Mysister,Marcia,lovestogarden.Shegenerouslysharesher plants with me. Recently, she gave me a stevia plant as agit. I use the leaves o this naturally sweet herb to sweeten avarietyofdrinks.It’salsoavailablecommerciallyinagranularorm like sugar. Steviaisanot-so-newsweetenerthatrecentlymadeitswayintotheU.S.market.AlthoughSteviahasbeensoldintheU.S.formanyyearsasadietarysupplement,itwasnotregulatedbytheFoodandDrugAdministration.NowthattheFDAhasdeclareditsactiveingredient–rebaudiosideA–as“generallyacceptedassafe,”itisshowingupinproductsliketabletopsweetenerpackets.PureVia(fromPepsiCoandasubsidiaryofMerisant,WholeEarthSweeteners)andTruvia(fromCoca-ColaandCargill),alongwithsomeavoredwatersandlower-calo-riesodaandfruitdrinks,nowcontainstevia. Leavesfromthesteviaplantaresteepedinwaterandthenprocessedintocrystallineform.Thesecrystalscreateasweettasteinthemouth,butarecalorie-freewhendigested.Asasweetener,stevia’sextractis250to300timessweeterthansugar.Thismeansonlyaverytinyamountisneededtoadd
sweetnesstoafoodorbeverage.As with any sweetener, there are challenges to using steviainfoodproducts.Steviaisnaturallybitter,buttastessweetaftersomedelay.Althoughitistemperatureandacidstable,
thenaturalbitternessandintensesweetnessarechallengesthefoodindustrywillhavetoovercome.Consumerswillneedtotastesteviaanddecideforthemselveshowwelltheylikeit.Another possible challenge is the price. Currently, it is expen-sivetousesteviaoritsactiveingredientinfoods.Productscontainingthisnaturallyderivedsweetenermaybeoutofmany consumers’ price range. Likeothersugarsubstitutes,consumersneedtowatchforanywarningsorconcernswithstevia.Ithasbeenclassiedas
safe,butitdoesn’thurttotryitoutslowlytoseewhateectithasonindividualtasteanddigestion. ThisrecipeforFruitSorbetusessteviainsteadofsugartosweetenthedessert.

You’llneedanicecreammachineforthisdeliciousrecipe.Youcanuseanyfruitjuiceblendconcentrateofyourchoiceinsteadofraspberry.Thisrecipealsoworkswellifyousubstituteone(12.3ounce)boxofsilkentofufortheyogurt,alongwith1 cup o milk or soymilk.

1/2cupunsweetenedraspberryjuiceblend concentrate,thawed1tablespoonorangejuiceconcentrate1 teaspoon vanilla extract3/4teaspoonsteviasugarsubstitute1banana(optional)
