Thanks to the approval by the antitrust authorities, we were able to officially
begin our worldwide cooperation with our colleagues at Freixenet on August 1. We are
delighted to now be able to give you more details on our cooperation – and in this
edition of PEARLS, we are taking you with us to Spain to introduce you to the impressive
Freixenet cava cellars.
Our journey then continues to Dresden and Leipzig. After a long night out with
Henkell Trocken, we will take you to Montenegro, Panama, and even to Hong Kong, where
we were able to successfully establish new contacts at this year’s Vinexpo. Last but not
least, we ring in the holiday season with our tips for a White Christmas. Laura Lahm is
also looking forward to this peaceful time after her eventful year and the former wine
princess tells us all about it in our interview.

Henkell & Co.-Group announced the closing of
its acquisition of Freixenet S.A.’s shares (50,67 %)
from the Hevia and Bonet families following the
approval of the European Commission. The closing
marks the start of an extensive cooperation with
the remaining Freixenet shareholders, José Ferrer
Sala and José Luis Bonet Ferrer.

Freixenet is the number one brand in the
international sparkling wine market with
leading market positions and sales in more than
100 countries. The Henkell & Co.-Group has a wide
portfolio of sparkling wines, with market leading
positions in many markets, including Mionetto as
the best-selling Prosecco globally.
Following a capital increase by Freixenet’s honorary
president, José Ferrer Sala, he and José Luis Bonet
will own 50 % of Freixenet S.A.’s share capital – while
Henkell & Co. will own the other 50 %. The new board
of directors of Freixenet will be led by the two co-
presidents José Luis Bonet and Dr. Albert Christmann,
general partner of Dr. August Oetker KG.
Further members will include Demetrio Carceller
Arce, president of S.A. Damm, who will contribute
his expertise in the beverage industry, as well
as Pedro Ferrer and Dr. Andreas Brokemper,
spokesman of Henkell & Co‘s management,
who both will become managing directors.
Enrique Hevia Ferrer, spokesman for the selling
shareholders, said: “The sale of our shares is a very
emotional moment for us. In Henkell we found the
perfect partner for Freixenet. Our families would
like to thank all employees for their hard work
and loyalty over the years and wish Freixenet all
the best for the future.” José Ferrer Sala, honorary
president of Freixenet, added: “The cooperation
with Henkell will not only give continuity to
Freixenet, a company renowned for its tradition,
but will also strengthen its international leadership
in the world of cava.”
Dr. Albert Christmann, general partner of
Dr. August Oetker KG, emphasized:

DEEP UNDERSTANDING OF TRADITION,
QUALITY AND CONTINUITY.
The strategic partnership will help to develop new
business opportunities, strengthening our market

connects Henkell and Freixenet, a symbol of two strong companies that
are now growing together. The X also stands for the Roman number ten,
which will play a significant role in the coming years when it comes to our
international alliance. We already notice its importance today, and soon,

For a cellar such as Freixenet, there could hardly be any better location
than Sant Sadurní d’Anoia. “With its varied soils - ranging from sand
to limestone - and its Mediterranean climate, the Penedès region
offer ideal conditions for viticulture,” Gloria Collell, International Wine
Manager at Freixenet, explains before starting the tour of the traditional
winery. Annually, up to 400,000 visitors from across the world explore
the cava producer’s headquarters, whose origins date back to 1889. What
initially started out as love between Pedro Ferrer Bosch – referred to as
“el Freixenet” – and Dolores Sala Vivé, has grown into the world’s leading
supplier of cava today. The son of Pedro and Dolores, Josep Ferrer, laid
the foundation for international success when he joined the company
in 1959. With him, cava production was professionalised and expanded
further, however without sacrificing the product quality.
“ TO THIS VERY DAY, FREIXENET RELIES ON THE
TRADITIONAL PRODUCTION OF CAVA. THIS INCLUDES
HAND-PICKED GRAPES AND FERMENTATION IN THE
BOTTLE”,
says Gloria Collell. "We cultivate our grapes - primarily Macabeo, Xarel.lo
and Parellada - on about 300 hectares of land belonging to the family.
In addition, we source from almost 1,200 regional winegrowers. We
know we can fully rely on them as we can look back at longstanding
relationships with these suppliers that date back to our founding. ” The
cellar, which was once carved into the chalk cliffs by hand, digs itself

into the depths, floor by floor. Here, countless bottles are
stored in the dark for at least nine months, until the so-
called “second fermentation” is completed in the bottle. The
yeast then settles in the neck of the bottle in a three-day,
automated shaking process. Once the yeast has settled,
it’s frozen in the bottleneck and removed by opening the
bottle. Before corking, the bottle is filled with the shipping
amount, which decides on brut, seco or semi-seco. Up to
120 million bottles are stored on the shelves of the Freixenet
cellars – including the two bestsellers Cordón Negro and
Carta Nevada.

Gloria Collell reports. In addition to the Carta and Cordón
lines, the Freixenet portfolio also includes premium
products from the Elyssia and Reserva lines, as well as
Mederaño and Mia wine brands. In addition, Freixenet
owns 21 wineries all over the world, where other wines
and sparkling wines are produced. The brand enjoys great
popularity; for example, the Spanish royal family is part of
the loyal customer base and, for decades, Hollywood greats,
ranging from Paul Newman to Penélope Cruz, have already
appeared in the annual Spanish Christmas commercial.

the company over the course of time and makes it visible and
tangible for visitors. While thousands and thousands of bottles
are stored in historical cellars in absolute quiet and darkness,
forklifts and robot arms are buzzing around on the next floor,
transporting the bottles to the vibrating device and to the
final processing stage in a last step. All of this is carried out
completely automatically.
“AS SOON AS THE BOTTLE HAS BEEN FILLED,
AND THE SECOND FERMENTATION BEGINS, IT ’S
NO LONGER TOUCHED BY HAND IN OUR HOUSE”,
Gloria Collell explains the process. She goes on to add: “Here,
everything is done just-in-time. When we receive an order,
our cellar masters organise everything in such a manner as to
ensure that it arrives at the customer on time. In this way we
ensure that the product isn't stored unnecessarily long at our
cellars. Our system can handle up to 18,000 bottles per hour –
seven days a week, 24 hours a day, in consistently-high cava
quality.”

WHAT IS …
… CAVA?
PenedèsThe most important wine region in
Catalonia, Penedès is located in the
north of Spain, not far from Barcelona.
The region’s range of over one hundred
grape varieties is considerable. Roughly
60% are white grape varieties, among
them Xarel-Lo, Parellada and Macabeo.
These varieties are primarily used in the
traditional Freixenet winery to create
high quality cava. The region comprises
almost 30,000 hectares of vineyards.
Ascending from the coast, the ground is
divided into the zones Baix Penedès, Mitja
Penedès and Alt Penedès. The region is
characterized by a Mediterranean climate,
which produces particularly aromatic
wines.

THE MORE THINGS CHANGE SEKTOR EVOLUTION
At first glance, it appears that the concept of this club in Dresden
is not to have a concept. But this is exactly what Sektor Evolution
aims for: to reinvent itself every weekend. Props, decoration,
music: when the club opens its doors to its audience, which mainly
consists of students, it’s never the same as the Saturday before.
During the week, the crew is busy with hammers, screws and saws,
so that at weekends, guests can party for up to 24 hours, spread
out across three floors and an outside area that includes a circus
tent for smokers. The former ammunition factory is a regular venue
for concerts and art exhibitions and has been an established club
since 2009. Dresden wouldn’t be the same without it.

TAKING A STAND OBJEKT KLEIN A
When demonstrations by the German extreme right wing
party Pegida started being held regularly in Dresden,
eleven friends faced a choice: leave the city – or create
something to counter the xenophobic protests. In the end,
they decided to stay, continued their university studies and
started to transform 300 square metres of factory area into
a club. It took two years until they opened the club, and by
doing so, brought an idea to life: to create a place where you
always know what you are going to get. In this case: finest
techno, played on a sound system that is almost unique in
Germany. This has long firmly established “objekt klein a” on
the Dresden club scene – and has sent a clear signal.

ANYTHING BUT QUIET MJUT
A club with 85 employees doesn’t sound all that spectacular.
How about when all 85 have a say in how things are done –
as it is the case at Mjut? What happens when students
and full-timers alike put every spare minute into an idea
that is second to none? Can this concept work? The club
collective proves that it can. Founded in spring 2018 and
hidden between a pet shop and a car rental in the centre of
Leipzig, in daytime a tiny nameplate is the only indication
of the club’s existence. Located in a former train depot, the
club draws hundreds of guests every weekend, who dance
to electronic music on two floors or have a good time in the
outdoor area. And having a good time is what this club is all
about – on this, the 85 employees and guests all agree.

Thinking that a name is mentioned
behind closed doors and suddenly, you’re
a wine queen or princess is certainly a
misconception. I made the conscious
decision to apply for these duties, simply
because I am a very communicative
person and would like to show people at
home and abroad how good our wines
are.
AND HOW IS THE DECISION
MADE?
The Rhine-Hessian wine queen election
has a jury of 40 experts to whom you
present yourself. The main focus is on
expertise, but of course, personality is
just as important, being confident and
likeable. At the German wine queen and
princess election, the jury even consists
of 90 experts who make the final decision
on who will represent Germany’s wines
for a year.

No, it depends on the size of the
respective region that will be represented.
At the German level, there is always one
queen and two princesses. Here, we share
duties, as there are a lot of events and

CAN YOU GIVE US A ROUGH
ESTIMATE OF JUST HOW MUCH
WORK THIS MEANT FOR YOU?
During my year as the Rhine-Hessian
wine queen, I attended 160 meetings and
events. I am sure that, in my current role
as German wine princess, I will attend
roughly the same amount again. This
means travelling almost every weekend,
as well as many appointments in the
evening and events during the week
at which I appear in my role as wine
princess.
THAT SOUNDS LIKE A FULL-
TIME JOB.
Yes, it does feel a bit like that. And at the
same time, my work at the family vineyard
has taken the backseat and is more like
a hobby (laughs). But it gives me great
pleasure to share my fascination with
wine with other people. I like to talk and
enjoy having conversations with people,
which I notice in my normal work here on
the vineyard and also when I am travelling
as a wine princess.
DID YOU IMAGINE IT WOULD
BE THIS TIME-CONSUMING
WHEN YOU STARTED OUT?
No, actually, it was a bit of a surprise. But
at the end of the day it was a conscious
decision that I have never regretted.
After all, going in, you know that you can
only be a wine princess once, there is no
second term; you can only do this once,
so you should do it well.
YOUR TERM ENDS AT THE END
OF SEPTEMBER. WHAT WILL
YOU DO AFTER THAT?
First of all, I’m going to take a break
(laughs). No, seriously, I will miss travelling
and being on the go, even if initially, I will
probably be happy to have the occasional
weekend off. After that, I will focus on my
work here on our vineyard. Here, I split
my time between working in the wine
cellar and customer service. I especially
enjoy the latter – the relationship to our
customers, interacting with them, is what
makes this job so appealing to me.
DID YOU ALWAYS KNOW THAT
YOU WOULD WORK ON YOUR
PARENTS’ VINEYARD ONE
DAY?
No, not for a long time. And nobody
expected me to. Of course we have a
strong family tradition; we are the sixth
generation after all. But I was always
told: you don’t have to do this. So initially,
I decided to work in the social sector.
However, at some point I realised that
wine, our winery, entrepreneurship,
fascinate me more. So I completed
vocational training as a winegrower and
graduated as a state-certified economist
for wine and oenology. So now there’s
nothing to stop me carrying on the family
business (laughs).

WEINGUT LAHM
Together with father Leo and mother Petra, Laura Lahm represents
the sixth generation to manage the vineyard. With its typical Rhi-
ne-Hessian orientation, the winery stands for a large grape variety
– among them some rarities such as Scheurebe and Würzer. Spread
across 16 hectares, the family cultivates four hectares of Riesling,
around two hectares of which are used exclusively for manufactu-
ring Fürst von Metternich sparkling wine. The vines and vineyards
are inspected regularly in order to ensure a continuously high qua-
lity of grape. “I am very proud that there are still such high-quality
sparkling wines as Fürst von Metternich in Germany, and that our
vineyard and our passion contribute to that,” says Laura Lahm.

White sand, colourful parasols, turquoise water:
Copacabana Beach is a fairly regular beach. But for
four days every year, it changes into a location that
draws thousands of people. People who are not
looking for peace and quiet, but rather have one
thing on their mind: the Southern Soul Festival. In
summer 2018, around 8,000 people from all over
Europe travelled to the peaceful town of Ulcinj in
Southern Montenegro, where they danced and
partied to soul, jazz, funk, disco and house – by
day and by night. During this time, the Docinium
Kite Club is transformed into a unique festival
area on the beach with stages, bars and chill
out areas. This year, Mionetto was present at the
established festival with a bar and a promotion
tent and offered Mionetto Prosecco to visitors.
Mionetto’s presence was accompanied by the
hashtags #MionettoProsecco and #MionettoMe,
which animated many guests to post images
of themselves on Instagram and Facebook
wearing radiant orange Mionetto sunglasses.
This generated around 400,000 contacts in just
one weekend. First and foremost, however, they
created lasting memories, and ensured guest
look forward to next year’s festival.
CELEBRAT-ING …
1F E S T I VA L O F C O LO U R S I N I N D I AThis tradition is quite well-known, especially since
Holi festivals have entered European culture. In
India, this spiritual spring festival celebrates the
victory of good over evil and traditionally lasts
two days, and sometimes up to ten. During the
festival, participants throw colourful powders
at one another – and in doing so, practically
set differences in societal status, age or gender
aside. Gifts and an extensive meal round off the
festivities.
2T O M AT O F I G H T I N S PA I NOnce a year, on the last Wednesday in August, the
tiny Spanish town of Bunol turns into a battlefield.
On this day, up to 20,000 people come together to
peacefully throw thousands of overripe tomatoes
at one another. If you are looking for a religious or
political reason for this Tomatina, you will look in
vain. What you will find, however, is a whole lot of
fun – and a huge mess.

N E W Y E A R I N C H I N A Chinese New Year is also known as the Spring
Festival and counts as the most important
traditional festival in China. The date depends
on the lunar calendar and falls on February 5
in 2019. The festivities end with the Lantern
Festival on the fifteenth day of the new year.
Fun fact: this festival is annually celebrated
in Indonesia, the Philippines, Vietnam, Korea,
Malaysia, Brunei and Singapore as well.
D AY O F T H E D E A D I N M E X I C OWhat may sound strange at first is one of the
most important Mexican holidays. On the Día
de Muertos, Mexicans remember their dead,
and they do it with lots of colour and high
spirits. Floral decorations line the streets,
homes and cemeteries are decorated with
colourful symbols of death. Preparations for the
festival alone take two weeks. On the day itself,
Mexicans celebrate extensively with music, food
and drink, as this is the day that the dead return
from the afterlife to visit their living relatives.

3C A R N I VA L I N B R A Z I LFirst things first: the festivities in Rio de Janeiro
have nothing in common with carnival as we
know it in Europe. Here, the focus is mainly
on one thing: samba. The entire carnival
procession is one enormous competition and
the city’s largest samba schools dance as if their
lives depend on it whilst dressed in dazzling
costumes. Pure lust for life!

What is the best way to get to know a brand? How does one
find out what characterizes a product? And how does one
best market finest Italian Prosecco in Latin America? These
are just some of the many questions that Henkell & Co.
Global asked themselves – and hosted a brand workshop
for Latin American Mionetto customers in Panama at the
beginning of August. The “Mionetto Convention” mainly
focused on letting participants experience the brand and
introducing them to the characteristics that make Mionetto
unique. On the first evening, they were asked to form small
groups and to embody the brand as best possible in a short
video – whether silently, in Spanish or in English. The next
day offered a particularly diverse programme: presentations,
meetings and a visit to the Casa Casco rooftop bar followed
by a cocktail session during which the customers created
delicious Mionetto cocktails. The convention ended with a
boat tour during which participants exchanged impressions
of what they had learned and experienced and had the
opportunity to deepen their knowledge of the brand, all in
a relaxed atmosphere. “The convention was very successful
and exchanging experiences with our South American
partners from Paraguay, Brazil, Ecuador, Panama, Colombia
and Mexico gave everyone involved fresh inspiration to
market Mionetto even more successfully than before. We
can imagine transferring this model to other countries,
as well,” says Jan-Hendrik Boerse, Senior Vice President
Henkell & Co. Global, in his satisfied conclusion.

1. Boil the orange juice and sugar at medium heat and stir until the sugar has
completely dissolved.
2. Add the spices, orange peel and sprig of rosemary and allow to thicken
at medium heat for about 30 minutes, stirring continuously, until the
consistence is syrupy.
3. Pour the syrup through a sieve into a bottle whilst still hot.
Our tip: the syrup also tastes wonderful when made with blood orange juice and
makes a great Yuletide gift from the kitchen.
1. Pour the orange syrup into a glass, add the ice cubes
and fill with Mionetto Prosecco DOC Treviso Brut and
mineral water.
2. Garnish with orange zest, cinnamon and rosemary
and enjoy chilled.
