Alma has put together a wonderful study of “gastronomic
anthropology” of the Mazara coast. For each dish, there’s a
corresponding movement, a flash, a sneer, a grimace, a smile
or a wink which gives it an extra, special flavour. It is not the
photo of the dish that is important, but the tale it tells. A tale told
by the wrinkles on those faces. So it is that the skill in boning
the sardines and stringing them on skewers to roast them can
almost be guessed at from the glitter of the gold tooth of the
fisherman, Antonio Calamusa. The classicism of the “Glutton’s
Fish Stew”, which is the opening recipe, and rightly so, shines
through the posture of the shrewd captain of the fishing boat,
Matteo Gangitano, in contrast to the fixed and dramatic stare of
the engineer Salvatore Foggia who recounts the simpler version,
“The Glutton of the West”, from the fishermen who work the sea
to the west. On the other hand, the touch of charm from Captain
Rosario Giacalone, who talks of the “Sardine Soup”, mirrors the
flavour which bursts from that browned garlic and parsley, to
which are added the pieces of sardine which cannot be sold
and therefore should be eaten on board. And so to the last one,
where much of the cooking is done by the sun, which dries and
concentrates the flavour of the bream. These are dishes and
faces which speak of parched flavours, of strong and forceful
characters. The ingredients are few: garlic and herbs, little else.
At the most, they might add an artichoke. Quickly made fires on
the beach, gas on board, or put straight into the oven. A time-
honoured cuisine to be rediscovered, together with our traditional
roots.

È un bel saggio di “antropologia gastronomica” quello raccolto
da Alma sulle coste di Mazara del Vallo. A ogni piatto sembra
corrispondere un guizzo, un ghigno, una smorfia, un sorriso,
un ammiccamento dei protagonisti che a quei piatti danno un
sapore aggiunto, particolare. Importante non è la foto del piatto,
ma il suo racconto. Un racconto che passa anche attraverso le
rughe di questi volti. Così l’abilità nel diliscare le sarde da infilzare
nelle canne per arrostirle, si evince quasi dal brillìo del dente
d’oro del pescatore Antonio Calamusa. E il “classicismo” della
“ghiotta di pesce”, ricetta di apertura - giustamente - traspare
nella posa di chi la sa lunga del capitano di peschereccio Matteo
Gangitano, contrapposta allo sguardo più plastico e drammatico
del motorista Salvatore Foggia che ne racconta una variante
più povera, quella “del ponentaro”, dei pescatori di Ponente. Il
guizzo di simpatia del capitano Rosario Giacalone che racconta
la minestra di sarde, invece, è tutt’uno con il sapore che sprizza
da quel soffritto di aglio e prezzemolo dove cadono i pezzi delle
sarde che non possono esser vendute e quindi da consumare
in barca. Fino ad arrivare alla fine, dove gran parte della cucina
la fa il sole che “appassisce” e concentra il sapore del pagello.
Sono piatti e volti che parlano di sapori arsi, dai caratteri decisi
e forti. Ingredienti pochi e netti. Fuoco veloce in spiaggia, gas in
barca o passaggio deciso in forno. Aglio ed erbette, poco più. Al
massimo si può raccattare un carciofo. Una cucina delle origini,
da riscoprire, sicuramente, insieme alle nostre radici.

A hard life, that of the men of the sea. So exhausting, hour after
hour under the sun, burnt by the salt and raked by the wind.
Little pleasure for the men of the sea. Food above all. Food,
shared in brief moments of respite. Moments of relaxation and
companionship that turn thoughts to dry land, friends and the
wife. All this was recounted to me by the fishermen of Mazara
del Vallo. Many “primi piatti” (first courses) because sailors love
pasta and soup which fill the stomach. Few ingredients at their
disposal, plenty of sardines, then there’s the red prawn of the
Mediterranean, that has its centre of commercialisation here in
Mazara. But in their recollections the sailors give a special place of
honour to the tuna and, for special occasions, the lobster.
The sailors have spoken to me, above all, with their faces, with the
glance and the smile that illuminated and underlined the pleasure
and sweet memories that every recipe brought to mind. For this
rather than the dishes themselves, we preferred to photograph
those faces truly concentrated in emotion. For the rest of the
work, from the very beginning it was not intended to be just a
recipe book but a testimony, using the food as a link, to a society
and a culture. Aboard, even today, the crew are all men.
In the galleys of the fishing boats, mostly with rickety cookers in
very cramped spaces, one can appreciate the hard and basic life
of a sailor. The cook is usually self- taught, master in the art of
improvisation. But now on some boats they have built-in kitchens,
tiled, as in a house, as you can see in one of the photos at the
end of the book. Modernization has advanced to even cover life
on board a fishing boat.

Vite dure, quelle degli uomini di mare. Tanta fatica, ore e ore sotto
il sole, cotti dalla salsenide e spazzati dal vento. Pochi i piaceri
degli uomini di mare. Il cibo, innanzitutto. Cibo condiviso, nei
veloci momenti di pausa. Momenti di ristoro e di socialità, che fan
tornare in mente la terraferma, gli amici, la moglie. Tutto questo
mi hanno raccontato i pescatori di Mazara del Vallo. Tanti i primi
piatti, perché i marinai amano spaghetti e zuppe che riempiano
la pancia. Poca la materia prima a disposizione. tante sarde,
poi c’è il gambero rosa del Mediterraneo che ha il suo centro di
commercializzazione proprio a Mazara. Ma nei ricordi dei marinai
un posto d’onore spetta anche al tonno e, nelle grandi occasioni,
all’aragosta.
I marinai mi hanno raccontato innanzitutto con i loro visi, con lo
sguardo e il sorriso che si illuminavano a sottolineare il piacere
e i dolci ricordi che ogni ricetta riportava in mente. Per questo,
più che il piatto raccontato, abbiamo preferito fotografare i volti,
veri e propri concentrati di emozioni. Del resto questo lavoro,
sin dall’inizio, non voleva essere solo un ricettario ma una
testimonianza, con il cibo come filo conduttore, di una società e
una cultura. Con a bordo, ancora oggi, protagonisti tutti uomini.
Dalle cucine dei pescherecci, per lo più fornelli sgangherati
sistemati in spazi ridottissimi, si comprende la dura ed essenziale
vita del marinaio. Il cuoco è per lo più un autodidatta, maestro
nell’arte d’arrangiarsi. Ma qualcuno si è già fatto sulla barca la
cucina in muratura, con le piastrelle di ceramica, come in casa. Si
può vedere in una delle foto che chiude il volume. Le abitudini di
bordo stanno cambiando rapidamente.

In una pentola affettare sottilmente due cipolle, dell’aglio, aggiungere due pa-
tate e due pomodori sbucciati e tagliati a pezzi, prezzemolo tritato in quantità
e olio d’oliva. Mettere a cuocere lentamente circa mezz’ora insieme al pesce
precedentemente pulito e a acqua abbondantemente sino a coprire tutti gli
ingredienti. La ghiotta è più buona quante più varietà di pesce presenta: pe-
sci da brodo ma anche seppie, calamari, gamberetti e cicale di mare.
A bordo si usava mangiarla versandola direttamente sul boccaporto lavato
con acqua di mare.

First, finely slice two onions and garlic and cook in a pan, adding two
potatoes and two tomatoes, peeled and cut into pieces, plenty of chopped
parsley and olive oil. Add the cleaned fish and enough water to amply cover
all the ingredients and cook slowly for half an hour. The greater the variety of
fish, the better the stew. As well as fish suitable for broth, you could use San
Pietro fish, cuttlefish, squid, prawns and mantis prawns. On board ship, they
used to eat it directly off the hatchway which had been swilled down with
seawater.

GHIOTTA ALLA PONENTARAGlutton of the West

Ricetta dei pescatori che vanno per mare a ponente, ossia a nord-ovest
verso Marsala. E’ una variante della Ghiotta di Pesce, realizzata con sarde
diliscate e lavate in acqua di mare, da mettere a cuocere solo con un po’ di
estratto di pomodoro e fave fresche. La tradizione vuole che si prepari sulla
spiaggia su un fuoco realizzato con massi e canne raccolti sul posto.
A recipe from the fishermen who work the sea to the west, that is the north
west of Marsala. It is a variation of the “Glutton’s Fish Stew” recipe made
with sardines, boned and washed in sea water then cooked with just a little
broad bean sauce and tomato paste. The tradition requires that the fish are
prepared on the beach over a fire of freshly collected reeds built over rocks.

Tagliare il tonno, freschissimo, a fettine quanto più sottili possibili. Lasciare le fettine di
tonno crude per diverse ore in una marinatura di aceto e limone (rispettivamente 70%
e 30%). Tagliare a fettine sottili una cipolla bianca, tritare un sedano e un mazzetto
di prezzemolo, aggiungere un po’ di capperi salati lavati e asciugati. Unire il trito alla
marinatura del tonno e lasciare trascorrere ancora qualche ora. Togliere le fettine di
tonno dalla marinatura e disporle su un piatto da portata condite con un filo d’olio e un
po’ di succo di limone fresco. Versare sopra il tonno con delicatezza l’aceto e gli aromi
della marinatura. Completare il piatto con una spolverata di origano profumato.

Cut the tuna, which must be very fresh, as thinly as possible. Leave the slices of raw
tuna to marinate for some hours in 70% vinegar, 30% lemon juice. Slice a white onion
thinly, mince together a stick of celery and a small bunch of parsley and add a few
salted capers – washed and dried. Add this mixture to the marinade and leave again
for some hours. Take the tuna from the marinade and put on a serving dish, dress
with a little olive oil and fresh lemon juice. Gently pour the vinegar and the marinated
spices over the tuna. Complete the dish with a sprinkling of aromatic oregano.

SARDE ARROSTO IN SPIEDI DI CANNE
Quando la mattina i marinai rientravano dalla pesca la loro colazione non era a base
di caffè e cappuccino ma di sarde arrostite. I marinai usavano arrostire le sarde con
degli spiedi di canne. L’abilità, e oggi il divertimento, consiste nel togliere le spine
al pesce aprendolo dal dorso senza staccare testa e coda, quindi senza dividerlo
completamente in due metà. La sarda così pulita viene infilzata da due spiedi di
canne che consentono di girarla sul fuoco velocemente. In due o tre minuti, su una
fiamma vivace, le sarde sono pronte. Si salano solo un po’ ad inizio cottura.
Once, when sailors used to put back into port after fishing, their breakfast was not
made of cappucinos or coffees, but roasted sardines. Sailors used to roast sardines
on spikes of cane. The ability, and today the amusement, consists of cutting the
length of the fish through to the spine without removing the head and tail, thereby not
cutting it completely in half. The sardines, thus cleaned, are fixed on two spikes of
cane that allow it to turn quickly over the fire. In two to three minutes over a high flame
the fish are ready. They only need a little salt at the beginning of cooking.

E’ di una dolcezza incredibile. Più se ne mangia, più se ne ha voglia di mangiare. Ma
il gambero deve essere veramente freschissimo, appena pescato e senza trattamenti
per la conservazione, altrimenti avrà un gusto un po’ amaro. Il gamberetto rosa del
Mediterraneo, appena pescato e sgusciato, va semplicemente condito con olio,
limone e peperoncino.

This is incredibly delicious, better than anything you’ve ever eaten or have wished to
eat. But the prawns must be truly fresh, just caught and without any conservation,
otherwise they will have a slightly bitter taste. That is the secret – Mediterranean pink
prawns, freshly caught and shelled, must be simply seasoned with oil, lemon and
chilli powder.

SPAGHETTI CON GAMBERI
Soffriggere la cipolla affettata e tagliata a piccoli pezzi con olio abbondante e uno
spicchio d’aglio schiacciato. Aggiungere dei pomodori pelati maturi tagliati a pezzetti.
Non appena il pomodoro sarà cotto, versare nella padella i gamberi sgusciati e
puliti, aggiungere un po’ di pepe e ultimare la cottura del gambero a fuoco lento.
Nel frattempo cuocere al dente gli spaghetti, versarli nella padella a fuoco spento,
aggiungere abbondante prezzemolo tritato e mescolare bene. Servire nei piatti
condendo con dell’altro prezzemolo tritato fresco.
Gently fry sliced onions in plenty of oil with a crushed clove of garlic. Add
peeled and chopped ripe tomatoes. Before the tomatoes are quite cooked put
the cleaned and shelled prawns in the pan and add pepper. Finish cooking the
prawns over a low heat. In the meantime cook the spaghetti “al dente”. Take the
prawns off the heat and add the spaghetti and chopped parsley. Mix well and
serve on the plate garnished with more fresh parsley.

Le “frascatole” sono palline di semola di grano
duro più grandi di quelle che si ottengono per il
couscus. In alternativa si può usare lo spaghetto
spezzato.
- Preparare le frascatole versando la semola
a pioggia in un recipiente a pareti svasate e
legandola, con poca acqua leggermente salata
e con movimenti circolari, a formare delle piccole
palline. (250 gr di semola per 4 persone) Lasciare
riposare la pasta qualche ora;
- Nel frattempo, lessare l’aragosta viva per 5
minuti (calcolare almeno 250 gr di aragosta a
persona);
- Preparare in un tegame un soffritto di cipolla
tritata, aglio, sedano e prezzemolo. Aggiungere
l’aragosta lessata e tagliata aperta a metà, acqua
a coprirla, sale e pepe. Fare cuocere per circa
venti minuti;
- A fine cottura, estrarre l’aragosta e ricavarne
tutta la polpa dalla carcassa e dalle chele;
- Filtrare il brodo dell’aragosta e unirvi la polpa
ridotta a pezzetti;
- Riportare la zuppa a bollore e versarvi le
frascatole. Cuocere ancora per 5 minuti;
- Servire la minestra ben calda, con l’aggiunta di
un filo d’olio e di un po’ di prezzemolo tritato fine.
FRASCATOLE IN BRODO D’ARAGOSTA
Frascatole are small balls, larger than those used
for couscus, made from semola flour. As an
alternative you can use broken spaghetti.
Prepare the frascatole by sprinkling the semola
flour into a bowl with flared sides and binding the
flour with a little lightly salted water, using a circular
movement to form small balls, (250gms for four
people). Leave the pasta to rest for an hour or so.
In the meantime boil the live lobster for five
minutes (calculating at least 250gms of lobster
per person).
Gently fry in a saucepan, sliced onion, garlic,
celery and parsley. Add the boiled lobster, cut in
half, water to cover, salt and pepper. Cook for
about 20 minutes.
At the end of cooking take out the lobster and
extract all the meat from the body and claws.
Strain the broth and return the meat in small
pieces. Bring the soup back to the boil and add
the frascatole. Cook for another 5 minutes. Serve
the soup very hot with a drizzle of oil and finely
chopped parsley.

PASTA COL PESCE FRITTO
Per “minuzzaglia” si intende la gran varietà di
piccoli pesci di scoglio che si pescano abbondanti
lungo i fondali rocciosi e ricchi di vegetazione del
trapanese. I nomi di molti di questi pesciolini, dalla
carne profumata di mare e assai saporiti, sono
conosciuti ormai solo dai pescatori più anziani.
La “minuzzaglia” viene utilizzata per il brodo di
pesce del couscous e per “a pasta chi pisci” che
viene tradizionalmente realizzata a bordo “tra una
calata di reti e un’altra”.
Oltre che diversi tipi di pesce, si utilizzano
tradizionalmente anche diversi formati di pasta
mescolati insieme, quelli lunghi spezzettati, in
modo da esaurire tutti i possibili avanzi.
“U ruttame” - i rottami, la pasta rotta, così
veniva chiamata - si trovava anche in vendita,
evidentemente più economica della pasta intera.
- Preparare un soffritto di aglio e cipolla, aggiungere
la polpa dei pomodori e basilico abbondante, in
modo da ottenere la classica salsa di pomodoro;
- Friggere i pesciolini locali, precedentemente
infarinati, in olio abbondante;
- Cuocere al dente gli spaghetti, condirli con la
salsa e basilico e caciocavallo oppure pecorino
grattuggiato;
- Servite la pasta nei piatti lasciando uno spazio
per il pesce fritto che si mangerà come contorno
alla pasta.
“Minuzzaglia” is the Sicilian name given to the large
variety of small fish that are found in abundance
in the richly vegetated waters along the rocky
coastline of Trapani province. The names of many of
these tiny fish, with a delicate flavour and aroma of
the sea, are known only to the older fishermen. The
“Minuzzaglia” can be used for the fish broth served
with couscus and for “a pasta chi pisci” (pasta with
fried fish) which is traditionally made aboard ship
“tra na calata di riti e n’autra”. Between the lowering

As well as these little fish you can traditionally use
different types of pasta mixed together and long
types, broken up – using up all the remains – “il
ruttame” (the scraps of broken pasta) as it is called.
You can find this for sale – obviously more economic
than whole pasta.
Gently fry garlic and onion, add tomato pulp and a
generous amount of basil to obtain a classic tomato
sauce. Flour the fish and fry in plenty of oil. Cook
the spaghetti “al dente” and mix with the sauce,
basil and grated caciocavallo or pecorino. Serve the
pasta on the plate leaving space for the fried fish
which is eaten as a side dish with the pasta.

MINESTRA DI SARDE
Ricetta nata anche per recuperare le sarde che si rompevano durante la pesca. Pulire
le sarde, aprirle a metà, diliscarle e farle a pezzi. Preparare un soffritto con cipolla, aglio
e prezzemolo. Aggiungere, a piacere, qualche pomodoro pelato a pezzi oppure un
po’ di salsa di pomodoro. Mettere nella pentola anche le sarde a pezzi, allungare con
acqua, completare con una presa di sale e un po’ di pepe. Lasciare cuocere un quarto
d’ora, o più se si preferisce la sarda più sfatta e la minestra più asciutta. Unire la pasta
e finire di cuocere.

Clean the fish, open out, fillet and cut into pieces. Gently fry onions, garlic and
parsley. Add, as you wish, some chopped peeled tomatoes or a little tomato
sauce. Put the pieces of sardine in the pan, cover with water and add a pinch of
salt and pepper. Leave it to cook for a quarter of an hour or more if you prefer
the sardines more dissolved and the soup thicker. At the end of cooking add
the pasta.

MINESTRA D’ACCIUGHE
E’ una variante della minestra con le sarde, più delicata perché l’acciuga contiene
meno sangue. La quantità di acqua e di pasta variano a seconda della densità della
minestra che si vuole ottenere. Tradizionalmente si usa pasta lunga spezzettata.
I marinai calcolano 4 oppure 5 chili di acciughe, o sarde, per dieci persone. Pulire
e diliscare le acciughe. Preparare un soffritto con un battuto di aglio, cipolla e
prezzemolo. Unirvi le acciughe a rosolare. Aggiungere l’acqua, un po’ di sale e quando
inizia a bollire, unire la pasta.
A variation of sardine soup – but more delicate because anchovies contain less
blood. The quantity of water and pasta varies according to how thick you want
the soup. Traditionally a broken- up long pasta is used.
The sailors calculate 4 – 5 kilos of anchovies (or sardines) for 10 people. Clean
and fillet the fish. Gently fry together chopped garlic, onion and parsley. Add the
fish and brown. Add water and a little salt and when it comes to the boil, mix in
the pasta.

BUCATINI ALLA BOTTARGA
Soffriggere in una padella larga con olio d’oliva extravergine dell’aglio tritato,
peperoncino a pezzetti (la quantità può variare a seconda del gusto personale e
della piccantezza del peperoncino, in media uno per quattro persone), abbondante
prezzemolo tritato. A fuoco spento aggiungere della bottarga di tonno di Favignana
tagliata a pezzetti. Cuocere al dente dei bucatini con poco sale, perché la bottarga è
già molto sapida. Unire la pasta alla bottarga nella padella. Mescolare bene. Servire
con bottarga grattugiata e un altro po’ di prezzemolo fresco tritato finemente.
In a large frying pan gently fry, in extra virgin olive oil, crushed garlic, chilli pieces
(the quantity depending on taste and the type of chilli used – on average, one chilli
to four people) and a good helping of chopped parsley. Take from the heat and add
the tuna eggs (from Favignana) cut into pieces. Cook the bucatini “al dente” with
only a little salt as the tuna eggs are already very salty. Put the pasta into the tuna
egg sauce and mix well. Serve with grated tuna eggs and chopped fresh parsley.

PASTA ALLE TRE RICETTE
Una combinazione di tre ricette.
1) “alla sbrigativa”
è la marinara più semplice, per quando il comandante
ordina al cuoco di sbrigarsi
- Fare un soffritto con aglio e prezzemolo;
- Unire al soffritto gamberetti e calamari tagliati a
pezzi;
- Spegnere la fiamma e aggiungere le uova di alcuni
ricci. Un riccio va aggiunto intero, con tutta la sua
acqua di mare e le alghe che contiene. Per finire,
aggiungere un po’ di peperoncino, davvero poco.
2) “alla caponatina” anche detta “alla palermitana”
- Fare un soffritto di prezzemolo e aglio;
- Aggiungere, come in una caponata, melanzane
tagliate a pezzetti e già fritte a parte, olive
denocciolate e capperi. Amalgamare bene.
3) con gattuccio all’agrodolce
- Diliscare il gattuccio e friggerlo per farlo ben
insaporire;
- A parte, far soffriggere della cipolla abbondante;
- In una padella mettere la cipolla sul gattuccio,
aggiungere aceto e zucchero, far asciugare a
fiamma vivace.
I tre condimenti si possono servire sulla pasta
(spaghetti o fettuccine) separatamente oppure
mescolandoli insieme, in una padella, facendoli
amalgamare a fiamma bassissima con l’aggiunta
di un po’ di acqua di cottura della pasta, altro
peperoncino e un po’ di parmigiano.

Gently fry garlic and parsley. Mix with prawns and
squid cut into pieces. Take off the heat and add
some sea urchin eggs and a whole sea urchin with
all the sea water and algae still in it. To finish off add
a dash of chilli powder – but only a little

Gently fry garlic and parsley. As with caponata,
add separately fried pieces of aubergine, stoned
olives and capers. Mix well.
3. Sweet and sour dogfish.
Fillet the fish and fry to make it well flavoured.
Separately, fry gently a generous amount of
onions. Place the onions on top of the fish, add
vinegar and sugar and reduce over a hot flame.
These three condiments can be served with pasta
(spaghetti or fettuccine) either separately or mixed
together in a frying pan over a low flame with the
addition of a little of the pasta water, some more
chilli powder and a little parmesan.

Condimento per la pasta nato a Trapani, ma ormai
diffuso in tutta la provincia ed anche a Palermo
La pasta dovrebbe essere la “busiata”, la pasta
fresca fatta nel trapanese con il “buso” ossia il
ferro da calza. In alternativa può andare bene
anche il maccaroncino o lo spaghetto grosso.
- Pestare nel mortaio uno spicchio d’aglio, 100
gr di basilico per persona, un po’ di sale, sino a
raggiungere la consistenza di una crema;
- Aggiungere, per persona, un pomodoro maturo
spellato senza semi e a pezzi, 50 gr di mandorle
spellate (dopo averle sbollentate qualche istante)
e tritate finemente, olio, sale e pepe. Amalgamare
bene con il pesto di basilico continuando a pestare
finché il tutto non diviene un composto omogeneo.
Aggiustare d’olio se necessario;
- Nel frattempo, in una padella fare abbrustolire del
pangrattato con un po’ d’olio;
- Condire in un zuppiera i busiati appena cotti con
il pesto, spolverarli di pangrattato abbrustolito, e
servire subito.
BUSIATI COL PESTO ALLA TRAPANESE
A pasta sauce originating in the city of Trapani
but now eaten throughout the province and into
Palermo.
The pasta used should be busiati, a fresh pasta
made by the Trapanese with the “buso” namely
a knitting needle, however maccaroncino or large
spaghetti would do as well.
Pound in a mortar a clove of garlic, 100 gms of
basil – per person, one ripe peeled, seeded and
chopped tomato, 50gms blanched almonds
– finely ground, oil, salt and pepper. Mix well
together and continue to pound with the pestle
until a homogenous mixture is reached. Add more
oil if necessary.
In the meantime, in a frying pan, toast the
breadcrumbs in a little oil. Put the lightly cooked
busiati in a soup tureen and dress with the pesto,
sprinkle with the toasted breadcrumbs and serve
at once.

La “quaredda” è una verdura selvatica amara. Il piatto si basa sul perfetto
equilibrio tra l’amaro della verdura selvatica e la dolcezza del gambero e del
calamaro. E’ un piatto unico. Bollire la verdura in poca acqua salata e passarla
in un soffritto di aglio e pezzetti di pomodoro secco. Aggiungere i gamberetti
e i pezzetti di calamaro. Quando il calamaro sarà cotto, versare il condimento
sopra gli spaghetti spezzati cucinati al dente.
SPAGHETTI DI MARE CON LA QUAREDDA
Quaredda is a bitter wild vegetable. The dish is based on the perfect balance
between the bitterness of the greens and the mildness of the prawns and squid.
“It is very good but filling, a truly unique dish”. Boil the greens in a little salted water
and mix with some lightly fried and softened garlic and chopped dried tomatoes.
Add the prawns and pieces of squid. When the squid is cooked pour the mixture
over broken spaghetti which has been cooked “al dente”.

PASTA CON LA SALSA IN PENTOLA
Una ricetta per quando si ha poco tempo. La necessità aguzza l’ingegno e così i
marinai hanno scoperto come cucinare insieme pasta e condimento. Preparare in
una pentola un soffritto con aglio e cipolla. Aggiungere, a piacere, melanzane tagliate
a dadini. Mettere nella pentola dell’acqua, il succo di mezzo limone, un po’ di salsa e
qualche pomodoro schiacciato. Quando l’acqua bolle aggiungere la pasta. Il segreto
è nel calcolare bene l’acqua necessaria. Provate!
A recipe for when you are short of time. Necessity is the mother of invention and so
sailors have discovered how to prepare pasta and sauce together.
Gently fry garlic and onion together and add, if you wish, diced aubergine. Put in the
pot, water, lemon juice, a little tomato sauce and a few crashed tomatoes. When
the liquid boils add the pasta. The secret lies in calculating the correct quantity of
water. Come on, have a try!

Tenere pesci ‘duri’ da brodo (uvari, tracine, scorfani, cipolle) sotto sale per 4 o 5 ore in
modo da fare diventare ancora più dura e saporita la loro carne. Passarli nella farina e
farli rosolare in padella per un quarto della loro cottura. Nel frattempo, in una pentola
preparare un fondo di cipolla, aglio, prezzemolo, e qualche pomodoro sminuzzato.
Mettere i pesci nella pentola, aggiungere gamberetti e cicalette che danno un tono
più dolce alla preparazione, un po’ d’acqua e mezzo bicchiere di vino bianco. Far
cuocere a fuoco lento. La zuppa deve risultare un po’ asciutta, con poco brodo. A
parte, cuocere al dente dello spaghetto ‘grosso’, unire alla zuppa di pesce e condire
con abbondante pecorino grattugiato.
PASTA CON I PESCI DURI
Take the fish for the broth (sea bream, weever fish, scorpion fish, band fish or other
firm-fleshed fish) and put in salt for four or five hours to make the meat firmer and
more flavourful. Flour and brown the fish in a pan for a quarter of the cooking time.
Meanwhile, in a pot, prepare a bed of onion, garlic, parsley and some chopped
tomatoes. Put the fish in the pot, adding prawns and small mantis prawns (which
will give a milder flavour to the pasta ), a little water and half a glass of white wine.
Cook over a slow heat. Soup must turn out a bit dry, with little broth. Separately
cook large spaghetti “al dente” and add it to the fish soup. Season well with grated
pecorino cheese.

PESCE SPADA E MELANZANE
- In una padella grande fare un soffritto di aglio
e aggiungere il pesce spada tagliato a dadini.
Calcolare due fette di pesce spada di media
grandezza per 4 persone;
- Schiacciare il pesce un po’ con la forchetta,
aggiungere vino bianco e un po’ di limone
spremuto; far evaporare il liquido aggiunto e
spegnere la fiamma;
- A parte, soffriggere le melanzane tagliate a
dadini;
- Aggiungere metà delle melanzane fritte nella
padella con il pesce spada. Schiacciarle un poco;
- Cuocere degli spaghetti al dente;
- Aggiungere un mestolo dell’acqua in cui si è
cotta la pasta nella padella con il pesce spada
e le melanzane. Far amalgamare un po’ a fuoco
basso, con un pizzico di peperoncino;
- C’è chi, a questo punto, aggiunge un po’ di
parmigiano abbondante;
- Servire nei piatti, guarnendo con le melanzane
lasciate da parte e prezzemolo fresco tritato.
In a large frying pan gently fry garlic then add the
diced sword fish – calculating 2 medium slices for 4
people. Mash the fish a little with a fork and add a little
white wine and lemon juice. Cook to evaporate the
liquid and remove from the heat.
Separately gently fry the diced aubergine. Put half the
aubergines in the frying pan with the fish and mash
them a bit more. Cook the spaghetti “al dente”. Mix
a little of the pasta water with the fish and aubergine.
Amalgamate for a while over a low flame and add a
pinch of chilli powder. At this point add a generous
amount of grated parmesan. Serve on individual
plates garnished with the rest of the aubergine and
freshly chopped parsley.

TONNO CON MENTA E CIPOLLA
- Preparare un trito di aglio, menta, sale e pepe;
- Nelle fette di tonno fresco, non troppo sottili,
praticare delle incisioni e inserire il trito;
- Fare rosolare le fette di tonno in un po’ d’olio
extravergine d’oliva e, a rosolatura completata,
aggiungere un po’ di vino bianco. Continuare a
cuocere finché il vino non sarà evaporato;
- Servire nel piatto guarnendo le fette di tonno con
foglioline di menta fresca intera.
Ci si può fermare alla sola rosolatura con la menta
e consumare il tonno caldo, oppure aggiungere
una salsa alla cipolla e aspettare che il tutto si
freddi e insaporisca.
- Togliere il tonno dalla padella e, nello stesso
olio adoperato per la rosolatura, far imbiondire
un aglio, un pomodoro a pezzetti e una cipolla
tagliata a fettine fini (una cipolla e un pomodoro
per persona);
- Far insaporire un po’ a fuoco lento e a tegame
coperto;
- Servire freddo disponendo le fette di tonno sul
fondo del piatto ricoprendole con la salsa alla
cipolla.
Prepare a mixture of crushed garlic, mint, salt and
pepper. Make incisions in the tuna slices (cut not too
fine) and insert the mixture. Brown the tuna in a little
extra virgin olive oil. When browned add a little white
wine. Continue to cook until the wine evaporates.
Serve the tuna on a plate garnished with fresh, small
mint leaves.
You can stop at the browning stage with the mint
and eat the fish hot. Or – add an onion sauce and
leave until it has all become cold and infused with the
flavour.
Take the tuna from the frying pan and, in the same
oil used for the browning, soften a clove of garlic, a
chopped tomato and a finely sliced onion (per person).
To enhance the flavour cook slowly in a covered pan.
Serve cold, laying out the fish on a dish and masking
with the onion sauce.
Tuna with Mint and Onion
Variante delle più note “sarde a beccafico”. A Mazara sia le sarde che le triglie a
beccafico non si legano con l’uovo ma con uno spago sottile. Occorre un metro e
mezzo di filo da imbastitura per pesce. Aprire a metà le triglie, diliscarle e pulirle.
Preparare una farcia di mollica condita con passolina e pinoli. Legare due pezzi
di pesce, con un po’ di farcia in mezzo, pazientemente con il filo oppure, se si
ha poco tempo, con dell’uovo sbattuto. Friggere le triglie così preparate. Ci si
può fermare qui, così le triglie sono ottime come antipasto. Altrimenti si possono
successivamente passare al forno, dopo avervi aggiunto sopra un po’ di salsina.
Oppure, le triglie possono essere servite immerse nel sugo.
TRIGLIE A BECCAFICO
Variation of the better known “beccafico sardines”. In Mazara neither sardines nor
mullet beccafico are bound with egg but with fine string. Use one and half metres
of basting thread per fish. Cut open and halve the mullet, fillet and clean. Prepare a
stuffing of breadcrumbs seasoned with sultanas and pine nuts. Tie the two pieces
of fish with a little stuffing in the middle – binding, patiently, with the thread or, if you
have not much time, with beaten egg. Fry the prepared mullet. If you wish to stop
there, this is excellent as a starter. Otherwise you can transfer them to the oven,
having poured over a little tomato sauce or they can be served in their own juices.

In una pirofila alternare uno strato di cipolla bianca tagliate a fettine sottili, uno strato
di carciofi già sbollentati e tagliati pure a fettine sottili, una strato di sarde aperte
a metà, dilescate e pulite. Condire con olio, sale e pepe. Cuocere al forno per un
quarto d’ora.
SARDE AL FORNO CON CARCIOFI
In a fireproof dish alternate a layer of finely sliced white onions, a layer of finely
sliced artichokes (previously blanched) and a layer of halved sardines, filleted and
cleaned. Season with oil, salt and pepper and bake in the oven for about quarter
of an hour.

BACCALA’ CON BROCCOLO
Mettere a bagno in acqua, con fette di limone, il baccalà secco per tre giorni,
cambiando l’acqua ogni giorno. In una pentola capiente far soffriggere abbondante
cipolla tagliata a fettine e poi aggiungere un po’ di concentrato di pomodoro con
l’acqua necessaria per farlo sciolgliere. Nel frattempo, tagliare il broccolo a pezzi.
Mettere sul soffritto, a strati, prima il broccolo (che deve cuocere di più e quindi
stare più vicino alla fiamma) e poi il baccalà tagliato a pezzi non troppo grandi.
Aggiungere acqua (con sedano, se si vuole) sino a coprire tutto il broccolo ed un po’
anche il pesce; salare, pepare. Far cuocere bene a fuoco lento. Servire nel piatto
sistemando sotto il broccolo, sopra un pezzo di baccalà e versando sul tutto un po’
di brodo. E’ un piatto tipico della Festa del Natale.
Soak the dried cod in water with a slice of lemon for three days, changing the
water every day. In a large frying pan cook a generous amount of sliced onions
then add a little tomato paste and sufficient water to loosen the mixture.
Meanwhile, cut the cauliflower into pieces. Put these in the fried mixture; the
cauliflower first so that it cooks quicker, being nearer the flame, then the slices
of cod (about half a hand size). Add water, and celery if you wish until the fish is
almost covered. Season with salt and pepper and cook slowly. Serve on a dish
making sure that the cauliflower is on the botton and the cod over it with a little of
the juice poured over. This is a typical christmas dish.

GAMBERONE RIPIENO
Oltre che con i gamberoni, la ricetta può essere realizzata con le cicale di mare. Con
un coltello a punta tagliare il gambero dalla testa alla coda, incidendo dalla parte
della schiena. Allargare un po’ il taglio e inserirvi della mollica di pane bianco condita
con aglio, olio, pepe e prezzemolo. Disporre i gamberoni così farciti in una teglia e
mettere a cuocere in forno con un filo d’olio e una grattatina di scorza di limone.
As well as prawns or crayfish, this dish can be prepared with mantis prawns. With
a pointed knife cut the prawns from head to tail, cutting into the spine. Pull them
open and stuff with white breadcrumbs seasoned with garlic, pepper, salt and
parsley. Lay the stuffed prawns in a pan and cook in the oven with a drizzle of oil
and some grated lemon zest.

POLPETTE DI SARDE
Le polpette si possono fare anche con il tonno.
Si possono mangiare calde, con o senza salsa
di pomodoro, oppure fredde all’agrodolce,
specialmente quelle che dovessero avanzare.
- Lavare bene le sarde già diliscate, asciugarle e
tritarle grossolanamente;
- Mescolare in un recipiente (per ½ kg di pesce)
mollica di pane bagnata con acqua e strizzata (100
gr), due uova intere, 50 gr di passolina e pinoli, uno
spicchio d’aglio tritato, prezzemolo abbondante,
qualche fogliolina di basilico, sale e pepe;
- Amalgamare alla mollica condita il trito di sarde
e formare delle polpette rotonde da passare nel
pangrattato e friggere in olio abbondante;
- Le polpette calde si possono già servire ricoperte
da una manciata di prezzemolo fresco tritato assai
finemente.
Oppure
- Preparare in un tegame un soffritto di aglio,
aggiungere 500 gr di pomodori pelati senza semi
a pezzettoni, altri 50 gr di passolina e pinoli, sale e
pepe. Fare cuocere a fuoco lento;
- A cottura della salsa quasi ultimata aggiungere
le polpette e un po’ di vino bianco. Alla fine
aggiungere anche qualche fogliolina di basilico
fresco.
These rissoles can also be made with tuna. They can
be eaten hot, with or without tomato sauce, or cold,
sweet and sour – an excellent way of using up any
remaining from the hot dish.
Wash the boned fish well, dry and mince coarsely.
For half a kilo of fish – mix together in a bowl 100 gm
breadcrumbs – soaked in water and squeezed out.
50 gm sultanas and pine nuts, one clove of garlic-
crushed, a handful of parsley, salt and pepper. The
hot rissoles can be served with just a sprinkling of
finely chopped fresh parsley.
Or – in a pan gently fry some garlic mixed with 500
gm of peeled and seeded tomatoes, cut up small,
(another) 50gm sultanas and pine nuts, salt and
pepper. Leave to cook slowly. When the sauce is
nearly cooked, add the rissoles and a little white
wine. Finally, before serving, add some small, fresh
basil leaves.

PAGELLO AL SOLE
Il pesce deve diventare mezzo stagionato, così è più saporito. Di solito si
utilizzano i pagelli, ma a volte anche le triglie. I pesci vanno messi ad asciugare al
sole caldo. Prima di cuocerli sulla griglia, i pagelli, si ammorbidiscono passandoli
in un po’ d’olio e limone mescolati insieme.
The fish must be partly matured – this way it has more flavour. You can use sea
bream or mullet for this dish. The fish are put to dry in the hot sun. Before grilling
leave them to soften in a little oil and lemon mixed together.
