It is my great honour to write this Editor’s Note for the second issue of CosmoL&C. This magazine represents the best of UNNC: a global perspective, a commitment to cross-cultural communication, and curiosity about the world around us. The Language Centre is the beating heart of the University, for without a dedicated approach to language learning it is difficult to imagine how students - whether they are from Business, Science and Engineering, or the Humanities and Social Science - can contribute fully to solving the world’s pressing problems. Moreover, our graduates will have a greater variety of employment opportunities the more languages they can speak and understand. This is why I, as Dean of FHSS, am fully supportive of the Language Centre and have pledged myself to helping it grow and develop.
I learned French at school for six years and German for three years, but I struggled with both languages. I have also been learning Chinese for some time with limited progress. I am very proud, but also very envious of our students who not only speak and read a second language, English, but also choose to study a third language and reach a level of competence whereby they can write articles for this magazine. This is an incredible achievement, one that we should celebrate together.
This issue is all about food, a subject that is very close to my heart (or should I say stomach?). While I have been in China I have enjoyed many different foods, including some incredibly tasty vegetarian dishes. That is not something I ever thought I would write, for as a life-long meat eater I have struggled with the idea of vegetarian food. However, it is testimony to how much China has changed since I left Ningbo in 2007 that some of the best restaurants in the city are vegetarian, offering tasty and nutritious food for little money. I am curious how other cultures have embraced vegetarian cuisine, so I am looking forward to reading the articles in this issue.
I sincerely hope you enjoy reading CosmoL&C and that it might give you an appetite (ha ha) for learning a new language, or for just opening yourself more to the wonderful cross-cultural experience that we enjoy in UNNC.

In my article I begin by defining who is a vegetarian: mainly a person who doesn't
eat poultry, eggs, fish and other meats. I decided to investigate the behavior of
my vegetarian friends by asking them some questions. Firstly, I asked what the
reasons are that made them decide to become vegetarian; one of my friends said
a healthy diet could keep her figure slim, another replied that she doesn't want to
kill any animals. Then I asked them about the culture or commitment behind their
eating behavior. They responded that most vegetarians pursue a harmonious
lifestyle with nature, by rejecting the killing of animals, especially endangered
species. Furthermore, I asked them whether there are any difficulties in China,
maintaining their vegetarian lifestyle. They said yes, as only two years ago it was
difficult to find restaurants for vegetarians. However, the situation is better now.
There are various restaurants that can offer different types of vegetarian-friendly
menus. Finally, they wanted to clear a common misunderstanding that people
have about vegetarians, that they lack protein in their diet. They explain that
vegetarians can get protein from food sources other than meat, such as beans.

Un végétarien est une personne qui mange seulement des légumes. En
général, le végétarisme est une culture alimentaire. J'adore l'attitude des
végétariens. J'ai préparé des questions à poser à mes amies qui sont
végétariennes.
D'abord, elles ne mangent pas de volaille, d'œuf, de poisson, mais elles
mangent les laitages. Je suis curieuse de savoir pourquoi elles sont
végétariennes. Une amie dit qu'elle adore manger les légumes parce que ça
équilibre son régime alimentaire pour atteindre sa mise en forme. Une autre
amie a déclaré qu'elle ne préconisait pas de tuer des animaux, alors elle ne
mange pas de viande. Ensuite, je leur ai demandé qu'elles sont leurs cultures
alimentaires. Elles ont répondu qu'elles veulent une vie harmonieuse avec la
nature en refusant de tuer les animaux.
Ensuite, j'ai posé la question à mes amies « Est-ce qu'il y a des difficultés pour les végétariens en Chine ? » Elles ont répondu que oui, jusqu'à il y a deux ans,
on ne pouvait pas manger au restaurant. Depuis, la situation s'est améliorée. Il
y a des restaurants qui offrent des menus végétariens.
Enfin, elles m'ont parlé du malentendu des végétariens. La plupart des gens trouve que la diète végétarienne manque de protéines. Mais elles expliquent
qu'on peut les obtenir avec d'autres aliments riches en protéines au lieu de la
viande, comme les haricots.

2016 waren einem neuen FAO-Bericht zufolge 11 Prozent der Weltbevölkerung von Hunger betroffen.
Das sind 815 Millionen Menschen. Davon leben 520 Millionen in Asien, 243 in Afrika und 42 in Lateinamerika und der Karibik. Die Ursachen sind Konflikte und der Klimawandel. In reicheren Ländern machen sich die Menschen Sorgen um Fettleibigkeit.
Jedes Jahr gehen 1,3 Milliarden Tonnen - etwa ein Drittel der weltweit für den menschlichen Verzehr produzierten Lebensmittel - verloren oder werden verschwendet.
"Es ist die Schuld der Politiker und der multinationalen Konzerne"; "Es ist die Schuld der Kriege"; "Die Ära des Kolonialismus ist offiziell noch nicht vorbei"; "Der Mensch ist das bedeutsamste Tier von allen ..."; "Jetzt gibt es nichts mehr zu tun."
Es wäre schön, eine Entschuldigung dafür zu glauben und aufzuhören, sich Sorgen zu machen. Sie werfen den Salat weg, weil
sie von nichts wissen, und in Afrika sterben die Menschen sowieso. Stattdessen sind wir im Jahr 2018, und dank der großen Verfügbarkeit von Online-Daten können wir mit fast völliger Sicherheit behaupten, dass, wie immer, Mutter Recht hatte.Nicht nur unsere Eltern, die ein paar Jahre älter sind als wir, sondern auch viele andere auf der ganzen Welt, unterstützen die Idee, dass alles miteinander verbunden ist.
Diejenigen, die so denken, nennen sich "Mülltaucher, Dumpster, Containerer oder Freeganer".
In Deutschland befindet sich ihren größte Gemeinde.
Wir hatten das Vergnügen, einen von ihnen zu kennen: Pedro.
Pedro ist ein 42-jähriger Biologe, der in einer Großstadt im Rheinbecken lebt, die er lieber ungenannt lässt, ebenso wie seinen richtigen Namen. Pedro war vor vier Jahren bestürzt von der großen Menge an Lebensmitteln, die im Hotel, in dem er arbeitete, weggeworfen wurden. Er habe sich überlegt, wie man die Situation ändern könne und berichtete seine Erfahrungen der Online-Community der Containerer. Vier Jahre später ist er immer noch einer von ihnen.
Laut Containerern hängt alles zusammen. Wenn die Menschen in Afrika Hunger haben, dann nicht, weil sie nicht wissen, wie sie Lebensmittel anbauen sollen, sondern weil der größte Teil ihres Landes für die Produktion von Kaffee und Baumwolle verwendet wird, die für reiche Länder bestimmt sind.
Ein großer Teil der Ressourcen wird also

aus der afrikanischen Region entnommen, was kaum eine Chance auf Entwicklung und Veränderung lässt.
Warum so viele Lebensmittel weggeworfen werden? Es gibt verschiedene Gründe - manche haben Fehler, sehen nicht gut aus, oder das Verfallsdatum ist überschritten.
"Das beste Gemüse findet man am Mittwochmorgen bei Biomärkten."
Einige Anführer der Containerer-Gruppen kamen aus der Anonymität und arrangierten sich mit den Leitern der Lebensmittelgeschäfte, in denen Dumpcats zum ersten Mal sammelten."Wir helfen ihnen, nichts zu verschwenden, sie erleichtern die Arbeit, indem sie Lebensmittel beiseite legen, anstatt sie wegzuwerfen." Sagt Raphael Fellmer, der berühmteste der Aktivisten, der von Berlin aus über die Plattform "foodsharing.de" operiert.
Der Umverteilungsdienst profitiert von Supermärkten, weil er Entsorgungskosten senkt. Wenn ein Teil der Lebensmittel umverteilt wird, gehen zwei Arten von Leistungen an das Unternehmen: Wirtschaftlichkeit und der Aufbau eines positiven Images aus der Sicht der sozialen Verantwortung des Unternehmens. Ethisch können sie den Kunden sagen, "wir machen es", wir verschwenden nichts.
Es gibt so viele Dinge, die man essen und in Behältern verwenden kann. Man findet viel mehr, als das, was eine Familie konsumieren kann, alles verpackt.
Ehrenamtliche holen 20, 30, 40 kg Lebensmittel gleichzeitig ab und verteilen
sie dann wieder. Das, was schon da ist, ohne Unterschied zwischen Arm und Reich zu verteilen, ist ihr Motto.
Die von Raphael mit zwei Freunden gegründete Organisation zählt heute mehr als 3000 Menschen von ehrenamtlichen Helfern und Anwälten, keiner von ihnen nimmt Geld an. Die Mitglieder koordinieren sich frei, um zu festgesetzten Terminen in die Supermärkte zu gehen und Obst, Gemüse, Lebensmittel generell abzuholen. Ihr Lohn ist es, Obst und Gemüse gegen die Verschwendung von Lebensmitteln zu sammeln.
Die Endempfänger sind ihre Familien, andere gemeinnützige Personen oder Personen, die auf der Website aufgeführt sind.
Raphael bekräftigt: "Wir verschwenden 50 Prozent der Lebensmittel, warum kaufen Sie sie wieder?"
Die Kultur des Teilens ist ein Lebensstil gegenüber der Konsumgesellschaft, in der die Auswirkungen menschlicher Aktivitäten auf die Umwelt verringert ist.

Although nowadays being a vegetarian is
becoming more popular in China, most Chinese
vegetarians are still stuck in a dilemma. For
instance, in most restaurants normally there
are hardly ever vegetarian dishes in the menu,
and the vegetarian food recommended by the
waiters includes diced meat. As a vegetarian, I
will share some of my anecdotes, in which there
are many embarrassing experiences as well as
my previous concerns of being a vegetarian.
Wegen der Gesundheit und der Änderung des Lebensstiles erfreut sich Vegetarismus in
letzter Zeit in China immer größerer Beliebtheit. Als ein Vegetarier gerate ich dennoch in
Schwierigkeiten, wenn ich in ein Restaurant gehe. Mit meinen vegetarischen Freunden
finde ich, dass wir immer noch unter Druck gesetzt werden. Für diese Probleme gilt es allerdings Lösungen zu finden.

Je mehr Nachrichten wir über unsichere
Lebensmittel lernen, desto begieriger
ist man, ein einfaches Leben zu haben.
Deswegen verfällt man dem Charme des
Vegetarismus. Beispielsweise wurde ich
in Jahr 1 an der Uni Vegetarier, denn das
gab mir einen Eindruck, relativ gesund
and umweltfreundlich zu sein. Aber ich
muss in Betracht ziehen, wie vegetarisch
ich sein kann. Dazu kann ich mich aber
in China nicht entschließen wegen
vieler Gründe. Außer in vegetarischen
Restaurants erkennt man unmöglich, mit
welchen Zutaten eine Speise gekocht
wird. Zwar fehlt ihr niemals Gemüse,
aber wenige Inhabe der Restaurants
kennen den Begriff des Vegetariers. Auch
das Personal betrachtet Schinkenwurst
oder Meeresfrüchte manchmal nicht als
Fleisch. Wegen der beschränkten Auswahl
kreierte ich auch viele "neue" Speisen
auf dem Campus, zum Beispiel Curry-
Hühnerreis ohne Hühnerkoteletts aber
mit zwei Spiegeleiern und Gemüse. In
Bezug auf vegetarische Restaurants: Sie
sind meistens sehr teuer mit hochwertiger
Ausstattung und Service. Deshalb ist es
schwierig für normale Leute, ein echter
Vegetarier in China zu sein.
Leute haben auch viele Bedenken über
den Vegetarismus. Zum Beispiel bringen
viele Chinesen Vegetarier mit Religion in
Verbindung. Ich wurde mehrmals gefragt,
ob ich eine Buddhistin bin. Wenn ich
sagte: "Nein. Es ist nur für Gesundheit und
Umweltfreundlichkeit", wurden sie halb
ungläubig und halb bewundernd. Das führt
zu dem Schluss, dass Vegetarismus von
vielen Chinesen noch nicht als normaler
Lebensstil angesehen wird. Im Gegensatz
dazu finden sie, dass es moralisch motiviert und einzigartig ist. Manchmal
machen die Leute sich auch Sorgen um
die Nebenwirkungen, falls sie kein Fleisch
essen, wie Mangelerscheinungen. Als ich
in der Sekundarschule war, überlegte ich
schon, ein Vegetarier zu sein. Aber ich
hatte Angst, mein Leben zu beeinflussen, zumal ich mich auf das "Gaokao"
vorbereitete. Das ist der Grund, warum ich
kein Vegetarier war, bis ich eine Studentin
wurde. Als ein Vegetarier muss ich
denken, wie ich mit Fleischessern esse.
Deswegen will ich bisweilen auch Speisen
mit tierischen Fetten zu mir nehmen,
besonders Hot Pot.
Die Vegetarier geraten in China ins
Dilemma. Trotzdem gibt es immer mehr
Auswahl an Speisen und Restaurants
für Vegetarier, die an deren Bedürfnisse
angepasst sind. Aber am wesentlichsten
ist die Änderung der Einstellung zu
Vegetariern. Auch als Fleischesser sollte
man Vegetarier nicht als seltene Tiere,
sondern als ganz normale Menschen
betrachten.

expected to go back to university and enjoy
good Chinese food with my old friends.
Unexpectedly, most of them, who used to be
crazy about all kinds of meat, had become
vegetarian...however, I was also a vegetarian
whilst I was in Germany...
在我结束了我的德国交换之旅,
期待着回到熟悉的校园和许久未
见的朋友们一起吃吃喝喝的时
候,我惊讶地发现他们居然都成
为了素食主义者,惊讶之余,我
不禁想起了我也曾是个素食主义
者 ...
Kürzlich ist mir aufgefallen, dass viele meiner Freunde Vegetarier sind. Sie tun es aus
vielen Gründen. Für viele ist es der gesündere Lebensstil: Sie tun es um abzunehmen
oder schlank zu bleiben. Obwohl viele von ihnen nur kurze Zeit diesen Lebensstil erleben
möchten, sind 4 Menschen aus einem Freundeskreis mit 7 Personen Vegetarier. Ich
muss zugeben, dass es viele Vegetarier tastsächlich in meinen Leben gibt und jeder ein
Vegetarier werden könnte. Ich glaube, dass Vegetarier in meinem Alltag üblich sind ,
obwohl es ungewöhnlich ist, in China eine Mahlzeit ohne Fleisch zu essen.

Aber werde ich Vegetarier? Ich denke nicht...
Warum? Ich weiß, viele Vorteile liegen auf der Hand, wenn man Vegetarier wird,
aber für mich ist es zu schwer, vielleicht unmöglich, den Geschmack von Fleisch
zu vergessen.
Ich war einmal Vegetarier, als ich in Nürnberg studiert habe. Ich habe die
Weltmeisterschaft mit Freunden gesehen, während Deutschland gegen
Schweden gespielt hat. Es war wirklich ein schwieriges Spiel, und ich habe
wirklich gehofft, dass Deutschland gewinnen kann. Deswegen sagte ich meinen
Freuden, ich werde für eine Woche Vegetarier sein, wenn Deutschland gewinnt.
Danach, wie ihr vielleicht schon wisst, hat Deutschland das Spiel gewonnen, und
ich habe meinen neuen Lebensstil begonnen, glücklich und ein bisschen traurig.
Der Anfang war sehr schwer, plötzlich war alles anders! Ich habe nie zuvor das
Gefühl gehabt, dass ich Fleisch so sehr essen will. Sehr bald hatte ich keine
Ahnung mehr, was ich kochen oder essen könnte. Also entschied ich mich, zum
Supermarkt zu gehen. Im Supermarkt ist mir klar geworden, dass ich sehr viel
Auswahl habe, auch wenn ich kein Fleisch esse. Danach habe ich sogar einige
vegane Speisen gemacht. Einige von ihnen sind überraschend lecker. Nach über
drei Tagen gewöhnte ich mich an diesen Essensstil und das Vegetarierleben
wurde leicht. Eine Woche Zeit verging sehr schnell.
Ich fühlte mich gut während der vegetarischen Woche. Ich weiß nicht, ob ich
abgenommen habe oder nicht, aber ich fühlte weniger Belastung für meinen
Magen und ich habe während der Woche im Vergleich zu vorher regelmäßiger
gegessen.
Danach habe ich wirklich nachgedacht, vielleicht kann ich wirklich ein
Vegetarier werden um gesünder zu leben. Nach meinem ersten Kebap nach der

The increasing popularity of being
vegetarian has moved from the Western
world to China. Although most vegetarians
have good intentions, one has to bear in
mind that there are still far more problems
in the world to be solved. Vegetarians
should not display moral arrogance,
otherwise the movement may lead to
resistance by non-vegetarians.
在欧美文化的影响下,素食主义
在中国日益普及。许多人出于保
护环境、保护动物等美好愿景而
选择素食。但并不排除某些人选
择素食是为了标榜自己的道德高
尚并抨击非素食主义者,这种情
况可能会遭到非素食主义者的抵
制。
Ich denke Vegetarismus ist eine Lebenseinstellung, aber ich möchte kein Vegetarier sein.
Die meisten Vegetarier essen kein Fleisch, aber sie essen Eier und trinken Milch. Die Tiere
müssen aber dennoch leiden, wenn sie Eier und Milch produzieren. Die Hühner auf den
Farmen werden in kleinen Käfigen großgezogen und ihre einzige Aufgabe ist es, Eier zu legen. Viele von ihnen haben nie den blauen Himmel gesehen, bevor sie sterben. Den
Kühen geht es auch sehr schlecht. Sie sind sehr intelligente Tiere, aber sie müssen sich
viel melken lassen und können ihre Kinder nicht auf natürlichem Weg großziehen. Wenn
Menschen weiterhin Eier essen und Milch trinken, wird ihr Leiden nicht reduziert.

Religion und Vegetarismus überschneiden sich. Der Startpunkt ist die Sympathie und Hingabe für lebende Dinge. Es gibt jedoch auch schwerwiegendere Probleme auf der Welt zu lösen.
Heutzutage sind Menschen Meister des Getreideanbaus und haben die Möglichkeit, Millionen Tonnen von Sojabohnen zu kultivieren. Eiweiß war noch nie so günstig. Trotzdem gibt es noch viele Menschen auf der Welt, die einen Mangel an Essen und insbesondere Eiweiß haben.
Ist die Menschheit unfähig?
Nein, die überschüssigen Produkte werden sich immer anhäufen und schlecht werden oder zu anderen Sachen wie Alkohol weiterverarbeitet werden. Terminkontrakte auf Farmerzeugnisse sind ein Finanzwerkzeug für die Reichen geworden um ihre Profite zu erhöhen. Auf der anderen Seite gibt es viele Menschen, die zwangsweise Vegetarier auf Grund ihrer armen Lebensverhältnisse sind. Sie sind weder nobel in ihrer Überzeugung noch voll Hingabe, sondern können es sich nicht leisten Fleisch zu essen.
Wie sollte man also über Vegetarismus denken?
Am Ende entscheidet jeder durch sein freies Denken selbst. Jeder hat das Recht Vegetarier zu sein und dafür zu werben. Wenn Sie sich allerdings nur darum kümmern, ob Ihr Essen aus Gemüse oder Fleisch besteht und nicht darum, wie man den Hunger auf der Welt stillen kann, ist es bedeutungslos.
Wenn eine großartige Person sich entscheidet, Vegetarier zu sein, ist es deren Freiheit und es gibt niemandem das Recht darüber zu urteilen. Aber diese Person wird nicht dadurch großartig, Vegetarier zu sein, sondern durch ihre Werte und Fähigkeiten die Welt zu verbessern. Wenn die Top 5% der Gesellschaft 5% ihrer Zeit und Resourcen dafür aufwenden um etwas für die untersten 5% der Gesellschaft zu tun, und nicht nur auf die Kleinigkeiten in ihrem Leben schauen würden, sähe die Welt anders aus. Jeder sollte wissen, dass es auch andere Leute auf der Welt gibt, und wie deren Leben aussieht.
Der Grund wieso Vegetarismus außerhalb Chinas so akzeptiert ist, ist dass die sozialen Kosten dahinter bereits gezahlt wurden. In China wollen Vegetarier eine tolerantere und idealere Gesellschaft wie in der westlichen Welt. Aber es ist eine Entfremdung und Isolierung. Gibt es zum Beispiel irgendwelche Gemeinsamkeiten zwischen Kindern, die nur Sojanudeln essen können, und gehobenen Arbeitern in Großstädten, die Energieriegel, Nüsse und Avocados essen können?
An einer Sache für eine lange Zeit teilzunehmen wird eine Angewohnheit, die Menschen große Freude bringt. Manche Menschen lieben ihre Haare so sehr, dass sie diese nie schneiden. Manche Menschen wollen niemals Fleisch essen. Und ich kann keinen metaphysischen Unterschied zwischen "nicht Fleisch essen" und "nicht Haare" schneiden erkennen.
Studien haben gezeigt, dass Menschen viele Insekten während des Schlafens essen. Leute, die ihr Leben darauf ausrichten, nie wieder Lebewesen zu töten, müssten ihren Mund vor dem Schlafengehen zubinden, damit dies nicht geschieht.

Being a vegetarian is quite common these days, even in China. Although vegetarian
restaurants aren't as popular as ordinary restaurants in China, a rapid increase in
the numbers can be noticed. With the development of society, people are paying
more attention to their health, making it the main reason for them to choose
a vegetarian diet. Being vegetarian in China is both easy and challenging. It is
easy because an important part of the traditional Chinese meal is vegetables, a
characteristic that dates back to Ancient China; and also because of the Buddhist
tradition which encourages vegetarianism. However, its also challenging because
a large part of traditional Chinese meals accompany vegetables with meat and
fish, and this type of meal cannot be easily avoided, especially when eating out
with friends or celebrating festivals with family. In general, we can notice that in
contemporary China, vegetarianism is spreading. In this way, vegetarians who live
in China might still find it challenging at times to satisfy their choices, though the
situation has greatly improved.
择素而食早已不是一个新鲜事,在中国同样如此。素食餐厅虽还未及星罗棋布的地步,但也如雨后春芽一般漫朔开来。随着社会的发展,人们对于自身健康更加关注,素食更多来自人们发自内心的选择。但选择在中国做一个素食主义者既容易又充满挑战。说它容易是因为中国自古就有的膳食均衡的饮食基调使得素菜在日常餐饮中占很大比例,另一方面也有佛教鼓励素食的原因。说它充满挑战性是因为“荤素搭配”的理念也使得荤菜成为餐桌上的必需品,特别是在逢年过节的情况下,在一些特定地方生活的吃素的中国人通常都选择很少。总的来说,我们可以注意到素食主义在中国现代社会的确在不停扩张,但对于生活在中国的素食主义者们来说,怎样在不同情况下都秉承自己的选择仍旧是一个问题。但实际上现今食素的情况相比以前而言,已经进步了很多了。

A proposito dei vegetariani in Cina, da sempre hanno una storia interessante e complicata. Infatti, nell'antica Cina, c'erano molte culture vegetariane. Fino agli anni '80, la maggior parte dei vegetariani cinesi era collegata al buddismo, ma adesso, un numero sempre maggiore di giovani istruiti, studentesse all'università e impiegati diventano vegetariani. Inoltre, secondo le stime, la Cina ha la popolazione vegetariana più grande al mondo, che tu lo creda o no. Penso questo sia dovuto alla dieta dei cinesi, quindi per i cinesi è più facile adattarsi allo stile di vita vegetariano.
Prima di tutto, la maggior parte dei piatti cinesi inizia con antipasti vegetariani e di carne. In una famiglia media è ragionevole aspettarsi dei piatti a base di verdure per pasto, che sono fondamentalmente verdure fritte o verdure bollite o piatti a base di verdure fredde, seguite da contorni con o senza carne. Questa ricca parte di verdure diminuisce anche la possibilità di alcune malattie (per esempio, ipertensione, tumori e obesità). Secondo, la Cina ha la popolazione vegetariana più grande al mondo, ciò è possibile perché la Cina ha una popolazione molto vasta, 50 milioni di vegetariani è una popolazione abbastanza grande.
Per i vegetariani cinesi, ci sono due fattori importanti che influiscono sulla loro scelta. Uno è l'influenza del buddismo, il buddismo è la religione più diffusa in Cina, i credenti buddisti credono nella reincarnazione, credono che sia possibile che l'anima si reincarni in una creatura qualunque dopo la morte. Quindi, essere vegetariano è una forma di rispetto per la vita. Siccome ci sono diverse correnti di buddismo, la situazione è diversa per un vegetariano, per esempio, alcune persone scelgono di essere vegetariane
solo una volta alla settimana, mentre altre mangiano carne una volta o due volte all'anno. Pasti vegetariani sono serviti solitamente nei templi buddisti e spesso ci sono settimane vegetariane e mesi vegetariani. Ma ora con lo sviluppo della globalizzazione, i cinesi hanno maggiori possibilità di conoscere culture e concetti diversi, sono più preoccupati per la loro salute, quindi, essere un vegetariano è una scelta dettata dal cuore, per la ricerca di una vita più sana.

In generale, i ristoranti pensano che sia un bene avere un po'di carne nel piatto per i vegetariani, soprattutto nella minestra, che contiene fondamentalmente olio animale. Dunque, i vegetariani cucinano da sé.
D'altra parte, per i vegetariani cinesi, il tradizionale capodanno celebrato in tutto il paese è il momento più difficile per mantenere le loro abitudini alimentari di fronte alla radicata tradizione del paese di condividere piatti a base di carne, lo stesso vale quando ci sono altri grandi feste.
In conclusione, il numero di vegetariani in Cina sta crescendo, essere vegetariano in Cina è ancora un po'problematico, ma non è così difficile come una volta.

広まっている菜食主義

Vegetarianism is becoming more popular around the world. However, although all
vegetarians don't eat or even use animal products, the reasons behind their decision
to become vegetarian are different. This article mainly talks about different reasons
behind different types of vegetarians.
素食主义正渐渐在世界范围内流行开来。虽然素食主义者们都拒绝食用动物制品甚至拒绝使用动物制品,但他们背后的原因也是各种各样的。这篇文章主要讨论了不同素食主义者背后的不同原因。
蔓延的素食主义The Spread of Vegetarianism
菜食主義というのは一つの食文化で、いま世界中でだんだん広まってきている。皆さんご存知のように、肉や魚を食べない人は菜食主義者と呼ばれるが、実は国や文化によると動物製品も使わない菜食主義者もいる。
菜食は体にいいかどうか、人によって考え方が違う。野菜ばかり食べると、蛋白質が足りなくなってしまうという意見がある。しかし、豆類から作った食べ物の中に、たんぱく質がいっぱいある。あるアンケート調査の結果によれば、コレステロールは心臓病や糖尿病などの一つの理由だ。大量のレステロールを含む肉を食べないと、心臓病や糖尿病の危険性が減る。それは菜食主義が広まっている理由の一つだ。
また、文化や宗教の影響も大切な理由だ。例えば、中国の菜食主義者はほとんど仏教徒だ。ヒンドゥー教徒は人の地位が高ければ高いほど、肉を食べないと信じている。
モラルの方面がら考える菜食主義者もいる。西洋の菜食主義者は若者が大勢だ。若者たちは地球環境を大切にしている。食肉を生産するために、豚や牛を飼わなければならない。しかし、その家畜がすごくメタンを生む。メタンは地球温暖化の主要な原因だ。そして、地球の安全のために、肉を食べないほうがいい。
このように、様々な原因で、菜食主義は世界中に広まっている。

This short essay focuses on the historical process of developing vegetarianism in Japanese society, which is closely related to the Buddhism religion. Along with evolutions on the understanding of doctrines, not only the awareness of both social structure and political relations towards vegetarianism as an eating habit were shaped, but also a theoretical vegetarianism system was put forward, later to be accepted by the whole of Japan.
这篇文章着眼于讨论日本素食主义的发展历史,及其与佛教信仰之间的紧密联系。随着人们对佛教教义理解的进一步深入,整个社会包括政界对素食主义生活方式的认知不断提升。此后更推动日本形成了一个被社会接受的、理论化的素食主义体系。
世界歴史は近代史になって以来、経済構造が進歩するとともに、各国の社会・政治や人々
の生活もだんだん変化しています。特にアジアの近代日本。あの時、黒船来航を契機として、
日本社会は初めて江戸幕府以外の高度な文明社会を知りました。国民を助ける、そして同
じような先進国を作る為に、日本人は自分自身を変えることに決めました。明治維新後、
明治天皇は伝統的な食習慣を変えるよう指示を出していました。この指示の内容は精進 ( し
ょうじん ) 料理 ( りょうり ) しか食べない食習慣を改め、国民が牛肉を日常的に食べるよ
う促すものでした。歴史的に、この命令のために、日本人は1500年の純素食な食べ方
をあきらめました。どうして千年の時間の間、この単純な、そして伝統的な食習慣は日本
社会で有名になったのでしょうか。その最大な理由は仏教の伝播と思います。

菜食主義に重要なのは肉を食べてはならないという点です。一般的には、この
肉は赤身の肉という意味です、魚と海鮮は食べられます。でも日本の菜食主義
の歴史の中で、政治家は肉についての厳しい定義を作りました。単純な菜食生
活を実施する為に、歴代の天皇と将軍は禁 ( きん ) 肉令 ( にくれい ) を公布し
ました、例えば、天武天皇 ( てんむてんのう ) の殺生断禁令 ( きんれい ) と徳
川綱吉の生類憐みの令。ついには、全種類の肉が禁止されました。以上は日本
における菜食主義の歴史的な発展です。

菜食主義という生活は健康、倫理、宗教等の理由から、動物性食品の一部又は
全部を避けて、野菜とご飯と果物だけ食べる食生活です。歴史の日本菜食主義
は大体宗教的な理由がありました。その発展は飛鳥時代から二つの段階があり
ました。飛鳥時代に仏教は初めて日本に入った後、短期間で社会の心をつかみ
ました。でも、未知の宗教であった仏教に対し、、信仰心が厚い。
日本人はとても型にはまった理解のしかたをしました。仏は不殺生と言った、
それなら私たちは絶対に肉を食べられません。生きるためには、野菜とご飯と
果物だけで十分です。この食習慣は菜食主義のスタイルがありましたが、最初
の段階では菜食主義に対して、社会の理解は初歩的で、日本人はとても型には
まった理解のしかたをしました。奈良時代以降、日本仏教は発展するとともに、
日本人はもっと詳しく仏の精神を理解して、新たな食習慣を提案しました。菜
食生活はただの厳しい要求ではなく、生活の態度です。信徒たちは菜食を食べ
る時、仏の仁心と教導を理解できる。さらに、菜食食習慣も心の修行です、こ
の修行は禅宗の一部です。その上で、日本人は独自の精進料理を発展させまし
た、これは最初の理論的な菜食主義のメニューです。この時点で、社会はこの
系統的な菜食主義を正式に認めました。

The Status and Problems of Vegetarianism in Japan
A survey conducted by a Japanese company last December revealed that the
number of vegetarians and vegans occupied 4.5% of all respondents. Compared
with countries in Europe and North America, the popularity and awareness of
vegetarianism in Japanese society is still very low. This article summarizes the
difficulties of popularizing vegetarianism in Japanese society into three points;
respectively "fish cuisine – a part of Japanese food culture", "the emphasis on
harmony – difficulty being the only vegetarian in a Japanese community", and
"lacking awareness of vegetarianism in Japan". Similar to "Vegetarian-advanced
countries", Japanese society can increase vegetarian restaurants and shopping
areas to response to the growing demand for Japanese vegetarians in recent
years. However, in order to develop an environment where vegetarianism can be
widely accepted, it is still necessary for society to deepen its understanding of
vegetarianism.
在日本,人们对素食主义的认同较低。日本一家公司在 2017 年 12 月进行的关于素食
主义人口调查结果显示,素食主义者和绝对素食主义者的人数仅占受访对象总人数的
4.5%。和欧美诸国相比,日本社会中素食的普及率及对素食主义的认知度仍然很低。
本文对日本社会的这一状况进行了分析,分别从“日本饮食文化的一部分——鱼料
理”“强调协调性的日本文化——很难做群体中的唯一一个素食主义者”和“日本对
于素食主义的暧昧定义与认识不足”三个方面论述了日本社会素食主义普及困难的原
因。为了满足近年来逐渐增多的日本素食主义者的需求,日本社会可以向“素食主义
先进国”的欧美各国一样增设面向素食主义者开放的餐厅和购物区。但要形成一个素
食主义者被认同的环境,还需要全体社会加深对素食主义的理解。

株式会社フレンバシーが去年 12 月に実施した「日本のベジタリアン・ビーガン・ゆるベジ人口調査」の結果によると、ベジタリアンもしくはビーガンは全体の4. 5%を占めている。日本人の中には少数だが意識的に動物性食品を避ける人もいる事が分かった。しかし、2017 年の資料によると、ニューヨークでは、ベジタリアン向けレストランは 140 店舗以上あり、スーパーでお肉の代替食品コーナーも多く設けられている。現状では日本社会は菜食主義者に対する理解まだ浸透しておらず、海外と比較して菜食主義への認識が低いと言えるだろう。したがって、本文ではなぜ日本国内においてベジタリアンや菜食主義の普及率が低いのかについての要因を纏めた。
一つ目の要因は古来から魚を食べてきた歴史が日本の食文化に深く根付いている事だ。日本社会は独自に発展した食文化を重視する傾向にあり、食は日本人の生活の大切な一部だという認識が昔から高い。日本食は魚をベースとした料理が多く、様々な料理に魚の出汁、魚粉を使用しているため、ベジタリアンだった場合、日本で外食をする事は非常に難しい。逆に西洋料理の中でも肉、乳製品、卵が多く使われているが、欧米各国で菜食オプションは充実している。日本の食文化を守り続けると同時に、他の食文化を認められるようになるにはまだ時間がかかるようだ。
一般的に、近親者の関与が菜食主義の人口の増加に寄与しているといわれるが、日本の場合、そのことが菜食主義が普及しない要因の一つになっていると考えられる。それは主に日本の「食育」思想に含まれる家族や仲間と一緒に食べる楽しみを味わうこと」が大いに関係している。つまり、「家族のうち一人だけが他の家族と別の物を食べることで、家族団欒の雰囲気が失われる」ということだ。それに対し、ベジタリアンが多い欧米では、個人主義とあって、他の家族が目の前で肉を食べていたとしても問題はない。したがって、この日本独特の協調性の文化においては、家族から理解を得られたとしても、菜食を続けにくい。こうした多様性より協調性を大切にしてきた慣習は教育機関においても見受けられる。
また、日本ではまだ菜食者を偏食者と見がちである。日本国内ではベジタリアンに関する文献は極めて少なく、ベジタリアンやビーガンの定義も曖昧だ。「魚・鶏肉は食べます」と公言しているジタリアンを別にして、何か特定の食材を抜いた食生活のことを”ベジタリアン”と呼ぶ傾向さえ見られる。例えば、赤身肉を食べないだけでベジタリアンと捉えたりする菜食主義者に対しての認識不足は、ベジタリアンが広まる動きへの一つの壁だと言えるだろう。
ここまで検証してきたとおり、日本社会ではベジタリアンはまだまだ少数派であり、「魚との関わりが深い日本食文化」、「家庭での食生活における食育思想形成」と「ベジタリアンに関する知識・認識不足」という三つのファクターがあるため、ベジタリアン思想が日本社会に浸透するのは容易ではない。ベジタリアン先進国と言われる欧米のように、ベジタリアン対応が可能な店舗を増やすことは、ベジタリアン増加促す一つの選択肢だと考える。それに加えて、菜食主義という個人の選択が認められる環境作り、また社会全体で、理解を深めていく事が求められる。

Recently, vegetarianism has grown in Asia. Taking China and Japan as examples; in
the past most vegetarians were religious followers or environmentalists, but now the
concern of humans health and body shapes have become the main cause for it. Why
can't the vegan diet become part of the Asian diet? There are several factors. Firstly,
due to Japan's special geographical location, the diet structure has been dominated
by rice and fish since ancient times, moreover the price of vegetables is relatively expensive, therefore few people can afford the vegetarian lifestyle. Secondly, white-
collar workers in Japan have to adapt frequent business dinner and respect the clear
relationship between the two generations in the company, which makes it difficult to continue a vegan diet. Thirdly, people are more likely to be bored after a long-term
bland vegan diet.
近年来,在欧美国家极其盛行的素食主义在亚洲也有所发展,但发展的不顺利。以中
日两国为例,过去吃素的人多是因为宗教信仰或是环保主义者,如今素食主义的发展
得益于人们对健康及身材的关注。但是,素食主义在中日仍旧无法成为餐桌上的主流,
有如下几点原因:1. 因为地理环境的原因,日本自古以来的饮食结构以米饭鱼肉为主,
蔬菜价格比较昂贵,很少人能够负担的起纯素食生活。2. 日本社会上流行的“饭桌文化”
以及公司内比较分明的前后辈关系,使得坚持素食主义是一件很难且不利于事业发展
的事情。3. 日本饮食较清淡,且烹饪手法选择较少,所以长时间食素有可能会吃腻。
与日本相比,中国菜系多样,制作方法多样,能满足更多人不同的口味要求。从这点
来看,中国更有利于素食主义的发展。

欧米各国と比べ、中国と日本のベジタリアンニズムは
まだ始まったばかりなので、ベジタリアンの人口は
多くない。各国のベジタリアンは似ている理由で菜食
生活を実行している。その中で、多数のベジタリアン
は、肉製品を食べてはいけないという宗教上の教えを
理由としている。殺生できない仏教と、豚肉を食べな
い回族は二つの例だ。また、人々は健康的な面でも菜
食主義を行っている。その人たちはダイエットをする
ため、お肉をできるだけ食べないようにしている。も
う一つの理由は環境問題に関わっている。あるベジタ
リアンのグループは、気候変動に関心を持っており、
生物多様性を守るため、菜食しかしない。
日本は海に囲まれ、色々な海産物も豊富だ。伝統的な日本
食は主にお米と魚料理に基づいている、現代の多くの日本
人は肉や牛乳を食する。しかし、ベジタリアンはそのよう
な食べ物は絶対に口に入れないだろう。そして、特に上下
関係を重視する日本の会社の会食で、一人だけでベジタリ
アンフードを食べると、その場の雰囲気を壊す可能性があ
る。近年日本各地でベジタリアンフードを提供する飲食店
の数が増加し、菜食研究家もベジタリアンに向け菜食料理
教室を企画しているが、全体的に見ると、ベジタリアン向
け店舗数はまだ少ない。このような現状では、日本で続け
て菜食主義を行うことは難しいだろう。
中国と日本の飲食と食材構造が似ているが、日本食は食
材の味を元にして料理するので、中華料理より味が薄い。
このような濃くないベジタブル料理を毎食食べると、中
華圏出身の人はさすがに飽きるかもしれない。そのため、
中国のほうがベジタリアニズムが発展しやすいと考えら
れる。信じ難いかもしれないが、ある中国のすごいレス
トランで、野菜で作られている「もどき料理」が売られ
ている。その料理の香り、見た目、食感は全部肉料理と
似ている。しかも、このような菜食専門店は北京、上海

excessive vegetarian diet could have a negative effect on the individual's health.

what she usually eats. We also recommended her some Korean food which vegetarians
can eat. Throughout the interview, we learnt that people become vegetarians either for
religious reasons or a variety of other reasons; we also learnt what they usually eat. In
addition, by recommending our favourite Korean foods to vegetarians, we are able to let
people know more about Korean cuisine.

호박죽 등은 채식주의자들이 먹을 수 있는 음식들이에요 .
또한 , 한국의 절에는 채식 음식인 사찰 음식이 있거든요 . 김치는 한국의 대표적인 반찬 중 하나인데 ,
일반적인 김치에는 소금과 젓갈 등이 들어가지만 사찰김치에는 젓갈 대신 된장이나 국간장을 넣어요 .

Vegetarianism, as a new food culture, is quietly spreading all over the world. In
line with the concept of returning to nature and health, more and more people
choose to become vegetarians. At the same time, this kind of vegetarian culture
has become the symbol of a kind of fashion. For people in different countries,
vegetarian also can produce different effects: on the one hand, some people
prefer to choose the food they like to eat instead of being pure vegetarians. On
the other hand, they think that being a vegetarian is necessary because it is good
to improve the environment and keep healthy.
素食主义的兴起给人们的生活带来了或多或少的影响。我们就这个问题对中文 3 级听说课的同学们进行了随机采访,他们发表了自己的看法。

This article concludes the reasons for vegetarianism from both religious and
non-religious. For non-religious reasons, on one hand, people choose eating
vegetables over meat as part of a daily diet for a healthier lifestyle. On the other
hand, many believe that renouncing meat-eating can prevent animal-slaughter.
Religious reasons for choosing vegetarianism comes as a result of common
teachings of kindness and commiseration, so they refuse to kill animals and
therefore become vegetarian.

Se dice que los vegetales son útiles para mantener la salud. Hoy en día, más
gente elige este tipo de dieta para tener una vida más saludable y ser más
longevo. Según una investigación reciente, la tasa de mortalidad por ataque
de corazón de los vegetarianos fue un 24% menor que la de los que comen
carne. Generalmente, un excesivo consumo de carne trae grasas saturadas
y colesterol al cuerpo y si el cuerpo no puede lidiar con esta sobrecarga,
diferentes problemas surgirán. Debido a esto, las dietas vegetarianas pueden
reducir eficazmente aquellas enfermedades causadas por dicha razón.
Además, la moralidad es otra razón para promover el vegetarianismo. El

Nowadays, being vegetarian has become a popular lifestyle choice amongst
young people. I think there is no such thing as the "best" lifestyle in this world,
instead people should choose the lifestyle that suits them.
近年来,素食主义在年轻人群体中越来越流行。我觉得没有哪一种生活方式是最好的,人们需要选择适合我们自己的生活方式。
Hay diferentes razones por las que la gente decide no comer carne: a veces se debe a motivos religiosos y otras veces no se quiere perjudicar a los animales. En los últimos años, el estilo de vida vegetariano es bastante popular, más y más personas están reflexionando si deben convertirse en vegetarianos.
La gente tiene opiniones muy diferentes acerca de los vegetarianos. Las personas no vegetarianas dicen que una dieta que consiste en verduras, frutas, cereales y frutos secos no puede proporcionar suficientes nutrientes. Los vegetarianos a menudo tienen que tomar suplementos para obtener todas las vitaminas esenciales y minerales. Sin embargo, los vegetarianos creen que la carne es malsana y que puede causar muchas enfermedades.
Aunque la carne roja puede ser perjudicial, por ejemplo la carne de cerdo y vaca, la verdad es que el ser humano ha estado comiendo carne por un largo tiempo y la carne es una fuente importante de proteínas que ayudan al crecimiento de los niños. Comer demasiada carne es perjudicial para nuestra salud. Siempre y cuando limitemos la cantidad de carne que ingerimos, no tenemos por qué eliminarla completamente de nuestra dieta diaria.
Cada persona tiene diferentes condiciones físicas, debemos buscar un equilibro entre lo que queremos y lo que necesitamos, así podríamos obtener un estilo de vida más adecuado para nosotros mismos. Una dieta equilibrada de carne y verduras también puede ayudarnos a tener un cuerpo más sano.

what things need to be taken into account in the selection of meatless dishes,
what steps are being taken to make people aware of good nutrition and above
all shows how to begin a vegetarian lifestyle. In Poland, both carnivores and
vegetarians can find something suitable for themselves.

El concepto de vegetarianismo es conocido desde que el mundo es mundo. Siendo así, no se trata solamente de un fenómeno moderno. Sin embargo, hoy en día su popularidad está creciendo, la dieta diaria sin carne gana nuevos seguidores, gracias a los que se puede decir que el vegetarianismo está de moda. Además, los que en el pasado se oponían a este estilo de vida, ya se han convencido de que existen más y más ventajas, es decir, aquí el papel principal lo juegan la salud, la ecología y, sobre todo, la ausencia de sufrimiento animal.
La mayoría de los vegetarianos se preocupan solo por la dieta, pero hay algunos que se toman en serio la idea general de vegetarianismo porque no quieren matar animales. Para ellos, cada criatura, sin importar su tamaño, tiene derecho a la vida. No obstante, hay que recordar que existen otras fuentes de alimento de origen vegetal con la misma calidad que las proteínas de origen animal.
Soy de Polonia, un país cargado de historia, situado en Europa central y miembro de la Unión Europea, donde el vegetarianismo se ha convertido en un fenómeno cada vez más popular y el número de seguidores crece día a día.

Desafortunadamente, todos sabemos que es difícil cambiar nuestros hábitos alimenticios y, por lo tanto, requerimos de actividades promocionales y educativas específicas para brindar una visión de la alimentación saludable.
Muchas personas no saben cómo responder a la pregunta de si el vegetarianismo es saludable, porque creen que, sin comer carne, no proporcionamos suficientes proteínas al cuerpo, o tal vez es la carne la que tiene un efecto perjudicial en el cuerpo humano.
En Polonia, hay un gran número de asociaciones que promueven la salud a través de una dieta vegetariana. El objetivo principal de estas organizaciones es aumentar la conciencia sobre la nutrición en sí misma, así como fortalecer el impacto del vegetarianismo en la salud pública. Están conectadas con muchos eventos, festivales, ferias, donde muchas veces se ofrecen platos de verduras que los asistentes pueden probar, y, sobre todo, hablar con expertos relacionados con el vegetarianismo.
En Polonia siempre se han podido encontrar no solo platos vegetarianos, sino también de carne. Seguimos usando una gran cantidad de granos, cereales, hierbas y varios tipos de verduras, porque son los elementos principales de la dieta tanto de los vegetarianos como de los carnívoros. El mercado polaco de productos vegetarianos es enorme: en las estanterías de todo tipo de comercios se puede encontrar una gran cantidad de productos destinados a los herbívoros. Cabe mencionar que, a diferencia de los países occidentales, los precios son alrededor de dos o tres veces más altos, aunque la producción vegetal es mucho más barata. Por otro lado, las verduras se pueden encontrar a bajo precio y se utilizan en casi todos los platos.
Sin duda, hay que destacar que Varsovia, la ciudad de la que soy yo y la capital de Polonia, ha sido reconocida por los estadounidenses como una de las ciudades de más rápido crecimiento cuando se habla de este tipo de restaurantes. Hoy en día hay cada vez más marcas y empresas locales que ofrecen productos vegetarianos, incluso aquellas que anteriormente producían solo productos cárnicos.
Un vegetariano en la capital polaca no tiene ninguna dificultad para comer fuera de casa: la cocina vegetariana en Varsovia es tan diversa que uno solo puede tener problemas para elegir el plato que tomará. Indudablemente, es de alto nivel y eso no impide a las personas cocinar en casa. Mucha gente lo hace ya que no se come en restaurantes todos los días.
Si deseas volverte vegetariano, necesitas saber algo básico: qué plantas contienen proteínas y cómo preparar comida para que tenga un contenido proteico similar al de la carne. En cuanto a equivalentes proteicos, no te preocupes, están disponibles a gran escala en internet.
Todo depende de como seas, ya que cada uno es diferente y tiene sus propias convicciones.
Recuerda que somos lo que comemos, y lo que comemos tiene un impacto en la forma en que somos. ¡Presta atención a lo que comes!
Si eres carnívoro, no tengas miedo. Como ya he mencionado antes, la cocina polaca es variada, así como muy sabrosa. ¡Sin duda encontrarás algo para ti!

Vegetarianism is becoming more and more popular in our daily life, and this is
driven by many factors. In this article, the author conducted a survey of UNNC
students' attitudes towards vegetarianism, so I could understand their views on
this issue. She also visited four student restaurants to learn about the vegetarian
environment in our campus.
“素食主义”在我们的日常生活中越来越受欢迎,这是由多种因素驱动的。在这篇文章中,作者就 UNNC 学生对素食主义的态度和他们对这一问题的看法进行了一次调查。同时她也实地考察了校内的四所学生餐厅,以了解校园内的素食环境。
La palabra vegetarianismo se está haciendo cada vez más popular en nuestra vida diaria.
La elección de la comida vegetariana suele estar motivada por diversos factores, entre
ellos la reducción de los efectos medioambientales, la atención a los derechos de los
animales y la salud de las personas.
Recientemente he hecho una encuesta sobre la actitud de los estudiantes de la UNNC
hacia la dieta vegetariana. Setenta voluntarios, en total, participaron en esta encuesta
y solo cuatro de ellos declararon que son vegetarianos: tres de ellos son ovo-lacto
vegetarianos y una persona es semi-vegetariana. Solo a otras catorce personas les
gustaría ser vegetarianas en el futuro.

Sin embargo, el 48,57% de los voluntarios dice que, aunque no se consideran
vegetarianos, intentan consumir este tipo de alimentos con la mayor frecuencia posible.
En cuanto a por qué no tienen ganas de convertirse en vegetarianos, aparte de que creen
que la carne sabe mejor, la razón principal es que no les parece que pueda proporcionar
una adecuada nutrición. Además, otras respuestas mayoritariamente escogidas son que
es difícil tener acceso a comida vegetariana aquí y que el precio de este tipo de comida
es un poco caro. También dos personas expresaron que no quieren ser "inconformistas" y
les parece que, si alguien no es vegetariano, entonces es más probable que sea aceptado
por la sociedad.
En lo que respecta a la nutrición, un artículo examina las fuentes de principales nutrientes
que los seres humanos necesitan en su vida diaria tales como proteínas, hierro, calcio,
etc. El resultado nos muestra que los suplementos y los alimentos fortificados son necesarios para asegurar la ingesta suficiente de la vitamina B12. Si alguien nunca come huevos, lácteos u otros productos animales será capaz de encontrar otros nutrientes en
los vegetales. 1Algunos alimentos fortificados son, por ejemplo, ciertos tipos de cereales y levaduras nutricionales. 2Entonces, esto significa que incluso alguien que escoge una dieta vegana, puede conseguir una buena nutrición si mantiene una dieta equilibrada.
Con respecto a la segunda razón, he visitado los cuatro restaurantes para estudiantes en
la universidad y he hecho una entrevista a algunos voluntarios para saber sus opiniones
sobre ello. Es posible encontrar comida vegana en cada uno de ellos, especialmente
en el número uno. Personalmente creo que, excepto la ensalada del Tercer Espacio, el
precio de la otra comida es razonable. En cuanto a la discriminación social, la mayoría
de los voluntarios creen que no existe tal fenómeno porque hay una gran libertad para
elegir los alimentos y la gente no presta atención a lo que otros eligen. Cabe añadir que la
aceptación de los vegetarianos ha aumentado constantemente en los últimos años.
A través de los puntos de vista anteriores, creo que es necesario tener más información
sobre los conocimientos nutricionales para que los estudiantes tengan un mejor
entendimiento de la dieta vegetariana. Además, es importante presentar propuestas
a los restaurantes para mejorar el ambiente, proporcionar más recetas vegetarianas y
recomendar restaurantes fuera de la universidad a los estudiantes que se inclinan por
este tipo de dieta. En conclusión, espero que todos tengan la oportunidad de elegir el tipo

How does it feel to move to China whilst being a vegetarian? This is an
interview with my friend Emma, a vegetarian expat from Europe. We discussed
vegetarianism, the ethics involved, and a healthy lifestyle in China, between
respecting the environment and alimentary consciousness.

Soy un estudiante de intercambio por seis meses y me he sorprendido con este país tan
diferente al mío sin casi saber el porqué. Para un chico italiano de 22 años que nunca
había vivido en el extranjero es casi frustrante este cambio. Desde un pueblecito de
Italia hasta la total vastedad de vivir en la nación más poblada del mundo. Vivir en un
sitio donde, sin saber el idioma, no puedes leer o comunicarte y donde es imposible
comprender y ser comprendido, excepto con una sonrisa, te hace alguien cosmopolita,
pero también inadaptado.
Este sentimiento de perdición no es solamente mío; es el sentimiento mas común que
las personas de origen europeo y de otras naciones en general sienten cuando aterrizan
en este país. Creo que esta soledad y perdición en la multitud es la razón por la que la
gente llega a afianzar relaciones tan profundas y sinceras con otras personas en tan poco tiempo. Uno de los personajes que el destino ha puesto en mi camino es Emma, mi
querida amiga francesa. Ella es una vegetariana convencida y una persona maravillosa.
Cuando me pidieron escribir un artículo sobre el vegetarianismo, no he tenido otra
elección que entrevistarla.

Hola, Emma, ¿qué tal?
Bien, me gusta muchísimo estar aquí, me encanta este país y esta universidad es
increíble.
¿Cuáles crees que son las razones principales para ser vegetariano?
Pienso que las razones principales son tres: el medioambiente, la salud y razones éticas
relacionadas con los animales. Esas son también las principales razones del veganismo.
Hablando del medioambiente, no comemos carne porque la cría de los animales es una
industria muy contaminante. El 60% de las emisiones de gases proviene de esa industria,
el 43% de las tierras utilizadas para el cultivo de animales está destinado a convertirse en
alimentos para animales. En la parte noreste de Francia hay una gran industria de cerdos
y los excrementos de los cerdos van al mar contaminándolo, esta contaminación hace
que crezcan especies tóxicas de algas que matan a los peces y los peces que sobreviven
son devorados por los humanos. Acerca del mar, si seguimos con estos niveles de
sobrepesca, los mares estarán vacíos en veinte años.
En lo que concierne a la salud, la carne tiene muchos nitratos que en tu cuerpo reaccionan
de una manera poco saludable. Tiene una gran cantidad de colesterol, principal causa
de la diabetes y es muy difícil de digerir para el cuerpo humano, la carne se pudre en
nuestro cuerpo antes de ser expulsada. Como dijimos antes, comer pescado tampoco es
saludable porque está realmente contaminado.
En relación a las razones éticas, la industria de producción en masa no es respetuosa
con los animales, viven en jaulas pequeñas y abarrotadas sin ver la luz. Por ejemplo, a
los cerdos se les suele mutilar la cola y los testículos y a los pollos se les quita el pico.
Las grandes empresas no quieren mostrar a los clientes lo que sucede en granjas y
carnicerías.
Háblanos de los motivos de tu vegetarianismo.
Si empecé fue por un motivo ecológico, porque me interesaba el impacto medioambiental
y decidí dejar de financiar ese tipo de industria, pero a veces aún comía carne. Luego aprendí qué es la disonancia cognitiva, se trata de cuando piensas que tus
comportamientos son malos pero no quieres cambiar e ignoras tus sentimientos. Aquí es
cuando me di cuenta de que ya no quería comer carne por razones éticas. Ya conocía las
condiciones de los animales en la producción en masa y decidí no participar más en esto.

¿Te gustan los sabores de China?
Al principio no del todo pero después de la primera semana me acostumbré. Cuando
llegué estaba muy deprimida porque no tenía los alimentos que comía en Francia;
como las lentejas, la ensalada, los garbanzos o la pasta. Después de ese período, me
acostumbré a los sabores chinos y ahora estoy feliz con los platos que como. Pero sigo
extrañando un poco los alimentos de Francia.
No hablando chino, ¿puedes saber lo que en realidad estás comiendo?
Como no como carne, solo dispongo de verduras, huevos y fideos en mi comida. Aprendí a decir "no quiero carne" en chino, de modo que es bastante fácil. Aprendí qué tipo de
comidas puedo y no puedo comer, así que evitar la carne no es tan difícil.
Llevar una mala dieta vegetariana puede no ser saludable, ¿qué crees?
Creo que definitivamente tienes que pensar más en tu comida para asegurarte de obtener todos los nutrientes que necesitas. Si sabes algo de nutrición, y lo aplicas, deberías estar
bien o muy bien y esto te hace más consciente de lo que ingieres. Ser vegetariano de
manera sabia está científicamente probado como saludable.
¿Antes de venir a China ya te esperabas lo que te ibas a encontrar aquí?
No exactamente, no lo pensé realmente, pensaba que los chinos evitan la carne al
igual que en la India, pero al final no es así. Al principio, una o dos veces pedí carne por accidente, pero ahora ya no me pasa. Cuando siento que me falta algo, cocino en casa.
Cocinar en casa es un placer porque puedo elegir sabores e ingredientes para regular
mi nutrición porque, lamentablemente, comer fideos y arroz todo el tiempo no es muy saludable.
¿Tienes información sobre los vegetarianos en China?
Aprendí que los budistas son vegetarianos, pero creo que es un poco diferente porque no
comen carne y productos lácteos o no comen cebollas ni cebolletas, por eso es diferente
a ser vegetarianos en Europa porque allí comemos cebollas. Estoy segura de que hay
vegetarianos "típicos" en China pero no muchos. En realidad pienso que los chinos comen
mucha carne. Es algo que se puede ver por las calles.
Ser vegetariano en China es fácil, no creo que me esté perdiendo algo, me encanta estar
aquí; pero, como todos los viajeros, cuando llevo mucho tiempo en el extranjero, echo de
menos mi hogar y no estar en casa significa incluso extrañar los olores y sabores del lugar donde uno nació.

Ming es un estudiante de intercambio que ha llegado recientemente a España. Es muy
simpático, por eso se hizo amigo de muchos españoles rápidamente, sobre todo de una
chica llamada Sofía.
La Nochevieja era domingo y Ming fue invitado a celebrar el Año Nuevo con la familia de
Sofía en su casa a las nueve de la noche. A Ming le pareció extraño que lo invitaran a
comer tan tarde porque en China la cena generalmente comienza alrededor de las seis.
Sofía le explicó que los horarios de las comidas en España son muy diferentes a los de
China: almuerzan entre las dos y las cuatro, mientras que cenan a las nueve. Por la tarde,
Ming fue al supermercado para comprar un regalo para Sofía: una cesta de fruta de la
temporada.
Antes de entrar en la casa de Sofía, Ming se quitó los zapatos y los dejó en la acera.
Saludó a Sofía, a sus abuelos, padres, tíos y primos. Después, Ming dio la cesta de fruta
a su amiga y le dijo que era un regalo para su familia. Sin embargo, a Sofía le pareció raro
recibir un regalo como este. La mamá de Sofía había preparado una comida fantástica.
Ming disfrutó de la comida y comió mucho. Durante la cena, unos minutos antes de las
doce, Sofía se levantó de repente y encendió la televisión. Ming se sorprendió porque ya
era muy tarde para ver la televisión. Luego, Sofía le explicó que era un programa para dar
las campanadas, pero Ming no sabía qué era eso. Al final, toda la familia se sentó frente
