Traditionally, serving meat to the guesses is a way of expressing respect and hospitalities to the guesses although not all the guesses are appreciating or eating meat. Because meat is more expensive in China and not all the people can afford eating meat.

Stand and wait until the host shows you where to sit

The most important guesses are usually given the seats which face the door, or are towards east or at the left side.

Wait and do not start eating before everybody is ready at desk and the host or the most important guess takes the first piece of food

the host nowadays may kindly ask what the guesses like eating but not all the host would expect the guesses to really say anything about ordering food. It would be safer to let the host make the decision.
