Salad:8 small red po-

tatoes, uniform in size(about 1 pound)

1 (6-ounce) cantuna in water, drained

12 asparagusspears, trimmed andsteamed

8 radishes,thinly sliced

1/2 cup pittedkalamata olives

1/4 small redonion, thinly sliced

1/2 cup freshparsleyVinaigrette:

3 T red winevinegar

2 T choppedfresh parsley

4 t olive oil1/4 t salt Freshly ground

black pepper

1. To prepare salad, cutpotatoes into halves orquarters and place inlarge pot; add enoughwater to cover. Bring toa boil; cook until pota-toes are tender, about10 minutes. Drain. 2. Arrange potatoes onplatter with tuna, aspara-gus, radishes, olives,onion and parsley. 3. To prepare vinai-grette, combine vinegar,chopped parsley andolive oil; whisk well.Drizzle oversalad. Sprin-kle with saltand pepper.
