GINGER SLICE LABEL: CONTAINS GLUTEN

Serves 100

Wholemeal flour, g 2400

Baking powder, tbsp 8

Grated ginger, tbsp 4

Sugar, g 1100

Rice bran oil, ml 450Tahini, g 450

Golden syrup, ml 400

Honey, ml 400

Lemon juice, ml 300

Lemon rind, grated 10

No of trays 4

Step 1: Mix the flour, baking powder, ginger and sugar.

Step 2: Combine oil, tahini, syrup, honey, rind and lemon juice and add the dry mix. Combine well to a

stiff dough.

Step 3: Press the mixture into greased (use rice bran oil) long trays like a slice.

Step 4: Bake using 30% steam at 160ºC for about 15 minutes. If it is not golden brown, keep it bakingfor another 5 minutes.

Step 5: Cut into square pieces.
