesin the early 1980s with a production of just a few barrels of wine for
family and friends. Today the Udsens own over 700 acres of vine-
yards, a state-of-the-art winery producing 60,000 cases for the Castoro
Cellars label and a gorgeous hospitality facility with plenty of room for
events.
As the business grew the focus remained on quality and environ-
mentally friendly practices. All of their vineyards employ sustainable
viticulture practices. The majority of the vineyards have been SIP certi-
fied and 120 acres, the Cobble Creek and Whale Rock Vineyards, are
certified as organic. Growing up in Denmark, there was a strong envi-
ronmental focus. I have always enjoyed nature and when we planted
our organic vineyards it was for no reason other than it was the rightthing to do. We continue this focus in all of our vineyards, explains
Bimmer. Not only is it beneficial for the environment, it is better for
our vineyards and for our vineyard neighbors.
Recently Castoro Cellars took CCOF (California Certified Organic
Farmers) certification to the next level and will be able to use the
CCOF seal on their wine bottles. The CCOF is a certifying agency that
is accredited by the USDA and requires both the vineyard and winery
be certified organic in order to carry their seal. The process of
obtaining certification by CCOF is extensive, with an in-depth review
and inspection of the winerys practices, and ultimately at completion
certifying full compliance with CCOF organic standards. The only
difference between organic wine and wines made from organic
grapes is the addition of sulfur dioxide as a preservative. Wineries
that use the term Made With Organic Grapes and the CCOF seal on
their bottle must produce grapes in vineyards farmed without the use
of pesticides, herbicides or chemical fertilizers and the wine must be
made with less than 100 ppm of sulfites (non-certified wines may use
up to 350 ppm).
Obtaining certification is another milestone representing Castoro
Cellars commitment to environmental consciousness. With CCOF
having roots in the California farming community for more than 35
years and being regulated by the USDA, consumers trust the CCOF
seal. We believe our customers will appreciate the Made WithOrganic Grapes statement and understand what that means, stated
Niels Udsen. The seals will soon be found on a number of Castoro
wines including their Pinot Grigio, Primitivo, Pinot Noir, Tempranillo,
Cabernet Sauvignon and Zinfandel. In the future the newly planted
Falanghina grapes will also find their way to bottles with the CCOF
seal. Niels and Bimmer discovered this Italian grape varietal on a
recent trip to Italy and are excited to introduce their club members to
this new, exciting wine.
October is the perfect month to visit the Castoro tasting room. Situ-
ated in the middle of the Cobble Creek Vineyard, the tasting room is
just off of Highway 46 West and offers visitors breath taking viewwarm welcoming environment and a large selection of dam
wine. Tasters may enjoy up to three complimentary tastes or try se
wines for just $3 (tasting fee waived with purchase).
Throughout the year Castoro hosts concerts for musicians fr
around the world and displays the artwork of a featured artist.
Saturday, October 15th, the winery will host a SLO Folks Ind
concert featuring Richard Smith & Julie Adams. The duo offer a ra
of musical styles from country, bluegrass, mainstream jazz, mod
pop and rock, to classical guitar. This month, the featured artist is K
Snyder, a self-trained artist. Her acrylic paintings invite peac
contemplation inspired from nature.
Castoro Cellars also hold events on special weekends. The th
weekend in October, known as Harvest Wine Tour Weekend is
of those special weekends, and this year the winery will offer eve
all weekend long from Friday, October 21, through Sunday, Octo
23. The weekend kicks off on Friday evening at 6:30 p.m. with
Barefoot Barrels Bash. They have brought in The Barflyz, a group
world-class musicians led by front man Kenny Lee Lewis (bass pla
for the Steve Miller band). The group will be playing everything fr
original cool jazz and pop hits to R&B and blues. Tickets
$45/person or $34/club.
Saturday and Sunday from 10 a.m. to 5:30 p.m. you can exp

Jeremy Weintraub joined the Edward
Sellers team as winemaker in June, giving him
just enough time to go through every barrel in
the winery, explore every row in the vineyard,
oversee bottling and get ready for the 2011
harvest. A huge amount of work in a very
short time but he was up for the challenge.
Although winemaking was not Jeremys
first career, his love for wine began at an early
age while he was growing up with his family
on Long Island, New York. He even worked
giving tours at a local winery prior to leaving
Long Island to study at the University of Edin-
burgh. After receiving his undergraduatedegree from Clark University, he worked at a
think tank in Washington, D.C., wrote articles
for a number of magazines in New York and
then, in his late twenties, he decided to quit
writing to follow his passion and launched his
winemaking career.
Jeremy gained experience working at
wineries and vineyards prior studying wine-
making at Fresno State for one year. He then
attended UC Davis where he earned his
Masters Degree in Viticulture and Enology.
From there he gained additional experience in
New Zealand at Italys famous Tenuta
Tignanello Estate, Tantara Winery in Santa
Maria, Shadow Canyon Cellar in Paso Robles
and Seavey Vineyard in St. Helena. Now he is
excited to be apart of the team at Edward
Sellers and be able to use his skills to help
grow the current production of approximately
5,000 cases to a maximum of 10,000 cases.
Jeremy is happy to be back in Paso Robles
and part of a growing winery. I met Ed Sellers
through a mutual winemaker friend last year
and was impressed by his desire to make
something special in Paso Robles. Hes got
tons of energy. He and Dani both want toknow everything about winegrowing and get
as dirt
