Editor’s Note

At a time when we should be celebrating, I mourn. I mourn because of the laissez faire attitude to saving life at the Lagos University Teaching Hospital (LUTH)! My dearest mother passed on at the hands of incompetent nurses and doctors who failed to act when a second could have meant a vote for life.

Am I bitter? Yes! And, very angry! Angry at the fact that we have absolutely no public health care system. What we have, right now, is a killing field; where you are lucky to get out alive. But, this is not the time and place for the full details.

Today, we are celebrating the initiative of a young, dynamic lady. Five years ago, Jennifer Olize established Music Meets Runway, a fashion and entertainment event that has now become a fixture in our December calender. Come 22nd December, the MMR doors will open to another edition of rave curtain calls, no doubt. On pages 6-9, we profile – for the first time – the leading models who will sashay down the runway on opening night.

Our fashion pages take a look at what is trending for men, right now. And, as this is the season for giving gifts and love, we showcase five luxury items we are loving and wouldn’t mind being GIFTED with. Compiled by Yemisi Suleiman; please turn to pp.4-5 and p.10.

Another wind-down.Enjoy your week!

When it comes to menswear, placing importance on

textiles is very essential. Many of the season’s trends were dictated by fabric choices. From corduroy, cotton to linen, designers revisited classic staples with a modern flair. From casual items like the t-shirt to more formal ensembles like the suit, pops of colour delivered a bold fun style statement for Men’s trend as spotted on the runways of Heineken Lagos Fashion and Design Week.

The Nutritious World of Spelt?

011HEALTHY LIVINGby - Teri Mendes

For comments and questions please email [email protected], @terimendes. I would love to hear from you, till next week. - it’s ta ta for now! XOXO

Spelt is an ancient grain widely recognized for its many health benefits. Triticum spelta, the scientific name for spelt, is a hardier and more nutritious cousin to modern wheat (Triticum aestivum). Some classify spelt as a parent of wheat.Being one of the earliest domesticated grains, spelt hasn’t changed since Biblical times. It remains unaffected by concepts such as ‘agribusiness’, ‘cross-breeding,’ ‘hybridization’ and ‘genetically modified’ – words that have come to dominate our modern food supply. Known for its slightly ‘nutty’ flavor, spelt has long been popular as a health food in Europe, where it is sometimes known as ‘farro’ (modern Italy) and ‘dinkel’ (Germany). You can substitute spelt flour for modern ‘common’ wheat flour to make breads, pasta, cookies, crackers, cakes, muffins, cereals, pancakes and waffles. In addition to spelt flour, spelt is also available in its de-hulled, whole grain form (often referred to as spelt berries), which can be prepared and enjoyed like rice. You can also purchase many spelt products such as pasta, crackers and breads ready-made, usually at health food stores. One of the best things about spelt – in addition to its health benefits? It tastes wonderful! While whole wheat pasta tends to be grainy, and crumbles during cooking, spelt pasta retains its texture so it holds up perfectly under sauces and other ingredients. Today I have put together answers to frequently asked questions on Spelt. Enjoy!

Q: WHY IS SPELT AN ‘ANCIENT’ GRAIN?A: Some of the earliest recordings of spelt appear in the Bible (Exodus 9:30, Isaiah 28:25, and Ezekiel 4:9). It is widely believed that farmers grew spelt as long ago as 5000 BC in the region then known as Mesopotamia – now Iran. As civilizations migrated westward, spelt moved along with them. It wasn’t until the early 1900’s that spelt migrated to North America – in 1910 more than 600,000 acres of spelt were harvested annually in the U.S. alone.

Q. IF SPELT HAS BEEN AROUND FOR SO LONG, WHY HAVEN’T I HEARD OF IT?A: When the Industrial Revolution rolled through in the early 20th century, spelt took a back seat to its more modern cousin, wheat. By the 1970’s there was virtually no spelt growing in North America, because the modern, hybridized version of wheat could be harvested and processed cheaper and faster. Today, thanks to a growing interest in more healthful foods – and the re-introduction in 1987 of this nutritious

grain by VITA-SPELT® (Purity Foods, Inc.) to North America – spelt is making a comeback.

Q: SO IS SPELT ACTUALLY WHEAT, OR IS IT A DIFFERENT GRAIN?A: In a January 1, 2006 ruling, the FDA classified spelt in the wheat family, even though there are significant differences between common wheat and spelt, including that the molecular structure of the protein in spelt is more brittle and soluble, allowing it to be assimilated more easily. However, to follow the FDA ruling, it is required to list ‘contains wheat’ on any spelt product packaging, even though products do not contain modern, common wheat as we know it. In fact, a lot of processing plants are dedicated exclusively to spelt in order to eliminate any possibility of spelt grains and flours coming in contact with common wheat during processing.

Q: WHAT DOES SPELT LOOK LIKE?A: Spelt looks a lot like wheat, with one very important difference. The spelt kernel is tightly surrounded by a tough outer husk or hull, which represents 30-35% of the grain’s total weight. Modern wheat is free threshing – it has been bred to lose its husk during harvesting, in order to decrease harvesting time and increase yield. Spelt is not free threshing. It has to be mechanically de-hulled, adding two additional manufacturing steps to the process – which makes it more costly to grow and process. What did we lose when we modified wheat to make it free threshing? A lot, as it turns out. We made wheat more susceptible to insects and diseases (which has led to the need for pesticides) and we stripped it of important nutrients. The tough outer hull on the spelt kernel protects the grain from disease-carrying insects, eliminating the need for toxic pesticides. Spelt is stored and shipped with its protective hull intact; it is separated just before being milled into flour. This helps to preserve the grain’s freshness and its

nutrients – making it more nutritious than wheat.

Q. IF I’M ALLERGIC TO WHEAT WILL I ALSO BE ALLERGIC TO SPELT?A: The word ‘allergy’ covers a broad spectrum of reactions to certain foods, such as wheat. A true allergy can be life threatening, leading to anaphylactic shock. If you have a known wheat allergy or sensitivity, consult your doctor before introducing spelt into your diet. Many people who consider themselves allergic to certain foods, experience non-life threatening symptoms such as headaches, rashes, and stomach aches. According to the World’s Healthiest Foods website: “Spelt does not seem to cause sensitivities in many people who are intolerant of wheat.” Many who are sensitive to wheat have verified this. And remember, not all spelt is processed in dedicated, wheat-free processing plants. If you are allergic to wheat, be sure to look for 100% pure spelt. (The World’s Healthiest Foods website is published by the George Mateljan Foundation).

Q. WHAT MAKES SPELT DIFFERENT FROM WHEAT?A: There are many differences. Appearance and DNA structure. Genetic and nutritional profile. Gluten content and makeup. Fiber content. Even though the FDA has classified spelt as wheat, this pure, ancient grain is significantly different – and much better for you – than its modern commercialized cousin. Even whole wheat, which has not yet been stripped of its fiber and nutrients, is nutritionally inferior to spelt.

Q. DOES SPELT CONTAIN GLUTEN?A: Yes, but . . . the gluten in spelt has a different molecular make-up than the gluten in modern wheat. It is more fragile and more water soluble, which makes it easier to digest. Spelt is also higher in fiber than wheat, and the extra fiber aids in the digestion of the gluten. Modern wheat has been bred to contain high gluten content for the production of high-volume commercial baked goods. The content and character of the gluten in spelt has not been modified from its natural state.

That is it for today my readers! Hope you enjoyed this piece! Remember you read it here first!

EAT YOUR WAY TO SUPER CHARGED ENERGY

The only way to keep your health in good shape is to eat what you don’t like and do what you rather not do!

Always exhausted and not sure why? Turns out, more women have mild, undiagnosed, energy–snapping shortfalls in essential nutrients! The good news: those short falls are easy to pinpoint and cure!

1. Too tired to concentrate? You need boron! USDA research reveals that this rarely noticed mineral is essential for the production of energising brain waves! Too low levels are linked to fatigue and concentration woes.

Solution: Half a cup of boron rich almonds or hazel nuts daily can correct boron deficiency in as little as two weeks.

2. Tired, forgetful and blue? You need B12. Four in every ten women are low in vitamin B12. One

of the first signs is fatigue because B12 helps your body convert food to energy. The risk of low B12 increases if you take medications or treat heart burn, cholesterol or diabetes – or if you’re a vegetarian or vegan since the main food sources of B12 are meat, sea food and dairy.

Solution: A daily 1,000mcg dose of B12 can restore your energy in as little as three weeks. 3. Tired and acne – prone? You need zinc.

For up to 56% of fatigued women, a deficiency of zinc (a mineral that’s essential for dozens of energizing chemical reactions in the body) could be to blame.

Solution: 30mg of zinc daily at bed time, when stomach acid (which helps maximize zinc absorption) is at its peak.

4. Tired and overly anxious? You need vitamin C.Research shows that one in every three persons is

deficient in this nutrient – and fatigue in combination with anxiety is a top-tip off. Your adrenal glands need vitamin C to produce adrenalin and other rev-you–up hormones so, when you run low, your energy level can plunge.

Solution: One heaped cup of any citrus fruit daily can boost your energy levels and ease your anxiety. 5. Tired and muscle wearing? You need iron. At least, 16% of people are low in iron – a problem that cuts energy levels in half even if full blown anemia hasn’t set in. Even a mild iron shortage saps the ability of your cells to absorb and use energising oxygen.

Solution: Four ounces of iron-rich beef or poultry daily could erase symptoms within three months.

HEALTH101News

Keep blood sugar steady with oranges: Folks who eat the most vitamin C-rich foods are 62% less likely to develop type-2 diabetes than those who eat the least. The link? Foods high in vitamin C are generally nutritious fruits and vegetables that combat obesity (a risk factor for disease).

Question/Comment

Dear Omilola,Thanks for reverting to me. I am interested in micro investments in farming

such as piggery but have a challenge of procedures and modalities to follow considering that I am a civil servant and had no formal training on farming.

My challenge is not necessarily finance considering that I am talking of micro level farming but of how to set up, monitor, manage and develop the farm to be self-sustaining and profitable on the medium to long term.

I am based in Enugu and will be glad for your guidance.

Hello, Thank you very much for taking time out to write to pocket finance. I

apologise for the delay in reverting to you.Essentially what you need to do is to spend some time doing some research

on farming (piggery) and setting up a farm. The world is a much smaller place now and so information is readily available. There is a lot of information available on the internet. There are also books that you can read that would help you out. You can also look out for courses. Let me share a story I read in book that I am currently reading.

A young man found a vein of gold in a mountain. He tried to get it out

himself but kept failing repeatedly. He felt like giving up, but instead he went into town and asked a mining agency to come take a look at it. The mining company surveyed the mountain and the vein of gold and wanted to buy it. They offered the young man a large amount of cash if he would sell it to them.

The young man thought about it and decided that rather than selling it to the mining company, he would keep it and learn all he could about mining. Over the next year he studied practically day and night. He read every book on mining he could lay his hands on, took every course on it he could find and talked to every person who would give him any information about it. He did nothing else for that entire year but learn about mining. He laid aside everything else in his life in order to devote his entire attention to learning how to mine gold.

At the end of the year, he went back to the mountain and began to dig out the gold. it was tremendously hard work, but in the end he had millions and millions of dollars. (culled from the book A Leader in the Making by Joyce Meyer).

I hope you are inspired to spend sometime learning all you can about farming and how to set up a farm. I also suggest you conduct a feasibility study and also prepare a business plan. Remember “if you fail to plan, you plan to fail”.

Please do keep in touch and let me know how it goes.
