ferns, daylilies, or ground covers. As
these plants grow they will hide the
dying bulb foliage.
q Plant container-grown and balled-
and-burlapped trees and shrubs now.
Loosen the soil in an area five times
the diameter of the root ball before
planting. Mulch well after watering.
Continue watering, if soils are dry.
q Store apples in a cool basement
in old plastic sacks that have been
perforated for good circulation.
q Sow cover crops such as winter rye
after crops are harvested.
week 1q Christmas cactus, potted azaleas, and
kalanchoe may be left outdoors until
night temperatures drop to 40º F.
q Continue harvesting tender crops such
as winter squash and pumpkins before
frost. For best storage quality, leave an
inch or two of stem on each. Dig sweet
potatoes before a bad freeze.
q Gourds should be harvested when
their shells become hard or when their
color changes from green to brown.
q Cover tender plants with sheets or
lightweight fabric covers to protect
from frost.
week 2q Cannas and dahlias can be dug when
frost nips their foliage. Allow the plants
to dry under cover in an airy, frost-free
place before storage.
week 3q Transplant deciduous trees once they
have dropped their leaves.
q Monitor fruit plantings for mouse
activity and take steps for control.

Corn and Avocado Salsa From the Herbal Cookery Cookbook
Heat 2 tablespoons olive oil in a 14-inch skillet over medium-high heat until shimmering. Add the corn and cook until some of the kernels are brown and slightly dry. Combine the corn, onion, bell pepper, olives, garlic, lime juice, vinegar, ¹⁄³ cup olive oil, the cilantro, salt and pepper in a medium bowl and mix well. Marinate at room temperature for a few hours. Fold in the avocados just before serving.
Note: Use as a salsa with chips, or serve over a bed of lettuce with sliced or wedge-cut tomatoes.
Sweet Green Tomato Pickles From cooks.com
Night before, slice tomatoes, add salt, and cover with cold water. Leave overnight. In the morning, bring to a boil, let cook on medium heat until not quite tender. Drain.
To make syrup: Combine remaining ingredients, bring to boil, lower heat and continue cooking for ½ hour. Add tomatoes to syrup and cook for 5 minutes. Remove tomatoes with slotted spoon and fill hot sterilized jars.
Add 1 cup each of brown and white sugar to liquid and boil until thickened. Pour over tomatoes and seal. These pickles can also be made in a crock.
2 tablespoons extra-virgin olive oil4 cups fresh corn kernels1 large red onion, chopped1 large red bell pepper, chopped½ cup pitted green or black olives,
chopped (optional)2 garlic cloves, minced
juice of 2 limes3 tablespoons red wine vinegar ¹⁄³ cup extra-virgin olive oil¹⁄³ cup chopped fresh cilantro, or
2 tablespoons chopped fresh oreganosalt and freshly ground pepper to taste2 ripe avocados, cut into ½ inch chunks
½ peck green tomatoes½ cup salt3 cups cider vinegar
1 cup water2 cups white sugar2 cups light brown sugar
1 box stick cinnamon½ box whole cloves
