    Peter Scott Fraser, owner and wine-

    maker of Scott Cellars, remembers the1992 L.A. riots quite well. In fact, thatwas the epiphany moment that transportedhim from working in L.A., selling televisionair time, to starting his very own winery.After watching looters break into the Big 5sporting goods store across from his office hewent home that night, dismayed and frus-trated. I made it home questioninghumanity. Whats wrong with these people?He wondered to himself. I pulled out thebest bottle of wine I had at the time andopened that puppy up. He drank part of thebottle while glued to the TV reports of therampant crime and disarray. Moments likethese tend to put things in perspective. As Isat there I kept saying to myself, whats themost cool, wonderful thing I could do? Theanswer was in his glass. I decided that nightI wanted to have my own winery. His tastingroom, Scott Cellars in Los Olivos, has notbeen open even a year but it appears Peter isbeginning to hit his stride.

    He mapped out a five-year plan, phonedU.C. Davis and bought their winemakingbooks (notoriously dull and technical), and

    taught himself winemaking on nights andweekends. After another year in L.A., it wastime to quit his job. Part of his road map wasto work both the retail and wholesale sides of the wine industry. I treat this as a business,he says. Its one thing to make wine, but Peterwanted to understand the nuts and bolts of allaspects of the marketplace. He took a job at awine shop near Santa Barbara and learned theins and outs of selling and marketing wines.He sold low-end wine, high-end wine andeverything in between. Then he was ready forthe big test.

    Leeward Winery, a small operation in Ventura was looking for a winemaker.Having little experience in the actual makingof wine, he talked himself into the job. Theyhad no recipe I could follow. They just said,go do it. So he did. He stayed for four andhalf years, but then Leeward closed theirdoors and he was no longer winemaker. Tosustain himself Peter bought and sold realestate and catapulted himself into a modest

    enough sum of money that he could form aLLC and start Scott Cellars.

    His tasting room in Los Olivos reflects

    humble beginnings. He built the tasting bhimself because he didnt have much moneFriends pitched in and helped work on thinterior. The ochre and tan colored walls awarm and inviting and his enthusiasm for hwines is unmistakable. His labels, leafs each particular wine, also reflects tsimplicity of the wine itself. At about 1,0cases, hes not a conglomerate, but hes eyeibigger prizes. Pinot Gris, Chardonnay, PinNoir, Syrah and a Syrah/Zinfandel bleallow him to express his love of wine. learned when working the retail side to offfutures, allowing people to buy wine at a prrelease price, often 20% less that the actuprice to help with cash flow, before the wiis released. His biggest seller is his Cuvee blend of Zinfandel and Syrah named after hwife Jennifer, who helps with the blending the wine.

    counties. I have an acreagecontract, so I buy fruit by therow. Though vineyard workersroutinely thin the crop, pullleaves and tend to the vineyard,he still goes in and cleans up

    making sure everything on thevine is to his liking. The down-side, he says with a wry smile, isthat vineyards are not designedfor guys six foot three, theyredesigned for guys five foot, three.He grabs his back as if in memoryof the pain. But though aches andpains may come and go, hesfound his passion.

    On his tasting menu he recom-mends cheese pairings with hiswines and fully believes that goodwine needs good food. When youvisit, he will pull out a 71% cacaodark chocolate piece for tasters totry with his Cuvee J. The result issmiling tasters, their eyes rollingupward in delight.

    In addition to the wines, heoffers shirts and hats and other

    accoutrements with the ScottCellars logo. But perhaps mostintriguing are the oils. Peter sells awalnut oil and an Argan oil.Argan oil is produced from thenut of the Argan tree which growsonly in southwest Morocco nearthe Sahara desert. Its a deepreddish colored oil with enticingscents of sweet nuts, which heloves to pair with his Chardonnay.Scott Cellars is located at 2933San Marcos Avenue, one block off Grand Ave in Los Olivos.     H oy Buell learned the wine businessfrom the ground up, literally. About a decade ago, the owner of

    Greenheart Farms in Arroyo Grande, asuccessful nursery on Californias CentralCoast, added grafted grapevine plants to thevegetable, reclamation and flower plants hesold.

    His thumb soon turned from green topurple and it wasnt long before he wasplanting 40 acres of vines in the historicAdelaida area, just west of Paso Robles.

    At 1,400 feet in the rolling hills near thecooling influence of the Templeton Gap, the

    vineyard offered the perfect spot for the vari-eties Buell selected both red and whiteRhnes, Zinfandel, Cabernet Franc, CabernetSauvigonon, Pinot Noir and even Sangioveseand Brunello.

    Its a true boutique vineyard. I basicallyplanted whatever I wanted to play aroundwith and some day make into great wine, hesaid.

    With minimal assistance from Buell,nature produced low yields of small, thick-

    skinned grapes, which created wine withstrong concentrations of fruit flavor and color,as well as balanced, silky acidity andelegance.

    Although Buell pretty much lets naturehave its way in the vineyard, he is protectiveof his vines when it comes to his fellow man and their vehicles. I wont let anybodydrive anything into the vineyard, he said. Idont want to take a chance on any infesta-tions from other outside crops and soil.

    For the first vintage in 2003, Buellcontinued the minimalist approach. I usedno oak that first year, he explained. I justwanted to experience the pure flavor andaroma of each varietys grapes before doing

    anything else to them.In 2007, partner Paul Ayers brought his 18years of winemaking experience to theHearthstone team. And this year Hearthstoneearned a gold medal at the 2008 San Fran-cisco Chronicle wine competition for its 2004Fireside Claret a meritage blend that is 57%Cabernet Franc, 38% Cabernet Sauvignonand 5% Merlot. It sells for $27, or $21.60 forwine club members.

    T he small viticultural area that existswithin the city limits of San LuisObispo is indeed a very special place.

    Families farm the 3,000 acres mostly, some-times generations of families, who were wiseenough, smart enough or perhaps just luckyenough to plant a few acres of vineyards inthis unique area.

    Cool climate growing with daytimetemperatures that dont often exceed 80degrees and cool nighttime fog allow certainvarietals to flourish here, particularly thepeppery, earthy Syrahs for which the area hasbecome famous. Its her e that Craig and SheriWood bought their ranch just at the foot of the San Luis Obispo grade. Weve got 80acres here, but only 12 are planted, saysCraig Wood. Im just now looking atplanting another 20.

    Wood Winery, with a tasting room inArroyo Grande, is a dream that, went from apassion to a hobby to a lucrative business,says Sheri Wood. We thought wed plantgrapes as a hobby. As it turns out, Woodwinery became much more than that.

    In 1996, when the Woods purchased theland, they werent thinking about planting avineyard. It was actually a great story, saysCraig. We were out to dinner one night and

    my wife got to talking to the bartender whowas a Cal Poly viticultural student. Thatchance encounter led to a discussion aboutthe ranch purchase and to a visit by KeithPatterson of Cal Polys viticultural depart-ment. He told us we had to plant Syrah hereand so, we did, says Wood still with a laughof amazement. I got my education byreading the books from the Cal Poly viticul-tural department. But it wasnt until Woodstarted getting phone calls from wineriesaround the area that he began to think aboutmaking wine. They wanted to buy the grapesI was growing, he says. I thought there mustbe a reason why.

    Naming the vineyards for his wife,daughter Gina and son Jackson, Wood hasnot simply produced hobby wines. WinningDouble Gold medals and Best of Class fortheir Ginas vineyard 2004 Syrah from the SanFrancisco Chronicle as well as Double Goldmedals for Jacksons vineyard 2004 Cabernet,the Wood family has allowed their hobby tobecome serious business.

    I dont consider myself a winemaker,says Craig. Im a winegrower. Winemakersfix problems that come up. I grow the fruit.Thats where the wine is made first, he adds.Focusing on single-vineyard varietals, Woodis careful and thoughtful about production.

    Wood wines spend two years in the barrel

    and a year in the bottle before they areleased. Im just now drinking throusome of my 02s and 03s, says Craig.

    With four generations of family living aworking on the ranch, Wood Winery habecome part of the landscape. Sheris mothand grandmother live here on the ranch anthey help out. My daughter Gina lives hetoo and she helps me quite a bit. Tyoungest member of the family, Jackson, dowhat he can to pitch in as well. Its definitea family thing, says Wood.

    Wood Winery produces about 3,000 casea year of various wines. The Woods were oof the first to start growing Syrah in the arebut they also make Viognier, AlbarinCabernet Sauvignon and a few others. I

    just recently made a Cab-Syrah blend we cSyranet, says Wood. The blend is 40% Cand 60% Syrah. Its wonderful and its a grexpression of the vineyards.

    The greatest expression of wine has alwabeen sharing it with family and friends.

    Keeping with the Rhne varietal theme,Carina Cellars has attracted a distinctfollowing for its Rhne blends. The mostpopular is the 7 Percent which has been abackbone of Carina Cellars wines since thebeginning. This blend is styled after the Cte-Rtie region in the northern Rhne valleyand consists of 7% Viognier and 93% Syrah.Its rich, velvety texture and subtle floral notes

You know it by looking at it, youknow as soon as walk up the path and in the door that this is a spotthat simply belongs right where it is, doing exactly what it is doing.That, in a word or two, would describe the Cambria restaurantknown fondly and to many as Robins Restaurant.

    Located in a charming and nicely weathered old home in thishistoric seaside town, they offer an eclectic menu that has pleasedlocals and visitors since they opened their doors in 1985.     PEANUT SAUCE 1/3 cup finely chopped onion 2 cloves garlic minced 1 teaspoon dried hot red pepper flakes 1 tablespoon vegetable oil 1/2 cup peanut butter 1/4 cup hoisin sauce 2 teaspoons sugar 1 tablespoon tomato paste

    To make the sauce cook onion, garlic and red pepperflakes in a small heavy saucepan over medium heat. St

    as it simmers about 4 minutes Using a whisk add theremaining ingredients, simmer for 1 or 2 more minutesand 1/2 cup water to thin to desired consistency, and thcool.

    SUMMER ROLLS 1 package of 8-inch round sheets of rice paper 1/2 pound vermicelli boiled 5 minutes rinsed and dra 1 head of green leaf lettuce washed and dried 1 bunch cilantro sprigs 1 bunch mint leaves 1 bunch green onion cut into strips 1 cup julienned carrot 1 cup thinly slice cucumber (This can be marinated in

    a mixture of sambal, rice wine vinegar and honey)

    OPTIONAL ADDITIONS Thinly sliced baked tofu Shredded cooked chicken Crabmeat or lobster meat Leftover beef or steak Shrimp precooked and butterflied Smoked salmon

    To assemble the rolls place the rice paper in a bowl of

    warm water for 30 seconds or until softened. Shake othe excess and lay it flat on a plate. Line the roll with tlettuce, then cilantro, tofu or optional items, carrots ancucumber. For spicier tastes a drop a few drops of samon the cucumber. Tightly roll bottom edge of wrapper to enclose the filling. Fold up sides. Continue to roll top to seal. If you are not serving immediately keep in refrigerator covered with a damp paper towel. Rolls arbest served within a few hours.

    The owner of Novo restaurant in down-

    town San Luis Obispo is a busy man.Thats not unusual, of course, the

    restaurant business is known for its long days,late nights and physical demands. But RobinCovey is busier than most because Novo isnot just an ordinary restaurant, its destinationdining.

    Located on Higuera Street with its patiositting luxuriously above San Luis Creek,Novo is fusion cuisine with a local heart thathas captivated this Central Coast town. I wenton a Tuesday night and the patio was near tocapacity with local diners and a few tourists.San Luis has really become a destinationspot, says Covey. Were not just a halfwaypoint anymore. Indeed, the Wine Country of San Luis Obispo County from Paso Robles inthe north to the Edna Valley and ArroyoGrande has become an oasis on the CentralCoast. Novo, a Portuguese word meaningnew knows it, too. The wine list is large andfeatures a vast selection of local Central Coastwines, all chosen by Coveys son, Jai, who

    runs the restaurant with his father.The menu is a stunning blend of flavors

    from around the world with a focus on Asianand South American fusions. Chef JustinGabbert has teamed with Covey to create aTapas selection along with a few large plate

    I moved to Cambria when I was 15 and Igot a job in a hotel and then that summer ina restaurant, says Covey. But Ive alwayswanted to run a restaurant, ever since I was akid. The passion Covey has for his business

    shows and Novo is unique in many waysbeyond the menu.
